A brilliant barbecue is all about relaxing with friends and family, but a little advance preparation will help make sure the food you cook is both delicious and safe to eat. Here are some top tips*… ● Store raw meat separately from other food in the fridge before cooking. Take care to use diferent utensils, plates and chopping boards for raw and cooked food, too. And don’t wash chicken or any other type of raw meat – you’ll just splash germs everywhere. But do wash your hands both before and after handling raw food. ● Use a meat thermometer to check food is cooked through. Or if you’re unsure, pre-cook meat and poultry in the oven then fnish on the barbecue, to give it that smoky, chargrilled look and favour. ● If you don’t pre-cook your meat, cut open any poultry, pork, burgers, sausages or kebabs before serving, to double-check that they’re piping hot and cooked through – make sure any juices run clear and that none of the meat is pink. ● Disposable barbecues take longer to heat up and to cook food, so don’t just go by timings – test the food is properly cooked (see above) before serving.
