Spicy eggs & greens stir-fry ♦ Beat 8 eggs with 4tbsp water. Season. ♦ Heat 2tbsp sunflower oil in a wok and stir-fry 2 large, deseeded and chopped red chillies, a 4cm piece peeled and grated ginger, a chopped garlic clove and 200g halved green beans for 2 minutes. ♦ Add a bunch of trimmed, sliced spring onions and 450g shredded baby pak choi. Stir-fry for 1 minute. Transfer to a bowl.
♦ Add 2tbsp oil to the wok, then the egg. Cook over a medium heat, stirring to break it into chunks as it sets. Return the veg to the wok with 4tbsp soy sauce and 50g unsalted roasted cashews. Cook for 30 seconds. Serve with rice or noodles. Serves 4.

The Department of Health now says that we can eat as many eggs as we like, unless our cholesterol is high, and advises that eggs are a good choice as part of a healthy, balanced diet.
Eggs are one of the few foods that naturally contain vitamin D, which helps to protect bones and guard against osteoporosis. They are also a great source of protein and less than 70 calories per medium egg.
To avoid the temperature fluctuations of a typical kitchen, store eggs in their box in the fridge. Some recipes call for eggs at room temperature, so remove from the fridge 30 minutes before using.
