Recipes LIME CHICKEN Challenge Rate: 2/5

• 500g organic free-range chicken wings • 2 fresh organic limes • 2 cloves of garlic, peeled and left whole • Sea Salt and Black Pepper • Organic extra-virgin olive oil

Method:

Easy Chicken Dinners Tip: Use organic ingredients, free-range eggs and sea salt where possible as it is tastier, better for our health and the earth. Each ingredient that I have labelled organic has previously been found in Hua Hin as organic. Biodynamic, unsprayed, chemical-free and wild-crafted, are also good choices. This month I will show you three ways to cook chicken fillets, drumettes and wings with vegetables for a healthy and easy home-cooked meal to serve 4 people. Enjoy!

Preheat the oven to 160 Degrees C. Line a baking dish with baking paper. Rinse and drain the chicken wings and lay in dish. Pour a drizzle of olive oil over them, add sea salt and pepper to your liking and rub seasoning into chicken. Pour on freshly squeezed lime juice and throw some lime rind and garlic into the dish for aromatic flavouring. Bake for an hour until the meat is cooked through and the chicken is golden on top.

PAPRIKA CHICKEN Challenge Rate: 3/5

Ingredients:

• 3 tbsp. ground paprika • Sea Salt and Black Pepper • Organic extra-virgin olive oil • Rice Bran oil • 500g organic free-range chicken fillets • ½ cup organic unbleached flour

HONEY AND SOY CHICKEN Challenge Rate: 1/5

Method:

Ingredients:

Rinse and drain chicken fillets and place on a plate. Pour a light drizzle of olive oil and sprinkle of sea salt over them then rub into chicken. In a bowl combine flour, paprika, salt and pepper. Heat a fry pan on the stove, grease with rice bran oil. Cover each piece of chicken in the flour mix and then fry the fillets on the pan, on each side until white, crispy and cooked through. Sprinkle any remaining flour onto the chicken, into the pan whilst cooking. Optional Step: Instead of using olive oil you may rub the chicken fillets in an egg mix with salt and black pepper before coating them in flour, if you feel the chicken needs the egg for the flour to stick.

• 500g organic free-range chicken drumettes • ½ cup pure soy sauce • 1 ½ tbsp. raw organic honey • Organic extra-virgin olive oil • 1 tsp. sesame seeds

Method:

Preheat the oven to 160 Degrees C. Line a baking dish with baking paper. Pour a light drizzle of olive oil on the bottom of the lined dish. Rinse and drain chicken drumettes and add to dish. Pour soy sauce and honey onto the chicken, then rub and mix in well. Sprinkle with the sesame seeds. Bake for an hour until the meat is cooked through and the chicken is golden on top.

VEGETABLES To complete the meal prepare some vegetables. It is best to choose vegetables in season to use. Enjoy!
