This layered meat dish is simmered in an aromatic, savory tomato sauce and olives. Each layer has sweet fried plantains and topped with melted cheese before being served with rice - Fricase de Pollo, another Puerto Rican staple, is made with chicken braised in wine with potatoes and carrots and erved with rice and beans - Bistec encebollado, seared marinated flank steak served with rice, beans and plantains - Triplete Sandwich features chicken, roasted pork and ham(yes, all three meats), served with sautéed onions, green peppers, melted cheese, lettuce, tomato, and potato “stix” on a hot press bread. For mains, the pernil is a must-try, as is the Mar y Tierra, the surf-and-turf dish that includes flank steak with Criollo sauce served with shrimp, white rice and tostones or maduros. Save room for Jon’s Flan, the dessert made by Mercedes with love.
