Good openings for Asian chefs By Rudy Otter Five thousand extra chefs will be needed to help fill battalions of hungry mouths during the 2012 London Olympics, said Dan Power of People 1st a government-recognised skills council. "This is a great opportunity for qualified Asian and Oriental chefs" he told a meeting at Hotelympia, the biennial food service and hospitality event at London's ExCel Centre which ran from 28th February to 4th March. The council's work spans hospitality, leisure, travel and tourism, and Mr Power, its ethnic chef project manager, urged those interested in moving into a catering career to set about it now, gaining the right qualifications and training to take advantage of the increased openings the London Olympics would bring in the Asian and Oriental cuisine market, which according to a 2008 Mintel report was worth £3.2 billion a year. He reminded the audience that the Migration Advisory Committee's recommendation to stop bringing in foreign cooks and to hire staff from the UK workforce meant further opportunities for ethnics and non-ethnics to consider a career in Asian and Oriental cuisine which included Indian, Bangladeshi, Thai, Chinese and Japanese cooking. audience said he gave up his law studies and qualified as an an Oriental cook, securing a job in a Thai restaurant. Other white people were also doing well in the ethnic food sector. Janice Burdock and her husband Philip (correct) co-founded The Curry Sauce Company 13 years ago in Horsham, west Sussex, exploiting their "passion" for spicy food. Mrs Burdock told Asian Voice: "We prepare our sauces in a special way to appeal to English palates and supply outlets at home and overseas, everything from hotels and pubs to colleges and hospitals." Laila's Fine Foods of Blackpool, specialising in ready-prepared spicy meals for retail outlets in the UK and overseas, was also at Hotelympia, busy handing out mouth-watering samples to visitors. Also attracting attention in the vast hall was The New York Delhi (correct) Company of Barnes, south-west London. Owner Nina Uppaltold Asian Voice: "We focus on VIPs - very important peanuts - in various flavours including hot chilli, masala and chilli lemon, and supply to hotels, theatres and supermarket chains. Our nuts, Mumbai mix and cashews are equally popular in the United States, Middle East and all over Europe. We'll soon be hitting the Far East and Australia as well."
