just the three of us... about us Autumn is here, with its misty mornings, golden afternoons and chilly evenings, and in this seasonal issue of aboutfram we bring you cosy layers, a bracing beach walk, plans for the garden and a recipe for a delicious crumble cake to share. It’s been a busy month, seeing us picking mushrooms and apples, lighting up Peasenhall and taking a ride on a railway carriage in Laxfield. Conversation starter We chat to Caroline Mummery about her extraordinary life, how she danced her way across Europe, returned to set up The Cut in Halesworth with her late husband James Holloway, and why she is now happy to share her garage with a community café in Badingham. Caroline was born in Woodbridge, and from a very early age showed a great talent for dance, attending classes with the wonderful Kay Goddard. “I was a shy child, but dancing allowed me to express myself freely and I just loved performing. When I took a job at the Halifax in Ipswich, I felt so stifled and was desperately unhappy. When Kay called to say she has found me a place with a dance troupe in Lisbon, I resigned on 4

the spot!” This was the start of an amazing time touring the dance halls of Europe, pirouetting through Portugal, shuffling across Spain, and even doing the can-can at the famously debauched Moulin Rouge in Paris. Caroline took a job with Bill Lloyd, an American dance company based in Madrid, and spent four happy years living out of a suitcase by day and being stitched into beautifully glamorous costumes by night. However, by 1985 the sparkle had begun to fade so she returned to Suffolk and enrolled at Laban Guild to do a two stage course, where she discovered her true passion, contemporary dance. Caroline began running classes at Suffolk Dance, now

known as DanceEast, and has spent the last thirty-four years teaching, directing, choreographing, and exploring a dynamic, exciting, and sometimes challenging programme of contemporary dance. Caroline was also involved in the setting up a creative hub for theatre and dance groups in Halesworth. “James directed a youth theatre group for many years, but with a house full of props we needed to find a permanent base. When we bought The Cut, it was pretty dilapidated, but we still managed to put on some amazing productions.” It is now run by a charitable trust and has grown into an amazing epicentre of culture, with a café, theatre, studios and galleries. By now, Caroline and James were living in Badingham and leading incredibly busy lives, so when a friend, Tanya Newton, came knocking a few

years ago and asked if she could set up a community café in their garage, they didn’t have the energy to say no. It is now a thriving hub for villagers and visitors alike, offering coffee and cake, light lunches, plant sales, and a pop-up bric-a-brac stall. “This year we also held a few evening events. Tapas and Tunes was brilliant, with people gathered on both sides of the road, and we have a Brunch and a Christmas Fair planned.” After hearing of Caroline’s remarkable life, it is no surprise that she happily welcomed the café into her garden, and I am glad that for her, after losing James, it has also become a place of true friendship and comfort. A grassy track leads between the donkey and sheep paddocks to Little Lodge Glamping, an off-grid campsite nestled in the Suffolk countryside where you can sleep under the stars, bunk up in an antique railway carriage, or even spend the night in an enormous Romanian wine barrel. Owned by Wendy Miller and designed and built by her ingenious business partner Harris, Little Lodge is the sort of place your children will talk about for years to come. A place where they can run wild, get muddy knees and stuck up trees, feed the ducks and get nibbled by sheep, and let off steam without anyone worrying or putting a stern finger to their lips. It is also the sort of place where you will wonder at the ingenuity of the craftmanship as everything has been built using repurposed and reinvented material. The shower block is in a converted horse trailer, the BBQ an old blacksmith’s

forge, and on the wooden veranda by the railway carriage you can swing in a leather chesterfield sofa suspended by pulleys salvaged from Southwold Quay. Wendy, who lives in the farmhouse at the other end of the track, bought the smallholding in 2016 after selling the family farm near Reading. “My sister moved to Norfolk so although I had never visited Suffolk before, I liked the look of this property as it had plenty of space and came with meadows and outbuildings. As soon as the sale completed, I literally upped sticks 17

and arrived with my 6 sheep, 2 donkeys, 4 geese, 2 Shetland ponies, 2 alpacas, 3 dogs and umpteen ducks, rabbits and chickens - moving day was chaos!” One part of the farmhouse was already an established holiday let and Wendy decided to continue with that, alongside running her online fashion brand, Wandering Bee, and found she enjoyed the steady stream of visitors and their delight in interacting with her animals. It was only after meeting Harris - an allround useful chap who can turn his hand to anything - that Wendy began to explore the possibility of expanding her accommodation options and setting up a glamping site at the end of the paddocks. It is the perfect spot, nestled against a small wood of mixed oak, maple and apple trees, and surrounded 18

by farmland with hardly a house in sight. As the idea took root, they both realised how important it was to create something sustainable and for it to be off grid, a place for people to come and totally switch off. Harris’s skills were soon put to the test, firstly with an antique railway carriage rescued from a neighbouring farm that he converted into a beautiful bedroom with a raised cabin bed and woodburning stove, and then with a horse trailer that is now a very cool toilet and shower block. Using only salvaged material from scrap yards, farm sales and demolition sites, Harris’s attention to detail and clever reinvention of material is everywhere. Everything has been given a second chance; petrol cans are now quirky seats, oil drums are sofas, and the bonnet of a car has been

reimagined as a retro planter. But my favourites by far are the enormous wine barrels that are so fabulous and over-sized that they look like something out of The Hobbit. Wendy shipped them over from Romania and Harris has already converted one into a sleeping pod, fitting a huge circular door and stringing a rope hammock bed across the centre, and another into a bar which can be set up at the campsite for celebrations – or just because! Two more sit in the yard, one sawn in half ready to be transformed into a hot tub and Harris has designs for the other as a sauna. Little Lodge Glamping will be up and running by April 2022 and the plan is for guests to rent the space as a whole. It will sleep 10-12 as Harris is currently working on a traditional Mongolian Yurt, where a

bespoke four-poster bed will allow you to drift off under the starry Suffolk skies, and another railway carriage that will have two double sleeping compartments with sliding doors and a huge picture window. Wendy and Harris already have commissions for building similar glamping sites in Norfolk and Salcombe, and as we wander back, there is talk of converting grain silos into bunkhouses and building treehouses in the wood. Their imagination and creativity are seemingly endless, and I can’t wait to see what they come up with next and to return next year to raise a glass to their success – hopefully in the wine barrel hot tub! Lots in store for two fabulous independents about town

In July 2018 collated opened its doors to great acclaim and quickly became a firm favourite with Framlingham shoppers. Three years and one pandemic later and owners Chris and Carrie have expanded the business, moving Home and Gift into their new larger premises only five doors away. The current shop is now their new fashion boutique, wear:collated, stocking an exciting range of clothing and fashion accessories, all chosen and displayed for sale with the same passion and careful detail with which collated has become synonymous. Over in Saxmundham, another wonderful lifestyle store, East of Eden, is also expanding, opening an Annex store opposite the existing site in Fromus Square, just behind Waitrose. Expect to find more lovely homeware including rugs, ceramics and furniture ….and whilst you’re there, why not pop in for a delicious coffee and cake at the new café, Mama Bears Cake Bar. 26


High praise indeed Architects and owners of 10 Church St, Framlingham, Mark Hoare and Ted Ridge of Paper House Properties were recently rewarded for their vision in transforming the old Con Club into what is now a wonderful about community hub. Mark said, “We are thrilled town to have the renaissance of the Con Club recognised with this prestigious national Architectural Award presented by the Georgian Group. The judges were impressed not just by the work we have done to the building but also by the quality of work being produced within it, and they noted the creative endeavour of the community: by us as architects, and by our families, neighbours, the artists working there, the youth club, the Town Council and the Common Room Café. A lot of people have helped to make it a success, and we owe them all our thanks - although we aren’t quite over the line yet! The opening show at the Theatre has also been a very exciting first step for the revival of that building and we look forward to progressing plans for that in the coming months.”

Money, money, money! A fund being distributed across Suffolk to clubs and causes is now to be extended by a further £245,000. The county’s Community Restart initiative, which is managed by Community Action Suffolk, has already allocated some £332,507 and helped 226 groups get back up and running after Covid. Organisations as diverse as toddler groups, cricket clubs, parent projects, wellbeing sessions and community transport have been among the many recipients to be gifted up to £2,500 toward safety measures, post-pandemic adjustments, training or recruitment. The latest £245,000 boost comes directly from the Collaborative Communities Covid-19 Board for Suffolk, and in addition to being able to apply for grants, organisations can also access Suffolk Community Restart for advice, training and peer support. Chris Abraham, CEO of Community Action Suffolk, said: “Suffolk Community Restart has been such a clear success since its launch earlier this year, having already helped hundreds of ‘lifeline’ charities, clubs and venues get back in operation post-Covid. Arriving at Wakelyns is like entering Eden. Rows of dark rich soil are divided by avenues of trees where apple and pear, bowing under the weight of their ripened fruit, interlock branches with alder, beech and quince. Trellises overflow with runner beans and flocks of finches flit from bramble to sunflower. Spread over fifty-six acres, Wakelyns is one of the finest examples of organic agroforestry farming practices in the country and has been at the forefront of pioneering agricultural studies for nearly thirty years. The story began in 1992, when Martin Wolfe, a scientist at the Plant Breeders Institute at Cambridge, and his wife Ann, purchased this precious slice of land just outside Metfield in order to further their studies on the importance of diversification, and to show how the farming world could benefit from moving away from traditional arable monoculture. Over the years, Martin and Ann mapped

out a planting scheme for the land, buying in 100s of seeds and bareroot saplings to grow in rows alongside alleys of traditional field crops, meticulously plotting the results of each harvest to see what impact it was having on the yields. Their aim was to prove that agroforestry promoted increased biodiversity, productivity, and the overall health of the soil, and although Martin and Ann have now passed on, Wakelyns is a testament to this ambition, and their ground-breaking research lives on in the verdant soil and amazing variety of mature trees that line 31

the rows of thriving crops. The farm is now under the stewardship of their sons, Toby and David, and David’s wife Amanda, who are keen to carry on their important work. Not having entered into farming themselves, they made the decision to open up Wakelyns to others who are interested in a more sustainable way of growing and living. The blueprint laid down by Martin and Ann is still at the heart of farming here, but amongst the trees you can now find rows of squash, vegetables and lentils grown in collaboration with Hodmedods. Fay Jones, the woodland haberdasher, weaves baskets from the coppiced hazel and in one of the farm buildings a bakery is producing around 300 loaves a week. The bakery is run by Henrietta and Maisie, both qualified cooks and bakers who have 32

given up jobs at successful London restaurants to pursue a more fulfilling life here on the farm. Everything they bake comes from ingredients grown at Wakelyns, and leaving Maisie to knead the morning’s dough, Henrietta takes me on a tour. She explains that they oversee the fruit trees, while Chloe, Holly and Rachel run a vegetable box scheme called RealVeg, a Community Supported Agriculture initiative which invites members to get involved and help with the planting and picking. This season, another grower, Marion, took over one of the rows for her squashes and next year Tilly is arriving with her chickens that will provide the bakery with free-range eggs. The special YQ population wheat, which was developed here by Martin, is still grown in rotation with lentils or buckwheat to ensure the soil is rested and

enriched, and as we wander the alleys, I get a real sense of a community beginning to come together with a shared responsibility for the growing, harvesting and distribution of the produce. We stop and try a ‘Coeur de Boeuf’, a dark brown apple with a dry, subtle sweetness that makes it a good cooker, and then track down an Ashmead’s Kernel, a delicious Russet-like dessert apple. Back at the bakery, Henrietta shows me a handwritten archive of all the different fruit trees Ann planted here at Wakelyns and I delight in their beautifully evocative names: Summer Gold Pippin, Excalibur, Falstaff, Bloody Ploughman and the fabulous Warwickshire Drooper. More varieties of plum, apple, cherry, quince and pear are added each year, their names being recorded on Ann’s

ledger as a reference for future generations, and the team is organising a Community Apple Day at the end of October, alongside an apple photography exhibition by Richard Allenby-Pratt, as a celebration of the amazing variety grown here. I love that everything is shared or swapped or bartered, and that old-fashioned values of working the land together have once again found their place. This method of farming the land is not new, but Wakelyns is proof that agroforestry is indeed a pathway that modern agriculture needs to embrace if we want to protect our land, our environment and quite possibly our souls. We turn the spotlight on Mark Ambrose and find out how his penchant for vintage fire extinguishers led to a lightbulb moment and the setting up of George Juniper, a bespoke lighting company that specialises in the repurposing of unusual items into beautiful lamps. Originally from Bures, Mark left school at sixteen to fulfil his boyhood dream of joining the Royal Naval Marine Engineers. However, with a decisiveness that I soon learn is a familiar trait, he quickly realised it wasn’t the life he had imagined and returned to work as an apprentice for his father’s motor repair business. As part of the bodyshop team he became a skilled mechanic but by his mid-twenties and with a growing sense of restlessness, he felt the need for a change and took a job in recruitment. Specialising in engineer employment, Mark’s quick mind, drive and apparent talent for sales saw him thrive and he quickly rose through the ranks,

working for firms in London, Ipswich and Cambridge, managing large scale projects such as installing a new heating system at King’s College. Fast forward a few years and Mark is back in London, using his patter to charm clients for Taylor James, a respected design studio in Shoreditch. “That was a crazy time. We were handling large accounts for the likes of Land Rover, Saatchi & Saatchi and British Airways. It was at the height of the excesses of the old school ‘wining and dining’ so the candle was well and truly being burnt to the stub.” Mark then side-stepped into the world of film, 37

working for the internationally recognised post-production group Lipsync, where, as Commercial Director, he was involved in the development and growth of the company, using his creative mind and aptitude for people to build it into a successful and innovative production studio. Just as Mark was getting ‘fidgety’ again he met Beth. It was a true meeting of minds, a chance encounter outside a Soho bar that led to a whirlwind romance and a wedding at Gretna Green just ten weeks later! Beth worked at the BBC, where she still freelances today, and she also had ties to Suffolk as she grew up in Peasenhall where her family set up Emmett’s, so they put their creative minds together and hatched a plan to move back and start a business. Initially, their shared loved of interiors and 38

vintage finds led to a dabble in antique dealing. “It was great fun and some of my happiest memories are of getting up at the crack of dawn, jumping in the van and heading off to Kempton Racecourse in search of bargains. We met some amazing people, bartered all day long, and returned tired but happy with a van chock full of treasure.” In 2015, Mark and Beth moved to Peasenhall, and with that came the opportunity to take over a shop with some old stables to the rear where Mark could set up a workshop. “The upcycling movement was really taking off at this time. We both have a long-held love of design and interiors, and I especially admired the work of Italian lighting designer Oscar Torlasco whose work had an industrial

focus, so we began sourcing obscure items such as beer barrel taps, wooden skittles, extinguishers and soda syphons, and repurposing them into striking statement lamps.” The pleasing aesthetics, shape and patina of vintage fire extinguishers lent themselves perfectly to this reinvention and they are now a signature trademark of the company, named George Juniper in honour of Mark’s great-grandfather. Designing, restoring, and repurposing the lights has clearly reignited Mark’s passion for engineering and his love of working with metal, and looking around the shop, the quality of his work is exceptional. The beautifully polished brass and copper of the extinguishers give off such a warming glow, and the working instructions inscribed on the base and symmetry of the rivets are a

perfect reminder of their industrial past. An old cinema Exit sign and pair of vintage gas lamps have been given a fabulous new lease of life and a small French brass garden sprayer has been transformed into a wonderful statement piece. “I get great satisfaction from working on commissions and helping to bring much-loved items back to life. As we venture into autumn there is always feeling of urgency to get the garden shipshape before the winter closes in – to straighten the edges, prune the shrubs and chop back the borders. But I would suggest caution as there is often delight and wonder to be found in leaving a few stems standing, so you can admire their architectural silhouettes and shapely seed pods as the season passes. Here are some of the most decorative seed heads: Hydrangea: The magnificent papery seed heads have an ethereal beauty when lit up by the golden glow of the late afternoon sun. Allium: These spikey seed heads spice up winter borders and add a strong vertical accent. Echinops: Nothing is more beautiful than these elegant silvery stems topped with

pompom seed heads, sprinkled with frost on a crisp winter’s day. Echinacea: A fabulous plant that drops its brightly coloured petals to reveal a distinctive cone-shaped seed head. Poppies: A real favourite, these decorative seed pods always give a welcoming nod to autumnal blusters. Teasels: Towering in resplendent architectural beauty, these hedgerow staples are now an established part of many planting schemes. All of these seed heads add geometry and interest to the garden, especially draped in dew dropped spiders’ webs or when leaving frozen shadows on the lawn. They are also a great food source for your garden birds and look wonderful as a splendid centrepiece for a seasonal supper or a festive mantlepiece. 43

Autumn cutbacks October blows in, whistling the start of the seasonal sort out. Now is the time to give your borders a tidy up, to tie in your climbers and to clear out the greenhouse. Cut back straggly geraniums and leggy perennials such as phlox, peonies, delphiniums and lupins – sparing those with decorative seed heads that will also benefit wildlife - and give your lavender and rosemary a prune. Whilst the soil is still warm, direct sow a few bee-friendly plants such as white laceflower, sweet woodruff and phacelia to ensure your spring garden is really buzzing. In November, tackle the fruit bushes; redcurrants, whitecurrants and gooseberries all benefit from having any diseased wood cut out, and autumn-fruiting raspberries can be cut right back to ground level. Layer up your pots with tulips, lift dahlia tubers to

store and net your brassicas to protect them from foraging pigeons. Prop up your brussel sprout stalks and, if you get a warm spell, raise the mower blade and give the grass a cut. Bring a glow to your cheeks in December by planting out bare-root roses and deciduous shrubs, raking the leaves off the lawn, trimming hedges, and digging over any bare patches ready for spring sowing. Store away your hosepipe and any terracotta pots that might be vulnerable to frost damage - but do plant up a few with merry cyclamen and scented daphne odora to place by your front door as a little reminder of the brighter days ahead.

Within the humid interior of a 40-foot container, I stare in wonder at the rows of fruiting fungi that are slowly emerging out of the fog. Grown by Stefanie May of Fabulous Fungi, this is a harvest of a different kind, a flush of beautiful gourmet mushrooms - huge pink and grey oysters, nutty brown shitakes, and the extraordinary lion’s mane. Known to her customers as ‘The Mushroom Lady’, Stefanie has been farming these fabulous fungi for nearly three years, initially growing them in her annex and barn at the bottom of the garden before expanding into three modified shipping containers on a neighbour’s farm. She is no stranger to the exotic as her previous career in finance and strategy saw her travelling to South America, Russia and Africa, working on rural community projects such as setting up a pineapple farm in Mozambique doing plant feasibility studies in Senegal, Kenya and Nigeria. However,

after their son Arthur was diagnosed with autism, Stefanie and her husband David realised the need for stability and decided to set up home in a thatched cottage in Suffolk. With David still able to commute to London and Arthur enrolled in the local primary school, Stefanie turned her active business mind to projects that would fit in around family life. “I tried setting up a flower farm but sadly sadly I killed all the test plants, and whilst trawling the net for more ideas I came across mushroom farming. It was an 49

idea that intrigued me, so I investigated further and signed up for a course to learn more about what was involved.” Initially setting up in the annex, Stefanie started off by growing white oysters, a large milky mushroom that is relatively easy to grow, before expanding her repertoire to include other gourmet varieties such as grey, pink, and yellow oysters, shitake, pioppini and lion’s mane. Stefanie buys in the mushroom spawn, which she mixes with a substrate material that varies depending on the specific variety; oysters and pioppini like straw, whilst the others prefer a woodier mixture. The substrate is packed into plastic bales and incubated in warm, dark conditions to allow the spawn to grow into a web of thread-like mycelium and then, after 2-3 weeks, they begin to fruit. The growing 50

conditions such as humidity, temperature, oxygen and carbon dioxide levels must be tailored for each type of mushroom and be carefully regulated throughout the process. “We have had to learn their individual idiosyncrasies, how the seasons effect their growth and how many fruiting cycles or flushes we can expect.” Stefanie’s clear thinking and attention to detail has paid off and she is now producing 200kg of fresh mushrooms per week. She sells them at six regular farmers’ markets in London, as well as supplying several local pubs and restaurants including The Unruly Pig, the Turk’s Head in Hasketon and The White Hart, Otley. “It has been an amazing three years and the more I learn, the more I realise there is to know. We are just beginning to understand the incredible health benefits of mushrooms. Lion’s mane

is good for the brain and has been shown to help with dementia, and oysters are good for the gut as they don’t ferment and have anti-inflammatory properties.” Since expanding and shipping the mushroom factory into the containers in 2020, Stefanie has also grown her team to six and is especially keen to offer opportunities to young people who have struggled to find long term employment. By creating a positive working environment, she is helping to support the local community and feels that she is very much at the forefront of modern farming practices, proving that you don’t need 1000s of acres to be a successful food producer. Her customers would seem to agree as her gourmet mushrooms are in high demand, their freshness and incredible depth of flavour far surpassing imported

ones, and she delivers to a regular list of chefs as well as private clients, who are all keen to explore the locally grown varieties. The fungi are indeed fabulous, so wonderfully rich in colour and texture, and my visit has been a fascinating insight into their strange and weirdly magical world. Waklyns YQ Apple Crumble Cake A delicious seasonal apple cake full of wonderful rich flavours and textures. Ingredients Crumble: 90g unsalted butter, cold and cut into cubes 150g YQ population wheat flour Pinch of sea salt flakes 35g organic light brown muscovado sugar or demerara Cake: 500g chopped apples – ideally a mix of cooking/ eating/ dessert apples 120g unsalted butter 120g organic light or dark brown muscovado sugar 60g mascarpone, yoghurt or crème fraiche Good pinch salt 110g YQ population wheat flour 2 large organic eggs 1 ½ tsp baking powder 56

Method Start by making the crumble. Mix all of the ingredients with your fingertips, or in a freestanding mixer with a paddle fitted, until it forms crumbs. Leave in the fridge until needed. Grease the edges and sides of a 23cm loose bottomed cake tin with butter. Line the bottom with parchment paper and preheat the oven to 180°C. To make the cake, chop the apples into 1-2cm pieces and lightly toss with flour. Cream the butter and sugar until light and fluffy, then add the mascarpone/ yoghurt /crème fraiche and salt and mix to combine.

Now add the flour, baking powder and beaten eggs, alternating between them, until just well mixed. Gently fold in the apples, then turn out into the tin and sprinkle over the crumble and bake for 40 - 45 minutes, turning in the oven after 30 minutes - reduce the oven temperature towards the end of baking if the top is getting too dark. Enjoy warm from the oven with homemade custard, or if you can bear to wait, it is also delicious cooled and savoured over a cuppa the following day.

A clean sweep Bawdsey Beach beckons for our walk this issue as we have signed up as volunteers for a beach clean run by local company, Creightive. On the drive over, the windscreen wipers are on double speed and the rain is giving us a proper lashing, so we are thankful for the warm welcome and delicious coffee awaiting us at The Boathouse Café. Organised by Dan Haden-Scott, the aim of these monthly beach cleans is to raise £10K in a year for Surfers Against Sewage, a charity campaigning for the conservation and protection of our oceans. Dan grew up by the Suffolk coast, and most weekends you can find him and his young family dipping in and out of the 62

waves. However, having seen first-hand the increase in in plastic pollution, he was keen to get involved in a project that would allow him to give something back and to protect the future of our beautiful coastline. Once a month, Dan and his team of bright young creatives organise a beach clean and invite volunteers and local businesses to come lend a hand or to offer their support by donating to the cause. It is a fabulous mission, and we are more than happy to swap the office for a blast of fresh sea air on a Friday morning. One other courageous soul has braved the weather, and so after more coffee, some home cooked sausage rolls

and a round of scones, we each grab a litter picker and set off up the shingle. The wind plays havoc with the bin bags, whipping them round our heads and making it almost impossible to deposit the offending plastic lid or discarded straw inside without having to chase it down the beach. As the morning wears on, the weather brightens and we soon settle into a harmonious routine of stop, grab, collect, occasionally pausing to compare our haul of coffee cups, cable ties, broken fishing nets, pieces of ripped neoprene, a lost sock and even a pair of pants!
