bowl. Press mixture evenly into bottom and up side of 9" springform pan. Set aside. Filling: In large bowl, stir Cool Whip and ice cream together until softened and combine evenly. Spoon mixture into crust. Cover; freeze for about 6 hours or until firm. Before serving, allow to sit at room temperature for 10 minutes. Top with pecans and chocolate chips. Drizzle with caramel sauce. Makes 12-14 servings.

“The K-beauty technique of massaging a nubby washcloth soaked in warm water over the skin gently exfoliates, boosting lymph flow and blood circulation,” explains New York dermatologist Yoon-Soo Cindy Bae, M.D. The key: Don’t overscrub! Blessings by the half-dozen “This family is a dream come true for all of us,” says Chesni.

Chesni Meske and her husband longed to have more children. Meanwhile, six young siblings desperately needed loving parents and a forever home together . . .

And when Chesni and David met Natalie, 11; Tori, nine; Zane, seven; Ava, six; Jack, four; and three-year-old Allie, watching them run around laughing like children should, they fell in love. Still, some of the children were malnourished, their ribs and shoulder blades poking out; their skin covered in sores. They need us, Chesni and David realized.

lessedly, the paperwork went smoothly, and soon, Laci, now eight, was anything but lonely. She and the boys would spend hours building with Legos. When they went to the amusement park, the girls giggled as they tried to crowd into a single car of a ride. And their eyes lit up to open brandnew American Girl dolls. In the afternoons, the gang— who began to thrive not only

Now, for Saturday breakfast, Chesni and David flip 70 to 100 silver-dollar pancakes, fry up five pounds of bacon and scramble two dozen eggs. Every Sunday, Chesni makes 200 burritos for quick dinners on evenings she’s running the kids to Boy and Girl Scouts, karate and cheerleading. And whenever they go anywhere together as a family, they do so in an airport shuttle van. Still, they believe every moment together is a blessing. “This is a dream come true for all of us. The kids got a forever home together. Laci got the siblings she’d longed for. And the number of times a day David and I hear, ‘Thank you’ and ‘I love you,’ is amazing!” Chesni says. “Never in a million years did I think my life would go this way, but I wouldn’t change it for the world!” —Marti Attoun

Cook up something amazing!

Catch-a-buterfly cake! DECORATIONS 1/4 tsp. + 1/8 tsp. tylose powder, such as Wilton 1/2 cup white fondant, such as Wilton Decorator Preferred Lemon yellow and black concentrated food colorings Confectioners’ sugar

2 Tbs. black fondant, such as Wilton Decorator Preferred Yellow pearl dust, such as Wilton Black and pink edible food markers CAKE 2 1/4 cups all-purpose flour

O Butterfly decorations: Line rimmed baking sheets

with wax paper. Knead 1/4 tsp. tylose into white fondant. Tint 1/4 cup white fondant yellow with food coloring. Wrap remaining white fondant in plastic wrap and reserve. On surface lightly dusted with confectioners’ sugar, roll out yellow fondant to 1/16" thickness. Using 2 1/4", 1 3/4" and 1 1/4" butterflyshaped cookie cutters, such as veined plunger cutters, cut out shapes. Gently fold butterflies in half along centers; place on rimmed baking sheet, propping up one wing against side of pan. O Cat decorations: Knead

remaining 1/8 tsp. tylose into black fondant. Roll 1/2 tsp. pieces of black fondant into balls. Roll 1 tsp. pieces of reserved white fondant into balls. Randomly place balls next to each other on surface; lightly press together and flatten, as shown. O Roll flattened fondant balls

out to 1/16" thickness. Using assorted 3 3/4" cat-shaped cookie cutters, cut out shapes, as shown. For gray cats or gray patches, mix scraps lightly together to blend colors before shaping into balls and rolling. Transfer cutouts to baking sheet. Dry butterflies and cats overnight. O Cake: Preheat oven to 325°F. Coat 3 (8") round cake

pans with cooking spray; line bottoms with rounds of parchment paper. Coat paper with cooking spray. Combine flour, baking powder, baking soda and salt; reserve. On medium speed, beat butter and granulated sugar until fluffy. On low, gradually beat in eggs, then vanilla. Alternately beat in flour mixture and buttermilk. Divide batter among pans. Bake 28-30 minutes or until toothpick inserted into center comes out clean. Cool in pans on racks. O Using small

Transfer 3/4 cup frosting to separate bowl; tint green with food coloring. Transfer green frosting to pastry bag fitted with multi-opening tip (such as Wilton #234). Tint remaining frosting light blue with sky blue and white food colorings. O Assembly: Place 1 cake layer on serving

plate; spread with 1/2 cup blue frosting. Top with second cake layer; spread with 1/2 cup blue frosting, then top with remaining cake layer. Spread cake top and side with remaining frosting. Using green frosting, pipe on tufts of grass. Arrange cats and butterflies on cake as desired. Makes 16 servings.

These cupcakes taste like a Shirley Temple! “Who can resist the bubbly pink happiness in a glass?” says Lindsay Ann of LindsayAnnBakes.com. “I used to love getting to order a Shirley Temple at special-occasion dinners as a kid, so what better inspiration for a new cupcake flavor!”

Make ’em yourself! CUPCAKES 1 pkg. (15.25 oz.) vanilla cake mix 1 1/4 cups Cherry 7UP soft drink 1/2 cup oil 3 eggs

Red liquid food coloring 18 maraschino cherries, stems removed FROSTING 1 cup butter, at

room temperature 4 cups confectioners’ sugar, sifted 1 Tbs. Cherry 7UP soft drink 1 tsp. vanilla extract

O Cupcakes: Preheat oven to 350°F. Line cupcake pans with 18 baking cups. Beat cake mix, 7UP, oil and eggs in large bowl at low speed until moistened, about 30 seconds. Increase to medium speed; beat 2 minutes.

hen my aunt passed away from complications due to cancer, I was heartbroken, not only for my own loss, but also for my mother who had always been very close to her younger sister. On the day of my aunt’s funeral, I made the 90-minute drive to my mom’s house to pick her up and take her to the funeral. While driving to Mom’s house, I wished there was some way that I could comfort Mom. I decided to ask the angels for help. “Angels, could you please send my mother and me a sign that my aunt is still with us?” I cried. My aunt believed that when you found a penny, it was from a loved one in Heaven. She collected most of the pennies she had found over the years, proclaiming they were from the angels.

Tie string tightly about 6" up from umbrella tip. Tie ribbon over the string to conceal it, making a multi-loop bow. Slide two or three flower stems into the closed umbrella and tie them to a stretcher—that’s a shorter angled wire close to the umbrella’s main pole or shaft. There, finger poised on the doorbell, stood Harry, who cleared his throat. “Um, I—“ “Harry,” she tipped her face up to look into his deep-brown eyes. “I wanted to—” Before she could finish, Harry pulled her close and bent his forehead to touch hers. “Ellen—“ Ellen smiled and placed her hands on his cheeks. “Kiss me, Harry. Alone, Ellen sat at the counter to think things over. A year ago, she and her ex-husband, Ted—The Rat—had finalized their divorce. Eight months ago, she’d retired from teaching, moved into this townhouse and started a new life, staying busy with part-time work as an online tutor, volunteering at the animal shelter and weekly visits with her daughter. Ellen had settled contentedly into her new home and life.

So when tests showed no evidence of disease and she returned to work, she found herself longing to pay her good fortune forward. To show other women they had someone pulling for them, too. To give them a place where they could feel hope. So, creating a special spot in her salon, she called it the “Loving You Through It” room, where women diagnosed with cancer could come for free makeovers, to have their heads shaved before chemo stole their hair, to try on wigs and just to talk to someone who knows what they’re going through.

Feeling beautiful again

W

hen she was diagnosed with breast cancer, Lisa Barraza went to Rico’s on Third to have her long auburn hair cut in order to donate it before she lost it. But once in the chair, Snooky could feel her sadness. “Would you like to say a prayer first?” she asked, holding Lisa’s hands. Afterward, she draped several brightly colored scarves over her to find the right one. “Look at that light in

your eyes. That’s where the beauty is!” she said, and a smile spread across Lisa’s face. For Christine Connery, depressed due to her hair loss, simply talking to Snooky gave her strength. “I was dealing with so many emotions, and Snooky knew all the right words to say. She helped me find the perfect wig. But even more, she made me realize I was still beautiful.” Ellen Erickson was only 11 when she was diagnosed with bone cancer. Having to endure more than a dozen surgeries—including having the femur bone in her leg replaced with a prosthetic, leaving her with a limp—the 17-year-old sometimes wondered who she was anymore. It on the day of her prom, Ellen exclaimed, “I feel gorgeous!” And after visiting Snooky’s shop, cancer survivor Marcia Fox beamed, “Because of you, I feel so much more confident!” Today, “Loving You Through It” (Loving YouThroughIt.org) is an official nonprofit and has brought comfort to more than 300 women, each of whom leaves the salon with gifts of wigs, hats, scarves and makeup. “I want every woman to walk out feeling empowered,” says Snooky, who remains cancerfree. “There is always hope, and believing you can survive is the key to overcoming any challenge. So I vow to be there, to love each woman through it!” —Kristin Higson-Hughes
