The largest metropolitan area in the Southwestern United States, Greater Phoenix encompasses more than 20 cities and towns, including Scottsdale, Phoenix (which is the capital of the state), Cave Creek, Carefree, Paradise Valley, Chandler, Gilbert, Mesa, and Glendale. Its nickname is the Valley of the Sun, bestowed in recognition of the average of 300 days of sunshine the Valley—so called because the area lies in the Salt River Valley—enjoys each year. Metro Phoenix is known for its high-end spas, golf courses, restaurants, and of course, cacti and scenic views.

Northern Arizona includes cities such as Sedona, Flagstaff, Payson, Pinetop, and Williams. The area features the famous red rocks of Sedona, several mountain ranges—including the San Francisco Peaks—and the largest Ponderosa Pine forest in North America. Of course, it’s also the location of the famous Grand Canyon, as well as Monument Valley, Canyon de Chelly, the Painted Desert, Slide Rock State Park, Antelope Canyon, and Meteor Crater. Due to its elevation, Northern Arizona experiences more seasonal weather than the Valley of the Sun, often including heavy snow. Skiing is a popular pastime.

There’s a lot of history to explore in Southern Arizona, from ancient ruins to abandoned mines to locales made famous during the Wild West days. Tucson is the region’s largest city, and is today filled with golf courses, spas, and a thriving food scene. Tombstone and Bisbee are known for their Old West vibes, while Sonoita, Elgin, and Willcox are popular locations for wineries and distilleries. The area is also home to Tubac, Yuma, and Sierra Vista. Southern Arizona, which borders Mexico, tends to have a warm, dry climate.

Phoenix Art Museum

The largest visual arts museum in the Southwest offers plenty to see and do. In 1955, architect Paolo Soleri (1919-2013) left his hometown of Turin, Italy, to settle in Arizona, study briefly with architect Frank Lloyd Wright, and find a place to build his “city of the future.” He later divided his time between Cosanti, his primary residence and studio near Scottsdale, and Arcosanti, his mixed-use communal experiment 60 miles north. Cosanti is a digest of Arcosanti, exhibiting Soleri’s anti-urban-sprawl ideas, earthy architectural elements, and artistic windbells. 6433 E. Doubletree Ranch Road, Paradise Valley; www.cosanti.com

Camelback Mountain

Drivers orient themselves by it, hikers test their stamina on it, and visitors take pictures from it. Camelback Mountain is the tallest (2,704 feet) and most easily identified (the shape of a reclining camel) landmark in Central Phoenix. If you’re feeling sure-footed and wellhydrated, greet the camel on a summit hike originating in Phoenix or Paradise Valley. Phoenix Zoo

This nonprofit zoo is home to more than 3,000 animals, with nearly 400 species represented, including giraffes, rhinos, cheetahs, an Asian elephant, and zebras. Lake Pleasant, the only major lake west of the city, sits 45 minutes from Downtown Phoenix, near Peoria. The 10,000-acre lake is in Lake Pleasant Regional Park, part of Maricopa County Parks & Recreation. Summers are the time for on-the-water fun, with Paqua Park water obstacle course, boat rentals, kayaking, fishing, and diving. Wakeboarding is also allowed. The 13,000 acres of pristine Sonoran desert surrounding Lake Pleasant are ideal for land adventures. There are well-maintained campgrounds open year-round and hiking trails around the lake. The Creatures of the Night Hike, during which participants often spot bats, owls, and scorpions, is popular. While there are several restaurants at Lake Pleasant at Scorpion Bay and Pleasant Harbor marinas, during the cooler months, evening

A common urban legend is that Arizona has more boats per capita than any other state. Although not true—Arizona ranks 42nd with 18 boats per capita compared with top-ranking Minnesota’s 143 boats—Arizona is home to more than 200 lakes and reservoirs. Several large lakes offer impressive water fun within just an hour’s drive of the Phoenix metropolitan area. Arizona has only two main natural lakes—Mormon Lake in Flagstaff and Sedona’s Stoneman Lake. The other manmade lakes and reservoirs store water for the state’s cities and towns. As the snow melts in the mountains, it collects in reservoirs and is released through various dams. Arizona has an extensive system of over 180 miles of canals that move the water into the cities. With all that water moving in and out of the state, Arizonans have embraced it, and nearby lakes offer year-round fun.

dinner cruises offer the perfect opportunity to watch the sunset while enjoying a meal. Another popular experience? The floating cabins at Scorpion Bay on Lake Pleasant. Fully outfitted, they have everything needed to take to the water in style. Saguaro Lake sits 40 miles east of Phoenix in the Tonto National Forest. Rocky canyon walls and towering saguaro cacti surround the 1,200-acre lake. It is at Steward Mountain Dam, constructed on the Salt River in 1930. Today, visitors head there for fishing, boating, jet skiing, and waterskiing. Excursions are available on the Desert Belle, which offers short sightseeing cruises to explore the lake. Depending on the time of day, bighorn sheep, deer, coyotes, or javelina might be spotted along the banks. Dining is available at Shiprock Restaurant. Nearby is Canyon Lake, which at 900 acres is smaller than Saguaro Lake, though it’s known to be more scenic—its shorelines along the red rock cliffs are popular. The east end of the lake winds through canyon walls, and bighorn sheep, bald eagles, deer, javelina, and other wildlife are common sights. Visitors can enjoy boating, waterskiing, jet skiing, hiking around the shore, and fishing. One popular activity is a cruise around the lake on The Dolly Steamboat, which offers dinner cruises, as well as scenic and astronomy cruises. Bartlett Lake, also in the Tonto National Forest, is about 45 miles northeast of Phoenix. Bartlett stretches for 2,815 acres and is fed by the Verde River. The marina offers boat rentals, kayaks, stand-up paddleboards, and jet skis. Dining is available at the family-owned The Cove at Bartlett

Lake. While Bartlett Lake is an ideal day trip from Phoenix, camping is also available on the shoreline, under the seemingly endless starry skies. Each of these lakes is within a reasonable driving distance from Downtown Phoenix. For further adventures, some notable lakes situated a bit farther from Phoenix are still perfect for a day on the water or an extended trip. Apache Lake, also in the Tonto National Forest, is about 70 miles east of Phoenix, surrounded by the Superstition Wilderness Area and Three Bar Wildlife Enclosure. It was formed in 1927 after the Horse Mesa Dam on the Salt River was completed. Along with fishing and boating, the 17-mile-long lake offers hiking and camping. Apache Lake Marina & Resort also has a lake-view hotel, making it an ideal base for exploring the area. Scenic Apache Trail is an 80-mile loop that runs along the lake and offers some of the most spectacular scenery in Arizona. Roosevelt Lake—the largest lake located entirely in Arizona (Lake Powell and Lake Mead are larger but overlap into neighboring states)— spans over 21,000 acres. Officially named Theodore Roosevelt Lake, it was formed after the completion of the Roosevelt Dam on the Salt River in 1911. When constructed, Roosevelt was the world’s largest man-made lake. There are 128 miles of shoreline ideal for hiking and watching wildlife, and fishing and boating are popular on the water. Summer water temperatures can reach 90 degrees Fahrenheit, and numerous sandy beaches along the shoreline offer opportunities for camping and playing in the tepid water. There are campgrounds, day-use picnic facilities, hiking trails, and a marina. The restaurant Ffinch’s Waterfront Kitchen and Bar is named for David Ffinch, who created Roosevelt Lake Marina. THE DAWN OF A DRINK Attributed to an Arizona sunrise, the Arizona Biltmore may be the birthplace of the iconic Tequila Sunrise cocktail

Tequila. Orange juice. Grenadine. Ice. The ingredients may be few and simple, but a Tequila Sunrise is vibrant, impactful, and stunning. And, there’s a good chance it was created here in the Valley, at the iconic Arizona Biltmore, A Waldorf Astoria Resort, the Arizona landmark and a resort known for its Frank Lloyd Wright architectural style and Hollywood history. Many authorities, from the tequila brand Tres Agaves to Vintage American Cocktails to Wikipedia, attribute its creation to bartender Gene Sulit—who worked at the Biltmore for at least 35 years—in the 1930s or 1940s. Its original ingredient list included tequila, crème de cassis, lime juice, and soda water. While many other authorities also attribute the cocktail’s creation to Sulit at the Biltmore, there is also speculation that it may have been invented elsewhere. “Difford’s Guide, one of the world’s leading authoritative cocktail publications, was the first well-known cocktail book that mentions the beverage. It also mentions that an almost identical drink was published, albeit under a slightly different name, in Hollywood Cocktails, in 1933. Additionally, Waldorf Astoria publicist Ted Saucier credited Vernon O. Underwood, out of Los Angeles, as the creator of the drink in his 1962 book, Bottoms Up!,” says Jim Kearns, Arizona Biltmore director of beverage, who says there is also a mention of the drink dating back to the 1930s at the Agua Caliente racetrack, hotel, spa, and casino resort in Tijuana. “Since two of the publication citations place the origin of the cocktail in Los Angeles, it’s fairly likely that Gene

Sulit either learned or created the Tequila Sunrise when working/traveling to Los Angeles, or even in Tijuana, and then popularized it at the Biltmore once back in Arizona.” The drink’s name has often been said to be a nod to Arizona’s famous stunning sunrises. When mixed, the ingredients create a visual gradation. The original recipe would have brighter shades of red and pink, diluted by the soda, floating near the top of the glass, darker shades in the middle, and then the purple of the cassis and the red of the grenadine settling to the bottom. Though now made with fewer ingredients—it was recreated in the 1970s by bartenders Bobby Lozoff and Billy Rice at the Trident Hotel, where Mick Jagger of The Rolling Stones tried it—today’s mixture produces similar results. “A concoction of bubbly soda and a squeeze of lime juxtaposed with the rich fruit flavors of the cassis and grenadine, the Tequila Sunrise is the ultimate refreshing drink for quenching one’s thirst under the warmth of the Arizona sun, not to mention that the layered colors reflect the vibrant sunrise we see every morning,” says Kearns. Today, guests can still grab a seat at The Wright Bar or McArthur’s (the renamed locale of Frank & Albert’s) at Arizona Biltmore and sip a Tequila Sunrise at the very spot where it may have been created. “We’re proud of Arizona Biltmore’s illustrious history, especially known as an oasis in the desert for Hollywood’s Golden Age, so it’s fitting that one of the world’s best-known cocktails traces back to that era of glamorous leisure under the Phoenix sun,” Kearns says. One by one, Old Town Tortilla Factory chef Miriam Cortes takes a golf ball-sized masa sphere from a sheet pan holding a hundred or so of them and places it on a flour-dusted surface. After flattening it with her left hand, she feeds it through the large stainless-steel machine made specifically to further flatten the masa pancake, yielding a circle that starts looking like the beloved flavored tortillas for which the restaurant is known. Then, she places it on a hot griddle top and waits for the telltale sign that it’s ready. “You see the bubbles?” Cortes says, pointing to the little air pockets forming atop the tortillas as they quickly cook. “That’s when you know …” With a light touch, she uses her finger to gently apply pressure to the bubbles, releasing the air, so that the tortillas get nice and flat and are easy for her to lift off the scorching cooktop using her fingers. On a typical night, Cortes will use this process to churn out as many as 2,000 flour tortillas. This time it’s cheddar cheese, but sometimes she’s flipping black bean or VS 86

jalapeño varieties. Twelve flavors are in the regular rotation, but throughout the year, she treats guests to seasonal inspirations such as cinnamon, mango, strawberry, and pina colada. For more than two decades, Cortes has helmed the tortilla station and, during that time, crafted about 40 different flavors, along with 25-ish custom-infused butters, some flaunting the familiar garlic or chives, and other out-of-thebox creations showcasing blackberry, Parmesan, and mango. The tortilla-butter combinations are nearly endless, and Cortes embraces the opportunity and challenge of giving patrons that unique experience that has drawn visitors and Valley residents alike to this charming Scottsdale restaurant for just over a quarter of a century. Clearly, Old Town Tortilla Factory is not just a clever name. Nestled in the heart of Old Town Scottsdale amid art galleries and shops, the restaurant calls a historic 75-year-old adobe house home. A 1,400-square-foot flagstone patio is surrounded by lush greenery and shaded by 100-year-old pecan trees.

And just beyond this canopy, in the restaurant’s foyer at the tortilla station, is where Cortes and her team make the magic happen before captive dinner audiences. Here, diners are spared the standard free chips and salsa duo and treated to these handmade tortillas and flavored butters. “She has all the good secrets,” restaurant co-owner Chad Flaum says of Cortes, who was born and raised in Puebla, Mexico, just outside of Mexico City. “You name it, she can do it.” When Flaum and his father, Jim, purchased the restaurant, it had been operating for five years with live tortilla-making a part of its charm. The Flaums wanted to keep the tradition going—and with good reason. This amenity captures much of the well-deserved spotlight, making the eatery stand out among the bevy of Mexican-inspired establishments throughout the state. “No one does it and that’s what we’re known for. It’s a point of pride to be the only one,” Flaum says. “It’s a unique experience. It’s very Southwest.” In one week, Cortes goes through anywhere from 300 to 600 pounds of flour, plus dozens of pounds of fresh chiles, spinach, and other ingredients required to make her tortillas. And that’s during the slow months. By now, she’s a well-seasoned pro, putting on a real-life cooking demo that most people don’t have the opportunity to witness outside of cooking channel shows. For many guests, it’s the first time they’ve seen a tortilla made, let alone a fresh, non-supermarket, pre-packaged stack of them. Hearing oohs, aahhs, and declarations like “It smells so good in here” and “How do you not burn your fingers?” queries are routine. Cortes admits to getting nervous every now and then when she feels people are staring and watching every move and nuance, sometimes with their smartphones to capture the memory. Once, there were two little girls, sisters, who came in with their parents. The children were transfixed and amazed at not only the tortillas being made before their eyes but also at Cortes’ skill and speed. Cortes overheard their conversation and gave the girls a tortilla to try right there. The immediate reaction? “Wow, Mom!” While one would think Cortes is used to the attention

garnered by the craft she’s done since her mother taught her when she was 10, when telling this story, it’s clear that the fact that she is putting on a show every day isn’t lost on her. “I could see the little girls’ expressions,” Cortes says as a smile slowly overcomes her face. Cortes has been making tortillas for most of her life, learning from the strictest teachers and pleasing tough critics, but this moment seems extra reassuring. She offers a slight nod as she says, “It made me realize, my tortilla is good.”

For more than 30 years, Arizona Cowboy College has taught people to fulfill their dream of cowboy life, despite any warnings from their mamas

Despite Waylon Jennings’ and Willie Nelson’s famous warning to mamas about their babies’ grown-up career choices, thousands of men and women come to Arizona to be a cowboy or cowgirl. And on the edge of North Scottsdale, where the desert’s pale blue skies and brilliant rays of sunshine paint an idyllic Western landscape that movies dream of emulating, they defy the admonition touted in the legendary country tune at Arizona Cowboy College. Anyone assuming that they are heading here with visions of a fun City Slickers vibe or breezy week to check another item off their bucket lists, think again. For more than three decades, every attendee arrives with a very serious attitude about what they want to accomplish, whether the goal is personal or professional. “They want to learn to ride. Some want to retire and have a ranch of their own. Some want to do this for a living and work on a ranch. Everyone knows what they’re in for,” says Lori Bridwell, who owns and runs the college she founded with her late husband, Lloyd, in 1989. Even when school is not in session, the property is a fully operating horse training facility. Every day, the horses and cattle need to be fed, cared for, and loved by the professionals who do it best. They include A RRI V ED G UEST B OOK

of practice and is much harder than one would think. “This is as hardcore as you want it to be,” Bridwell says. Lessons in the arena are followed by lunch and a long desert ride. Everyone then winds down with a beer and dinner at Bridwell’s home on the property. While real cowboys are used to roughing it, here, everyone has their own bed with pillows and blankets. However, they bunk together in a single large room equipped with one shower and one toilet. When Mother Nature cooperates, some take their bedding outside and sleep under the dark night sky and canopy of twinkling stars. Streamlined course versions are offered in three-day, one-day, or half-day classes. The college takes students beginning at age 18, with the average age range being 50-70. The participants hail from all over the globe, seeking to grasp a piece of the cowboy life to take back to Brazil, Germany, Japan, or wherever home is. Bridwell had her first horse at age 4, and has

senior instructor Rocco Wachman, famous for his role in Country Music Television’s Original Series Cowboy U 2003, Cowboy U 2004, and Cowboy U Molokai. Wachman and Lloyd developed and taught the school’s curriculum and were best friends until Lloyd’s sudden death in 2000. Prospective cowboys and cowgirls embrace the full rancher experience via week-long sessions that encompass much more than riding. Although there is a lot of riding, making this, Bridwell says, usually the toughest part of what can be a grueling yet fun adventure in the desert. By the end of the course, students will have learned roping—first practicing on a still dummy cattle and then on a chute horse, where they straddle atop a metal apparatus as they learn to rope a steel cattle emerging from a pen. The course commences with a psychology session about horses, and then everyone is trained to groom their equine companion and saddle them, which can be a daunting task that takes a lot

Lloyd was in Mexico helping a friend at his father’s ranch when he was bitten by a blister beetle. While fading in and out of drowsiness at all hours, he kept seeing infomercials on television about schools teaching certain trades. Lloyd was teaching roping, and his wife taught kids to ride and participate in horse shows, so he thought, “Why not teach people how to be a cowboy?” He put an ad in the newspaper, and people flocked. But it’s more than riding and getting a taste of cowboy life. Often, the lessons become life-changing. “It’s learning about how tough you can be. This is a big animal that you can be in charge of. It’s been an incredible personal journey for them,” Bridwell says. “Horses are empowering.” One woman sent Bridwell a letter a year after she completed the course. She told Bridwell that attending the college gave her the courage and strength to leave her abusive husband. Today, she is happily married to a man who treats her the way she deserves. “She was so strong after this. She was like, ‘I can do this,’” Bridwell recalls. Some come as experienced riders craving to take their passion to a new level. Others come without ever having been on a horse. In all cases, the transformation and impact are stunning every time. “I love seeing it through other people’s eyes,” Bridwell says. “When you see someone experience something for the first time, it’s like anything you experience for the first time. It’s amazing.”

Valley native Casey Likes takes on Broadway and film, and shares what it’s like to portray iconic roles INTERVIEWED BY MICHELLE GLICKSMAN

When did you know you wanted to be an actor?

I never really had a “moment” when I knew. I’ve had many moments that have reconfirmed my love and drive for it, but truthfully, I don’t remember ever not being an actor. I started when I was 3 years old, and I’ve always loved it. The first commercial I did at 3, my mom was afraid I’d be too nervous, but then the director had to tell me to not say my lines right into the camera lens. I never “knew,” I just always have been. What was it like to have your first Broadway role be the lead in a new show?

To quote last year’s Best Picture nominee, it was Everything Everywhere All at Once—which is as thrilling and terrifying and magical as you might think it would be. It was premiering a show and role I worked on for three years. I was 17 when I started, and it was accomplishing a dream I’ve had my whole life. It was all really meta because Almost Famous is about a kid whose dream comes true at a really young age, and he gets thrown into the deep end when he runs away with the rock stars for a while and learns so much. By the end, that kid comes into his own, and that was that experience for me. I grew up, I found another family, and I learned so much. You’re now the lead in another Broadway show. What is it like to play Marty McFly?

I really am just having a blast. I know the gig a little more this time than I did when I was 17. I’m eating the right things, I trained to get in shape for it, and it’s really just been nice to step into something so iconic once again because it comes with a new group of passionate fans who care so much, and I think from my previous experience of playing well-known characters, I’ve learned how much it means to them, and that it needs to mean just as much to me in order to make them happy.

All-time favorite role?

That’s like choosing children. I love them all for different reasons. I’ve been very lucky that my career so far has allowed me to show so many different sides of myself. William was “uncool,” Marty is “cool.” It’s in the writing! But humans can be both, because humans are complex, and I treat my roles as such. The roles I’ve been blessed with allow me so much room to show that. So long story short, I don’t have one. Favorite places to visit in the Valley?

In addition to Broadway, you’ve also starred in movies. Do you have a preference of stage versus film?

I don’t! I love telling stories. I love the different ways you can tell stories to make them resonate in different ways. I love adapting to different mediums. I just love being around any way to tell an interesting story.

Ironically, all my answers have the word “theater” in them. I love the Harkins and Majestic and Alamo movie theater chains. Also, Greasepaint Youth Theatre is where I did so much theatre growing up, so it’s a second home, as is the Chandler Center for the Arts, where my mom directs shows with Chandler High School.

Encircled internally with a concrete bench, visitors are invited to observe the sky through an elliptical opening in the ceiling. Lights embedded in the walls above the bench subtly shift one’s perception of the sky’s color. S’edav Va’aki Museum (formerly Pueblo Grande) is recognized as the gateway to Phoenix Heritage. Long before Euroamericans moved into the area known as Phoenix, the Salt River Valley was home to a thriving civilization. These people developed a unique cultural landscape that consisted of large villages, small farming communities and a prehistoric canal irrigation system whose engineering and agricultural potential remains unmatched by any pre-Columbian society in North America. The City of Phoenix preserved several features of one of these ancestral villages, including sections of canals and a va’aki (platform mound). These can be seen only at S’edav Va’aki Museum.

The Shemer Art Center is set at the base of Camelback Mountain, in one of the first homes built in Arcadia, in 1919. Purchased and donated by Martha Shemer to the city of Phoenix in 1984, it offers a unique and historic atmosphere for residents and visitors of all ages to learn about, experience, and enjoy visual art, through classes, workshops, lectures, exhibitions, and events. Visitors to this Phoenix Point of Pride can also enjoy the outdoor sculpture garden and the boutique gift shop, all featuring original works created by Arizona-based artists.

The Market by Jennifer’s Restaurant + Bar is a warm space with a touch of elegance, located in the Arcadia neighborhood, it features seasonal menu’s made with locally grown, sourced and crafted ingredients. Jennifer Russo is an award winning female chef; Food Network Chopped contestant , featured chef in Phoenix Looks and owner/head chef of The Market and Jennifer’s Catering, she loves to make custom menus that feature fresh twist on classic dishes. Brunch offers a different vibe with a local inspired menu and live music on the patio. The market is open Wednesday-Friday for dinner from 4:00pm to 9:00pm, Saturday from 9:00am-9:00pm for brunch and dinner, and Sunday from 9:00am-3:00pm for brunch. Dine in, curbside deliver and catering.

Moxies is an upscale casual restaurant located in Scottsdale’s Fashion Square Mall, offering a globally inspired menu featuring modern American cuisine and handcrafted cocktails in a vibrant and interactive atmosphere. You’ll find signature dishes like our Chipotle Mango Chicken and Veg Power Bowl, as well as other items like our Açai Bowl and Kale & Quinoa Salad. The restaurant features an indooroutdoor space centered around a large island bar, a shaded patio with misters for when it’s hot, and fire tables combined with heaters for when there’s a chill in the air.
