Dry farming is a farming method where all irrigation is cut off once plants have become established. Because of the torrential rains in the winter, and the bone-dry summers, the California climate naturally allows for this method. The lack of water stresses the plant and forces its roots deep into the soil, often more than 5 feet, to seek out water. The plants subsequently absorb water and nutrients slower than conventionally grown tomatoes, leading to a smaller, more richly flavored fruit. (Dry farmed tomatoes are always grown organically.) The dry farmed tomato has a dense flavor without the excess juice that results from more frequent irrigation.

Dry Farmed Tomato Preparations

Use dry farmed tomatoes in anyrecipe that features tomatoes asthe main ingredient including:

• raw tomato salads

• salsa

• jam

• oven roasted with garlicand balsamic

• sauces

• drizzle with olive oil and sea salt
