CHAPTER FOUR
Lay out four slices of bread. On one slice, spread 1 teaspoon of the first pesto, and top it with the second slice of bread. Spread 1 teaspoon of the second flavor of pesto on that slice of bread, and top it with the third slice of bread. Spread on 1 teaspoon of the third flavor of pesto, and top with the remaining slice of bread. Cut the sandwich on the diagonal and insert a toothpick threaded with one olive and one tomato to decorate each half. Repeat this process with the remaining bread, pesto, olives, and tomatoes.
