As you may have noticed we have made some changes to the magazine! We have decided to change our name to reflect that we are very much a lifestyle magazine, along with the appearance, but also to allow us to expand. 5 TIPS FOR CUTTING YOUR HEATING BILLS 1. Service or replace the boiler. For your home’s boiler to work most efficiently, it needs to be serviced annually by a Gas Safe Register (www. gassaferegister.co.uk) engineer. If you can afford to, replacing an old boiler with a new one will improve your central heating system and save you money. A boiler that’s 15 years old or more is only around 60-70% efficient, so around 30p-40p of every pound spent on heating and hot water is wasted. “Updating to an A-rated condensing boiler, such as a Worceste Greenstar, could make your heating system up to 90% efficient,” says Martyn Bridges of boiler manufacturer Worcester, Bosch Group. 2. Insulate or replace the hot-water cylinder New cylinders for boilers, such as Worcester’s Greenstore range, come with a thick layer of built-in insulation, but lots of us have older cylinders that benefit from being fitted with an insulation jacket (at least 75mm thick). According to the Energy Saving Trust, fitting a jacket to an uninsulated cylinder will save you around £85-£130 a year (based on a typical gas-heated home in England, Scotland and Wales). Cylinder jackets are inexpensive and easy to fit - try Mangers Cylinder Jacket (£14.58, B&Q), which is180mm thick. 3. Insulate pipes By insulating heating/hot water pipes, you prevent unnecessary heat loss and help to stop them freezing in winter. The easiest way to insulate pipes is to use pre-scored foam tubes, which snap over and around the pipes and come in different diameters for a snug fit. 4. Upgrade the radiators and valves. To ensure your radiators are working at full capacity, bleed them with a radiator key or small screwdriver (when the heating is off and the radiators are cold), depending on the type of bleed valve. Many older radiators don’t have adjustable valves - they’re either on or off, so fitting new valves will enable you to turn the heating down when you need to. “I would always recommend fitting thermostatic radiator valves, as they offer individual room comfort and save energy by not allowing rooms to overheat,” says Bridges. “They regulate or cut off the flow of hot water to individual radiators, while the programmer and room thermostat control the heat to

the whole house. A survey indicated that a central heating system with a full set of controls and thermostatic radiator valves could save up to 40% compared to an uncontrolled system.” 5. Stay in control Smart systems, which enable you to control your heating and hot water from your smartphone or tablet via an app, are all the rage. One of the newest is therM, which is compatible with any heating system with a thermostat - if you can do basic wiring, you can fit therM yourself (an internet router is also required). Smart systems like this enable you to control your heating and hot water precisely and remotely, so instead of leaving the heating on when you go out on a cold day, you can turn it on using your smartphone when you’re on your way home. HOME IMPROVEMENTS five tips for better lighting and renovation mistakes you don’t want to make

1. Lighting should be at three levels in a room - the floor, walls and ceiling. Plan your scheme in advance - if you’re having electrical work done, make sure the sockets are fitted where you want your table and floor lamps to be. Wall lights and target lighting should also be planned at this stage. 2. Creative Lighting can be more useful than just an overhead light in each room. In the bedrooms, do you want wall lights over the beds for reading, or just bedside lamps? Don’t forget wall lights in the bathroom, perhaps for creating a relaxing atmosphere when you’re soaking in the tub, and on either side of the mirror for shaving and applying make-up. An illuminated mirror is another option. Target lighting, such as over-counter lights in kitchens, can be both practical and attractive. 3. “Consider how the room will be used and at what time of day,” says Hector Finch, owner of lighting store Hector Finch (www.hectorfinch.com). “This has an influence on whether the lighting should be overhead, localised for reading, or purely for atmosphere. Lighting should be considered in relation to the use of the room and the times that good light will be most needed.” 4. If you want to focus attention on a feature, light it up. This is often best achieved with a low-level lighting scheme, where walls are ‘washed’ 8 VIVID | JANUARY/FEBRUARY 2015

with light, or where an area is accented with spotlights. Statement pieces, such as chandeliers, can be a stunning feature, but give them room to ‘breathe’. “Think of lighting as a means of adding personality and atmosphere to a room and home,” says Finch. “Table lamps can be beautiful objects in their own right, not just used to provide light, and shades can be chosen to echo other colours in the room.” 5. In a room with a high ceiling, think carefully about the height and size of the ceiling light - a small one may look silly. Most plastic ceiling roses come with short flexes, but you can buy longer flexes so the light isn’t ‘stranded’ too close to the ceiling. A longer flex will make it look more in proportion to the room and create more of a feature, especially with a large light fitting or shade. 6. Don’t cut corners - Don’t take on a big project unless you can afford to do it properly. If you’re going to spend money on building work, ensure you get the maximum benefit from it, both in terms of improving your home and adding value to it. With loft conversions, for example, incorporating a dormer window (planning laws permitting) will give you most head height and useable space in the loft room/s. Changing the line of the roof from sloping to ‘straight’ (looking from the front or back), with a dormer at the back

HOME IMPROVEMENTS spanning almost the whole width of the house, costs more but gives you the best possible loft room/s. Some homes have a converted loft that can’t officially be called a bedroom because it doesn’t comply with buildings regulations. If you can make your conversion comply, and get a completion certificate to prove it, it will be worth a lot more. 7. Don’t overspend - Don’t overspend on your home, unless you’re not concerned about recouping the cost. It’s easy to splash out on expensive home improvements, but it’s wise to spend in proportion to the value of the property and the area. Don’t, for example, pay £30,000 for a kitchen in a property that’s only worth about £150,000, as you’re unlikely to see that money back. 8. Don’t be too ruthless - Don’t rip out original features. In decades past, beautiful period features weren’t always as valued as they are now, but original cornicing, floorboards, fireplaces, doors and the like add

value and make your home more attractive and saleable. Features can often be restored if they’ve been removed, either original or reproduction ones - eBay’s a great place to find them. 9. Don’t be too different - Don’t ignore what your neighbours have done. Not improving your home in line with the rest of the neighbourhood could cost you dear. Let’s take windows as an example: if all or most of your neighbours’ homes have the original wooden sash windows, replacing your windows with UPVC casement ones will probably devalue your home. In some areas, UPVC windows are everywhere, so fitting them is more likely to add value than not. 10. Don’t ignore the rules - Don’t forget to get permission. Planning permission is, of course, sometimes required for building work, but it’s not always obvious when you need planning and when you don’t - if in doubt, ask the local council. Flats and maisonettes don’t have permitted

development (PD) rights, so if you live in one of these, you’ll need planning for things that you wouldn’t if you lived in a house, such as erecting a garden shed. Some houses have had their PD rights removed, so they have the same restrictions, and houses on ‘designated land’, which includes conservation areas, are subject to different planning rules to those that aren’t. If your home’s listed, alterations usually require listed building consent from the local council, or in some cases English Heritage. And if your home’s leasehold, you usually need the freeholder’s permission for alterations, depending on what the lease says. Even if you own a share of the freehold, you still need the other freeholders to agree. Julia Gray

Braised neck of lamb stew with dumplings

Neck of lamb or Irish stew as it is often known in its most popular form is the quintessential comfort food, and ideal for serving in cold weather. This type of meal is best served by long slow braising on a minimum heat setting. David Rhys Price

INGREDIENTS: 12 Rounds neck of lamb 2 Tablespoons sunflower oil 150 g plain flour Pinch of sea salt Pinch of powdered garlic Pinch of paprika Pinch of black pepper (one sealed plastic bag for tossing the seasoned lamb) 2 Tablespoons sunflower or olive oil 1 Green chilli deseeded and sliced 3 Onions chopped 4 Cloves garlic chopped 4 Carrots cut into rounds 3 Leeks cut into rounds 500g Whole new potatoes unpeeled 2 Litres chicken/vegetable stock 1 Tablespoon tomato puree 2 Teaspoons sea salt 2 Tablespoons Worcester sauce 1 Teaspoon ground black pepper 1 Dessertspoon caster sugar 16 VIVID | JANUARY/FEBRUARY 2015

1 Tablespoon lemon juice 200g Red lentils 2 Tablespoons chopped mint 2 Tablespoons chopped coriander For the Dumplings: 200g Self raising flower 100g Beef or vegetable suet 2 Teaspoons garlic powder Pinch of chilli powder Pinch of black pepper 2 Teaspoons table salt 2 Teaspoons dried sage Water for mixing. METHOD 1. Place the flour and other seasoning’s in a strong plastic bag, and then add the lamb pieces. Seal the bag and shake well . 2. Heat the oil in a large saucepan, and add the seasoned lamb pieces. Briefly brown the pieces so that they are sealed, turn off heat and remove the lamb. Leave to one side. 3. In another large saucepan heat the remaining oil, and add the chilli, garlic, onion. Then add the carrots, leeks and potatoes, plus a small amount of the stock . 4. Season with salt, pepper, Worcester sauce, lemon juice, tomato puree, and sugar. Mix well then add the

mint and coriander followed by the stock. Stir in the lentils and add the lamb pieces. 5. Bring to the boil, cover and turn heat down to the lowest setting and gently braise for two and half to three hours, or until meat is very tender. For the Dumplings: 6. Place flower and suet and the other dry ingredients in mixing bowl, and hand mix to a fine texture. 7. Gradually pour in the water a little at a time, and with a wooden spoon mix till just moist . If too much water is added add a little more flour . 8. Place the pastry on a flour dusted pastry board and kneed for a few minutes. 9. Shape pastry into a roll and cover with cling film. Place in fridge for up to an hour. 10. Half an hour before the strew is ready for serving, take the pastry and hand mould into golf sized balls. 11. Place each of the dumpling balls on the top of the stew about 50% above the gravy level. Heat for around 30 minutes with the lid off until the dumplings have doubled in size. A

round 35,000 fellow fromage fans traipsed through the International Cheese Awards in Nantwich earlier this year, housing over 4,000 dairy entries all vying for a whiff of recognition from industry experts and consumers alike. Nigel White, secretary of the British Cheese Board debunks some myths and celebrates all that’s wonderful and delicious about this dairy delight... THE FAT DEBATE We might eat less cheese than our neighbours on the European mainland, but that hasn’t stopped fromage being blamed for an array of health problems on our shores. “I think what’s happened is cheese has been caught up in the long-running saturated-fat debate, and products that contain saturated fats have almost been demonised out of ignorance,” says White. “The great thing about cheese is you’ve got high quality protein, calcium, potassium, phosphorus, as well as fat-soluble vitamins. That’s a huge array of nutrients within that one small piece.” SLEEP EASY Charles Dickens has a lot to answer for, suggesting cheese induces nightmares in A Christmas Carol. But the British Cheese Board has conducted research and found a small piece of cheese before bed can actually help give you a good night’s sleep. “We think the reason for that, and it’s not definitive, but cheese and milk contain one of the essential amino acids, a protein called tryptophan,” explains White. “When that gets into the brain, it’s broken down into two other amino acids, both of which are relaxants, so the body’s producing its own sedative to help you sleep well.” TOLERANCE LEVELS Don’t let the fact you’ve been told you’re lactose-intolerant become between you and cheese. “Would you believe me if I say that most of the cheese we eat in this country is, to all intents and purposes, 20 VIVID | JANUARY/FEBRUARY 2015

lactose-free?” asks White. “That’s because lactose is a sugar, sugar’s a carbohydrate, and if you look at the carbohydrate content on the label of any cheese we make in this country, the carbohydrate content is .1 of a gram per 100g.” It’s the whey (of the Little Miss Muffet rhyme) - that’s often thrown away - which contains the lactose. DON’T BE BULLIED When asked for tipple suggestions to accompany your cheese, White has a simple answer: Anything you like. “Red wine with cheese is what the so-called gourmets have put forward, but for a lot of people, red wine is the most horrendous clash with cheese,” he says. “If you’re eating an 18-month-old West Country Farmhouse Cheddar, then maybe a robust red wine would stand up to it well, but equally, I’m as happy to drink dessert wine with a really mature Cheddar, and even malt whiskey with a touch of water, which I think goes beautifully with blue Stilton. People should just experiment and find out what suits them best.” BE INSPIRED When considering your cheese board think if the following five cheeses that would meet the needs of most people around the table. Here are White’s suggestions: • I adore the West Country Farmhouse Cheddars. • Go for a Somerset Brie, which will go runny and have some pretty complex flavours in it. • Choose a Creamy or Mature Blue Stilton, which has been kept for a bit longer and should be nicely broken down with a mellow flavour. • Try a unique local cheese, like St Giles, a Saint Paulin-type soft, springy cheese, which isn’t strong but a delight. • I would also have a blended cheese, such as a white Stilton with mango and ginger.

VINTAGE CAULIFLOWER MAC CHEESE INGREDIENTS: (Serves 4) 300g dried macaroni 1 medium cauliflower, broken into florets 25g butter 40g plain flour 450ml semi- skimmed milk 1tsp wholegrain mustard 100g vintage (or mature) Cheddar cheese, grated Freshly ground black pepper 12 cherry tomatoes, halved METHOD: 1. Cook the macaroni in a large saucepan of gently boiling water for five minutes, then add the cauliflower. Cook for five to six more minutes, until the pasta and cauliflower are tender. 2. Meanwhile, make the easy all-in-one cheese sauce. Put the butter, flour and milk into a non-stick saucepan. Heat, stirring constantly with a small whisk until thickened and smooth. This is the best way to make a smooth, lump-free sauce. 3. Remove the sauce from the heat and add the mustard and half the cheese, stirring it in until melted and smooth. Season to taste. 4. Preheat a medium-hot grill. Warm a large baking dish underneath it. 5. Drain the cooked pasta and cauliflower thoroughly. Tip them into the baking dish and pour the hot cheese sauce on top. Arrange the cherry tomatoes over the surface and sprinkle with the remaining cheese. Grill for five to six minutes until golden brown, then serve. The use of unique ingredients continues with the selection of main courses for Sindhu, here we see Organic Salmon, Stone Bass and Gressigham Duck all given Atul’s touch as well as more customary Lamb, Chicken and Tiger Prawns featuring on the menu. However, special mention was given by one diner recently rating the Saddle of Venison with Cardamom and Mace as ‘perfection’, high praise indeed. “Will we need to speak French?” my 14-year-old daughter Grace asks on the journey to Mont Tremblant, Quebec’s top ski resort. Well, you don’t have to parlez Francais in this neck of the woods, but it certainly helps. We’re here for a girls’ week of skiing, shopping and spas, arriving at the eastern resort of Mont Tremblant (known as ‘Trembling Mountain’), one of the most family-friendly Canadian ski resorts, which is currently celebrating its 75th anniversary. The French influence is everywhere in this pretty, twinkling town, whose brightly painted Disney-like buildings form the base to 49 miles of runs. Only a day’s drive north from New York, Tremblant attracts Americans because, to them, it feels like France, like going to Europe without the long, expensive flight. For us, it’s a six-and-a-half hour flight from London and 90-minutes by car to the resort, far closer than its bigger competitor Whistler, in the west. There’s a French flavour to the pretty cobbled streets, as we find apres ski shacks serving not only poutine - a Canadian staple of French fries topped with gravy and curd cheese but also real French onion soup and Savoyard fare, including raclette and fondue, creme brulee and other Gallic delicacies. But for now, we’re here for the slopes; the cool cruisers, the gentle blues, the tree-lined runs and the black double diamonds for adrenaline junkies. Mont Tremblant has them all. First, though, be aware that this is a truly cold spot. On our first brilliantly sunny day on the slopes, the temperature is a teeth-chattering -18C and our eyelashes freeze while we’re waiting for our instructor. In February, you don’t want any flesh showing at all. Everyone wears full face ski masks or balaclavas under their helmets and goggles. You literally cannot see what expressions your ski buddies are making. The temperatures here in the east fluctuate massively, dipping to below -30C in the winter and soaring to 30-plus in the summer

Downtown Montreal Having said that, once the thermals are on, the handwarmers and footwarmers are in place and the sun is shining, Mont Tremblant is a blessing for intermediates like us. Half of the runs are deemed advanced, but many of the blacks are so well groomed, they’re more like European reds. With 95 runs over an elevation of 2,871ft, there’s plenty of action for skiers and snowboarders alike, whatever their level. The beauty of skiing in Mont Tremblant is that it’s pretty difficult to get lost. There’s only one mountain, with four faces. The south side, directly facing the village, is sunny and leads right back into town - which is ski-in, ski-out - while the north side gets the sun in the morning and takes you back up to the top of the mountain, with access to the south side and back to base. We practise our techniques on the Nansen , the longest run in Tremblant at 6km and green all the way. The other faces are the Versant Soleil (sunny side), which is home to the casino and more lodging, and the Edge, which is good for powder. JANUARY/FEBRUARY 2015 | VIVID 23


Tremblant Village Back in the village, we watch little ones try their first ‘pizza’ slices on the slopes - they used to be called snow ploughs in the learning zones, which are well equipped with a magic carpet and plenty of patient instructors to scoop up the young learners when it all becomes too much. Meanwhile, older kids looking for excitement can buy an ‘Adrenaline Park Pass’ to access the 50 rails and jump modules in three parks - helmets are obligatory. In the evening, there are snowmobile rides for juniors and tubing nearby. There’s also 80km of cross country trails, dog sledding and snow shoeing. To avoid the crowds, we’re at the gondola at 7.45am for ‘first tracks’, a service which allows skiers who want space to jump the crowds and hit the slopes first. It’s here that you can really appreciate this resort, the perfect snow, the views over the pretty village and the magnificent lake. We catch the early morning sun on the north side and ski down perfectly groomed ‘corduroy’ snow on empty pistes. After a few days, our aching muscles are a timely reminder of the need for chill-out time, so we head to Montreal for the second leg of our trip. I’m given a much needed signature massage at the spa of the five-star Hotel Le Crystal, in the downtown district where the shopping can commence. Who cares about the cold now? Grace and I head for Rue Sainte Catherine, shopping hub and home of Canada’s famous department stores Ogilvy, Simons and La Baie, the biggest department store in the city. “Instead of going to church and praying, we go shopping,” Celine, our guide, reflects of the city she says was once so religious. “Some people just don’t go outside in the winter.” We venture into Montreal’s famous underground city from Rue Ste Catherine and find ourselves in a vast 30km network of shops, restaurants, cinemas and businesses. The lower the floor, the cheaper the shop, according to Celine. Unsurprisingly, it’s easy to get lost, but we endeavour to bag some bargains en route.

Tremblant from the Slopes The exchange rate makes that easy. Grace buys a Michael Kors bag and saves herself a cool £45 on London prices, even with 15% tax added on at point of sale, not on the ticket. We stop off at a nail bar where a 10 dollar manicure (around £6) gives us time to try to get our bearings.

When it all starts to become a bit claustrophobic, we head for the old town and Marche Bonsecours, an indoor market selling more native-inspired goods, including ornate wooden carvings and local artwork. Shopped out and exhausted, we make our way back through the vast underground downtown maze to the hotel, for a swim in the spa pool, before reviewing our purchases. With the great exchange rate, retail therapy never felt so good.

Navigating the maze of the school open day

O

ne of the most frustrating aspects of reading school websites is seeing just how similar they all are. They all speak of their successes and facilities. They all tell you that they will nurture each individual child. And so, armed with a mass of similar information, how on earth are you supposed to decide possibly one of the most important emotional and financial decisions you will ever make for your family. One of the first crucial steps you will need to take is draw up a list of schools that you feel will fit your child (many parents seek professional guidance at this stage). Then you MUST arrange a visit to each school that you are considering, and of course a good time to go is on their Open Days. Perhaps the best piece of advice to offer is to remember that you are looking for a school that will fit your child, and not the other way around. Don't be seduced by facilities that do not appeal at all to your child. It is critical to carefully consider your 'must have' list. Remember also to listen to your own child. It is they who are going to have to be there every day. Then, if you feel you have found ‘the one’, arrange to re-visit on a normal school day when everything is not choreographed, pupils are in work mode and not on show. You will then get a genuine sense of whether your initial instinct is correct. TOP TEN THINGS TO LOOK OUT FOR: 1. The Head – can you relate to them? They control the culture of the school, so don't underestimate the impact they will have on how the school operates. If you feel that you can trust them, this is an extremely important factor. 2. Ask specifically about the teachers. Do they go the extra mile? Do they care? Are they 'good schoolmasters and mistresses' or do they clock watch? 28 VIVID | JANUARY/FEBRUARY 2015

3. Classrooms are classrooms. So look for pupil work and inspirational presentations on the walls of the communal areas and corridors. Schools that ask questions of their pupils all the time are positive learning environments. 4. If you are looking for GCSEs or A level places, ask about the quality of teaching in those departments. It is rare that all departments in a school will be excellent so visit them specifically. 5. Speak to pupils. They are the ambassadors of the school. How do they come across? How do they carry themselves? Are they confident? Happy? Smart? What atmosphere are you picking up? Smiles? A sense of purpose? 6. Ask about pastoral care and specific support; is there a school counsellor? What communication structure is there for parents? Do the pupils know where to turn when they need to speak to someone? 7. How does the school communicate academic information about your child? Parent portal?

Reporting? Parents evenings? 8. Don't forget the food! Is it good? The pupils will tell you! 9. If it is a day school, can you get your children there on time in the rush hour or will it cause you undue stress? If it is a boarding school, many come home each weekend, so can you pick up, or is there a good train route home? Is there Saturday school? 10. Finally, ask what defines the school. Can animals have a positive impact on our health and wellbeing?

Those of us who are animal lovers know how much satisfaction and companionship our four legged (or scaled, or feathered) friends can bring. However did you know that a great deal of research has been done into the positive affect that animals can have on human’s health and wellbeing. One example is with depression1. Pets are a great motivator, dogs especially and the need to walk a dog can be beneficial for those suffering from depression – they have to leave the house! In the home too, stroking a dog or cat or playing with a pet can have a very calming effect on someone who is perhaps otherwise troubled or stressed. Caring for another living being and receiving affection in return is great for selfesteem - especially if lonely, bereaved or depressed. Loneliness is a huge burden to bear for many – isolation and the feeling of having no-one to talk to can lead to depression and ill health. A pet can give us a great sense of security, someone to share the routine of the day with…. someone to talk to! Pets can be especially valuable company for the elderly, especially if living alone. Research2 has shown that people with Alzheimer’s are thought to have fewer anxious outbursts if a dog is present in the home For children with conditions such as autism, animals can help. Sensory issues are common amongst children with autism and sensory integration activities are designed to help them get used to the way something feels, smells or sounds – dogs and horses have been used to help and children with autism are reported as often finding it calming to work with animals. Dieting Pitfalls Ed Djafer is a London based personal trainer, fitness model, nutritionist, Wbff competitor, and Miami Pro 2nd place fitness model winner and shares his expertise when it comes to the pitfalls of dieting. The most common mistake I see people making when they decide to diet is, they cut out too much too soon. “Right i'm gonna cut out sweets, I'm gonna cut out bread and pasta and start eating healthy” is what I've heard on countless occasions. That alongside going to the gym and doing endless hours of cardio. These sort of methods are unrealistic and not sustainable in the long term. I'm not a fan of the word "diet". Dieting usually means restricting yourself of certain things as mentioned above, and any time you restrict yourself of something, you can be sure of a backlash, and you’ll end up binging on the foods you’ve denied yourself for so long, plus more. Your body will over compensate on these things, just in case there is a short fall again, and you’ll probably end up in a worse predicament than you started in. Weight loss is a game of simple maths at the end of the day. For most healthy people, if you consume less calories than you use, then you will lose weight. However, most dieters tend to over complicate things and play all their cards at once. What happens when you plateau? And you will plateau. What do you next? Do you do more cardio? Do you starve myself even more? These are common problems that tend to arise for the average dieter/gym goer, trying to lose weight. However by keeping a few cards close to your chest, you still have a few to play. So how does it work? Well first of all you need to be able to plan ahead, and aim to lose no more than a pound or two a week. Allow yourself enough time to lose the weight slowly. Any more than this is unlikely to be body fat, but muscle as well. Know what you’re putting in your body. Get to know your macronutrients (macros), i.e how much protein, carbohydrates, fats, and overall calories you consume per day. There are so many apps and websites to help you do this nowadays. If not, hire a good personal trainer (like myself ) who can take care of this for you. Once you have an understanding of your macros and the amount of calories you’re are consuming per day, you will find that you don’t have to deny yourself of anything. With my clients, I will never tell them what they can or can’t eat. What I will do is give them a macronutrient breakdown and what they choose to eat is entirely up to them, as long as they stick within their numbers. And when you hit a sticking point, a simple decrease of a 100 calories or a small increase in exercise will usually be enough to get the ball rolling again. I find this is a much more flexible and healthier way of eating, that is sustainable. I have found this most effective with myself and my clients, and seen some excellent results. FITNESS TRENDS FOR 2015 Long gone are the days when exercising meant going for a jog or heading to the local aerobics class. Certainly, we’re spoilt for choice these days when it comes to how we exercise. 2014 saw high-intensity interval training [HIIT] become mainstream, ‘personal bests’ are something everybody - not just pro athletes - think about, and getting-mysweat-on overtook poutingon-a-night-out as the social media selfie of choice. According to the trend forecasters, there’s more to come in 2015. “We’ve all become more serious about sports and recognised that we might actually improve our performance if we trained specifically for the event,” says leading personal trainer Matt Roberts. “It’s taken a while, but following advice experts have given for years is now on-trend and set to continue. Blame/ thank the rise of triathlon and cycling, and their physical and technical demands...” “Working out now isn’t just for the sake of it, and it’s not just for aesthetics,” adds Roberts. Here’s a snapshot of the fitness vibe predicted for the year ahead... TIME AND CONVENIENCE TOP THE LIST - “We’re increasingly time poor,” says Dave Kyle, head trainer for Les Mills UK. “We’re working longer hours than ever, so finding time to work out can be increasingly difficult.” ANY TIME, ANY PLACE - Fancy pumping iron at 2am? Hitting that treadmill at midnight? No problem - it’s getting easier to work out around the clock. VARIETY - forget sticking to one or two forms of exercise. TECH ME AS I AM - apps, gizmos and gadgets galore now play a key role in our fitness habits, and in 2015, it looks likely that tech will continue to help us monitor progress and smash those goals. Firstly, he focused on keeping active and the fact that as the days get shorter and colder, our exercise levels tend to drop. “In winter it’s only natural to reach for the thermostat, but you need to remember to move around. Qi Gong The time of year is fast approaching, when many of us will be thinking about joining a gym or signing up for an exercise class – making a fresh new start in the New Year. Perhaps this is something you have done in the past: Started out with great enthusiasm, only to find that after a few weeks, it became difficult to find the time or sustain the enthusiasm. Even with good intentions, it is often difficult to replicate what you have learned in the gym when you are on your own. There is just not enough space in the diary – or on the living room carpet! This is what I found years ago when I was trying to keep fit and healthy while bringing up a busy family. It inspired me to use my experience as a teacher of Qi Gong, Tai Chi and Yoga to devise exercise sequences, which, once learned, can be practiced at home or at work, or wherever you find yourself. Something that can fit in with kids and appointments and train timetables. Of course it is important to learn these sequences in a class and under the supervision of a competent teacher. Attending a regular class fuels the enthusiasm and builds camaraderie with fellow students. For those who are able, it is something that can be sustained over a long period. The basic practices and postures for Qi Gong, Tai Chi, Yoga and Meditation improve flexibility, stamina and stability as well as mental and emotional clarity and can be built over time. They are disciplines that have persisted for hundreds of years and benefited millions. The movements are gentle, but deceptively so, as they really work the muscles and build strength, stamina and fitness. The classes I teach are relatively small. I want to be able to encourage you to learn sequences that you will be able to take home with you – something designed to suit your time, energy levels and physical space. Once you begin to feel the benefit of this routine, it will be so much easier to continue and to finally keep those New Year promises to yourself, perhaps for many years to come. Tips to STAY healthy in 2015 We’ve all said “New Year – New me!” (or words to that effect) at one time or another. But why doesn’t it stick? How can’t we have a healthy year, not JUST a healthy start? Here are 5 top tips to help you stick with your new, healthy resolutions in 2015: MAKE A SPECIFIC PLAN Leave nothing to chance and plan your healthy regime to the finest detail. If you’re going to join a gym, you must know what gym? What specific days will you go every week? How will you make sure that you go (see point 2), what will you eat? When will you eat? How will you ensure that you conquer hurdles along the way? If you say: “I’m going to join a gym, eat better and lose weight” with no extra detail other than that, then you have minimal chance of success. MAKE SURE YOU STICK WITH IT The best thing to do is to make yourself accountable. Share your goals and aspirations with others and let them help you to keep on track. Tell your friends, colleagues and family members too. Go one step further and join a sports team (social or competitive), get a gym buddy and arrange non-negotiable, set dates to exercise, get a personal trainer or attend group exercises classes. Do something where you’re accountable and by not turning up you will be letting yourself down and others too. If you’ve tried before and stopped then it obviously didn’t matter enough to you and those around you. Make it matter!

SHOP WITH A PLAN Whatever your goals are for 2015, try to shop with a specific meal plan in mind. The likelihood is that you shop each week so it’s best to buy just enough food for the meals you intend to eat over the next 7 days. That way, you don’t end up throwing things in the trolley which you eat “because they’re there.” You stick to healthy eating and if you REALLY need something or crave a treat you have to go out and get it. Then you’ll see how much you “need” it. Further to this, never shop on an empty stomach. Eating before shopping should significantly improve the quality of what ends up in your trolley. EAT “CLEAN” This is a term you’ll hear a lot in the health and fitness world. In short, it means your food should be heavily nutritious and not full of preservatives. If it’s walked in the earth, swam in the sea, or grown from the ground then it’s good to eat. Try to avoid preservatives and eat as much food that isn’t pre-packaged as possible. The less ingredients each of your food has, the better. For instance, have you ever stopped and thought about the fact that a packet of meat you buy has a list of ingredients? Isn’t it just meat? Eating in this way will not only improve your body composition but it will also provide you with a more sustainable energy source meaning that you can be more productive at work and still have more energy to exercise too. TRACK PROGRESS Whether you’re looking to lose weight, gain muscle mass, improve your cardio vascular fitness or just improve your general wellbeing, it’s essential that you have a marker to gauge your success by. There are plenty of ways to measure success so try to pick a few in order to get a more accurate picture of changes. Weighing scales might show a change in absolute weight but they should not be relied upon as there is no accurate information on what has made the changes. Ie: Is it body fat, muscle mass, water retention? As well as monitoring your body weight consider body fat / skin fold callipers, progress photos, bodily measurements with a tape measure, strength and cardiovascular tests in a gym environment and monitoring how your clothes fit. A combination of these is much more likely to offer you an accurate reflection of your progress. Don’t worry about competing with others just yet and keep in mind: Slow progress is better than no progress! Red Carpet Treatment

E

ver wondered why celebrities look so fresh faced at any red carpet event? The secret is the iS Clinical ‘fire and ice’ treatment! Used by many high profile faces, such as Halle Berry and Gwyneth Paltrow, to back its claims, it’s known in LA as the “Red Carpet Treatment” for its instant brightening, tightening and smoothing effects. This is an intensive clinical treatment designed to resurface the skin, reduce fine lines and wrinkles, smooth and soften, while encouraging cellular renewal. Normally not one for facials, because of the time it takes and the fact that someone is all over my face, yes I really don’t like them, I decided to see what all the fuss was about and can it really be that good? Adrian Baker of the Medical Aesthetic Clinic, MBNS Clinic Thame, is a registered Aesthetic Nurse Prescriber, who himself has used many of the treatments and as such offers a personal, empathetic down to earth attitude. Adrian was able to put me at my ease by explaining that the procedure is ‘very quick and in total takes around 20-30 minutes’! After having quizzed me on my health to ensure that I have skin that will not react to the procedure, as fire and ice has a reputation for being slightly uncomfortable, I relaxed and left myself in Adrian’s capable hands as he cleansed my skin in preparation for the treatment. The treatment (medical facial) is in two parts with the first portion being the ‘fire’ and the second ‘ice’. This treatment is not for everyone, 38 VIVID | JANUARY/FEBRUARY 2015

skin type dependent, but MBNS can advise you accordingly as they are qualified aesthetic nurses. My face was cleansed and then the “fire” part applied. This is effectively a mild peel using 18% glycolic acid, green tea, retinol and a series of other acids and antioxidants to remove the top layer of the epidermis and smells like cinnamon. The mask was on my face for around three minutes. During that time my face went through a warm tingling and in some parts a little prickly feeling, which I didn’t find uncomfortable, but some people may experience discomfort. Adrian cleaned off and neutralised my skin before the “ice” portion is applied. The Ice portion is a rejuvenating, cool, soothing and intensively hydrating masque with hyarluronic acid, Japanese green tea extracts, aloe vera gel, licorice extracts, rosemary extracts and grape seed extracts. This second masque cools the initial peel to leave the skin invigorated and glowing and stays on your face for about 5 minutes. After a final cleanse, a moisturising serum and a strong sunscreen are applied to the face. My face did look a little red after the medical facial, mainly on my cheeks, which Adrian advised would subside within the few hours, and is a common effect from this treatment. I was advised not to use intensely hot water for 24 hours and to avoid high impact sport as it may make my face glow more!! For the rest of the day I did feel very warm in the face, which was not unpleasant. MBNS give you a sample of the products used

on your face to last about 10 days so that you can keep the treatment going. My skin settled down within a day and for the week I did go through a period when my skin went a little dry but I was advised that this was normal as my skin had been newly resurfaced. Back to Basics Director Karine Jackson says “It’s time to overhaul your hair this year. The festive season can take its toll on hair with excessive styling and heat damage so as we enter the New Year it’s definitely time to give your hair a new lease of life and a healthy makeover. Read on for my tips on making this year your best hair year yet.” SQUEAKY CLEAN. For younger and fresher looking hair, it’s all about getting into a good routine when washing. 1. Shampoo the hair twice for a deep cleanse 2. Squeeze the moisture out of the hair with a towel 3. Apply conditioner to mid-lengths and ends 4. Comb through with a Tangle Teezer (always start at the ends and work your way up for minimum damage – the old 100 strokes method from root to tip is the worst way to brush hair. Go slowly and gently from the ends up to the roots.) 5. Rinse and blow dry REDUCE THE HEAT Styling tools are essentials for getting lots of different looks – but the heat that some of the tools give off can leave hair looking frazzled and damaged. Make sure you’re protecting your locks with a heat protector (I like Organic Colour Systems Protect Spray) to stop your hair looking dry. This includes protecting from hairdryers – not just tongs and irons. Give your hair some time off from the heat by wearing a natural look every now and again, or loosely plait damp hair to give a textured wave Heat also makes colour fade quicker so the more you can reduce, the longer your colour will last. Turning down the heat on the hairdryer not only stops your hair looking frazzled but it can also be the perfect way to ‘set’ a blow dry as the cool setting will close the cuticle keeping the frizz away. FIGHT THE FRIZZ Going from the cold outside to the warmth of central heating can cause havoc with your hair. Try using a serum through towel-dried hair, blow drying and then applying a little serum again to finish to stop hair from frizzing. Invest in a satin pillowcase; cotton pillowcases can catch that hair as you move in your sleep causing frizz. Before you got to bed spritz in a leave-in conditioner as this will help to smooth the cuticle, leaving hair shiny. If you do suffer with frizz on a daily basis, try skipping a daily wash and just freshen when needed. Easing the Pressure

O

ne in three UK adults have high blood pressure, and the condition is costing the NHS more than £2 billion a year, new Public Health England (PHE) figures reveal. Linked with stroke, heart disease, vascular dementia and chronic kidney disease, high blood pressure is a major cause of premature death and disability. But often it’s symptomless, which is why it’s dubbed the ‘silent killer’ - and also why it’s estimated that around five million people aren’t even aware that they have it, highlighting why regular blood pressure checks are so vital. While the condition can sometimes be caused by other illnesses or certain medications - plus, it seems to run in families and the risk increases with age, mostly affecting over-55s - usually, the exact cause can’t be pinpointed, but experts do know that lifestyle factors play a very big part. This means it can be prevented - and even reversed and managed without the need for mediation in some cases - with lifestyle tweaks. Keep your finger on the pulse and read on... WATCH YOUR SALT INTAKE Salt makes the body store extra water which causes raised blood pressure, but cutting excess salt has a significant impact on health outcomes, reducing strokes by around 22% and heart attacks by 16%. Many of us, however, are eating too much of the white stuff - often without realising it. “Government recommendations state we should be consuming no more than 6g a day, but our current intakes are a third higher than that, at an average of 8.1g a day,” says Sonia Pombo, a nutritionist at Consensus Action on Salt 44 VIVID | JANUARY/FEBRUARY 2015

and Health (CASH). “Unfortunately, with almost 75% of our salt intake coming from processed foods, most of us aren’t even aware how much we actually eat.” TOP TIPS: • Ditch the shaker - The foods we eat usually provide us with all the salt we need, so not using it for cooking and banishing the salt shaker from the dining table is an easy way to cut back. How about using herbs, spices and pepper to add flavour instead? • Be label savvy - Checking food labels means you can avoid hidden salt. White bread and breakfast cereals are known high-salt culprits, as are processed foods like bacon, as well as ready-meals and pre-prepared sauces. Steer clear of foods which contain more than 1.5g of salt per 100g (or 0.6g sodium). Low-salt foods usually contain 0.3g or less per 100g, and often will have a green colour on the front-of-pack nutrition label. GO EASY ON THE BOOZE Research shows that men who regularly drink more than eight units of alcohol a day are four times more likely to develop high blood pressure, while women who regularly consume more than six units daily are twice as likely. Sticking to the recommended daily limits - two to three units for women and three to four units for men (one 175ml glass of wine/ pint of beer = 2.3 units), will reduce your risk of high blood pressure. BE MORE ACTIVE Exercise benefits long-term health in countless ways, but when it comes

to blood pressure, the charity Blood Pressure UK (www.bloodpressureuk. org) points out, it’s aerobic exercise - not pumping iron in the gym - that really counts. Also known as cardio, this is all about engaging those big muscle groups, getting moving and pumping oxygen around your body. Jogging, dancing, cycling, swimming and aerobics classes are all great examples - but don’t be put off by the term ‘exercise’. Instead, think of it as ‘activity’, and walking or doing the gardening also counts. If you have joint or mobility problems, or any health issues or disability which is preventing you from exercising, find out about suitable classes that may be on offer (useful websites include spogo.co.uk and www.efds.co.uk/inclusive_fitness). Blood Pressure UK recommends at least 30 minutes a day, but if your blood pressure is relatively high, consult your doctor or nurse before embarking on a new programme and certainly do this if your blood pressure is in the ‘very high’ bracket. certain cancers, a diet rich in fruit and veg can help with blood pressure. Firstly, fruit and veg are often high in potassium, which plays a key role by balancing out the affects of salt. Eating healthily can also help you maintain a healthy weight (or lose excess weight if you need to), which can prevent high blood pressure and reduce the strain on your heart and blood vessels, advises Blood Pressure UK, as well as other weight-related conditions like Type 2 diabetes. TOP TIPS: • At mealtimes, load up on big portions of veggies and salad. This will boost nutrition, and make it easier to stick to sensible-sized portions of carbs and protein.

• Treat biscuits, chocolate, cake and crisps as occasional treats, not everyday snacks. Plain nuts and potassium-rich bananas are great healthy snacks. • Similarly, treat soft drinks and sugar/ calorie rich drinks as occasional treats too. Making water and unsweetened tea your main everyday drink will help control your weight and boost health. TACKLE STRESS Stress can cause heart rate and blood pressure to temporarily soar, but like smoking, there’s no confirmation that it causes long-term high blood pressure. Having said that, chronic stress can contribute to lifestyle factors - like drinking more, exercising

less and comfort eating - which may increase our chances of hypertension. Also, stress can make us less able to cope with the effects of other health problems or worsen their symptoms, so avoiding problematic stress and finding ways to de-stress - like regular exercise and hobbies - helps. QUIT SMOKING While smoking causes a temporary rise, there isn’t conclusive evidence that it causes long-term high blood pressure. However, we do know smoking’s very bad news for hearts and arteries and a major cause of heart disease, so quitting certainly does your health a big favour, especially if you do develop high blood pressure. Whilst it is important to take care on slippery pavements, try to remain as active as possible – even if it’s just a short walk around the block or your garden. Charlie Brooks on the Road Best known as Eastenders troublemaker Janine Butcher, bringing drama to Albert Square with a medley of cocaine addition, murder and prostitution, Charlie Brooks is now taking her talent on tour, playing Sandra in the iconic play, Beautiful Thing. 56 VIVID | JANUARY/FEBRUARY 2015


T

he ‘Walford witch’ has finally left the East End, and now you’ll be seeing Charlie Brooks in a wholly different incarnation. The actress has appeared in episodes of The Bill, Jonathan’s Creek and, of course, Eastenders, but come spring, she’ll be taking on the theatre, appearing in Beautiful Thing. The play follows two young men, Jaimie and Ste, and their blossoming romance in an inner city housing estate. Together the two boys find comedy, warmth and the music of Mama Cass through their loud-mouthed next door neighbor Leah. Brooks plays Sandra, Jamie’s mum and the local barmaid. “What doesn’t attract me to the play?” Brooks grins. “I was obsessed with the film when I was a kid, I watched it like 100 times, I was one of the cult followers really. I remember seeing Surrane (Jones) in the play last year and going ‘ooh, I want to do that, put me in it! Lo and behold, a year or two later here I am, so it’s like a dream come true.” It’s hard for bubbly Brooks to pinpoint exactly why the iconic play resonates with her - “Just the content of the story,” she starts. “I went to theatre school where I had lots of gay friends - I had a boyfriend that was gay!” she laughs. “So it’s always been important, the performances in the film were just amazing and it’s a great character for me, so it’s

a rally big draw all round really.” And Beautiful Thing still endures to this day, despite being over 20 years old. “There are still, especially in the regional areas where we are touring, people going through this very same issue and people still terrified of coming out, they don’t know how to do it and they are scared of talking about it. I think that it’s a timeless play, it’s brilliant, it’s funny, it’s sad, and I think that it speaks to a lot of people still.” We suggest that the role of strong young mum Sandra seems a happy fit for Brooks; “Are you saying I’m a feisty single mum?!” the actress laughs. “What I’m hoping to do is to bring a great deal of warmth to it, know what I mean? She’s feisty, she’s loud, she’s not afraid to speak her mind, she’s had a hard life and fought to be where she is, fought to bring up that little boy, so the relationship that they have is one that’s very special in the end.” Adding that, “I’ve got some of the best lines - I just can’t wait to say them.” Calling this, “completely different” from the television work for which she is best known, however, Brooks is feeling the nerves. “With learning lines in Eastenders, they go in very quickly, it’s in and out because it’s so quick and so fast paced. I haven’t done a great deal of theatre so this is all quite new, so I’m shi**ing it to be honest! I just hope I’m ok. But it’s so exciting.”

It’s nerve-wracking, but it’s a positive step forward for the actress and mum of one. “I am busy, but it’s great because I feel like I am achieving what I set out to when I left Eastenders, so I feel really, really lucky,” she says. The 18 week tour will also take her away from her daughter, Kiki, and it wasn’t an easy decision to come to. “I love being at home, I love it. My daughter is 10 now which is such an important time and I’ve never been away or gone away with work, so when this came up I had a lengthy conversation with my immediate family members and decided that it was now my turn to be able to go off and spend time away. We have a few days off in-between theatre moves so I’ll be able to get back and she’ll also come down and see me, so we’re going to make it work. But I am a bit nervous about it. She is very adaptable and my mum is there and her dad is there so I have a brilliant support system, we have a close knit family.” And even when the tour comes to a close, the stage will be calling once again. “I’m starting another play called Contact at the Park theatre in Finsbury. It’s a new play about swinging! WAS ACTING YOUR FIRST LOVE? No! Acting was something that came out of nowhere really. A director gave me an audition out of the blue. I’d never done drama classes. I’d never even done kiddie drama or anything, so it was a fairly left-field thing. Drama school was responsible for making me really love acting. I went to drama school not even certain that I wanted to be an actor; quite foolish. But luckily it instilled in me a real love for acting. I’m kinda lucky really to find something that I ended up loving, even though I’d never really considered doing it beforehand. CONGRATULATIONS ON THE SCOTTISH BAFTA FOR FILTH - AN AMAZING MOVIE Thanks. You’re very, very kind. IT’S A SHAME IT DIDN’T DO BETTER ACROSS THE POND. WAS IT TOO ‘BRITISH’ FOR THE AMERICAN AUDIENCE? It’s always been difficult. It’s not the first time selling something that’s very of its nature and very of its country. This isn’t a bad thing by the way, but if we’re selling costume dramas or we’re selling that kind of thing, then they seem to go for it, but if you’re selling stuff about working class people, they’ve got to be ‘American’ for them to get it, and it’s always been like that. I can’t think of too many films that have broken out there massively and become commercial hits. What we always hope is that we can make our money back in our own country, which is not often the case. We’re really pleased that in the country that bought it, the people got it, and they got it big as well, which is really great YOU WERE THE FIRST WINNER OF THE EE RISING STAR AWARD. WHY IS IT SO IMPORTANT FOR YOUNG ACTORS? It’s that thing where it does the same job as Best Newcomer... and a little bit more as well. It’s voted for by the people, and I like that a lot. You get your peers who put you in there, and then they hand it over to the people who actually go to the cinema, so you get a really true representation. It’s not just who the industry think is good and needs to be celebrated and lauded, but you also get a sort of hard facts and figures based on the audience. People in the industry tend to go: ‘Right! Loads of people tend to like that person. Maybe people will go and see them in a movie’. It’s as simple as that really. And it’s a really, really good thing. But at the end of the day, awards ceremonies are not designed to be a boost to peoples’ careers; they’re celebrations of work. What’s also nice about the [EE] Rising Star Award is it’s not even a celebration of one gig; it’s a celebration of a body of work, which is something that only usually happens for older actors, and the people who have been much more in the fabric of the industry, but for a young actor to get celebrated for a body of work that has been taking place over a year or a couple of years, is actually really nice, you know? So it’s a cool award and I’m really glad it’s still going strong. WHICH UPCOMING ACTOR HAS IMPRESSED YOU OVER THE PAST 12 MONTHS? George McKay’s very good; I do like him. Oh and who’s the young guy who’s in Starred Up and ‘71? Jack O’Connell - yeah; he’s been very impressive. WHAT ATTRACTED YOU TO THE DISAPPEARANCE OF ELEANOR RIGBY? The opportunity to tell a story about adult love and all its complexities and hardships and all its emotional violence. It was really a very grown-up approach to a love story, and

it has a kind of truth to it, and at the same time it managed to obtain a sort of romantic transcendence, which was all down to an amazing writer who also directed it. A guy called Ned Benson, and he’s done a fantastic job on it. WERE YOU EVER IN THE RUNNING TO PLAY SCOTTY IN JJ ABRAMS’ STAR TREK? Ahhh. I shall never reveal. I never really say ‘yes’ or ‘no’ as to whether I’ve been in the running for something; I don’t think it’s really cool for the actor who gets it, but Star Trek is brilliant and I remain a committed Trekkie. ONE OF YOUR PENDING MOVIES IS VICTOR FRANKENSTEIN. AS THE EPONYMOUS LEAD, HOW DO YOU APPROACH A ROLE SO ICONIC? Just the same as always really. You’ve got to figure out what you think the story is; identify what you think everyone expects to see; how much of that you decide you’re going to give them, and then how much you’re going to do different. The script actually does a fair old bit of that for us; the script concentrates on the relationship between Dr Frankenstein and the character who isn’t even in the book - on Igor [Daniel Radcliffe] - so that’s the main central crux of the story. It’s gonna be a different character than the one who was obsessed with creating flesh. It’s the one who went away, had a holiday, got better, came back again and went, ‘Oh no! What have I done?’ It’s not that guy anymore. It’s somebody much more in the moment. It’s something that I think will be a good thing actually. Next year is the 10th anniversary of the EE Rising Star Award, the only accolade at the EE BAFTAs voted for by the British public. Local landscape Christmas is a time for family and friends. Okay now that’s over and done with, you’re down to your last packet of after dinner mints; it’s time to think of Valentine’s Day. The day, when the love of your life, your true love, turns around and says, “You’ve put on a bit of weight over Christmas”. It’s over, no more “well it’s Christmas” excuses, we all need to get leaner and fitter for the spring and summer. You could join an expensive gym and tone up that way. But you’ve got all that traveling, changing and faffing about. You’ll look back next year and realise you used a couple of times. We however have the perfect solution The Green Gym. It’s location, just outside your front door. You won’t need all that Lycra. A waterproof coat, a pair of wellies will do. Get out into the countryside and give your mind, body and spirit a lift. Oh and one of our pet peeves. Just don’t listen to music, it is so wrong, take out the ear-buds and turn off the phone. Absorb the sounds of nature instead. You will see so much more, as you tend to hear birds before your can see them. The countryside in January and February still holds its beauty and secrets. The days may be cold, (it helps to burn extra calories) but it is a great time to dust off the cobwebs, get some fresh air and see all the wonderful sights that the countryside has to offer. If you can find a wood, it may look dead and uninteresting but even at this time of year there will be the first signs of the turn of the

year. The first splash of colour is the white of Snowdrops. Did you know there are 20 different species? Here is a sure fired winner of the pub quiz. Don’t forget to walk to the pub. What is vernation? Answer; it’s the study of emerging of leaves relative to each other. It’s used amongst other things to help distinguish between the species of Snowdrops. By February some species of birds like us will be into courtship. Keep to the edge of a wood for your best chance of seeing the woodland species. Along our waterways Herons will be looking at last year’s nests and redecorating as Herons are one of our earliest breeding birds. Now for the important bit, every hour walked the average person burns 250 calories. If you want to burn more calories why not volunteer. Our wildlife organisations are always looking for people to help look after their reserves. A couple of hours a week helping out not only burn the calories but benefits wildlife. Don’t forget the vitamin D. Everyone needs vitamin D for strong healthy bones. Sunlight on bare skin is the best way to produce the vitamin. At this time of year you can venture out without the sunscreen. So, leave your ear-buds behind in fact turn the phone off. New Year, New Career? Research amongst users of a well know job website recently suggested that 42% of those over 30 wished they’d followed their childhood ambitions when choosing their career. As the New Year unfolds how many of us are thinking what happened to our dreams? Of course it’s easy to see why those early ambitions get lost. First jobs tend to be rationalised as ‘a start’, not an end point, taken because we need to get going, but have the habit of evolving into something more permanent. A promotion gets offered, we take it and a momentum builds that it can be difficult to stop. Ten years down the line, there are bills to pay, family, a lifestyle structured around the job, rather than the other way around. It’s easy to think that real life has won – easy, but wrong. The easy bit is to get stuck in the ‘too difficult’ maze. It’s never too late to re-assess your career, or at least check in to see if there might be an

alternative, be it a complete shift or a tweak in where you’re headed. The harder bit is taking control, to determine, rather than be determined, by events. Dreams can become a reality, but almost inevitably it will require some effort. When we change our house we do some research and build up a list of what we are looking for, sacrifices that may need to be made, benefits that would accrue. The odd thing is, so few of us follow a similar process when it comes to our career, an equally life-determining decision; allowing circumstances or other external forces (or people) to make the decisions for us. One of the most common phrases I hear from people late in their career is ‘I don’t know how I got here’. In a time when traditional career structures are crumbling, maybe the New Year is a good time to ask whether you would be happy with this? Nick Corble is a Career Coach based in Buckinghamshire.

HERE’S FIVE TIPS TO HELP YOU MAKE THAT STEP: 1. Challenge assumptions, avoid self-limiting beliefs. Commonly these involve sentences that begin with ‘I couldn’t ...’ or ‘I can’t imagine 2. Recognise that change is messy – that’s fine, it will have an end point, it’s just a process of transition and a healthy process at that. 3. Understand your comfort zones. If you know what these are, you’ll know when they are being challenged. It’s when this challenge occurs that you may feel fear or stress. 4. Legitimise time to think. Your career is critical to your well being, do you really giving it the thinking time it deserves? 5. Keep an open mind. It’s easy to fall into the trap of imagining extremes and turning them into bogeymen that are an excuse for doing nothing. Change may be a leap into the dark, but equally it may be an incremental process involving a number of stages. For now, assume nothing.

WHAT’S NEW?: At first glance, the 911 GTS might look very familiar, but this particular variant is all about the details. In the grand hierarchy, the GTS sits between the quickest ‘normal’ variant - the Carrera S - and the precision track instrument that is the GT3. Not only does the GTS fill this gap for buyers who want something a little madder but not bonkers, it also bridges a significant price void too. So your GTS comes with a more powerful 3.8-litre engine, unique suspension tuning, the choice of two or four-wheel-drive, coupe or convertible, Turbo-look front spoiler, gorgeous centre-lock wheels and the wider body. Added together, these additions would cost more from the options list, so you’re getting a little something for nothing. LOOKS AND IMAGE: Although the basic shape is the same, the 911’s looks depend very much on the model you choose. The GTS has that bigger Turbo front bumper with bigger scoops which makes it look more aggressive, but this is balanced by the wider body at the rear. Add in those beautiful centre-lock alloy wheels and, depending on the colour, it undoubtedly looks superb. A Carrera S looks a little more pure, but it’s less fussy than the full-on Turbo. The GTS badge also has kudos of its own amongst 911 fans; it’s not just another special edition and demands respect. SPACE AND PRACTICALITY: The

911 in any guise is still a relatively compact car and sticks with the socalled 2+2 arrangement. That means two proper seats in the front and occasional seats in the rear, although the GTS does give you the option to delete the rear seats if you wish. It’s the front seats you want to be in of course, and you get leathertrimmed sports seats as standard that are very comfortable and supportive. Being rear-engined, the boot

Storage space inside is a little more tight however. BEHIND THE WHEEL: The key mechanical changes to the GTS make themselves felt as soon as you drive away. With a unique suspension tune and one that is a little stiffer than the Carrera S, the GTS is clearly more focussed. However, the standard-fit Porsche Active Suspension Management (PASM) means you can dial up three different suspension settings to suit the conditions. That means it’s still capable of being used every day without causing you grief. But it’s when it is being stretched that the GTS comes in to its own.

The stats show it is more powerful and faster than a Carrera S, but, as the driver, all you know is that it is a sensationally quick car. The engine crackles away (helped by the standard sports exhaust) as the revs rise and it feels so torquey and un-burstable you can rev it hard or make it slog. When driven hard the GTS’ class shows; sharp and communicative steering, unshakeable brakes and beautiful poise. It’s hard to want for anything more. VALUE FOR MONEY: All versions of the GTS bar the four-wheel-drive Cabriolet check in under ¬£100,000, which is still a lot of money. But compared to the Carrera S, the amount of standard kit added for the modest price increase is well worth it; it’s also significantly cheaper than the more desirable but harder to live with GT3. WHO WOULD BUY ONE?: There are plenty of people out there who want to buy a 911 or are about to, so there’s no shortage of potential. However with the range now encompassing 12 models before you even get to the Turbos and the GT3, you could argue that there’s too much choice. But the GTS is the sweet spot in the range; it’s fast without being silly, easy to drive yet fun to drive hard and looks great without lurching into overkill. Winter Pruning why do it? The team at Calibra Tree Surgeons looks at why dormant pruning has many positive characteristics. One Benefit is that dormant pruning enables us to correct disease problems which would be more risky during the summer season. For example, it is very difficult to prune fire blight from trees or shrubs during the highly infectious spring and early summer times without spreading the disease to other limbs or plants. During the winter, bacterial populations in cankered branches are lower and dormant, and hence, less likely to be transmitted via pruning tools.

Proper pruning of trees can make them more storm resistant, whether the storm threat is from ice damage or from high winds. Pruning is often regarded as a proactive, health maintenance insurance plan to guard against potentially serious problems, analogous to the ever more popular and wise preventative care in human health plans.
