Dear readers, The restaurants that present themselves in this book with their recipes and environment are the result of the selection which comprised 2,500 restaurants in Croatia. These restaurants were rated by visitors of Gastronaut web site and the caterers while the final list was established by Honourable Committee of the project. The doors and walls of these restaurants are adorned with the sign Restaurant Croatica 2017 while the QR code opens the on-line version of the book. The project “100 Leading Croatian Restaurants - Restaurant Croatica” was born 23 years ago. Club Gastronaut and website www.gastronaut.hr are its result. In the past year the “Gastronauts” socialized in Tisno, Murter, on Kornati and on the island of Pag, they organized educations and coorganized a lot of expert gastronomic and oenological events, including their media coverage. We hope the story about different regions in this book, told through their plates, will offer you, not only a pleasant gastronomic experience, but will also encourage you to get to know the regions in which the restaurants are located. Istria and Kvarner Specialties based on ingredients from the sea and dishes prepared following old recipes with strong presence of local aromatic herbs are the main features of this cuisine consisting of a number of gastronomic sub regions. Istrian prosciutto, Grobnik cheese, truffle cheese (Mljekara Latus, Karlić truffles), salted sardines, marinades, cod fish spread (Milena), snails, Istrian pesto (made with bacon and garlic) and seafood salad are just some of the cold starters that must be tried. Warm appetizers usually include various risottos and pastas with seafood, minestrone with corn from the cob (“bobići”), “jota” (traditional dish made with dried beans and sour cabbage) or frittata with truffles, rocket salad or wild asparagus. Fresh sea fish, Kvarner scampi prepared in many ways and mussels from Limski kanal are some of the specialties that attract tourists from Italy during the weekends. Specialties in Istria hinterland and Kvarner islands include smoked pork sirloin and sausages with sour cabbage, “fuži” (pasta) and gnocchi with venison stew, hare made in the pot and lamb prepared under the iron cover (“peka”). Lamb from the island of Cres is particularly praised because the animals graze in perfect ecological circumstances. For dessert, there are “kroštule” and “fritule” (both prepared with different types of dough and fried in deep oil), dried figs and chestnut cakes. Chestnuts from Lovran (“maruni”), wild asparagus and truffles from Motovun forest (Karlić truffles) are the ingredients to which special gastro days are dedicated in their season. Local salads include lamb’s lettuce, rocket salad and radicchio. Fresh marjoram, basil, sage, lemon balm, thyme, rosemary and laurel are added to the dishes. Fish is always accompanied by olive oil originated usually from Istria or island of Krk. For aperitif, we recommend sparkling wine Cattunar made of malvasia and Momjan moscato following the charmat method, sparkling wine 1288 of Winery Pavlomir or traditional Istrian brandy “biska” (Rossi). Dishes prepared with white fish and white meats are usually accom-

panied by Malvasia (Degrassi, Damjanić, Deklić, Cattunar, Sirotić, Matić, Marijan Arman, Ravalico, Rossi), Malvasia Reserve matured in wood in Winery Visintin, Sauvignon (Legovina), Vrbnik Žlahtina, especially with lamb (PZ Gospoja, Pavlomir), Chardonnay (Degrassi, Legovina, Pavlomir Ravalico) and Istrian rosé Ruža (Cattunar). With dark meats and oily fish the most popular are Teran (Terre Rosse – Degrassi, Coslovich, Sirotić, Rossi, Marijan Arman, Cattunar), Borgona (Damjanić), Refosco (Degrassi), Merlot (Cattunar, Damjanić, Ravalico), Cabernet Franc (Legovina, Franc Arman) and Cabernet Sauvignon (Visintin, Cattunar, Degrassi, Marijan Arman, Ravalico, Pavlomir). Desserts are accompanied by Dolce nota (Legovina) and Dolcceto. Good digestives are some of Darna liqueurs which were awarded some world awards or D-faktor fruity schnapps. Restaurant Marino was opened in 1979 in Kremenje, near Momjan, known for moscato wine. It is located near Zingarella waterfall and cycling trail Parenzana., on the road leading to Grožnjan, the city of artists. In the neighbourhood there are renowned winer­ ies Kabola, Kozlović, Prelac and Sinković. The

offer is based on traditional Istrian cuisine. The staff’s goal is to present Istria to the guests, through the tastes that it offers. The most important ingredient is white truffle. In this restaurant, a white truffle of 1.31 kg was served, and it entered the Guinness Book of Record as the heaviest in the world. “We are expecting you to share the hundredyear-old Istrian tradition”, say the hosts.


Biftek i pljukanci s tartufima Beef Sirloin and “Pljukanci” (local pasta) with Truffles Beef sirloin, truffles (white or black, depending on the season), butter, truffle oil, flour, salt, pepper, hot water, parmesan

Season the meat and grill it. In the meantime, heat butter, add a tsp of flour, some grated truf­ fle and hot water and bring to boil. Add truffle oil at the last moment. Pour the sauce over meat and serve. For pasta, knead sieved flour with a pinch of salt and warm water to reach a compact dough. Make “pljukanci” and cook them in boiling salted water. Take them out of the water, add some butter, grated truffle, a tbsp of parmesan and a tbsp of water in which pasta was cooked. Grate a few slices of fresh truffle and serve with meat.
