DINING
Set within 4,800 acres, Cornerstone’s championship golf course designed by Greg Norman and Matt Dusenberry opened for play in 2008. Almost immediately, Golfweek proclaimed it “Colorado’s Finest New Course” and Golf Magazine referred to it as “Easily the best high-altitude course in the nation, and quite possibly the world.” The first tee positions you at the apex of the course, at an amazing 9,200 feet above sea level. Rolling through Aspen groves, ravines, sagebrush meadows and scrub oak savannah at a length of 7,800 yards, it offers a championship-caliber test, yet is playable for all ability levels.
Both immersive and authentic, the food and beverage experience at Cornerstone is a blend of eclectic but approachable influences, and takes inspiration from indigenous American and Texas Hill Country cuisines. This one-of-a-kind fusion, celebrating the rugged and diverse American West, is expressed in a number of elegant but comfortable dining experiences: 92 HUNDRED features an extensive wine program, perfect for an elegant evening or celebration. CAP ROCK offers a creative twist on everyday staples in a lively setting, enhanced with wines and signature cocktails sure to please all tastes. The ELK SHACK serves up the best of Colorado, and is the only place to experience the Grand Mesa Chop Steak. No matter where you choose to dine at Cornerstone, you’re guaranteed an experience that will satisfy and delight.
