Information for drivers Speed limits within urban and residential areas are 50 km/h (31 mph) unless otherwise posted. Pay attention to speed limit signs. Unless otherwise posted, it is legal to turn right on a red light after making a full stop. Driving under the influence of drugs and alcohol is against the law. It’s illegal to smoke in a vehicle carrying children under the age of 19. Child safety seats are required for children weighing less than 18 kgs (40 lbs) and booster seats are required for children younger than nine years of age or less than 1.45 m (4’9”) in height. The use of helmets is mandatory for anyone riding a bicycle or motorcycle.

HERITAGE CHURCHES Downtown Antigonish offers architecture buffs three historical 19th-century churches to explore. Built between 1862 and 1864, St. James’ United on Main Street is the oldest of the three. Inside nearby St. Ninian’s Cathedral built 1866–1874 and Paul the Apostle on Church Street, built in 1898. Getting Out on the Water There is lots of fun and enjoyment to be had at any of our activities. Observe the life stages of trout and salmon that are raised each year by the Fraser Mills Fish Hatchery to stock the province’s lakes. Trails ANTIGONISH LANDING TRAIL (4.8 KM) 20 East Main Street, Antigonish Starting at the Antigonish Heritage Museum, this maintained gravel trail follows an abandoned road along the river. ARISAIG PROVINCIAL PARK TRAIL (1.6 KM) 5704 Route 245, Arisaig Starting at the interpretation centre, the winding trail loops towards the shore through a white spruce forest. BEAVER MOUNTAIN PROVINCIAL PARK TRAIL (6 KM) Highway 104, Exit 30, James River This maintained trail offers a breathtaking view of the Antigonish lowlands through a dense white spruce forest past an inactive beaver colony. Parking, washrooms. CAPE GEORGE HIKING TRAIL (38 KM) Highway 337 This series of connected loops, varying in length and difficulty, totals 38 km and meanders through meadows and old-growth forests, to coastal hills affording spectacular views of St. Georges Bay. CHEZ DESLAURIER TRAIL, POMQUET (6 KM) 951 Monk’s Head Road, Pomquet A coastal and inland walking trail located directly to the north of the Chez Deslaurier property.

FAIRMONT RIDGE HIKING TRAIL (10.8 KM) Highway 337 A series of stacked loops allows hikers to enjoy routes ranging from a short 20-minute, three-km stroll to a four-hour, 10.8-km hike. Pistachio Crusted Salmon with Nasturtium Butter Pistachio Crust INGREDIENTS

1 cup Shelled nuts chopped 1 cup Panko ½ cup parmesan cheese 1oz Olive oil for frying Salt & pepper to taste Egg wash

METHOD

• Mix nuts, panko, Parmesan cheese, salt and pepper in a food processor & pulse until it is the consistency of graham crumbs • Set aside

Nasturtium Butter INGREDIENTS

1 tsp fresh minced garlic 1 oz juice from the orange, lemon and lime (mixed) 1 tsp black pepper 1 cup Nasturtium flowers/ leaves chopped, packed ½ lb butter 1 Tbsp chopped dill, basil or parsley (optional) Zest of one orange, lemon & lime

METHOD

• Mix all ingredients in food processor, except the butter and puree until combined. • Add butter and pulse again. • Take a piece of boneless salmon, dip one side in eggwash and then dredge in the crust mixture and pat the mixture on firmly. • Sear in pan with oil on med-high heat, crust side down, for about 2-3 minutes, until lightly browned, then flip over and cook bottom side another 2-3 minutes . • Finish in the oven with 2 tsp of nasturtium butter spread on top, about 2 minutes at 400°F. • Remove from oven and serve.
