My favorite pizza is Margherita with fresh basil…yum! This is a quick and easy substitute for days when I want to have pizza without making or buying dough and all that stuff. I keep a basil plant in my kitchen window so we always have some on hand – I highly recommend you do the same. Though my daughter is in her 20s now, she still asks for pizza toast sometimes as a snack like I used to make her when she was a kid!

INGREDIENTS

4 slices toasted sourdough bread Favorite pizza or pasta sauce (I prefer marinara with garlic for texture and fl avor) 2 cups shredded mozzarella cheese 1 teaspoon dried oregano leaves 6-8 fresh basil leaves, sliced into ribbons Italian salami or other cooked Italian sausage, mushrooms, or other topping of your choice (if you want something fancier)

INSTRUCTIONS

1. Preheat oven to 400 degrees. 2. Place slices of toast on a baking sheet, and top with a couple of spoonsful of pizza sauce. Spread evenly over bread with back of spoon to get all edges. 3. Top with 1/2 cup of shredded mozzarella and toppings of your choice. 4. Sprinkle 1/4 teaspoon oregano over each. 5. Place in the oven and cook until cheese melts and is bubbly. 6. Remove from oven and immediately top with fresh basil. 7. Let sit for 3-5 minutes to let cheese “set” and cool slightly before serving, especially to children.
