HEALTHY HOLIDAY APPETIZERS With Bullseye Café Executive Chef

BAKED SWEET POTATO CHIPS YOU WILL NEED • parchment paper • mandolin or chef’s knife • basting brush or use hands INGREDIENTS 2 large sweet potato evenly sliced 1/8 inch thick 2 tbsp. olive oil 1 tbsp. salt DIRECTIONS 1. Rinse and dry sweet potato. Slice the sweet potato, using a mandolin helps keep the slices consistent. If using a chef’s knife, line up on edge of cutting board to keep slices even as possible. 2. Preheat oven to 250 degrees F. Line baking sheet with parchment paper or a silpat. Brush the paper lightly with olive oil. 3. Single layer the sweet potato slices on parchment. Lightly brush the top of the sweet potato with olive oil, then sprinkle salt over the top. 4. Bake for 1 ½ to 2 hours until golden and crisp. After 45 minutes flip slice for even cooking, also flip pans to keep even cooking throughout. Let rest 10 minutes before sampling 5. Place in serving bowl


CURRIED DELICATA SQUASH DIP YOU WILL NEED • cutting board • spatula • mixing bowl • chef’s knife • sheet pan INGREDIENTS 2 lb. delicata squash, halved, seeded, and cut into ½ in pieces Chef note: if delicata is not available, butternut is a great substitute ¼ cup extra virgin olive oil-divided into 1 ounce portions 2 tsp. hot curry powder 1 tbsp. salt ½ tsp. pepper 1 jalapeno, minced 2 tbsp. finely chopped shallot 2 tbsp. lime juice 1/3 cup chopped cilantro DIRECTIONS 1. Preheat oven to 400 degree F 2. In a mixing bowl, toss the squash with the 2 tablespoon of olive oil, curry powder and season with salt and pepper 3. Roast until squash is fork tender and slightly browned. Let cool 4. Scrape the squash into a medium bowl, fold in jalapeno, shallot, lime juice, cilantro and olive oil 5. Gently mix together squash mix so that it still maintains some chunky squash pieces, don’t mash 6. Season to taste with salt and pepper


LEMON SALMON SKEWER YOU WILL NEED • cutting board • spatula • mixing bowl • chef’s knife • sheet pan • skewers 16 each INGREDIENTS 2 tbsp. chopped fresh oregano 2 tsp. sesame seeds 1 tsp. ground cumin ¼ tsp. crushed red pepper 1 ½ lb. skinless wild salmon filet, cut into 1 inch cube 2 lemons, slice thin into rounds 2 tbsp. olive oil 1 tsp. kosher salt 16 bamboo or metal skewers, if bamboo soak in water 1 hour DIRECTIONS 1. Heat the grill on medium heat 2. In a mixing bowl, mix oregano, sesame seeds, cumin and red pepper flakes with olive oil 3. Toss cubed salmon into to coat, using 2 skewers per, to help keep the salmon from turning, start threading salmon, then lemon, salmon, lemon and salmon 4. Sprinkle the skewers with the kosher salt and grill 5. Flip every 2 minutes, for 8 to 10 minutes, until cooked through


DUO DEVILED EGGS SRIRACHA AND BACON CHEDDAR DEVILED EGGS YOU WILL NEED • cutting board • whisk • 3 mixing bowl, 1 for ice bath • chef’s knife • Ziploc bag • 1 large pot with lid • 2 spoons INGREDIENTS 12 large eggs ½ cup mayonnaise, divided in half ½ tbsp. dijon mustard 1 tbsp. sriracha sauce light garnish finely chopped chive to taste smoked paprika for sprinkling 2 slices bacon 1 oz. cheddar cheese ½ tbsp. mustard to taste salt and pepper DIRECTIONS 1. Put the eggs in a large pot with a lid. Fill pot with enough water to cover eggs by an inch. Put over high heat and bring to a boil. Once water is at a rolling boil, turn off heat and set timer for 10 minutes until hard boiled 2. Have a bowl of ice water ready, once timer goes off transfer eggs to ice bowl. Once cooled, peel eggs with running water to get all shell pieces off 3. Using a chef’s knife, cut egg in half. Remove the yolks and split equally to 2 separate bowls. In one bowl add, whisk the yolks with the mustard, sriracha, and mayo. Season to taste with salt and pepper 4. On a cutting board, finely chop cheese and bacon together. The add to second bowl of yolk with other half of mayo and mustard. Whisk to incorporate 5. Using 2 spoons, scoop and fill half of the yolks with the bacon cheddar mix, the sriracha mix add to a Ziploc bag. We’re going to cut a hole in the corner and pipe filling in 6. Place both eggs on a platter, top the sriracha ones with the chive and paprika, if extra bacon and cheddar left, top those as well

FAMILY-FUN GINGERBREAD HOUSE TIPS With Café Target Executive Chef

MINI GINGERBREAD INGREDIENTS 1/3 cup brown sugar ½ cup canola oil 1 each whole egg 2/3 cup molasses 1 tsp ground ginger ¼ tsp ground clove ½ tsp kosher salt 2 ½ cups all purpose flour DIRECTIONS 1. Preheat oven to 350 degrees 2. Grease and lightly flour a 17x11x1" baking pan 3. Combine all ingredients in a mixing bowl with a paddle attachment, mix until well blended 4. Spread evenly in the pan 5. Bake 15 minutes and remove from the oven 6. Cut out the pieces for the gingerbread house and remove the scrap pieces 7. Return the house pieces to the oven and bake for 5 more minutes 8. Cool completely before removing from the pan


ROYAL ICING (aka Gingerbread Glue) – or purchase “Strong Icing” from your local Target INGREDIENTS 1 ½ oz. pasteurized egg whites ½ tsp. vanilla extract 2 cups powdered sugar DIRECTIONS 1. In large bowl or stand mixer combine the egg whites and vanilla and beat until frothy 2. Add the powdered sugar gradually and mix on low speed until sugar is incorporated and mixture is shiny 3. Turn speed up to high and beat until mixture forms stiff, glossy peaks. This should take approximately 5 to 7 minutes 4. Add food coloring, if desired 5. For immediate use, transfer icing to pastry bag or heavy duty storage bag and pipe as desired 6. If using storage bag, clip corner. Store in airtight container in refrigerator for up to 3 days

ALMOND RUSKS Yield: 4 dozen INGREDIENTS 1 cup granulated sugar ½ cup butter softened 1 cup almonds slivered 2 each whole eggs 1 tsp baking soda ½ tsp. almond extract ¼ tsp. vanilla extract ½ cup sour cream 3 ½ cup all purpose flour DIRECTIONS 1. Preheat oven to 300 F 2. In mixing bowl cream together butter and sugar 3. Add eggs and mix 4. Add remaining ingredients, mix until combined 5. Divide dough into 2 and roll into logs, place on greased cookie sheet 6. Bake in preheated oven for 45 min or light brown 7. Remove from oven and cool 2 minutes, with serrated knife cut into 1/2" slices 8. Place slices back on sheet pan and toast on one side for 15 minutes 9. Remove from oven, turn all pieces over and bake the second side 15 minutes more 10.Remove from oven and move to cooling rack 11. Store in an air tight container


CHOCOLATE CHERRY BLOSSOMS Yield: 3 dozen INGREDIENTS 1 cup powdered sugar 1 cup butter softened 2 tsp. maraschino cherry juice ½ tsp. almond extract 3 drops red food coloring 2 ½ cups all purpose flour ½ tsp. Iodized salt ½ cup maraschino cherries chopped 36 each chocolate kisses DIRECTIONS 1. Preheat oven to 350 F 2. In medium bowl combine flour and salt set aside 3. Unwrap 36 kisses and set aside 4. In mixing bowl, cream together butter and sugar until light and fluffy 5. Add cherry liquid, almond extract and food color, mix until well combined 6. Add flour mixture and chopped cherries combine 7. Scoop cookies (#40) and place onto parchment lined cookie sheet 8. Bake in preheated oven for 10-12 until set - do not over bake 9. Once out of oven immediately top with chocolate kiss, pressing in slightly 10.Cool on pan 2 minutes, remove to cooling rack, store in airtight container


CHOCOLATE CRINKLE Yield: 4 dozen INGREDIENTS 1 cup unsweetened cocoa 2 cup granulated sugar ½ cup vegetable oil 4 each whole eggs 2 tsp vanilla extract 2 cup all purpose flour 2 tsp. baking powder ½ tsp. iodized salt 1/5 cup powered sugar DIRECTIONS 1. Combine flour, baking powder and salt, set aside 2. In mixing bowl combine cocoa powder, granulated sugar, and oil until combined 3. Add eggs one at a time 4. Add dry ingredients, mix 5. Cover dough and chill dough for 4 hours 6. Preheat oven to 350 F 7. Line baking sheets with parchment paper 8. Scoop dough into balls using a #40 scoop, or 2 tablespoons per ball 9. Roll each ball into powder sugar, place on cookie sheet 2 inches apart 10. Bake in preheated oven for 10-12 minutes, until set 11. Cool 2 minutes on sheet, remove to cool on racks


MOLASSES COOKIES Yield: 3 dozen INGREDIENTS ¾ cup shortening 1 cup granulated sugar 1 each whole eggs ¼ cup molasses 2 tsp. baking soda 2 cup all purpose flour ½ tsp. ground cloves ½ tsp. ground ginger 1 tsp. cinnamon ½ tsp. iodized salt DIRECTIONS 1. Preheat oven to 350 F 2. In medium bowl combine flour, soda, spices and salt 3. In mixing bowl, cream together shortening and sugar until light and fluffy 4. Add egg, stir until combined, add molasses, mix until well incorporated 5. Add all flour mixture; mix until well combined 6. Scoop cookies using a #40 scoop or two tablespoons per ball, roll, then roll in granulated sugar and place onto parchment lined cookie sheet 2 inches apart 7. Bake in 350 F for 9-11 minutes until set - do not over bake 8. Cool on pan 2 minutes, then remove to cooling rack 9. Store in air tight container


TEACAKES Yield: 4 dozen INGREDIENTS 1 cup butter softened ½ cup powdered sugar plus more for rolling 1 tsp. vanilla extract 2 ¼ cup all purpose flour ¼ tsp. iodized salt ¾ cup finely chopped walnuts or pecans DIRECTIONS 1. Preheat oven to 400 F 2. Combine flour and salt and set aside 3. In mixing bowl cream butter and sugar until light and fluffy 4. Add vanilla 5. Mix in dry ingredients and chopped nuts 6. Roll into 1" balls place on ungreased cookie sheet 7. Bake until set 10-12 minutes, remove from oven 8. Rest 2 minutes and roll in powdered sugar 9. Cool completely and roll again in powdered sugar 10.Store in airtight container
