Teaching Liverpool to Cook was set up to get the whole city cooking again – to start a ‘Cookery Revolution’, the first of its kind in the UK. We have a 3 year plan to get everybody in Liverpool excited about food and cookery again! The aim this year was to raise £50,000 during a 100 Day Campaign – through company contributions and donations from trusts and foundations, to allow us to provide approximately 2,000 people – younger and older, with basic but intensive training focused on cooking from scratch. Each contributing company or organisation will also send one member of staff on our corporate cookery training sessions – promoting health in the workplace and giving

companies a great opportunity to network. During the training we will look for 100 individuals who show a particular interest in cookery to return to us for a Masterclass Session – becoming cookery ambassadors for their workplace, area or community. As the training ends, 1000’s will have been trained and we will be much closer to claiming that LIVERPOOL CAN COOK.

Todays young people are growing up in a world filled with convenience foods and a lack of food education. This has led to a deskilled generation unable to pass cookery skills to their own children. 60% of adults in the UK no longer cook and children are growing up in an environment where cooking is seen as a chore and eating out, convenience food and takeaways are the norm . Why Cooking Matters Obesity – it’s everywhere!

” An abundance of convenience and takeaway foods, paired with reduced access to affordable foods has led to a decline in basic home cooking and a heavy reliance on ready meals and fast food.” Britain has the highest rate of obesity in Europe Obesity is one of the biggest threats to health in this country

Early on in life, 1 in 10 of our children are obese when they start school and by the age of 10 this has risen to more than 1 in 5 If something is not done to stop this - predictions have been made that by 2050, 60% of adult men, 50% of adult women and 25% of children will be obese or overweight Right now obesity is linked to 30,000 deaths per year

Let’s get everyone cooking! Teaching Liverpool to Cook will address these issues, taking a preventative route to improve the health of thousands across Liverpool. We want to get EVERYONE cooking. Eating is now about refuelling rather than enjoyment – let’s turn this around and get everyone enjoying food again!

100 Days of training –

how we will do it Social Can Cook will use its already established city-wide network to recruit young people under 25 from schools, community groups, workplaces and through organisations who have contributed to the campaign. We will then train each young person to cook a number of meals from scratch and give them the skills and enthusiasm they need to carry on cooking for themselves.

Corporate One staff member will be recruited from all companies who contribute to attend one of our corporate cookery sessions at Can Cook’s state-of-the-art studio alongside other firms. As well as promoting health and wellbeing in the workplace - this will be a unique networking opportunity – combined with a great mix of Chef demonstrations, practical cooking and time to enjoy a stunning two course meal and a glass of wine while you network!

Cookery Ambassadors 100 individuals showing a particular interest in cookery will be selected from each of the above groups to return to us for a Masterclass Session – becoming Cookery Ambassadors for their workplace, area or community.

Getting you started 10 minute Chilli Beef Noodles Ingredients: 250g dried egg noodles 250g rump steak, sliced about 1cm thick 1 tsp cornflour 2 tsp sesame oil 1 tsp grated ginger 1 clove garlic, crushed 1 large red pepper, deseeded and sliced 3 carrots, peeled and cut into matchsticks 100g mangetout, sliced 3 tbls sweet chilli sauce 1 tbls light soy sauce Serves 2 Equipment: Large pan, grater, sharp knife, wooden spoon

How to make it… 1. Cook the noodles in a large pan of water according to the packet instructions, before running cold water over them to cool. Drain. 2. Toss the strips of steak in the cornflour. Heat the oil in a wok or frying pan until almost smoking. Add the steak, ginger and garlic and stir-fry over a high heat for 1-2 minutes until the steak is browned all over (careful not to overcook the beef as it can become chewy!) 3. Add the pepper, carrots, mangetout and soy sauce to the pan and stir-fry for 3 minutes. Stir in the chilli sauce and cook for a further minute, then stir in the noodles and the sesame oil and serve.

Nasi Goreng (Malaysian Fried Rice)

Ingredients: 2 tbls sunflower oil 1 shallot (or ½ onion) peeled and finely sliced ½ long red chilli, deseeded and sliced 1 small clove garlic, peeled and finely sliced 1 small carrot, peeled and cut into thin matchsticks 75g chestnut mushrooms, sliced 100g cooked and cooled rice 1 tsp soft dark brown sugar ½ tbls light soy sauce 1 tbls sweet chilli sauce 1 inch piece of cucumber, deseeded and cut into thin matchsticks A drizzle of sesame oil

How to make it… 1. Heat 2 tbls of sunflower oil in a frying pan. Add the shallot, chilli, garlic, carrot and mushrooms and stir fry over a high heat for about 3 minutes, being careful not to burn the garlic. 2. Add the cooked rice and continue to stir fry for a further 2-3 minutes. In a small mixing bowl combine the sugar, soy sauce and chilli sauce and then add to the rice. Mix well and remove from the heat. 3. Serve the rice in bowls with the cucumber scattered over then add a drizzle of sesame oil.

Serves 2 Equipment: Frying pan, sharp knife, wooden spoon, small mixing bowl

Can Cook Spicy Chicken Quesadillas Ingredients: 1 small chicken breast, diced 1/2 onion, sliced 1 red pepper, sliced 1/2 red-green chilli, sliced 1 tsp paprika 2 cloves garlic, crushed 1/2 a can tomatoes 4 tortillas Serves 2 Equipment: Sharp knife, chopping board, frying pan, baking tray, wooden spoon

How to make it… 1. Fry the onion, red pepper, chilli and garlic for 2 minutes until soft. 2. Add the chicken and paprika and cook for a further 2-3 minutes, before adding the tomatoes. Cook until the chicken is cooked through- test by cutting a piece of chicken in half to make sure. You can use a food probe - the temperature should read 70ºC when pushed into the centre of the food and held for two minutes.

3. Place a floured tortilla on a clean chopping board. Put a quarter of the mix into the middle of the tortilla and fold it over to create a half moon. Repeat with the remaining three tortillas. Place under a hot grill for 1-2 minutes each side or until crisp.

The Studio Ready to train 20 people during each course, our cookery school runs evening and weekend cookery classes, ranging from beginners cookery to baking & desserts, world cuisines, cookery for kids and Chef Masterclasses. Schools Teaching young people is the lifeblood of this campaign and we will build on the success of our previous work to make sure the children and young people of Liverpool can cook for themselves. Our work with schools began in 2008 with Schools Sessions - a knock-out cookery competition. Each school gets 3 hours of training with our Chefs - before going head-to-head with another school to create 3 courses in 1.5 hours. Each team is judged by a panel of food experts before the winners are announced. The winners proceed to the next round until one school is crowned winner! The winning team then works with our Chefs to produce a 3 course meal for

150 guests at the Finale Gala Evening. It’s a brilliant opportunity for the pupils as well as being a lot of fun! As well as the competition - we run cookery days and evenings from the Studio for School and Community Groups, as well as taking our Chefs out to run live demos and cook-alongs in our Pop-up Studio.

“Pop-ups” We are into “Pop-ups” at Can Cook. Pop-up Kitchens, Pop-up Cafes, Pop-up Studios! We can take all of our equipment and our team and pop up just about anywhere to run cookery days from our mobile cookery stations - Food Festivals, Community Events, Schools and Workplaces to name just a few!

Can Cook Cafes and Catering Last year saw the opening of our first Café in the South Liverpool Treatment Centre, Garston – selling fresh, healthy and homemade food made from scratch by our Chefs. This year - the Can Cook Café took over the staff canteen in HMP Liverpool. Our Chefs have been working with a group of prisoners to train them ready for release into employment. We also offer an outside catering service from our Cafés – supplying buffets for business meetings, conferences, special occasions, parties, or specialist catering for your business.
