5 Brewing Pour hot water measuring between 90 and 96°C, as this is the optimum temperature range for extracting solubles from coffee grounds (crushed coffee beans) Within this range, water won’t scald the grounds, but it will draw out their flavors and aromatics.

COFFEA COFFEE, THE CURVE

6 Serving Coffee usually cools rapidly after being served so it is best to serve coffee right after brewing, when it is fresh and hot – typically at a temperature of 82-85°C suitable for the coffee drinker.

A LITTLE BACKSTORY ON 'KOPI'

Kopi means coffee in Malaysia. Kopitiam, which means Coffee shop in Hokkien dialect, was said to be the beginning of Kopi culture in Malaysia.

The Kopitiams were generally run by the Malaysians of Hainanese and Hokkien descendants in the early days.

Kopi soon entered the everyday life of Malaysians. It's was a harmonic scene where all races gathered in a kopitiam talking to each other and enjoying the same Kopi.
