Maxine decided to shred the last issue in protest. She had quite a list of demands: 1) Work less hours 2) More walks 3) Longer walks 4) More treats 5) Less baths 6) More playtime with pals 7) More tug-of-war 8) Even more treats 9) Work even less hours 10) Play, play, play all of the time!

The big news is that Maxine and I have moved into an office in downtown Blue Ridge, GA! After two years of fighting the spiders, scorpions and slow DSL in our remote, rustic cabin, we decided it would be nice to have a bon-a-fide office. Thanks to my friend Joe Placher of Cabin Watch Premium Home Services (www. cabinwatch.net), we are now sharing a grand office. I call the décor, designed and built by Joe, “Industrial Barn!” The move required a trip to TX to haul the rest of my office furniture from my Mom’s “real” barn, and then hiring the good ole boys from Blue Ridge Mountain Movers to heft everything to the second floor. Yep, the second floor. We’re now in the historic old tobacco & candy building located at 560 East Main Street, Suite 2 Blue Ridge, GA. The phone & address remains the same, 706. 492. 5070. PO Box 250 Blue Ridge, GA 30513. Maxine is usually bored while I’m at the computer, so if you want to come visit and take her for a walk, I’m sure she’d oblige, especially if you have a dog treat. We’re at the office most days from about 10am – 4pm. During deadline time we’re here 24/7. So– Whoo Hoo! We’re official downtowners! As most of you know we’re coming into our peak tourist season and this issue provides the most comprehensive list of Fall Festivals in the area. We cover everything from the biggest mama of all, the GA Apple Festival, to the most down-home local of local, the Heritage Days at Talking Rock. So whatever your crowd threshold, there’s something for everyone. Satterwhite Log Homes has our cover and feature this issue. If you’re even thinking about a build in the area you should check out their model home on Hwy 515 in East Ellijay. The friendly folks there are waiting to help. As an animal lover, I love to profile our 4-legged friends. Blue Ridge Mountain Trail Rides at Hells Hollow is one of my favorites. Maxine and I plan on taking a ride with them as soon as we finish this issue. Plus don’t forget the North Georgia Zoo in Cleveland! So many cute critters– including the lemurs, otters and kangaroos– great stuff for teaching kids and adults alike about these and other precious species. Our next issue is the famous “Apple Festival” issue. We’ll have a behind –the-scenes of the largest apple house and one of the smaller apple houses for comparison. Also on tap is how Blue Ridge is becoming one of north Georgia’s favorite craft beer towns with three local microbrewers. And then- because it’s Octobera fascinating article about the ghosts of the north Georgia Mountains– did you know you could take a tour? Don’t know about you- but I want to go see some ghosts! I think Maxine will stay at home for that one. Lots to do this fall, so get on out there and live life to the fullestwe only go around once– well, unless you believe in ghosts!

I

It’s Tour De France month so I thought that it would only be fitting to talk about bike riding. Seeing the Tour on CBS in 1989 is actually what inspired me to ride a road bike for the first time. Every year since, racing or not, I get more motivated to ride in July. As I write, and watch the guys battle on the rainy roads between the towns of Arras and Reims, I keep getting distracted by my increased motivation to get on my bike. But where should I ride? Stanley Gap? Flat Creek and Green Mountain? Maybe a road ride on Skeenah Gap? It really gets stressful with all of these great choices around here, ya know? (insert snicker) Those who have ridden in north Georgia know what I mean by “so many choices.” The choices in this area really do seem endless when it comes to pedaling. I rode Bull Mountain a couple days ago which is just west of Dahlonega and about a one-hour drive from my house. It was awesome! The last couple of months have been busy so I’ve not driven to another trail system in a while. Going to Bull Mountain reminded me of how fortunate we are to live here since driving to a trail head around here is almost as fun as the ride itself. I could go on and on about what I love about living in the mountains of north Georgia, but instead I thought I would reinforce my bias with some other opinions. GD: What’s your favorite triathlon in north Georgia? RR: Tri-The-Mountains in Blue Ridge of course! There’s nothing like racing on your home turf, plus it's awesome to see so many people come from out of town to compete, who view it as a 'destination race'. It makes you feel lucky to live and train in such a beautiful area. GD: When did you start riding/racing? RR: I started in 2009 with a sprint triathlon with a bunch of friends from the gym. I’ve been hooked ever since!

where in the southeast. This is a great example of raw single track; like how it all started, tight, twisty and steep. Pinhoti 3 has a little bit of everything and is why I enjoy it so much. Great gradual climbing, great flow, crazy switchbacks, and great descents. One of the great things about living in Morganton is trail access. There are hundreds of miles of trails within an hour or two, many just 20 minutes away. from my house GD: What’s your favorite mountain bike race in North Georgia? JR: I race mostly downhill events which are held all over, but not in Georgia. Even though I don't do a ton of cross country races, I would say my favorite is Black Bear Rampage, which is held at the Ocoee Whitewater Center.

All three are amazing trails. Flat Creek has some challenging climbs and great descents. The 2.5 mile climb on Stanley Gap can hurt you but the 3.5 mile descent to Deep Gap parking lot is one of the best descents anyAugust/September 2014

GD: Anything else you would like to add? JR: Well, just like any mountain biker would say, we need more trails! Of course I would love to see more downhill trails with jumps, berms and wooden features, but what the area really needs is more beginner friendly trails. When I started riding, I didn’t know where to go so I ended up riding THE worst trails around. These trails were old logging roads that have been abandoned. I hated it. Then I heard about Brush Creek at the Ocoee Whitewater Center. That trail alone changed everything I thought about mountain biking. Anytime we take someone riding who is just starting out, we take them to Brush Creek. It’s just a nicely laid out trail with a lot of flow. Great for beginners, and experienced mountain bikers as well. Blue Ridge is surrounded with national forest that would be ideal for these types of trails! AC

Mountain Education Charter School MECHS is an academic, self-paced, individualized, evening high school that serves students who are seeking a non-traditional school environment and who desire a Georgia high school diploma.

“Scaling the Peaks to Success�

is more than a motto for students at Mountain Education Charter High Schools. Many of them are used to facing barriers that prevent them from earning a high school diploma in a traditional day high school. Some of those barriers include falling behind in their studies because of illness, family responsibilities, work schedules, or learning problems. Some students have quit high school in the past and decide to come back for their diploma instead of getting a GED. Others enroll to make up classes they have failed at their local high school. Still others prefer a self-paced, individualized curriculum. Some students want to be able start college sooner, so they enroll at MEC to move through their high school courses at their own pace. A traditional 14

school size, schedule and pace make it difficult to overcome these types of barriers, thus making a successful future seem like a steep climb to an unattainable peak. Mountain Education Charter High Schools offer an option that can make barriers to earning a Georgia High School Diploma more surmountable. Because students may attend any nights between Monday and Thursday from 4:00 until 9:30, they can set their own schedules to fit in with other responsibilities. They can attend as often and for as long as they like each evening. The curriculum is self-paced and mastery-based, so there is no failure at MECHS. If a student is having trouble mastering a concept and needs more individualized help than the teacher in the classroom can give, MEC will pro-

vide a tutor. Book and computer-based options are offered to address different learning styles. MEC has all the services traditional high schools offer such as accredited teachers, special education, ESOL, counselors, social workers, graduation coaches, student clubs, dual enrollment, and reviews for ECOT and Georgia HS Graduation Tests. Additionally, MEC has career specialists to help students make plans for after they graduate. Earning a high school diploma is no longer enough to gain access to a successful future. More than 60% of future jobs in Georgia will require some post-secondary education, so MEC is dedicated to helping its graduates be able to access those jobs. do job shadowing, visit workplaces in the area, and participate in events held at MEC such as Career and College Nights, Guest Speakers, Financial Aid Workshops, and other special programs. Before graduation all potential graduates are encouraged to apply for college and if they enroll, they receive a scholarship from MEC. The Mentor Program at MEC offers another support system to help boost students over barriers. Every student at MEC is assigned a mentor and that person is truly “a caring adult” in the building. The mentor meets with the student weekly, helps the student set academic and educational goals, communicates with parents monthly and is available to help solve problems that present new or continued barriers. MEC is a public, state-chartered high school that is SACS accredited. The mission of Mountain Education Charter High School is to provide students the opportunity to be successful learners and to earn a high school diploma. It has been in operation since 1993 and has graduated over 2,000 students in addition to helping local traditional schools improve their graduation rate by providing credit recovery for students who do not enroll full time with MEC. Currently MEC has 11 sites in August/September 2014

northeast Georgia: Union County, Fannin County, Gilmer, Pickens County, Forsyth County, Lumpkin County, Habersham County, White County, Stephens County, Rabun County, and Elbert County (Bowman site). It is open year-round, and students can graduate at any time whenever they satisfy the state requirements for high school diploma. Every May a formal graduation ceremony is held to honor all students who have graduated during that school year. When it comes to zoos, North Georgia Zoo has proven to be far from ordinary. Located in Cleveland, Georgia, less than 15 minutes from Helen Alpine Georgia, NGA Zoo strives to be much more than an attraction for animal spectators. For five years now, this hidden treasure has worked to be a sanctuary for a variety of livestock and exotic animals to live out their lives with love and dignity. For their human visitors, NGA Zoo has become a place of education by offering an up close and personal experience with the animals and zoo keepers.

Whether you visit NGA Zoo in the winter or summer, you’ll find each season brings its own unique experiences for the entire family. During summer months, guests can shoot water at the buffalo using water guns. This activity is a blast for kids of all ages, but it’s safe to assume the buffalo enjoy it more. Melissa Burns, the zoo’s head Curator explains, “We are a family friendly zoo with a huge amount of options, so everyone will find something to do here.” Burns began her work at NGA Zoo about five years ago. Originally an intern from Colorado, she fell in love with the ani22

mals, the keepers and the zoo’s mission, so she decided to stay. NGA Zoo is well known for its exceptional one of a kind wolf encounters and otter encounters. Visitors fly and drive across the country just for the opportunity to interact with these special animals. While also known for its large petting zoo, there are lots of other animals for visitors to interact with. “We have a huge petting zoo that is visible from the road, and I would like people to realize that we are much more than that. Our petting zoo is a great place to hang out and see some unique livestock, but we have tons of other animals for guests to see,” Burns explains. With over 400 animals such as livestock, reptiles, birds and exotics, NGA Zoo acts as a strong advocate for animal conservation and protection as well as public education. Burns continues, “Our goal has and always will be to

bring people and animals together. If people want to get an up close experience with animals then this is the place to come.” In fact, NGA Zoo offers a wide variety of opportunities to get up close interactions with their animals, including all the new, adorable babies. NGA Zoo cares for many different species of baby animals, and the public is welcome to visit, hold and bottle feed these little creatures. Opportunities include Baby Lemur Encounters, Wolf Pup Encounters and Baby Kangaroo Encounters. “Those are our most popular babies but not the only ones guests will get to see,” explains Burns. “We just had two adorable baby donkeys born which guests can visit, and we have baby ponies that can be seen on our Camel Encounters. By offering so many hands on experiences, NGA Zoo is holding true to its mission of conservation and public education. “We work hard to continue fun and learning so that our guests can not only hug and cuddle with a kangaroo but learn about what is special about them,” explains Burns. In fact, the zoo is home to over a dozen kangaroos representing five different species. Having opened its doors to the public about five years ago, NGA Zoo has used its wide variety of animals to educate and entertain the August/September 2014

public. Burns continues, “It allows our guests to get to know our animals more, and they learn a lot during their visit.” While NGA Zoo has many familiar animals such as kangaroos and zebras, their wide variety of other, less known creatures is another thing that sets them apart. Burns explains, “We are the largest breeders of miniature animals in Georgia.” So the next time you’re driving by this hidden treasure, stop in and ask to visit, cuddle and bottle feed some baby kangaroos or play with some wolf puppies. In the still air of morning, a gentle rain falls on a hundred million leaves. The soft patter of raindrops on the forest canopy resounds to fill the silent spaces beneath the trees. Our little secret: The road less traveled is in the mountains of North Georgia. Here, deer watch people more than people watch deer. Like silent shadows, their nearly invisible forms freeze in full arrest with every approach. You see them long after they see you, their ears erect and their eyes alert. Water courses, rushing everywhere, collecting into a labyrinth of almost trackless creeks and rivers winding their way through the land beneath the Blue Ridge. Clouds cling in the crevasses and above creeks and bodies of water, lending an air of mystery and wonder, and giving birth to the name “Great Smokies.� Overhead, or sometimes flying low over rivers and streams, waterfowl are on patrol today same as millennia past, cacophonies of quacking ducks and honking geese.

Remarkably, the mountains are both inhabited and empty. What some see as a recreational respite from the city, others consider a sanctuary for the soul. The peace of Appalachia feeds the human spirit. People come here, people live here for many reasons. Many people build a cabin in the mountains with thoughts of hosting friends and family. That’s true, but in addition, most are quick to learn how easy it is to form new friendships with like-minded neighbors in the mountains. Mountain living can be as solitary or as social as you like. People who love log homes are a self-selecting affinity group. Living in intimate contact with nature, appreciation of beautiful surroundings, seekers of peace and quiet... all these things are markers of kindred spirits. To the uninitiated, all log homes might seem the same. But like the great genres of music, this category of homes is durable and diverse. With roots deep in Appalachia, log homes have spread far and wide into almost every rural setting in the country. Today, you will find log homes from sea to shining sea, across the fruited plains. From coastal wetlands to inland prairies; high in the mountains and down in the valleys; amid forests and presiding over the plains -- log homes have been adapted into almost every setting outside urban centers and suburbia. But even within cities, there is no escaping the influence and attraction of rustic wood elements, which are often found in both commercial and residential settings. Massive wooden beams and tree stock, architectural accents, rustic trim and design flourishes – all these things are more popular now than ever. Wood, like no other material, adds warmth and security to human environments. Wood is the “comfort food” of home and commercial spaces.

While log homes may be exceptional anywhere, log homes and cabins rule in Appalachia. Anything less would feel out of place and unnatural. Even in the Georgia mountains, there is a surprising variety. What was once thought of as a simple mountain cabin has become a varied category, everything from basic classic cabins to expansive log homes and lodges. Plans are optimized for site dimensions, for building on steep locations, for intended purpose (occasional use, cabin rental pool, entertaining, primary residence), and to optimize views. The trend is towards new construction. “The market for distressed and foreclosed properties has been cleaned up,” according to Don Estes of Satterwhite Log Homes in Ellijay, Georgia. “We’re seeing a return to normal levels of new home construction.” Satterwhite Log Homes has been a vigorous force in North Georgia log home construction. The company is based in Texas and sells nationwide. This experience brings a variety of materials and decorating options never before seen in the Appalachian log home market. “Our house logs come from the Rocky Mountains,” according to Estes. “They are killed by natural causes and are air dried over time by nature in an arid climate. Vegetable Curry with Spiced Rice and Raita

This versatile dish will spice up any summer occasion.

You Do!

Vegetable Curry Ingredients 2” piece of fresh ginger finely diced 1 tsp cumin 1 tsp turmeric ½ tsp cayenne pepper or 2 fresh hot peppers Salt to taste 4 cups assorted fresh vegetables chopped (can use squash, pumpkin, potatoes or whatever is to hand) 1 cup vegetable broth ¼ cup cashews or peanuts 1 cup plain Greek yogurt Preparation Saute ginger and peppers until browned. Add cumin, turmeric and stir for ½ a minute. Add chopped vegetables and stir. Add broth and simmer covered until vegetables are tender (about 10 minutes. When tender add yogurt and nuts and heat through. Serves 4-6 people. Vegans replace yogurt with canned or fresh chopped tomatoes.

Spiced Rice The perfect match for vegetable curry. Ingredients 2 Cups brown or white Basmati rice 2 sticks of cinnamon ½ cup raisins Preparation Cook rice following package directions. Add cinnamon and raisins. Raita A great side dish especially if you make the curry hot. Ingredients 1 large cucumber ½ cup plain Greek or regular yogurt Preparation Peel and de-seed cucumber. Chop into small pieces. Add enough yogurt to cover fully. Add salt to taste. Nightshade Summertime Soulful Summer Black-eyed Pea Salad Eggplant Sandwich Who needs bread when you have some gorgeous eggplants from your garden? Ingredients ½ c all purpose flour 2 large eggs beaten 1cup panko bread crumbs 1 medium eggplant cut into ½ inch thick rounds ½ cup canola oil ½ tsp Kosher salt 4 leaves romaine lettuce 2 medium tomatoes sliced 4 oz goat cheese ½ cup fresh basil Preparation Place flour eggs and panko in separate shallow bowls. Dip eggplant in flour, then eggs and finally panko. Press panko in so that panko sticks to the eggplant. Heat half the oil in a large nonstick skillet over medium high heat. Cook half the egg plant until golden brown and crisp – 2 to 3 minutes on a side. Transfer to paper towel or newspaper lined plate. Wipe out the skillet and repeat with remaining oil and eggplant. Sprinkle with ½ tsp salt. Layer eggplant, lettuce, tomatoes, basil and goat cheese to form sandwiches with eggplant on the top and bottom of each stack. Knife and fork optional! Salad Ingredients 1 ½ Cup cooked black-eyes peas (1 15 ounce can) drained and rinsed ¾ Cup chopped green pepper ¾ Cup chopped celery ¼ Cup chopped sweet onion ½ Cup chopped red onion Dressing Ingredients ¼ Cup Vegetable oil ¼ Cup Sugar 2 Tbsp Cider Vinegar 1 Clove garlic, minced ½ tsp salt ½ tsp pepper ½ tsp hot sauce Preparation In a large bowl combine salad ingredients. In a small bowl combine dressing ingredients. Pour dressing over salad ingredients and toss. Refrigerate over night. Makes 5 1/2 cup servings. Preparation Scrub new potatoes and cook in salted water until tender. Steam new green beans whole or broken in two. In a skillet, make a roux for a white sauce. Melt three tablespoons of butter and stir in three tablespoons of flour. Mix together and cook over medium heat, letting the roux bubble, but not brown. When it is very thick, start to slowly add milk to thin it out and make a white sauce. Pour the while sauce over the beans and potatoes, mix and cook together for a few minutes before serving. and cut from the cob) 1 can (15 ounces) black beans, drained and rinsed ¼ Cup finely chopped celery Preparation Mix orange juice, lime juice, honey, thyme, cinnamon, garlic, salt and pepper in a large bowl until well blended. Add peaches, corn, beans and celery; toss to coat well. Cover Refrigerate at least 1 hour to blend flavors. Toss before service. Makes 8 1/2 cup servings. Farm Fresh, Authentic Tomato Sauce Ingredients 3 1/2 pounds of garden tomatoes 2-3 tablespoons extra-virgin olive oil 1 small or 1/2 large onion, diced 1 medium carrot, diced 1-2 cloves garlic, chopped salt and pepper to taste 1-2 sprigs thyme 1-2 stems of parsley 1-2 dried bay leaves fresh basil to taste Preparation Have a pan of boiling water and a large bowl of ice water prepared. Cut an X into the bottom end of each tomato and lower it with a slotted spoon into the boiling water until the peel begins to pull away from the flesh, about 20 seconds. Remove tomato from boiling water and place in ice water until cool enough to handle. Remove skin, core tomato August/September 2014

and squeeze to remove seeds. When all tomatoes are peeled, cored and seeded, crush them with your fingers. Heat a heavy bottomed deep saucepan on medium heat. Add olive oil, onions and carrot. Cook until onions are translucent. Add garlic and cook until fragrant. Add tomatoes, bay leaf and thyme. Simmer on low for about 30 minutes or until thick, adding basil near the end of cooking time. Cool slightly, remove bay leaf, parsley and thyme stems. Process in batches in a food processor or food mill. Use for any pasta or pizza dish calling for Italian tomato sauce. Makes 5-6 cups. If not using immediately, cool completely and store in refrigerator for 3-4 days or freeze in 1 or 2 cup containers for about 3 months. Recipe and photo by Feed Fannin Volunteer Maryanne Hofer.

Spinach, Mushroom, Tomato and Goat Cheese Frittata Ingredients 1 tablespoon butter 1 shallot, diced 1 clove garlic, minced 8 oz. mushrooms, sliced 8 oz. cherry or grape tomatoes, halved 2 cups, packed, fresh baby spinach salt, pepper, and cayenne to taste 6 eggs 6 tablespoons milk Preparation Preheat oven to 400ºF. Use an oven-safe skillet and heat it on stove top to medium. Add butter and shallot and cook briefly.

Add garlic, then mushrooms, salt to taste– stir once. Cook without stirring until mushrooms are brown before stirring again. Add tomatoes and then spinach and cook until spinach wilts. Meanwhile, whisk the eggs and milk in a separate bowl until they are fluffy, adding about 1/2 teaspoon of salt and 1/2 teaspoon of black and cayenne pepper if desired. Making sure first that the vegetables are evenly distributed in the pan, pour the egg mixture over and do not stir. Drop goat cheese by teaspoons throughout the pan. Transfer pan to the oven and bake until cooked through, about 15 minutes. Serves 4-6. Recipe and photo by Feed Fannin Volunteer Maryanne Hofer.
