What is Kopi Luak? It’s the most rare and expensive coffee in the world. It sells for up to $600 per pound (or on a cafe menu as high as $50 per cup). The way it’s made will astonish you. It starts in Indonesia, where an animal, called a palm civet, is fed coffee cherries. The undigested coffee beans pass through and come out in its excrement. Unbelievably the beans are then picked out of the droppings, washed, and sold. It is thought that enzymes in the stomach of the palm civet add to the coffee's flavor by breaking down the proteins that give coffee its bitter taste. What are peaberries, and why are they desirable? The normal development of the coffee cherry creates two seeds, which grow with their flat sides facing each other. A peaberry is a round bean that's formed when only one half of the coffee bean develops inside the fruit.
