T

his month sees the celebration of QATAR’S NATIONAL SPORT DAY, a pioneering initiative adopted by HH Sheikh Tamim bin Hamad Al Thani, the Deputy Emir and Heir Apparent to promote sport and demonstrate how it can build a healthy community both physically and psychologically. With this in mind, we have come up with our very own ABODE SPORTS ISSUE.

An active lifestyle is key to keep everyone in great shape, so we hope you’ll find some useful tips in this issue about how to improve your daily routine. ABODE introduces you to the super stylish new collection by Stella McCartney for Adidas and we also give you a round-up of the best parks, gym facilities and classes on offer in Doha. You’ll have no excuse to stay glued to your sofa! February is also an important month as it marks the start of a new season. We’re saying goodbye to Winter 2012 and welcome Spring 2013. It’s a time to discover new trends, so we have compiled a catwalk report to let you know what’s hot and what isn't this season. There’s also lots to be excited about food-wise in Doha lately, with the opening of both the french brasserie, La Varenne, in the Tornado Tower and Hakkasan, the world renowned gourmet Chinese restaurant, which recently opened its doors at the magnificent St Regis Hotel. How did FASHION ROCKS QATAR come about? A: I launched FRQ as a Fashion Page on Facebook, a page for me and my friends to share our thoughts and reviews on fashion & beauty. People then started to take an interest, and after 4 months we hit the 9000 fan mark. It was completely unexpected. I decided after two months of the page being open to incorporate my handmade jewellery and the work of two other designers. We then opened an online store through Facebook called FRQ Boutique, which caught the attention of Common Thread Qatar, who invited us to show and sell at their pop up boutique during the DTFF at Katara, which was a huge success.

How do you select products to sell on your website? A: 90% of the jewellery is handmade and they are one-off pieces. A lot of the rings are made from vintage pieces that

I buy online, which are then revamped and made into wonderful rings. The other 10% is a mix of what you cannot find in Doha, or pieces which are completely unusual and rarely seen.

What is the best perk of working in fashion? A: The best perk and I have to be honest here, are the amazing freebies from brands and designers. It is so nice to receive a package with something beautiful inside.

How do you keep up with all the latest trends? A: Luckily I receive all the latest news from designers and high-street stores, so I can stay up to date with the latest trends. I also need this info to update the Facebook page for the fans. My favourite trend at the moment is spikes, from jackets to shoes to jewellery. This is definitely a trend which I believe is staying put for now.

Do you have a favorite Designer? A: Yes, I love Dame Vivienne Westwood, such an eccentric yet talented designer. I have a weakness for her shoes and bags.

If you had to save only one piece from your wardrobe from a fire, what would it be? A: This is a very hard question! I would have to say it would be my vintage Chanel bag, which was produced in the same year I was born - a very special piece.

How would you describe the fashion scene in Doha? A: I have been here in Qatar now for 8 years, and it has been very interesting to see the changes and developments. Locals & expatriates alike are now more aware and focused on fashion - some like to stay within their culture, and some like to mix it up. There are so many brilliant local designers & bloggers, and new fashion events are always popping up. Qatar is definitely moving forward.

Well, it’s the fact that it will end one day and you’ll be back to the grind of normal life. A long, eventful vacation is usually a season of extravagance and overindulgence in the things we crave most or are most passionate about, and this could involve a food binge, parties and other leisure and social activities. 1) Create a buffer period between holiday and work This means that you shouldn't go straight back to work immediately after the holiday. Try to schedule your vacation to give you two or three days to readapt to your regular routine before returning to the office. 2) Maintain your exercise habit Exercising is an excellent way to fight stress because it helps our body produce endorphins, the chemical that gives us a feeling of well-being. It is best to incorporate regular exercise during your holiday so exercising will feel like a natural thing to do once you return from vacation. 4) Get a special spa treatment If you haven't found out yet, there are special spa therapies that are tailored to your specific needs. Spas help you relax and nurture your skin, body and wellbeing. Treat yourself to a massage and a full spa treatment regularly. 5) Adopt a healthy sleeping pattern A good amount of sleep gets you off to

a fresh start every morning. Having a good night's sleep helps reduce stress and prevents mood swings that might characterise your post holiday syndrome. 6) Gently ease your way back to work It's best to take it easy during the first few days back at work. Have a more sensible, practical schedule and take time to catch up on what you might have missed. 7) List the things you want to do but haven't been able to do You'll be amazed to learn how many things are waiting for you to explore and experience. Plan on engaging in these activities now! 8) Try to get excited about a future event There are more holidays and special occasions to look forward to. Cleaning your makeup brushes is essential to keep them lasting for years. Makeup brushes should be cleaned using a cleaner specially designed for brushes. Apply the cleaner from the end to the tip. Rinse and repeat until your brushes are completely clean. Lie the brushes on a clean paper towel, and dry them completely before using. Here is their advice on how to stay motivated by setting goals and choosing activities you enjoy. 1 Set goals, start with simple goals and then progress to longer range goals. 2 Make it fun, find sports or activities that you enjoy, then vary the routine to keep you on your toes. If you're not enjoying your workouts, try something different. Don’t quit. 3 Make physical activity part of your daily routine. if it's hard to find time for exercise, don't fall back on excuses. Schedule workouts as you would any other important activity. 4 Put it on paper, write it down! Keep an exercise diary. Seeing the benefits of regular exercise on paper may help you stay motivated and track your progress. 5 Join forces with friends, neighbours or others, you should try to invite friends or co-workers to join you when you exercise. 6 Reward yourself, when you reach a goal, treat yourself to something like a new pair of walking shoes or new tunes to enjoy while you exercise. 7 Be flexible, if you're too busy to work out or simply don't feel up to it, take a day or two off. Biceps and Shoulder Sweep ‘n Tone Stand with your legs wider than your shoulder and with your knees slightly bent. Hold dumbbells next to waist and perform a bicep curl, and at the end of the curl twist the biceps and do a shoulder press as shown. Push the arms straight up overhead. As you lower down, curl the arms in a bicep curl. Repeat for 3 sets of 12-15 repetitions, with a 20 second rest between sets.

Triceps Kick Back The kickback is a common triceps exercise which involves extending the arm while the torso is in a bent position. For this exercise, you can do one arm at a time and use heavier weights or you can extend both arms at the same time, which involves lower back stabilization. Hold a moderate weight (a dumbbell is good) in both hands and bend over until your torso is at a 45-degree angle or parallel to the floor. Bend the knees and keep the abs engaged to protect your lower back.

Perform the action by bending your arms and pulling the elbows up to torso level. Holding that position, straighten the arms out behind you, squeezing the tricep muscles. Bend the arms back to starting position. Perform 12-15 repetitions of 3 sets. Do not swing your arms to get the weight up.

Flat Chest Fly-Floor This is great for working both sides of the body, and the dumbbell chest press makes a nice balance to the barbell exercise. Lie down on a floor mat and begin with the weights in each hand straight up over the chest, palms facing out. Bend the elbows and lower the arms down until they are almost touching the floor. Press the weights back up without locking the elbows and bring them close together. Repeat for 3 sets of 12-15 repetitions. Keep the abs contracted throughout the movement to protect your back. Perform slowly and control the weight.

Dumbbell Row and Hip Squat Two armed dumbbell row and hip squats are a great way to work the middle back muscles and hip squats are ideal to reduce and tone hips. This is a great combined functional exercise. Hold dumbbells in your left and right hands, bend over at the waist, and keep your back flat and abs engaged, until the torso is parallel to the floor. Pull the dumbbell up as shown, bringing the elbow up to torso level. Lower the weight and do a hip squat as shown. Perform slowly and control the weight. Repeat 8-12 times before switching sides. 3 sets recommended.

September 9, 2012. Nada Al-Ansari will never forget the day she decided to take back her life and become a healthier person, “a woman with a future,” she explains.

I was so depressed,” says Nada. ““I felt that my weight and poor health were insurmountable – I felt like I was going to die. I could not stop thinking that I would not live to see my youngest daughter’s wedding. ”

T

he mother of four daughters ranging in age from 23 to 12, Nada reached out for help – to a person who is like a fifth daughter, Kauthar Ahen. Coco, as she’s known to her nearest and dearest, is obsessed with good health habits, for herself and for anyone who wants to shape up. The 24-year-old Qatari is a researcher at the Museum of Islamic Art and recently married, but in her spare time she’s studying to become a personal trainer with the goal of working to make a difference in Qatar’s fat-saturated, fast-foodproliferating landscape.

Coco has overhauled her own nutrition and exercise habits, shedding kilos and building muscle, so she’s walked the walk and empathizes with others who share the same goals. “Most of the time,” she says, “it’s not that people are lazy or thoughtless about food or exercise. They just don’t have the tools they need to change lifelong bad habits.” Coco told Nada that if she would commit, then she’d help her get to her goal. “Coco took me in hand,” says Nada, “teaching me about good foods and

bad foods and the need for daily exercise.” First on the agenda was a visit to the grocery store, where Nada was introduced to the fruit and vegetable sections, new brands of yogurt, whole grains, fish and beans. This was a new experience for a woman who says that she previously limited her grocery-buying to cookies, candy, ice-cream and diet and regular soda. Then came the exercise. “That first week, I could hardly walk to the front gate from the house, it exhausted me,” says Nada, who can laugh now

fitness at her former exercise-avoidant self. “I hated every minute of the first two weeks with Coco.” She made a trip to Dairy Queen, sneaking an ice cream cone, but confessed to Coco and her daughters. Coco’s response was to grab a book and read aloud to her about the debilitating effect of diabetes on the human body. “This really came home to me, because I’m diabetic,” says Nada. “She was striking at my primal fear of dropping dead if I couldn’t learn to control my eating and exercise.” Coco admits that while this approach was somewhat harsh, it worked. “I learned just as much from this process as Nada,” she says. At the two-week point, when Nada was at the breaking point, this confrontation steered Coco in a different direction. “I was being too hard on Nada, and not being accommodating of her need for smaller as well as larger steps. I was trying to bring her along too fast, and when this happened, I realized that I needed to dial her program back,” Coco explains. Reinvigorated by a newly instituted weekly “cheat day,” and an allowance of one diet Pepsi a week, Nada kept going. Coco spoke with her daily, and took her measurements every ten days. Even during the first week, Nada began to experience immediate results, with her insulin needs decreasing. As a family, the Al Ansaris were no strangers to weight loss and exercise programs. Summer, 23, went from a size 14 to a 10 in 2010, motivated by her upcoming wedding to shed kilos. Sahar, 18, was next, reducing from a size 14 to a 4 in the course of the past two years. They cheered their mother’s efforts and shared their wealth of calorie- and step-counting knowledge. That left Sana, 15, and Ayah, 12. Inspired by their mother’s progress and the information she shared with them daily (the number of calories in

a KFC Twister, the amount of sugar in a Pepsi, the treadmill time it takes to burn off a cookie), the youngest Al-Ansari sisters began gravitating to Nada’s new world. The girls stopped going to the "dukan" after school, where they were accustomed to loading up on candy, soda and ice cream every day. “We used to order almost every day from Kentucky Fried Chicken” says Sana. Coco chimes in “this is common practice with Qatari families – the typical Qatari diet is so heavy in saturated fats and empty calories. This is what I am trying to change.” The sisters laugh as they acknowledge that Ayah was the fast starter in losing weight and adopting daily exercise, with Sana gearing up once Ayah’s weight loss became evident. “A little competition can be very motivating,” comments Nada. Sana is now a size 12, down from size 16, with Ayah going from extra-large to medium-size clothing. Says Ayah, “We don’t think about fast food anymore –it’s a turn-off. We hate the smell, the grease, everything about it.” While acknowledging that the Pepsi habit remains hard to break, the sisters are enjoying their newfound ability to fit into each other’s outfits, their newly toned muscles, and their family’s success. Nada’s doctor is also pleased with the family’s results. Nada reduced her insulin by 20 milligrams, almost half of what she used to take, and is gone from a size 22 to an 18. She continues to take daily walks, while the Al-Ansari girls prefer the treadmill and exercising at home to DVDs. They’ve even come to a happy trade-off: one day it’s a DVD, the next day a walk outdoors. Coco is focusing on her goals to become a Certified Personal Trainer by the International Sports Sciences Association and her work at the Museum of Islamic Art. The budding entrepreneur has big plans to create

Shaping a New Life: 1 If you’re diabetic, be sure to see your doctor before you embark on a lifestyle change. 2 Substitute brown bread, pasta and grains for white bread, pasta and rice. 3 Cook with Canola oil and substitute olive oil for salad dressing. 4 Control your portions. Coco taught Nada to measure out a cup of rice for one serving, until she could “eyeball” the right amount. 5 Learn new cooking approaches and recipes. Coco conducted Cooking Classes for the Al Ansaris, passing along tested techniques for making whole wheat pizza crust and a chocolate cake made with applesauce that is a dead ringer for molten chocolate, gazillioncalorie cake. 6 Keep a food diary. “Writing down everything I eat, every day, keeps me honest,” says Nada. Her food diary also helped Nada to notice when specific foods were elevating her blood sugar – for some reason, white pita bread and mini-muffins send it soaring immediately, so she now avoids these foods. 7 Track your calorie intake and output. Coco brought Nada a Fitbit from the United States, a device and iPhone app that function as a pedometer, calorie counter and health tracker.

Just a ‘supplement’ - not a meal. Don’t think if you reach for one of these you are done with eating for the day. Energy or Power bars are for those who need a quick energy boost only. ABODE clears the air of all the myths and shares some quick tips to keep in mind.

Nutrition Information What to look for? Choose bars with the least amount of sugar, have whole-food ingredients, are low in fat and carbohydrates and have protein. Buyers beware, look for 5 ingredients or less. If you can’t pronounce an ingredient, don’t eat it.

Energy Bar Tips 1 Truly effective energy bars need to provide fast-acting carbohydrates to facilitate ultra-quick energy delivery. They also need a generous glycemic content to help ensure that a body is properly fuelled when it needs it most. This is a particularly important point for diabetics. 2 Always read the nutritional info at the back of the wrapper 3 Look for ‘Protein Isolates’ Whey and soy proteins, which are first extracted from a food and then added to bars to boost protein content. Hydrolyzed proteins undergo further processing that removes vitamins but makes the protein more digestible. 4 Watch out for too many calories—energy bars can pack 350 or more. And pay attention to unrecognizable ingredients, especially sugar alcohols like xylitol or maltitol, which are hard to digest and can cause stomach discomfort. 5 When used in sports situations, energy bars can be handy and provide necessary fuel for exercise. • 1/2 cup slivered almonds • 1/2 cup cashews • 1/4 cup almond or sesame seed meal • 1/4 cup unsweetened shredded coconut • 1/4 cup almond, sesame or peanut butter • 1/4 cup coconut oil • 1 tsp pure vanilla extract • 1/2 tsp of raw honey • 1/4 teaspoon sea salt • 1/2 cup dried cranberries, dates or blueberries • 1/2 cup dried apricots (soaked over night)

until golden brown (you may need to shake the tray once or twice to make sure they cook evenly). • Once toasted, pour mixture into a food processor and pulse until nuts are chopped and the mixture becomes coarsely ground. • In a mixing bowl, melt coconut oil and almond butter (about 20 seconds). Remove from microwave and stir until smooth. • Add vanilla extract, honey and sea salt. Mix thoroughly. • Fold in nut mixture and almond (or sesame seed) meal until mixed thoroughly. Fold in blueberries/cranberries. and apricots • Press mixture into an 8 by 4 loaf pan. • Refrigerate for 20 minutes or until firm. • Cut “loaf” width wise. Should make 6 good-sized bars. • Enjoy! COMFORT FOODS Why we love TO EAT them

PIZZA… HOT DOGS… APPLE PIE… ICE CREAM… HOT CHOCOLATE… CANDY BARS…FRENCH FRIES…

Are they healthy to eat? Should we avoid them? How often do we need them and if so, do we eat them in excessive amounts? Here is our take on how to enjoy comfort foods and how to manage their effects on our bodies. There are some foods we love to eat and not necessarily because we are hungry. We eat them because we are bored, lonely, hurting, stressed or because of special holidays, special friends or favourite family gatherings. Those foods bring good memories, happy moments and are known to us as comfort foods. When we eat these foods we feel happy again, even if it is just for a moment. Each society has fabricated a culture of food and food patterns that not only has satisfied hunger and hunger pangs but also meant love, care and security. Sharing these foods with others has always been important to communicate and build friendship. So, the meaning of food as providing psychological comfort goes way back.

In my own experience, apple pie topped with ice cream and hot cinnamon sauce, french fries and popcorn are part of my own personal list of comfort foods. In Qatar, Hummus and flat bread, olive oil and zaatar are also important foods that I have enjoy when I want a special treat. Each of you will have your own list which makes you feel happy, reminisce your childhood and smile with “gusto” and provide you comfort. Once in a while, these foods are well tolerated by our metabolism without having disastrous effects on our waistline, but unfortunately, after a hard day’s work, most of us frequently reach for our comfort foods when we are stressed and feel we deserve a reward, or if we are lonely with no one to talk to and share feelings with. This is the time we over eat the foods we enjoy most. For many of us, this happens day in and day out when we are upset. Comfort

foods are subconsciously a way we communicate emotionally with ourselves when we are stressed. To add insult to injury, these foods are addictive. The sugar,fat and high carb content in these foods increase our desire for them each time we eat them, and like a drug our cravings for them get worse. We can’t stop and we overindulge. Comfort foods have lots of empty calories and they are not the “best choices” we can make. It becomes a vicious cycle.

What can YOU do? 1) Don’t allow yourself to become too hungry, thirsty, or tired as the urgency for comfort foods are triggered when we feel down. Stop and think, why you feel like you need to eat them often. If you need them every day, then, you must be lonely or stressed. You should clarify your feelings and circumstances... and take action. Get out and walk, take a relaxing bath or call a friend. 2) Find good quality carbohydrate sources that you enjoy and keep them handy, like whole grains, sweet root vegetables i.e. sweet potatoes, or fruits. 3) For snacks, think apples and nuts. These will help you satisfy your sweet tooth and your desire for carbohydrates in a more substantial and nourishing way. 4) Use smaller portions and master food exchanges to be able to manage your comfort food cravings. For example, 10 medium size french fries equals 2 slices of bread, 5 teaspoons of oil, and approximately 200 calories. Read labels. Make good choices. 5) Finally, if you choose to indulge in your comfort food of choice, have less food the next day. Don’t let the empty calories add up. Remember, a pound of fat is equal to 3,500 calories. And whatever excess calories we take in becomes fat and extra pounds if we do not exercise regularly.

Tell us how your career began… A: After obtaining my Master’s training in interior and architectural design in Milan, I was working for Tito D’Emilio doing interior design for several years. In 1997, I came to America. I was approached and hired to develop a new high-end workshop specializing in contemporary European design in Los Angeles. While there, I accidentally bumped into Michael Wincott, who was shopping there, and our personalities clicked. After a short time, he began hanging out there. We got to know each other better and became good friends. He asked me to design the interiors for his house. From there, I began getting referrals to many high-profile Hollywood and corporate clientele, and my business expanded.

Tell us about your most challenging project. A: So far, my most challenging project was actually doing multiple projects simultaneously for one client. For four and a half years, I worked for Brad Pitt designing three separate residences while researching, brainstorming, and realizing several side projects all at once. It was crazy and chaotic. My brain was constantly working, perpetually roused. I loved every second of it!

How will you adapt your style to Qatar? A: I have read many articles and watched many videos illustrating design and architecture in Qatar. What stands out to me are two things: a penchant for nostalgia, and pride in the ability to create magnificence.

What’s your secret? A: I don’t think that there’s some great and priceless secret to be revealed about interior design. It is important to understand what sort of environment brings you peace and comfort, and that there is a balance to be found between the past, present, and future. It’s all relevant and will help guide you if you are open to it.

treasured additions to any home and they are all the rage right now. You can find an abundance of options for custom silhouettes on Etsy.com or you can follow the ideas we gathered from habit of art blogspot. Here's how you can do it.

What you'll need • Digital camera • computer with photo editing application • fabric in natural (9" square for each portrait) and black (4" square for each portrait • embroidery hoops (7" diameter) • sharp fabric scissors • fine tip felt pen • tracing paper • pins • fabric adhesive (or a sticker machine) • hot glue gun

Using a digital camera, take a picture of each of your family members in profile. (Pull long hair back for the best results) A white wall is a perfect backdrop. Import the images into a photo editing program like Photoshop and increase the contrast of the photo.

Loosen an embroidery hoop and center the image in the hoop. Pull gently along the edge to create some tautness. Tighten the hoop to secure the fabric, and then trim the extra fabric to 1/2" (or at least shorter than the width of the hoop). Glue the fabric edge to the frame using a hot glue gun. If you want to create a more finished look, you can glue a ribbon over the fabric edge.

In about an hour, you can create five custom silhouettes. You can find felt in different colours at Jarir bookstore on Salwa Road. The pack of 12 pieces costs QR15. They also stock the embroidery loops in various sizes. Have fun!

Before tracing an image, make sure it is about 3.5" - 4" in diameter. Tape a sheet of tracing paper over the computer screen, carefully trace the outline of each profile with a felt tip pen or print the images in lieu of tracing. Iron your fabric, and then pin the traced image to a piece of the black fabric. Cut out the image with sharp fabric scissors. Next, adhere the centered silhouette onto a 9" fabric background using iron-on adhesive.

he Souq Waqif Boutique Hotels might be fairly new to Doha, but they already have impressive restaurants and talented Head Chefs. This month we had the pleasure of visiting the gorgeous and secluded Al Najada Boutique Hotel, located in the heart of the Souq, to experience one of the tasty creations on offer on its menu. Chef Daniel, originally from Holland, has been working here for a year and he loves the environment and the different cultures that inspire his cuisine. The plate he presented to ABODE is a very easy recipe to reproduce at home and the taste is simply incredible. This Soto Ayam recipe comes from his Indonesian Sous Chef, and it's her own house recipe, so it's a very authentic creation. This dish is currently served in the hotel courtyard during breakfast, but it is perfect for any time of the day.

Best eaten hot, this filling and nutritious soup is a popular dish in the Far East. Here are the quick steps you need to cook your very own Soto Ayam.

SOTO AYAM Soup Ingredients:

• Chicken stock 2Ltr • Shallot, 20 g • Laos, 20 g • Konjit, 20 g • Garlic, 20 g • Coriander seed, 10 g • Lime leaves, 6 leaves • Lemon grass, 4 sticks • Indonesian Bay Leaf (Daum Salam), 6 leaves • Candle nuts, 20 g

Procedure:

• Blend the candle nuts and coriander seeds to a powder in a mixer. • Add the rest of the ingredients except the chicken stock and blend to a smooth paste. Add some water if needed. • In a separate hot pan add some corn oil and sauté the Soto paste you created in the mixer. • Add the chicken stock and let it simmer for 30 minutes. • Serve your soup in bowls with some noodles, sliced boiled eggs, and beansprouts accompanied by prawn crackers and Sambal sauce, a typical Indonesian mix of sautéd onions, red chilli and tomato. • 2 1/2 cups (250 gms) All Purpose Flour or cake flour. • 1/2 tsp salt. • 2 TB (15 gms) regular or dutch processed cocoa powder. • 1/2 cup (113 gms) unsalted butter, at room temperature. • 1 1/2 cups (300 gms) granulated, white sugar. • 2 large eggs. • 1 tsp. pure vanilla extract. • 1 cups (240 ml) butter milk. (if not available, mic one TB vinegar or lemon juice with each cup of milk and let stand for 5 minutes before use) • 1 tsp white vinegar • 1 tsp baking soda.

Procedure:

• Preheat oven to 175°C and place rack in the center of the oven. Butter two - 9 inch (23 cms) round cake pans and line the bottoms of the pans with parchment paper, set aside. • In a mixing bowl, sift together the flour, salt, and cocoa powder, set aside. • In the bowl of the electric mixer, beat the butter until soft (1-2 minutes), add the sugar, and beat until light and fluffy (2-3 minutes). add the eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl, add the vanilla extract and beat until combined. • In a measuring cup mix the butter milk with the red food colouring, with the mixer on low speed, alternately add the flour mixture and the buttermilk to the butter mixture, in three additions, beginning and ending with the flour. • Combine the vinegar and baking soda, allow the mixture to fizz and then quickly fold into the cake. Working quickly, divide the butter evenly between the two prepared pans and smooth the tops with an offset spatula, or the back of a spoon. Bake in the preheated oven for 25 - 30 minutes, or until a toothpick inserted in the middle of the pans comes out clean. • Cool the cakes in their pans on a wire rack for ten minutes, then place the wire rack on top of the cake, and invert, lifting the pan. Once the cakes have completely cooled, wrap in plastic cling, and place in the refrigerator for at least an hour, or over night . • Fill with cream cheese filling, then frost.

Cream Cheese Frosting: Ingredients: • One 8 ounce (227 gms) cream cheese at room temperature.

• One 8 ounce (227) gms tub of mascarpone cheese at room temperature. • 1 tsp vanilla extract. • 1 cup (115) gms of confectioners' (icing) sugar, sifted. • 1 1/2 (360 ml) cups of cold, heavy whipping cream (double cream) (35 - 40% butterfat)

Procedure: • Beat the cream cheese and mascarpone until smooth, add the

vanilla and confectioners' sugar and beat until smooth. Using the whisk attachment, gradually add the heavy cream, and whip until frosting is thick enough to spread. Add more sugar or cream as needed to get the right consistency. • With a bread knife, cut each cake layer in half horizontally (optional), and spread frosting in between each layer (bottom and top layers' face should face down.) Frost the top sides of the cake, can garnish the cake with sweetened or unsweetened coconut - optional).

Cranberry Bars Adapted from Vegetarian Times Ingredients:

For the Crust: • 1/2 cup unsalted butter, softened • 1/4 cup sugar • 1 cup all-purpose flour • 1/4 teaspoon salt For the Filling: • 1 lb. fresh or frozen cranberries • 1/2 cup water• 3/4 cup fat-free or lowfat sweetened condensed milk • 3 large egg yolks

Procedure: • Preheat oven to 350°F. Line an 8x8 pan with aluminum

This recipe calls for cranberries, however, you can substitute them for raspberries if you prefer. Use frozen raspberries and let them thaw, puree in a blender. Strain mixture to remove seeds.

Cool at room temperature, then chill in refrigerator for at least one hour before cutting into bars or hearts, if desired.

Baked Raspberry Breakfast Bars Ingredients:

• 1 1/2 cups all-purpose flour • 1 cup firmly packed dark brown sugar • 1 1/4 cups rolled oats • 3/4 teaspoon salt • 3/4 teaspoon baking powder • 1/2 teaspoon baking soda • 1/2 teaspoon cinnamon • 3/4 cup (1 1/2 sticks) unsalted butter, cut into 1-inch pieces • 1/4 cup firmly packed dark brown sugar • 1 tablespoon grated lemon zest • 1/2 teaspoon cinnamon • 2 tablespoons all-purpose flour • 1 pound raspberries, fresh or frozen • 1/4 cup fresh lemon juice • 2 tablespoons unsalted butter, melted and cooled

Procedure:

• Preheat the oven to 350°F. Butter the bottom and sides of a 9-by-13-inch glass or light-coloured metal baking pan. Put a long piece of parchment paper in the bottom of the pan, letting the parchment extend up the two short sides of the pan and overhang slightly on both ends. Butter the parchment. • Put the flour, brown sugar, oats, salt, baking powder, baking soda, and cinnamon in a food processor. Add the butter and pulse until loose crumbs form. • Reserve 1 cup of the mixture and set aside. Pour the rest of the mixture into the prepared pan and use your hands or the back of a large wooden spoon to push the crust into an even layer at the bottom of the pan. The crust should touch the sides of the pan. Bake until golden brown, 12 to 15 minutes. Transfer to a wire rack and let the crust cool. Keep the oven on while you make the raspberry filling. In a medium bowl, whisk the sugar, lemon zest, cinnamon and flour together. Add the raspberries, lemon juice and butter and use your hands to toss gently until the raspberries are evenly coated. Spread the raspberry filling evenly on top of the cooled crust. Sprinkle the reserved 1 cup crust mixture evenly on top of the filling. Bake for 35 to 45 minutes, rotating the pan every 15 minutes, until the top is golden brown and the filling starts to bubble around the edges. Transfer to a wire rack to cool completely, then cut into squares and serve.

Chocolate Pot De Crème Adapted from tastyeasyhealthygreen.com Ingredients: • 5 ounces of semi-sweet chocolate • ¾ cup of cream • 11/4 cup whole milk • 2 tablespoons vanilla sugar* • 4 egg yolks • Whipped cream (optional) Procedure: • Preheat the oven to 325°. Place 6 to 8 small ramekins or cups into a large roasting pan. • Chop the chocolate into fine pieces and place in a mediumsized bowl. In a small pan, heat the milk and cream until they are just boiling. Pour the hot milk and cream mixture into the bowl with the chocolate, whisking constantly. Once the chocolate has melted and the mixture is smooth, stir in the sugar. • Place the egg yolks in a separate bowl and whisk in about ¼ cup of the chocolate mixture. Continue whisking the egg mixture and adding small amounts of the chocolate mixture until they are well incorporated. • Divide the mixture into the ramekins and add boiling water to the roasting pan until the water reaches halfway up the sides of the ramekins (be careful not to splash the water inside the ramekins). Cover the roasting pan with foil and carefully put it into the oven. • Bake the pots de crème for 25-30 minutes or until they are set, but still have a little bit of a jiggle to them. Remove the pots de crème from the roasting pan and place them on a cooling rack. Once they have cooled, cover them and chill them in the refrigerator for at least an hour or up to 2 days. Garnish with whipped cream and serve.

Chocolate Peanut Butter – Rice Krispie Roll By: www.onceuponacuttingboard.com. Makes about 25 pieces Ingredients: • 10 oz mini marshmallows • 1/4 cup unsalted butter • 3/4 cup peanut butter, divided • 6 cups Rice Krispies • 1-1/2 cups semisweet chocolate chips Procedure: • Line a large jelly-roll pan (at least 18x13) with waxed paper, and spray the paper with non-stick spray. • Place marshmallows, butter, and 1/4 cup peanut butter in a large microwave-safe bowl. Heat on high in the microwave for 2 minutes, then stir until smooth. Add the Rice Krispies and stir until coated. • Spread mixture onto the greased wax paper. Coat hands in non-stick spray and pat down the Rice Krispie mixture until even and smooth (I left about a 1-inch border on one long edge of the pan because my mixture didn’t quite cover the whole pan). • Add chocolate chips and 1/2 cup peanut butter to a separate microwave-safe bowl. Heat on high in the microwave in 30 second intervals, for about 1 minute and 30 seconds total, until melted. Stir until smooth. • Pour chocolate mixture over the Rice Krispies and smooth to cover the surface. Don’t spread it quite to the edge on the long edges. • Roll the mixture jelly-roll style into a log, starting with one of the longer edges and rolling towards the opposite long edge. Pull the wax paper from under the log as you roll towards the opposite side to help it along. Place log in refrigerator for at least 30 minutes, then slice into pieces about 1/2" thick.

Chocolate Covered Strawberries Ingredients:

• 1 dozen ripe, sweet strawberries with leaves • 1 cup chopped chocolate (preferable) or good-quality chocolate chips or baking chocolate bar ( white, milk or dark)

Procedure:

• Prepare a baking sheet by lining it with aluminum foil. • Wash the strawberries and dry them thoroughly. • Place the chocolate in a microwave-safe bowl and microwave until it is melted, stirring after every 30 seconds. Overheated chocolate gets thick and hard to work with, so it's important to keep a careful eye on the chocolate. Remove it when some pieces are still not melted, and stir until they melt. If you are using low-quality chocolate chips, you might need to add a little vegetable shortening to thin it out and make it easy to dip. • Holding a strawberry by the stem, dip it in chocolate, twirling it in a circular motion to evenly cover most of the berry. As you lift it from the chocolate, twirl it so that any excess chocolate drips back into the bowl. • Place the berry on the prepared baking sheet and repeat with remaining berries and chocolate. • Once all of the berries are dipped, refrigerate them for 30 minutes to set the chocolate. These candies taste best when eaten the same day they are made.

A: Plan beforehand, at least 3 to 4 days before; establish the venue; check the weather forecast, as it can be too hot sometimes in Qatar; always use a check list based on the particular event; have several meetings with the client before

the event; make sure only 1 person from the company deals with the clients to avoid mis-communication; let the chefs decide on the menu; live cooking is always recommended. Q: When considering entertainment for an event, what options are on offer? A: An oud player as background music is highly recommended, however it all depends on the kind of occasion, size of event and venue. I’ve done several outdoor events in my career with several well known entertainers attending such as Tamer Hosni, Amr Diab and many internationally famous singers.

Q: What’s the best food you’d recommend for outdoor dining? A: As mentioned earlier, live cooking stations are always a good idea, as this will avoid the possibility of food poisoning ,and besides this the client knows that the food is fresh. A nice salad bar to start with, together with a selection of fresh fruit and live cooking of pancakes served with vanilla ice cream always goes down well. My personal favourite is a nice piece of rack of lamb marinated for 24 hours in garlic, onions, mint, curry powder and mixed herbs and then grilled on a very hot BBQ. Yummy!!!

2012 was a very busy and exciting year for Japanese culture in Qatar. ABODE met with its Ambassador to discuss the relationship between Qatar and Japan and celebrate the 41 years of friendships between the two countries. 98

people Diplomatic relations with Qatar started in 1972. This year marks 41 years of friendship. What has changed in those years? A: Japan and Qatar have been enjoying excellent relations for more than four decades based mainly on energy cooperation. And Japan’s participation in the development of the LNG industry jointly with Qatar in the 1990s further strengthened our bilateral relations. After the Great East Japan Earthquake in 2011, the importance of Qatar as a major energy supplier to Japan has increased with the additional supply of a huge amount of LNG and LPG. The people and the Government of Japan are truly grateful to Qatar for supporting Japan in its most difficult times. And I am convinced that our relations have become stronger after the disaster.

2012 was an exciting year of Japanese cultural events in Qatar. Tell us about it. A: In 2012, more than thirty Japanrelated events were organized under the title “Qatar Japan 2012”. They were wide ranging from traditional culture such as music, dance, theater, kimono, etc. to the

contemporary arts including Murakami Takashi. I attended all the performances and exhibitions and found that people in Qatar enjoyed them enormously. I was so glad to know that there were so many fans of Japan in Qatar.

It’s been more than a year now since the devastating tsunami hit the northern part of Japan, how is the region these days? A: The recovery from the disaster is now on track, although its pace varies depending on the region, and much difficulty still remains due to the scale of devastation. The progress in reconstruction would not have been possible without the support from the international community. Qatar was one of the first countries to extend help to Japan and its support was among the largest in the world with the reconstruction assistance of US$ 100 million and the additional supply of a huge amount of LNG and LPG to meet Japan’s surge in energy demand. The people and the Government of Japan are very grateful to Qatar. I am pleased that Qatar now occupies a special place in the minds of Japanese people, especially those in the disaster stricken areas.

On the light side of things, what place would you recommend for a tourist wishing to visit Qatar? A: Qatar can offer the Japanese people a totally different environment to which they have not been exposed before. There are nice places worth visiting in Qatar such as beautiful sea-shores and sand-dunes for marine sports and adventurous desert tours, the traditional atmosphere of Souq Waqif, the Museum of Islamic Art and Mathaf for their valuable collections, KATARA Cultural Village, and top class luxury hotels for comfortable stays. Since Qatar is a host of world class conferences and events, visitors can always find something to discover throughout the year.

What’s the most exciting part of your job? A: I am proud of promoting Japan globally. I also enjoy being exposed to new countries, cultures and people. I try to enhance mutual understanding and friendship, and in order to fulfill that purpose, it is essential to extensively comprehend that country. Being curious about everything, it is always a pleasure to discover something new.

What will you miss the most about Oman? A: The genuine friendliness of the Omanis, the great outdoors and of course riding my motorbike up and around the Hajjar mountains. We will also miss our friends as we had so many colleagues in Muscat after living there for a total of eight years.

Have you got any exciting projects for Grand Hyatt Doha? A: Garry has done such a fantastic job opening the hotel. I will have to get to know the market and the city before the team and I make any concrete plans.

You have been working with the Hyatt Corporation for 13 years. In which countries have you lived? A: With Hyatt I have been twice in the UAE, twice in the Sultanate of Oman and Russia. But I’ve also worked in Switzerland, Germany, the USA and Australia at various stages in my career.

Starting the New Year with an exciting job in a new country must be exciting. How do you feel about it all? A: Myself and my family are excited to be in Qatar, such a thriving and dynamic city that has so much to offer. This is our third country in the GCC and we look forward to get to know the country and the city in the coming months.

You are moving to Doha from Muscat. Have you been in Doha before? A: My wife Rachel and I were in in Doha in 2001 - it was a completely different city then.

What has been the highlight of your career so far? A: There are too many positive moments in my career and it is difficult to decide on one single highlight. But becoming a General Manager of a Five Star hotel would rank very high on the scale.

Have you got any advice for anyone looking to make hospitality their career? A: Before you make the decision to move into the hospitality sector, go and work for a few months in a hotel. It is not as easy and glamorous as it looks at first sight. Once you are convinced you have the right character and skill set, see where your strengths and interests lie, and then start working on your career. It’s long hours, hard work but a lot of fun!

What is friendship in general, and what does it mean in Islamic culture? Friendship is a relationship between two people who hold mutual affection for each other. The study of friendship is included in the fields of sociology, social psychology, anthropology, philosophy, and zoology. In Islamic culture, friendship, also known as companionship or ashab, is taken seriously and numerous important attributes of a worthwhile friend have emerged in Islamic media. These include, for both men ("brothers") and women ("sisters"): The notion of a righteous (or "Saalih") person, who can appropriately delineate between that which is "good" and that which is "evil", has appeared prominently; concordance with the perspectives and knowledge of other Islamic companions is considered to be important; forgiveness regarding mistakes and loyalty between friends is emphasized; and, a "love for the sake of Allah" is considered to be a relationship of the highest significance between two humans.

Workplace friendships We spend a lot of our time at the workplace. Employees in the hospitality industry in particular spend a large portion of their lives at work. Here are 10 tips to help you enjoy spending time with your friends at work while still being efficient at your job: 1. Keep your business and personal lives separate. Keep your personal chat reserved for your breaks and after work. You want your other co-workers to still take you seriously as a professional, and getting too chummy on the job might get in the way. 2. Take your time. If you're just beginning to bond with a co-worker outside of the office, go slow. You never know if this will blossom into a long and trusting friendship, or if you'll go back to all business. 3. Remember why you're there. You go to the office each day to get a job done, not to take a break with your buddy every 10 minutes to gossip. 4. Don't be exclusive. Realize that if you're buddying up with coworkers others might feel left out. Be sure to include others in your lunch dates and conversations to avoid jealous feelings.

Maintain some space. Also socialize with non-work friends outside of work to balance out the time you spend with your work friends. 7. Handle friend breakups professionally. Should you have a falling out with your pal, don't let it affect your quality of work or your other professional relationships. 8. Use the friendship to your benefit. Sometimes having a friend on your work team can inspire and motivate you to new levels of creativity. 9. Don't be taken advantage of. While it's more likely that co-workers will start spending more time with you because of your natural wit and charm, be wary if they start asking you to take on some of their work. 10. Enjoy yourself. Sharing an interest in similar work and experiences at the same company can make for great bonding opportunities. Friends make us happy and being happy at work makes for productive workers. Just be aware of how your friendship may affect those you work with, and keep it professional in the office.
