Baby leaf & chicken salad

Put a 90g bag baby leaf salad in a large bowl. Add 10 halved cherry tomatoes, 50g croutons and 200g chopped cooked chicken, and toss. Crumble in 2 rashers cooked, cooled bacon and mix to combine. Mix together 3tbsp oil, 2tbsp cider vinegar, a crushed garlic clove, 1tbsp honey and 1tsp mustard. Season and drizzle over the salad. Serves 2

Chicken stir-fry

Chicken & herb risotto

Heat 2tbsp oil in a frying pan or wok over a medium heat. Add 200g chopped cooked chicken and reheat for 2 minutes. Add a 340g pack Asda Oriental Bean Stir-Fry Mix with Edamame Beans and Peppers and 495g fresh egg noodles. Cook for 2-3 minutes, stirring all the time. Add a 230g pack Asda Black Bean Stir-Fry Sauce and cook, tossing gently, for a further minute, until piping hot. Serve with soy sauce. Serves 2

Heat 25g butter in a pan and cook a crushed garlic clove, chopped onion and sliced stick of celery for 3-4 minutes. Add 300g Arborio rice, 200g chopped mushrooms and 200g chopped cooked chicken. Make up 1.2 litres vegetable stock and keep warm. Add 2 ladlefuls to the rice and simmer. Once absorbed, add a ladleful at a time until the rice is tender, about 20-25 minutes. Top with parsley. Serve with Parmesan and bread. Serves 2
