Summer Holidays are over and here we are in October with less than 100 days until Christmas and the nights closing in! Welcome to Clare Chambers, who will be writing the Beauty page from now on. We thoroughly enjoyed ourselves and managed to get quite wet at the same time. My daughter also tried the climbing wall for the first time and managed to get three quarters of the way up. I was very impressed as I have a terrible fear of heights. A fantastic facility that should be enjoyed by all. In our travel section we have some fabulous stories from the Congo and some last minute deals for those of you wishing to get away now the schools are back. Sister gastro-pubs selected to appear in the new Michelin Pub Guide Restaurateur Henry Cripps, and his wife Katherine, are celebrating after BOTH their gastro-pubs were selected for the 2011 Michelin Eating Out in Pubs Guide. The Greene Oak, Oakley Greene and its younger sister The White Oak, Cookham are two of only eight pubs in Berkshire to be selected (and the only ones in Cookham and Windsor). Henry said: “We were delighted to hear we had been chosen to appear in this prestigious guide. It’s a reward for our excellent teams who work so hard at both restaurants, and it’s confirmation that we have got the balance right between offering freshly cooked food, a good wine list and a cosy, friendly pub-like atmosphere.” Commenting on this year’s guide, Derek Bulmer, the editor said: ‘Our guide shows that pubs are not dying, they are merely changing. Motion Slickness Couch potatoes beware: games want to make you move If you think video games mean teenagers slumped on sofas - or if you’re a parent hoping a new console will give you a bit of peace and quiet on Christmas Day - then think again: today’s all-singing, all-dancing consoles expect all-singing, all-dancing players too. Whether it’s making a fool of yourself playing virtual sports or kids petting virtual animals, modern consoles want to make you move. Nintendo started it with the Wii, whose easy, motion-controlled games made it a firm family favourite and the most successful of the current crop of consoles. Now Microsoft and Sony want a piece of the action. Microsoft’s offering is called Kinect, while Sony has PlayStation Move. Both inventions are add-ons for existing hardware, so Kinect is for the Xbox 360 while Move is for the PlayStation 3, but they work in very different ways. Move is a combination of Wii-style wireless controllers and a webcam, while Kinect doesn’t use controllers at all.

playstation move Let’s look at Move first. The key component of Move is the PlayStation Move Motion Controller (£34.99), which looks like a TV remote with a golf ball stuck to it. That ball called the Orb - changes colour if there is more than one player so that the system can tell one player from another. The PlayStation Eye camera (£24.99) tracks the orb(s) and decides where you are, while motion sensors within the controller work out where you’re pointing it and how fast you’re moving it. Depending on the game that means your motion controller could be a tennis racket, a sword, a gun, a karaoke microphone or anything else games designers come up with. For traditional gaming you’ll also need the navigation sensor, which costs a further £24.99.

XBOX 360 KINECT Kinect takes a slightly different approach. Its sensor bar (£129.99) does all the work, so you don’t need to hold anything at all: you can drive a car by holding your hands in a steering wheel shape, or play dancing games by actually dancing. Some of the more interesting ideas - understanding sign language, detecting the slightest twitch of a finger and so on - didn’t make final production, but Kinect can still use facial recognition to log you into Xbox Live and it can track four people’s movements simultaneously. While both Microsoft and Sony have huge lists of game companies who’ve promised to support their technology, the actual launch line-up of games is pretty thin: if you’re looking for a motionsensing version of Halo you’ll be disappointed, although Sony’s Move can be used with existing games. As with the Wii it’ll be a while before game developers work out how to use motion sensing technologies to their full potential.

NINTENDO Wii We’ve mentioned the Wii a few times now. Is it obsolete? Far from it. The Wii is still the best-selling games console, and the original Wii sensor has been upgraded with the smoother, more accurate Wii MotionPlus. There’s also the Balance Board that Wii Fit uses to great effect, and Nintendo has also come up with the Vitality Sensor, a finger-mounted pulse detector that nobody seems entirely sure what to do with.

So which should you choose? If you’ve already got an Xbox or a PlayStation then it makes sense to go with the appropriate add-on for your system; however, if you’re buying a brand new console then there are other issues to consider - not least the rumour that the www.AlongTheThames.co.uk

Wii will be replaced with a Wii 2 next year. Both Microsoft’s Kinect and Sony’s Move are still taking their baby steps, so if you’re in the market for a new console we’d suggest going for the one that has the games you want to play now. 10

Unlucky for some but not for Marlow chef: Adam Simmonds Adam Simmonds, Chef, Danesfield House, Marlow has won a prestigious place in the Good Food Guide 2011, beating some of the UK’s top chefs including the world-famous Michel Roux, Gordon Ramsay protégée, Angela Hartnett and former enfant terrible of the London restaurant scene, Tom Aikens. The hotel’s restaurant has now stormed up the list to ‘thirteenth’ best in the United Kingdom. Adam Simmonds is already among the Guide’s top ten chefs to watch and tipped as one of the few who could ‘dominate’ the restaurant scene in the next decade. ‘I’ve had fantastic support from both the hotel and the public. This award means a huge amount because

it’s determined by the people who’ve enjoyed our food’ says Simmonds. Simmonds knew he wanted to be a chef from the age of fourteen, when he was one of only two boys in his Home Economics class. ‘I knew I couldn’t sit behind a desk to work and I wasn’t academic. My passion was always for cooking’. By twenty one he was working at Les Saveurs under the tutillage of Marco Pierre White and went on to spend three years at Raymond Blanc’s Manoir Aux Quatre Saisons, which he fondly refers to as his ‘finishing school’. Three and a half years ago he joined Danesfield House from Ynyshir Hall, where he’d earned a Michelin Star. This year Adam Simmonds, Danesfield House has scored above Michel Roux’s

Thai Prawn Noodles

INGREDIENTS: 250g packet medium rice noodles 2 tbsp sesame oil 1 red pepper, deseeded 1 yellow pepper, deseeded 6 spring onions, trimmed ½ red chilli pepper, deseeded 1 stalk lemon grass 2cm (1in) piece root ginger, peeled 300g (10oz) raw king prawns 4 tbsp lime juice 2 tbsp soy sauce 1 tbsp sugar 2 tbsp fresh chopped coriander stalks Fresh coriander leaves to garnish

These spicy noodles are packed with classic Thai flavourings – fragrant lemon grass, fiery hot chilli pepper and pungent root ginger. With meaty king prawns and crunchy vegetables they make a great healthy supper on the table in under 30 minutes! Serves 4 1. Cook the rice noodles according to the packet instructions. Drain well and rinse under cold running water. Add a few drops of the sesame oil to the noodles and toss them gently to coat in the oil. Set aside. 2. Thinly slice the red and yellow peppers and the spring onions. Finely chop the chilli and lemon grass and grate the root ginger. Heat 2 tsp of the sesame seed oil in a large frying pan. 3. Add the prawns and half the chilli, lemon grass and ginger to the pan and stir-fry for 2-3 mins until prawns start to turn pink. Add the peppers and spring onions and continue stir-frying over a high heat for a further 1-2 mins until the prawns are completely pink and cooked through. 4. Add the rice noodles to the pan and toss well to mix. Whisk the remaining chilli, lemon grass, ginger and oil with the lime juice, soy sauce, sugar and coriander stalks. Pour over the noodles and heat through for a further 1-2 mins. 5. Season the noodles to taste with salt and freshly ground black pepper and serve piled into warmed bowls garnished with coriander leaves.

Nutmeg is the seed of a fruit similar to a large plum and originates from the

Spice Islands (the Moluccas). The trees actually produce two spices; nutmeg and mace, which is a lace-like covering around the nutmeg kernel. When nutmegs were first traded by the Arabs their origins were kept highly secret. But by 1512 Europeans discovered the Moluccas and the prized trees. Wanting domination of this lucrative trade, they exploited and controlled the supply of the spice. Exporting live seeds or trees was strictly forbidden, punishable by death. Nutmegs were pickled in lime juice to prevent them growing into trees. However, in 1770 a Frenchman named Pierre Poivre smuggled fresh seeds to Mauritius where they flourished and so ended the trade monopoly. Pierre Poivre translates into English as Peter Pepper, who in the well-known tongue twister “picked a peck of pickled peppers”. Sweet and aromatic, nutmeg is used to flavour cakes and desserts and works well when added to vegetables dishes and cheese-based recipes. Nutmeg also flavours haggis and is essential in mulled wine. Whole nutmegs keep indefinitely to be grated when needed using a special nutmeg grater. However, nutmeg should be used with care as too much is poisonous. Overdose causes hallucinations, nausea, fits and even death. But this is highly unlikely in culinary use.

CONGO Deep in this forest, unmolested by man for thousands of years, a vast population of western lowland gorillas have lived and thrived in a Garden of Eden paradise of abundant food. Different in many ways from their mountain gorilla cousins the lowland gorilla is a much more active ape, that has been studied for only the last few years by a dedicated team from the World Wildlife fund (WWF). What they have found is a range of startling behaviours, likely to cause lively conversation between evolutionists and creationists, including walking upright and washing their food before eating. Even humans don’t do that, as my intestines would confirm on a regular basis throughout this trip.

“None but essential travel” is the Government’s advice when it comes to travelling to the Congo. Should I venture to this very hot wet and green country then “no one would come to my aid if things went wrong” or where I could fall foul of any one of the myriad of tropical illnesses just waiting to strike me down. But this trip held a lot of excitement for me in visiting this wonderful country and my friends and family just rolled their eyes (yet again) as they are now very familiar with my journeys to Africa and beyond as a wildlife guide. It was David Attenborough who first turned me on to the limitless beauty of Africa and the lives and deaths of the animals that abound there. My mother would spend evenings looking away from the TV screen as, to my fascination, lions dismembered an unfortunate zebra and each half term and holiday I would beg to be taken to Windsor safari park. My vision of Africa was changed from that of wide open savannah to that of deep dark forests as David narrated a wonderful documentary that explored these forests of the Congo, a genuinely undiscovered region. This was real exploration as he highlighted newly discovered oases, clearings called “bais“, where streams of sparkling water rich with minerals drew animals and birds from the mahogany forest. Hundreds if not thousands of forest elephants, whose unique habitat has evolved them with tusks which point almost straight down, basked in the sunlight along with buffalo, giant river hogs and the most secretive of all antelope the “Bongo”. These animals in themselves would easily have been enough to risk the journey but the real once in a life time, just can’t not go, was the prospect of seeing gorillas, lots and lots of gorillas.

I had arranged to rendezvous with the WWF research team who were closely monitoring one particular gorilla family group. These hardy individuals stay with the family non-stop to build a complete picture of their behaviour and to affirm to the gorillas that they present no threat. Two men from the Ba Aka Pygmy tribe acted as my trackers to locate the team in the dense forest as their whereabouts could never be relied on. With our guides we set off from camp following elephant trails that wound there way through this

otherwise impenetrable forest. As this claustrophobic jungle closed in around us staying close to our guides was essential: to lose contact would be like being set adrift in an ocean with no reference point and finding camp again would be impossible. The Pygmies pushed on silently for several hours, easily ducking under spiders’ webs and vaulting over fallen trees. We followed, draped in spiders webs and stumbling over fallen trees. Occasionally we would hear the crack and thump of a branch falling from a vast tree and the shrill trumpet of elephants close by, causing our guides to silently raise a hand and change course to avoid a potentially dangerous encounter. Suddenly our guides began to make a series of clocking noises, a sound that the gorillas had become used to associate with harmless observers and in the dappled light I slowly became aware of two men standing quietly in the undergrowth. Raising a hand in greeting, but without speaking, they pointed a short way in to the bush. There a beautiful female gorilla lay on her back holding aloft a tiny infant. She was teasing her baby by holding it above her face, with its little arms and leg swimming in the air trying to reach its mum. This was the moment we had come all this way for and the smile fixed on our faces which would stay with us for days. It soon became apparent that there were many more apes close by. Youngsters chased and played stopping only to investigate a termite nest or strip a branch of leaves. Large females would forage and feed, whilst keeping an eye on the younger members of the family. Several times young gorillas would come very close to us to investigate and, I think, intimidate with little volleys of

chest beats. The temptation to reach out a friendly hand was quelled by the knowledge that a vast male silverback sat almost invisibly some 30 metres away: it was quite possible he might take exception to that threshold being crossed. The researchers whispered to me that should the big male demonstrate any aggression we should adopt a submissive posture and not run or shout. They went on to explain how to judge the silverback’s mood and as they tried to describe the gorilla’s vocalisations we should be wary of he ended up resorting to mimicry. The researcher’s first hooting grunt had the effect of lighting the blue touch paper on a very large and hairy bomb. The giant silverback ran directly at our small party screaming at the top of his voice: he ran almost upright, hitting the ground with his right arm and ripping foliage with his left. This demonstration of fury and intimidation was so startling it did not allow time to consider running, submission or anything: I just froze.

The gap narrowed between us and the silverback stopped just feet from us, arms above his head with his massive chest pumped up for maximum effect. For a moment he stared at us before dropping his left shoulder with a deep grunt and walking away to rest by a nearby bush. A huge wave of relief and euphoria came over our small party and looking towards the researcher whose impersonations had instigated the charge he

whispered “that happens every time I make that noise”. Back at camp we thanked our Ba aka guides before dining on river fish and rice. This was a trip no one would forget and my clients who accompanied me on this wonderful adventure now have some amazing photographs of some very rare wildlife to remind them of this unique experience. Autumn Pear Crumble

Chef Danesfield House Hotel This crumble is perfect for this time of year to boost energy levels

INGREDIENTS: Pear Compote 6-8 Ripe Pears – (Williams variety) 100ml Water 6g Fructose 30g Chopped Walnut Crumble Topping 125g Ground Almonds 125g Rolled Oats 30g Flour 95g Butter, Firm 100g Fructose 30g Walnut Oil

Pre-heat the oven to 200°c

Place all the dry ingredients in a mixing bowl

2. Peel and quarter the pears. Remove the core and dice into 1cm pieces

2. Add the butter and rub in with your finger tips

3. Line a suitable size pan with tin foil

4. Put the pear dice and water inside the lined pan close the foil to create a parcel

4. Mixture should look quite fine but will clump together when squeezed between your fingers

5. Cook for approximately 25 minutes at 200ºc, this will depend on the ripeness of the pears

• You’ll notice that fructose has been used in place of table sugar (sucrose). Fructose is the sugar from fruit. It is sweeter than sucrose so you need less of it. It also breaks down more slowly into energy so will keep you going for longer. • Eating sources of protein and or fibre alongside sugary/sweet foods also slows down the release of energy into the blood stream. • Nuts are a great source of protein and of essential fats, whilst oats are a source of fibre and really filling. • Essential fats are also necessary for managing stress hormone production i.e. keeping stress in balance. • The walnuts and their oil in this recipe add a rich source of omegas 3 and omega 6 , both essential fats. • Altogether this is a healthy and energy giving dessert with a touch of style. In the interests of maintaining marital harmony and preventing partners from murdering each other in the early morning hours, I’ve listed below some of the remedies which seem to be the most effective.

The basics

Whichever category you fall into, this article could help you to deal with the problem.

If you are the problem snorer, it’s advisable to cut out alcohol and drugs of any kind (other than for medicinal purposes) for at least two hours going to sleep. All alcohol, whether it’s wine, beer or spirits just before going to bed can relax the soft tissue which causes snoring. Any drug that causes muscles to relax could also cause snoring.

Before moving on to the possible cures and workarounds, let’s look at what causes people to snore. There are three main reasons. The first is caused by a vibration of the uvula and soft palate. The second is a condition called sleep apnea. The third is caused by an area of skin in the throat that blocks the air passage.

Foods to avoid Certain dairy products increase mucous production in some people. This can restrict the airway and cause snoring. In addition to this, wheat, fatty or processed foods can

An alternative to the snoring pillow can be achieved by stitching a tennis ball to the back of your pyjama top or a sleep tee-shirt. This will cause you to sleep on your side because rolling onto your back will be uncomfortable. Realigning your body so that your tongue and jaw are kept from causing a blockage on the air passage can also help to prevent snoring. If you can sleep on your stomach that will help as that posture reduces pressure on the airways. Alternatively, if you can elevate your bed to an angle of 30 degrees it could be beneficial as this is known to lessen the chances of the soft tissue in the throat collapsing.

Exercises Tongue exercises could help. Try sticking your tongue out and stretching it a little more each day. Or stick out your tongue and try to touch your chin. If none of the above options help, the snorer in the family should seek medical advice. By Lorraine Mace

brands who offer these products (including Lee Stafford from Boots). Sea Salt Spray will give a great deal of texture and fullness to hair and should be applied and combed through when wet. It’s great if you want to wear your hair up or just with some additional body. Finally, the best tip I can give for hair that is prone to being lank is blasting it with Batiste dry shampoo. It’s amazing how this stuff can literally infuse flat hair with body and fullness. If you carry the travel sized can around with you then it’s at hand should you need to give your hair a body blast!

As you age it’s common for hair to become thinner. Using products designed to give volume really do help. I recommend the Philip Kingsley Maximum Body shampoos and conditioners for hair which is thinning. The Maximizer spray really does give fullness to the hair. Also, try to avoid very short hairstyles as these can quite often sit flat to the head. The best cut by far is a simple bob which has soft graduation at the back and one block layer around the centre this tends to give the hair a more rounded shape. Always use a hairdryer to style, infusing fine hair with airflow can lift the roots. Finally, use of hair colour can really help. In my experience you get the best effects from foils containing bleach or varying lightening shades as these will give the hair texture and body.

I am a brunette and would like to put some red highlights in my hair - what do you suggest as I believe that reds fade? Firstly, ask yourself if red suits you. If you are cool skin and eye toned applying those red lowlights might not work so well, instead try opting for plums or purples which can look equally as striking. Reds will tend to fade less in brunette bases because brown hair has a higher percentage of natural red pigment. If you ask the salon to apply a red based medium blonde colourant and use only 6% peroxide your hair should lighten enough to reveal your natural warmth, plus the added red tones in the colourant

I have really lanky hair, is there anything I can do to give it body? Firstly, stop or reduce using conditioner – using a conditioner with every wash will only make the hair heavier. Try using a sea salt spray, there are several

will contribute and create a much more stable colour that is less prone to fading. It is possible that even these reds will fade somewhat, so try using a red Wella Colour Fresh (available from Looks Fantastic. com) once a week or twice a month to give your hair an infusion of tone and replenish lost pigment. Ambient lighting – Overall lighting for general use, general downlighters or central pendant. Feature/Accent lighting – this is used to provide definition, light and shade and to highlight focal points of architectural features, display shelves, art work. By using zones of lighting, you can develop layers of lights that create atmosphere and interest.

NATURAL LIGHT My favourite space in my house is the ‘orangerie’ which has a large roof lantern in the structure and allows natural light to flood the area, so that even on the dullest day it lifts my spirits and is an area I will always choose to spend time in. was wandering around a garage forecourt this morning when a new Volvo XC70 fluttered its eye lashes, leaned provocatively forward, and enticed me to take ownership. I was temped, but my long suffering wallet screamed ‘for crying out loud have mercy, this vehicle costs a fortune’. But perhaps the XC70 is more affordable than my wallet assumes.

The Volvo XC70 could in fact be your flirtatious new pal from £27,690, which is relatively modest considering its capabilities. For this price motorists essentially get a V70 pumped-up with off-road credentials. It is distinguishable from its sibling as it is available with four-wheel-drive, has higher ground clearance, and features plastic body mouldings to protect the paint should it scuff against rocks.

If you do find a lump on your pet it is important that it is examined by a vet as soon as possible in order that the underlying cause can be established and treated without delay. Collective Art in Marlow brings an outstanding diversity of art and craft together in central Marlow.

A presentation of 18 artists and craftspeople working in ceramics, textiles, glass, print, painting, metal-work, jewellery, basketry, horticulture, candle making, spinning, felting, collage and encaustic wax. All of the artists involved are locally established and have been involved in other local events. Be inspired and pick-up some original Christmas gifts. Many of the craftspeople will be demonstrating their work throughout the day; Linda Scurr, a local spinner and felter, will be demonstrating the art of felt-bowl making in addition to spinning her wool on her spinning wheel. Other demonstrations will include glass fusing, candle-making, illustration and basket weaving. Entrance is free and there is free (limited) parking available. The Horse Trust appeals for donations to cover £23,500 hay shortfall Buckinghamshire charity The Horse Trust is facing an additional bill of £23,575 for hay and haylage this year due to a shortfall in production and the rising cost of hay. Last year, The Horse Trust was able to produce the majority of hay and haylage it needed for the winter from its 200 acres of paddocks. But due to the dry weather conditions this year, it has only been able to produce around a third as much hay and haylage. As all farmers are in a similar situation, the cost of hay and haylage has risen dramatically. If the winter is as severe as last year, the charity estimates it will need to buy around 600 bales of hay and haylage to feed the horses at its sanctuary in Speen, Buckinghamshire over the winter. "This is a very worrying situation - we have never faced such a large shortfall," said Shirley Abbott, Yard Manager at The Horse Trust. "We have already had to tighten our belts due to the credit crunch, but are now facing a massive bill for hay over the winter. We hope the public will be able to help us by donating money or hay to help us feed the horses, ponies and donkeys at the sanctuary." Kenton Secured! On Friday 20 August 2010, the long term future of the Kenton theatre was secured when the Board of Trustees purchased the freehold of the Kenton Theatre through funds raised locally and an interest free loan from a local company.. The fourth oldest working theatre in the country, housed in a Grade II listed building and staffed almost entirely by volunteers is still accepting donations towards the KENTON for KEEPS Campaign in order to repay the loan. Kenton Theatre Chairman, Alan Pontin said “The Kenton is one of the town's most cherished cultural assets which will be available for our future generations to act, sing, support and enjoy for decades to come. As Trustees we are merely custodians and we have done our best to make sure we pass The Theatre on to future generations. My board of trustees and I would like to take this opportunity to thank the community for their outstanding support and the Municipal Charities for their professional and supportive resolution." Wendy Bowsher, Managing Director of The Kenton comments, "I am very proud to have played my part in securing the future of The Kenton Theatre. It has been a tall order to raise £350,000 in just six months especially during tough economic times but as a community we did it. I thank the Kenton Team and our many volunteers for their hard work and dedication in running the Kenton and assisting in achieving the freehold purchase.” As previous lease holders the Kenton Theatre have been restricted in improving The Theatre facilities and services, due to the constraints of not owning the freehold. “It will now be possible to start reviewing the services and facilities we offer to meet the needs of our patrons and users” said Alan Pontin, Chairman of the Board of Trustees. The largest programme of events is being offered through Autumn/Winter season in the entire history of the Theatre. Wendy Bowsher, Managing Director of the Kenton Theatre said “We have balanced the programme with series of Lectures, plays, musicals, comedians, new works, a programme for children, music and shows supporting charities.” She went on to say “During the Kenton for Keeps campaign the Trustees said it was the wish to secure the Kenton Theatre for all generations to come.
