This salad is as tasty as it is colorful, and makes for an easy lunch to assemble at the offi ce.

INGREDIENTS

2 medium avocados - peeled, pitted, and diced 1/2 shallot or sweet onion, chopped 1 green bell pepper, chopped 1 large ripe tomato, chopped 1/4 cup chopped fresh cilantro (optional) 1/2 lime, juiced Salt and pepper to taste

INSTRUCTIONS

Serves 1-2. 1. Combine ingredients in a bowl. 2. Gently toss until evenly coated. 3. Season with salt and pepper.
