we are glad to present you the 12th edition of Beat the Wheat, a project that started more than three years ago. Christmas is coming and we hope you will have a wonderful holiday. At the last CYE conference, Luca Pocher was elected into the editorial team as editor. Mirjam Eiswirth stays as editor in chief and Marvin M端ller as graphic designer. This issue is packed with news from different youth groups in Europe, including events in Italy, Germany, Czech Republic and Spain. Luca tells you about his experience at the the gluten free Oktoberfest in Aschheim, and the Spanish delegates report from the first international Winter Camp that took place in Madrid. We also have the latest information about the CYE Summer Camp 2016 in Cyprus. The Summer Camp 2017 will be hosted by Spain, by the way, so mark your diaries! Last but not least, we have a travel tale about New York and a very interesting personal experience from Saudi Arabia.

Visiting the Fauna Nature Centre in Manacel was an interesting visit with horse riding, bird watching and beer tasting! And what about food? Well there was plenty of it! An excellent cooking workshop by Gabriela at Singlutentaciones bakery where participants prepared finger food with crackers and bread, salads and panna cotta as a dessert. Eating typical Spanish food at El Arrozal such as calamari and paella, Ethiopian food at the Etiope Restaurant and burgers at Tommy Mel’s.

This December FACE Joven organised a Winter Camp in Madrid not only for Spanish coeliacs but also for other European coeliacs through CYE’s Coeliac Events Project. The organising team of this camp were: María van der Hofstadt, Beatriz Garre Picazos and Juan Carlos García Sánchez. The days we had together were full of different activities which brought all the participants closer to each other. We had the chance to appreciate the history and beautiful architecture of Madrid with the Sightseeing Tour Bus and a guided tour of Ancient Madrid.

It has been yet another great experience to meet up with other coeliacs around Europe. Working together as one group and see everyone enjoying themselves makes you realise how much we can achieve to help ourselves with Coeliac Disease and improve everyone’s lifestyle all over Europe. Let a new CYE Year begin!

Hello from Hamburg, where we are having our first meeting of the new Youth Committee that was elected at the CYE conference in Dublin this September! Camilla Dirdal who had been elected General Coordinator for 2014-16 stepped down shortly before the CYE conference in Dublin. We would like to thank her for the work she has done. Because she stepped down, we held extraordinary elections at the conference in Dublin.

Juan Carlos García Sánchez is staying on as Project manager. At the conference, we were also able to welcome a new contributor to Beat the Wheat: a warm welcome to Luca Pocher from Italy who is now on the editorial board.

In the CYE year 2015/16 we will focus on getting the website up to date and adding new information from all the countries to the TraveNet section with travel information for all our member countries.

CYE Projects

We are looking forward to our next CYE year and as always appreciate your comments and suggestions, which you can send to cye.board@ gmail.com.

Our annual project 2014/15 was putting together a cookbook with typical recipes from as many European countries as possible – one three-course meal from each country, plus an optional recipe for Your CYE Youth Committee Mirjam, Juanky and Tereza baked goods, be it bread or pasWelcome to Tereza and Luca! try. Italian News November was full of events for the Italian (young) coeliacs. The fourth Gluten Free Expo took place in Rimini between 14-17 November. This is an international fair where you can taste delicious gluten free food and drinks from nearly 150 exhibitors and you can participate in many activities. Just like in previous years, the food was great and the event was a success,

with lots of people and new exhibitors from all over Europe. At the end of November the Italian Coeliac Society (AIC) held its General Assembly in Bologna. Luca Pocher and I (Italian delegates for the CYE) presented the recent activities of the CYE, including both past and future projects. Together with Sara Pecorella (member of the society’s Board of Directors

and delegate for young coeliacs) we started to work on building a youth group. We would like to lay the foundations for the growth of a strong group of young volunteers! We are also planning new activities for young coeliacs in Italy. Stay tuned for more news! Alessia Patuelli

Oktoberfest

When I left my house in Northern Italy for the tiny German city of Aschheim, it was pouring. What was I going to do in this seemingy random place? It’s easy to explain: Every two years the German Coeliac Society (DZG for short) organizes a gluten-free Oktoberfest near Munich. At the CYE conference in Dublin I met Hannah Dreßen and Marvin Müller, the German delegates. They invited me to join them and the other German youth board members for the Oktoberfest weekend.

Our hostel was in Neuhausen, where I met the other three youngsters that were going to stay with us (in total there were six of us). We had naturally gluten free Viennese chicken for dinner. I learnt a lot about the work the German youth board does, and their goals for the near future (see their article in this issue). On the following day, a Saturday, we left early to get to Aschheim (by U-Bahn, S-Bahn and bus), a quiet village in the middle of the Bavarian countryside not too far from Munich. The venue had already been prepared – there was not only space inside, but also a beer garden with gluten free food and beers. We were up for a day full of gluten free treats (there were sponsors present, too) and good fun.

Meeting old and new friends

I was happy to meet my friends from the Italian Coeliac Society of South Tyrol in northern Italy, who came in a group of more than 40 people. The event was very popular, with several hundred participants. I got to taste Spätzle with cheese and onions, gluten free Brezeln, and of course gluten free beer. The event ended in the afternoon, which gave the visitors the chance to also go to the big Oktoberfest in Munich. After cleaning up, we made our way to Munich, too. Even though the weather didn’t help, we had a wonderful evening out.

When you go abroad: go local!

It was lovely to spend this Oktoberfest weekend with my new friends from the German coeliac society and I already look forward to seeing some of them again at the next CYE conference and more of them at the next Oktoberfest. A big thank you for your hospitality and I look forward to many collaborations! I would like to give all young coeliacs a piece of advice: When you go abroad, just contact the national or local coeliac society. They are always there to help, and it’s an amazing experience to visit a place with the locals. If you have any questions or would like to know more, drop me a line (lpocher@celiachia.it). News From Germany

New youth committee is elected

On the first weekend of November, the German Coeliac Society (DZG) held their General Assembly in Frankfurt. Every three years, elections for the three committees are held – the youth committee, the members committee, and the overall board. For us in the youth committee this election was very exciting. There were ten candidates but only seven positions to be filled. After a busy day with talks, gluten free food, networking with the sponsors and entertaining other young coeliacs at our youth committee both the votes had been counted. The new members of the youth committee are (in the picture from left to right): Marvin Müller (president), Daniela Jüntschke, Florian Stenzel, Alicia Abbrecht, Hannah Dreßen, Katja Ischner, Hannah Mensch. Congrats to you guys, and thank

you to the two members of the old youth committee who are leaving to spend more time on other parts of their lives ;)

ZOELI all over Germany

We have already told you about our new project of setting up a network of young coeliacs all over Germany. There is a network of support groups, but they mostly target older people. We want this kind of network for youngsters, because especially during adolescence and young adulthood

Czech Youth Group We have really funky T-Shirts and buttons for the Czech Youth Group now: Our T-Shirts say “gluten je muj kryptonit” which means “Gluten is my kryptonite”. The coloured buttons say “I am gluten free”. Look how much fun we’re having modelling them ;)

it is essential to experience that you are not alone with your coeliac disease. The first group meetings are taking place already in 13 cities, and our focus is on doing fun activities together, not on talking and complaining about how hard life is (which, really, it is not). If you’re planning a trip to Freiburg, Stuttgart, Frankfurt, Köln or Hannover, check our facebook page and website for updates on the activities there – we’d be happy to meet you! Now our focus is on both solidifying and expanding our network, especially to big cities in the north and east of Germany like Berlin, Hamburg and Dresden. We’ll keep you posted! Daniela Jüntschke


The Street Food and Life Sciences Film Festival took place in Prague from 12th to 18th of October 2015. Klarka, Kristynka and Zuzka looked after our stand there and handed out leaflets and brochures to visitors. We teamed up with three producers of gluten-free products and one restaurant so that we could show everybody that even though the gluten-free diet might sometimes be a bit challenging, the food can not only look amazing but also taste very good. Adveni Medical offers a great variety of unusual flower mixtures such as chia flour, milk thistle flour and banana flour. Bezlepkova Pekarna Liska produces special gluten-free sourdough bread. Domaci Dobroty impressed the visitors with delicious gluten-free cakes and sweet pastry. And finally, Svejk Restaurant U Karla showed that even the traditional Czech cuisine can be prepared in a gluten-free way. Thanks to our three volunteers and our supporters for the successful week!

In New York you can find a lot of cafés and restaurants that offer gluten free food. Be careful though – with “gluten free” becoming a lifestyle choice for more and more people, there are quite a few places that offer gluten free food but do not actually watch out for cross contamination. During my last stay in Manhattan, I tried to visit as many places as possible. I have summed up my personal highlights for you: these are must visits on your next trip to New York!

Breakfast

Start your day with breakfast at the Eighty-Two Café. It’s located in the Upper West Side, at the corner between Broadway and the 82nd street, not far from the Natural History Museum. They offer gluten free waffles, pancakes and French toasts. They serve American portions, so make sure you’re hungry!

Lunch

If you prefer to eat in a restaurant, go to Bistango, an Italian restaurant with a good gluten free menu. You can find it in Midtown, at the intersection between 3rd avenue and the 29th street. If you’d like something faster I suggest eating at Friedman’s, a franchise specialized in gluten free food. I went to the one in Hell’s Kitchen, at the intersection between 10th avenue and the 35th street.

I recommend By The Way Bakery, a total gluten free dedicated bakery situated in the Upper West Side, at the intersection between Broadway and 90th street. They have a large offer of typical Anglo-Saxon sweets, such as muffins, plum cakes, mini cakes, cookies and cakes. It is also possible to order layer cakes if you have a party coming up. They also have a shop in the Upper East Side.

Dinner

At Don Antonio Pizza you can find a wide range of gluten free pizzas and – you can never take it for granted – a true Neapolitan pizza chef. It’s situated in Hell’s Kitchen on the 50th street, near the intersection with the 8th avenue. Luca Pocher

Recipes from Trentino

CANEDERLI AL FORMAGGIO (Cheese Knödel) Ingredients:

• 80 gr. of gluten free flour • 10 pieces of sliced bread • 4 spoons of milk • 200 gr. of cheese (Gouda-style) • ½ minced onion • 2 eggs • 20 gr. of butter • Salt and pepper Preparation:

• Pour the milk into a bowl and

soak the sliced bread in it. Wait until it is completely soaked, then crumble it with a fork and put it aside. Melt the butter with the minced onion. Cut the cheese in small cubes. Add to the bread (in this order) eggs, cheese, onion, flour, salt and pepper. Knead the mixture until it is dry and uniform. Shape with wet hands into small balls of equal size. Boil in salt water and wait until they emerge. Flavour with melted butter, sage and parmesan cheese.
