Kir Royale Jellies with Berries

A lovely pudding for a special occasion, and a nice way to have another sneaky little cocktail! Serves 4

Ingredients

• 6 leaves of gelatine

• 150ml / ¼ pint cold water

• 570ml / 1 pint sparkling white wine

• 5 tbsp crème de cassis

Method

• Soak the gelatine in the cold water for five minutes or until softened.

• Meanwhile, put the wine, cassis and sugar into a saucepan and heat gently until the sugar has dissolved. Turn off the heat.

• Squeeze the excess water from the softened gelatine. Discard the water.

• Put the gelatine into the warm wine mixture and stir until completely melted. Allow to cool.

• 110g / 4oz caster sugar

• 55g / 2oz blackberries

• 55g / 2oz raspberries

• Sprigs of mint (to garnish)

• Divide the blackberries and raspberries between four glasses. Carefully pour over the cooled wine and leave to set for 3-4 hours or overnight in the fridge.

• Garnish with sprigs of mint and serve.

• Note: You can also try these with other fruits – strawberries, redcurrants, etc., whatever takes your fancy
