Papaya Pudding Smoothie YIELD:
2 servings 10 minutes
PREPARATION TIME:
Sweet and creamy and beta-carotene rich but dairy and sugar free
• 1 cup peeled, cubed papaya 1 large banana, peeled
2 to 3 figs or pitted prunes 1 teaspoon soy lecithin granules
Place papaya in blender jar, and process briefly. Add banana, and process again. Add dried fruit and soy lecithin granules, and process until smooth. Serve chilled in dessert cups, or spoon over yogurt. variations
▶ Use mango in place of papaya. ▶ Substitute dates for figs or prunes. ▶ Sprinkle with cinnamon or pumpkin pie spice before serving.
