TEACHING KITCHEN

All classes are held at the Teaching Kitchen, located across the street from the Co-op at 537 G St. Advanced registration and payment for classes must be made ahead of time by visiting the class page at davisfoodcoop.eventbrite.com Classes are open to all ages unless noted otherwise. Some classes may offer complimentary beer or wine. Attendees over 21 should be prepared to show ID. For questions about classes or to cancel a reservation for a class, contact marketing@davisfood.coop. Class reservations will be fully refunded if they are cancelled at least 7 days in advance or have their fees applied to a different class if cancelled at least 48 hours in advance.

Our Cooking Class Instructors: Christine Ciganovich: Christine is an award-winning chef who serves as the Co-op’s Marketing Specialist and cooking class instructor. Diagnosed with an auto-immune disorder as a young adult, she became an expert in adapting recipes to fit her dietary needs. Christine believes good food is medicine for our bodies and souls and wants everyone, regardless of dietary restrictions, to find joy, curiosity, and creativity in the kitchen.

Laura Doyle: Laura Doyle is a cooking instructor who has been teaching classes through the Davis Food Co-op, the Peregrine School and privately for over 10 years. She teaches kids and adults basic culinary techniques, as well as baking bread and pastry, all while focusing on using local and seasonal produce instead of processed foods.

Anna Lopez: Anna Lopez is the Education and Outreach Coordinator at the Davis Food Co-op. With her 6-year history at another co-op in South Dakota, Anna is excited to be in the Teaching Kitchen, showing folks and even little ones how to make delicious meals. Her love language is feeding the ones she cares about through home cooked meals, ones with lots of intention and love. Pg 3

Quiche

One of the ultimate brunch foods that is also great for lunch and dinner, everyone should have a great quiche recipe in their back pocket. We will start by making the dough and learning how to ensure a crisp bottom without having to prebake the crust. Next we will mix up the custard and learn how to balance the fillings for a satisfying bite. Pg 4

Egg Dyeing on the Patio

Folks of all ages are welcome to come dye a hard-boiled egg on the Patio! In addition to food color-based and natural dyes, we’ll have materials to decorate your beautifully colored egg. It will only take 5-10 minutes to dye an egg so stop by anytime between 12 and 2 pm.

Take a tour of the Mediterranean without leaving Davis! Join us as we cook our way across the Med, making dishes from Spain, France, Palestine, Cyprus and Morocco in this hands on class. This class is gluten free (we will use dairy and meat/seafood in class).

Vegan Spring Rolls

One of our most popular classes is back! For this iteration, we’ll focus on raw foods, seasonal produce, and a few unique ingredients (kelp noodles, anyone?). This is a hands-on class so participants will make several rolls from scratch using a variety of fruit, veggie and grain fillings. In addition to our rolls, we’ll make a dipping sauce to go with them. This class is gluten free and vegan. Pg 6

Everything But the Gluten Bagel Party

Risotto

Creamy risotto is a delicious supper that, once you know the technique, is much easier to cook up than you might think. It’s also a great base to highlight all the fabulous produce on the coop shelves. We will work together to make a few variations on this delicious rice dish and then taste them along with a crisp spring green salad that balances out the creamy meal.

Join Christine for a morning of making cream cheese and gluten free bagels from scratch! While our bagel dough is rising, we’ll make cream cheese to flavor in a few ways. We know gluten free baking can be tricky, so we’ll share all our favorite tips in addition to these recipes you can make again at home! This class is gluten free and vegetarian (we will use dairy).

Pâte à Choux for Éclairs & More

Love cream puffs and éclairs? Want to make cheesy gougères for your next cocktail party? Learn this simple but impressively versatile pastry dough known as pâte à choux! In just a few hours, you will learn to mix, pipe and properly bake them all, plus create some delicious fillings and toppings.

Cooking with Stone Fruit

Bake Your Own Bread

When: Wednesday June 14 5:30 - 7:30 pm Cost: $40 $36 for Owners Instructor: Christine Ciganovich

When: Friday, June 23 5- 8 pm Cost: $50 $54 for Owners Instructor: Laura Doyle

Stone fruit season is a special one: cherries, peaches, plums, nectarines and more can be enjoyed out of hand or baked into sweet treats, but not in this class! We’re using stone fruits in strictly savory applications. We’ll talk tips for cooking and eating seasonally before we chow down on the delicious dishes we make.

Learn how to mix, knead, shape and bake a simple loaf of bread. We will go through each step to learn why changing the amount of just one ingredient can change the whole loaf, how to incorporate other flours and flavors into your bread and watch a demonstration of how to make a number of different loaf shapes. Each student will go home with some dough to bake the next day.

Fresh Fruit Tarts

Spring fruits and berries lend themselves well to sparkling fruit tarts. We will make a tender tart dough that will hold up well to pre baking. While that chills and bakes we will cook some pastry cream, slice fruit and mix up a jelly glaze. Each student will assemble and decorate their own mini tart.

Kids Cheesy Sweet Potato Soup

We will learn how to make veggie broth from our veggie prepping scraps and make a delicious, cheesy sweet potato soup!

Kids Crunchy Kale Chips

When: Thursday, May 25 3:30 - 4:30 pm Cost: $25 $22.50 for Owners Instructor: Anna Lopez Join us as we embark on a kale-filled adventure and learn how to turn this leafy green into a delicious and nutritious snack. Not only will you get to make your very own crunchy kale chips, but you’ll also learn all about the benefits of kale and why it’s so good for you. In class we will make a Vegan Cheesy Kale Chip, Pizza-flavored Kale Chips, & a Honey Sriracha Kale Chip. Pg 11

Kids Pizza Rolls When: Thursday, June 22 3:30 - 4:30 pm Cost: $25 $22.50 for Owners Instructor: Anna Lopez Our pizza rolls are perfect for a quick snack or a meal on-the-go. In this class, we’ll be making 2 different kinds of pizza rolls that are sure to satisfy every kiddo’s taste buds: Pesto with a white sauce & a classic Pepperoni.
