Macarena’s training has been continuous and is still ongoing. When the restaurant she runs closes, for two months a year for holidays, she travels around cooking in different countries. Apart from her international travels she always attends two unmissable annual events in Cataluña and País Vasco. - Congratulations for the Michelin Star. What do you consider is the real value of this award? -This recognition rewards many working hours not only of my family but also my team, illusions and disillusions,… I guess receiving recognition that has given us energy to keep on working. - Haute cuisine is no longer an exclusively male domain? -It is still considered as a male territory but gradually we are becoming self-confident and we are making our way in it. - There is a real gastronomy in Majorca or simply traditional dishes handed down through generations? -People are increasingly highly-qualified, but what is still missing is belief in our local product, a bond between us to move forward and work harder in order to exploit the natural resources at our disposal that have been taken for granted. - Is it possible to create art at the oven or is it just a matter of culinary R&D? - Actually, I do not know if it is art. It is about enjoying a hard job every

Welchen Stellenwert hat dieser Preis für Sie? -In diesem Stern leigen viele Stunden von Arbeit sowohl von meiner Familie als auch von meinem Team, Hochs und Tiefs…Wir empfinden die Auszeichnung als eine moralische Anerkennung, die uns viel Energie zum Weitermachen gegeben hat. -Haute Cuisine ist nicht mehr nur eine Männerdomäne? -Es ist immer noch eher in Männerhand, aber mehr und mehr behaupten sich auch Frauen in diesem Genre. -Gibt es auf Mallorca eine Gastronomie oder sind es eher typische mallorquinische Gerichte, die von Generation zu Generation weitergereicht werden? - Es gibt sehr viel Gastronomie und sie verbessert sich ständing, aber ich glaube es fehlt uns die Verbindung und Kommunikation untereinander, um schneller voranzukommen, sowie der Glaube in unsere eigenen Produkte deren Reichtum zu nutzen und zu schätzen. - Ist es möglich Kunst am Herd zu machen oder es ist eine Frage von ‘’kulinarischer Produktentwicklung’’? -Ich bin nicht sicher, ob es tatsächlich Kunst ist, aber es geht darum eine tägliche Arbeit zu geniessen. Wenn man Glücklich mit seiner Arbeit ist, dann entsteht die

In my opinion, much of the business is reinventing ways to encourage the clients. According to my own experience, within three years I have changed the range of my restaurants adjusting to the different customer needs. El Jardín offers a gastronomic menu, El Bistró has a carte with the finest dishes since 1996. Besides that, on May 2012 we are planning to open Danny´s Gastro Bar. - Do you elaborate your recipes following the guidelines of a healthy diet? - Of course, balanced diet is very important for me. We are still young and we have a life ahead for further improvement.

Mit der Hilfe einer Freundin und Kollegin, María Solivellas, habe ich Bio-Bauern kennen gelernt, die sich auf die lokalen Produkte spezialisiert haben und diese auch respektieren. Dank ihrer Arbeit kann ich den grossen Wert dieser Produkte in meine Gerichte einbringen. -Gibt es hochwertige Gastronomie ausserhalb von Cataluña und País Vasco? -Natürlich!! Nur allein auf der Iberischen Halbinsel kann man sich in der Vielfältigkeit der Kochkunst verlieren und die übrigen span. Provinzen runden die Vielfältigkeit ab. - Mit welche Lebensmittel kochen Sie persönlich am liebsten? - Jegliche Art von Fisch und immer mehr auch Gemüse. -Sind Sie bereit, um für den zweiten Stern zu kämpfen? -Es wird schwer den zweiten Stern zu erhalten, aber wir werden weiter arbeiten und unser Bestes geben. Wir sind noch jung und haben Zeit uns weiter zu entwickeln und uns zu verbessern.
con los clientes, con los proveedores, en familia… -¿De qué forma cree que la actual crisis puede afectar a la evolución de la cocina? -En momentos de crisis es cuando más creativos tenemos que ser, creo que la mayoría de los negocios en general están reinventando formulas para incentivar al cliente, por mi parte en tres años he cambiado la línea de mis restaurantes, el Jardín con un menú gastronómico, el Bistró con una carta con los mejores platos desde el 1996 y este año inauguráremos en mayo el Danny´s Gastro Bar. -¿Tiene en cuenta la alimentación saludable en la elaboración sus platos? -Sí en todo momento, para mí es muy importante el equilibrio con la ayuda de mi amiga y colega María Solivellas me estoy conociendo los pequeños productores ecológicos, son los que de verdad respetan el producto, gracias a ellos puedo aportar este gran valor a mis platos. ¿Hay vida gastronómica fuera de Cataluña y el País Vasco? - Y tanta!!!! Solo con empezar con la península ya te puedes perder de la diversidad de cocinas que puedes encontrar y si pasamos al resto de los países ya ni te cuento… -¿Con qué ingredientes se encuentra más a gusto trabajando? -Con toda clase de pescados y cada vez más con las verduras. -¿A por la segunda estrella? -Está muy lejos pero nosotros seguiremos trabajando e intentando hacer las cosas lo mejor posible, somos jóvenes y tenemos toda una vida por delante para seguir mejorando.
