A gorgeous little salad which totally depends on good ingredients. Make it with battery produced eggs and indifferent bacon and you’ll wonder why you bothered. Gubbeen bacon is cured and smoked by a brilliant young artisanal producer called Fingal Ferguson, son of Tom and Giana Ferguson who make the famous Gubbeen farmhouse cheese on their farm in West Cork. If you can’t lay your hands on this, look out for the best quality smoked bacon you can find. Coolea cheese is a rich and nutty Gouda type cheese with a glorious waxed rind made from unpasteurised milk by Dick and Helene Willems on their farm in West Cork. a mixture of organic salad leaves 175g (6oz) smoked Gubbeen bacon lardons 4 eggs free-range organic Caesar Salad Dressing (see recipe) 25g (1oz) freshly grated Coolea cheese freshly chopped parsley First make the Caesar dressing - you will have more than you need for this recipe but it keeps for several weeks so save it in the refrigerator for another time.

Caesar Dressing 2 egg yolks, preferably free-range 2 tablespoons lemon juice, freshly squeezed 1 x 2oz (50g) tin anchovies 1 clove garlic, crushed a generous pinch of English mustard powder 1/2 teaspoon salt

1/2-1 tablespoon Worcester sauce 1/2-1 tablespoon Tabasco sauce 6fl oz (175ml) sunflower oil 2fl oz (50ml) extra virgin olive oil 2fl oz (50ml) cold water

We make this dressing in a food processor but it can also be made very quickly by hand. Drain the anchovies and crush lightly with a fork. Put into a bowl with the egg yolks, add the garlic, lemon juice, mustard powder, salt, Worcester and Tabasco sauce. Whisk all the ingredients together. As you whisk, add the oils slowly at first, then a little faster as the emulsion forms. Finally whisk in the water. Taste and correct the seasoning: this dressing should be highly flavoured. Fill a small saucepan with cold water, add a little salt. When the water is boiling, reduce the heat, crack the egg and allow it to drop gently into the water. Cook in the barely simmering water for 4 to 5 minutes or until the white is set and the yolk is still soft. You may cook the eggs separately or together depending on the size of your saucepan. Meanwhile heat a frying pan, add a little olive or sunflower oil. Cook the lardons of bacon until crispy and golden.

The official launch of the 2013 Taste of West Cork Festival and celebration of the 10th anniversary takes place on 3rd September 2013. Triona Mc Carthy, Journalist, Television Presenter and dynamic young spirit of West Cork, will be guest speaker.

Put a little Caesar dressing on the plate. Quickly arrange a selection of lettuce and salad leaves on top. We also add a little freshly cooked asparagus or chicory in season or some chard or beet greens. Sprinkle the hot sizzling bacon over the salad, top with a poached egg. Drizzle some Caesar dressing over the poached egg and salad leaves.

As part of the Gathering initiative and to welcome our national and international visitors to the Taste of West Cork Food Festival, we are inviting visitors to have a free lunch. Approximately 20 restaurants and pubs in Skibbereen, Baltimore, Glandore, Union Hall, Leap and Casteltownsend are participating in this event. All the restaurants have partnered with a West Cork producer and their ‘free lunch’ will showcase a specific product from West Cork, which has a proud reputation for producing some of the best artisan food in Ireland. Visitors to the festival can obtain vouchers for their free lunch from the Hub/Festival Box office on proof of travel to West Cork (either plane ticket, ferry ticket and/or proof of paid accommodation in the area). The vouchers are redeemable for a ‘free’ lunch from participating restaurants in the area, valid for lunch only, to the value of €10 per person.

Throughout the Festival we will be showcasing a “Growing Awareness Project” to engage, educate and inspire the professional grower, the at-home gardener and the growers of the future in the essential skills of growing in its many and varied aspects. The Growing Awareness Project is a partnership between Lissard/UCC Masters Project, Teachers of the VEC Horticultural Fetac 5 Project, The GYI and Community Growers, Glebe Gardens and Brown Envelope seeds. From Monday to Friday during school hours the project will be devoted to the region’s Primary School students. The students will engage in the growing workshop and enjoy a special project entitled the “History of Pizza”. On Saturdays, after school hours, the exhibition is open to everyone.

Town Hall, Skibbereen | €5 A special addition to this year’s food festival is the showcase of a number of foodie films with youth in action project ‘Skibb Scenes: Cinema on your Doorstep’. Run by a number of young students from Skibbereen and the surrounding areas, the project’s aim is to turn Skibbereen’s town hall into a cinema during the festival. This up and coming project is funded by Léargas and facilitated by the Skibbereen Community and Family Resource Centre.

Owen will talk about prioritising action over words and the crucial importance of selling. Alistair is the founder member of ‘Taste of Arran’ and runs “Arran Dairy” on the Isle of Arran, Scotland. Alistair is no stranger to West Cork having visited previously and has been instrumental in developing the marketing and brand for the Isle of Arran that showcases all that is great about the produce available on this rural West of Scotland island. Donegal man Gary O’Hanlon has been delighting visitors to VM Restaurant at Viewmount House since he took charge of the kitchen in 2008. Originally from Ramelton, (near Letterkenny) Gary previously worked at the Olde Post Restaurant Cloverhill and at the Lobster Pot Restaurant in Galway Bay Hotel. Prior to returning to Ireland, Gary was head chef at “Devlins” Restaurant in Boston. In terms of cullinary style, Gary has fused his knowledge of traditional Irish cooking with the skill he honed in Boston, and brings both to bear on the preparation of fine fresh Irish ingredients. Resting on the banks of the River Ilen (from which the farm takes its name) Glenilen Farm has an idyllic location for dairy farming. The lush hills of Drimoleague offer the cows a rich and plentiful supply of nutritious grass, and the cows in turn supply the rich tasty milk which is a core ingredient in all the Glenilen products. Celtic Cook Off

This event encourages the special relationship that exists between the Celtic nations. The Celtic Cook Off works on the basis that one chef represents each of the Celtic Territories: Ireland, Scotland, Isle of Man, Cornwall, Wales and Brittany. The chefs come together for one night and compete against each other in a “Ready, Steady, Cook” style cook off. The chefs cook in two groups (3 in each group, with each competing chef assisted by a young aspiring Chef from the West Cork Region). They have thirty minutes to create their masterpieces, using West Cork produce, that they have selected from a list of approved producers and using an agreed budget. The Chefs may also opt to choose a “Wild Card” ingredient from their own region. The Celtic Cook Off is a fun and informative cooking event, that showcases the best of West Cork Produce.
