Pepperoni Pizza Sliders

A really quick and easy thing to make, and they taste delicious! You can of course substitute other ingredients to make whatever type of pizza you like. Maybe swap the pepperoni for ham, ground beef or sausage; or go for a veggie option. You can also add other toppings such as olives, peppers, jalapeños, mushrooms –whatever gets your taste-buds tingling.

Makes 24 sliders, but you’ll definitely want to eat more than 1.

Ingredients

• 24 Hawaiian dinner rolls or mini brioche buns (halved)

• 400g / 14oz pizza sauce

• 250g / 9oz mozzarella cheese (shredded)

• 170g / 6oz pepperoni slices

• 4 tbsp butter (melted)

• 2 tsp Italian herb blend seasoning

Method

1. Preheat the oven to 180C / 450F / gas

2. Coat a 9”x13” baking dish with a little olive oil and place the bottom halves of the rolls into the dish.

3. Top with an even layer of pizza sauce, followed by the cheese, pepperoni and tops of the rolls.

4. In a small bowl, combine the melted butter, Italian seasoning, Parmesan, garlic powder, salt and pepper. Mix well and brush over the tops of the rolls.

• 2 tbsp Parmesan cheese (grated)

• 1 tsp garlic powder

• ½ tsp salt

• ½ tsp pepper

• 3 tbsp flat-leaf parsley (finely chopped)

5. Sprinkle the chopped parsley over the top and bake in the oven for 15 minutes, or until the cheese has completely melted.

6. Use a sharp knife to cut down the seams of the rolls and serve immediately to fully appreciate the cheesy goodness!

Note: If the tops of the buns start to brown too quickly, cover loosely with aluminium foil while baking.
