Versatile and packed with f lavour We poured a cheerful, full-of-flavour Italian red wine the other night—2010 Frescobaldi Rèmole Toscana IGT, comprised of 85% Sangiovese and 15% Cabernet Sauvignon from Tuscany, the place famous for Chianti and Brunello di Montalcino.

Ringing in at $14.99, this wine has a great quality-price ratio (QPR). Rèmole (pronounced Reh-moe-leh, according to the label) has more layers than I’d expect in an Italian wine at this price point. I found bright, juicy red fruit, dark berries, black pepper and licorice on both the nose and palate. There was even a smoky element, despite the wine being aged in stainless steel and bottle only— no oak. The lively acidity, earthiness and hint of minerality worked together to bring just a little more to this wellbalanced and nicely structured red wine.

from the red pepper flakes. Reach for it on pizza night or to pour when you’re serving charcuterie. And, since it is backyard-cooking season, try it with your grilled chicken, pork or marinated beef flank steak. I recommend, however, you choose something else to pour if you want a wine with lots of backbone and staying power to go along with your grilledrare beef or lamb. This is a wine I’d be happy to serve to my guests or take with me to a casual dinner party. I’ll definitely buy more.

It’s the end of an era, marking changes to a new one in Downtown Abbotsford.

“By the time I was in high school, I was going in with my older sister after school to help clean and eventually make puff pastry for the next day,” he said. In Abbotsford, Prins is known for his giving nature, having donated bread on a daily basis to the local food bank for many years.

Hank Prins, the owner of the Old Towne Bakery, has decided to move on to another career. Prins has operated Old Towne Bakery for several years, after previously running the Willowbrook Bakery in Langley. He has been in the bakery business since 1967, when his dad bought the family’s first location. Prins and his siblings took turns helping out.

Having obtained his master of arts degree in leadership, Prins is planning to put it to good use in either the non-profit field or with a company. To do that, he has to leave baking behind.

Welcome to the world of Ernie Poignan t, a man of enduring passion who provides a remarka ble perspective on local history, using a sharp pencil and an even sharper wit.

The cartoons in this book are each unique and charming short stories from a gifted man who has always had a clear understanding of the past.

Ernie was born in a Matsqui farmhou se less than three months after World War One ended. He was a boy in an era without plumbin g and electricity, living with his parents, brother and sister in a home heated by wood and lit by candles. It was a simpler time in the nowdefunct community of Ridgedale, an area that used to be north Matsqui, near the Fraser River. It was settled by Swedes and Norwegians between the late 1890s and the early 1900s.

From his work as a veteran with the Second World War Memory Project through to this venture on the 150th anniversary of the creation of the territory of British Columbia, Ernie Poignan t is even more inspired because he is living in the same area where he grew up. He has also produced dozens of editorial cartoons for the Abbotsford Times and the Abbotsford Post. Some are a candid and unique look at life in Abbotsford today, while others blend the present with the past from a senior’s perspective.

Dueck said she is acquiring the location on West Railway Street to centralize baking, which will enable her to expand her market and reduce labour costs. She will continue to operate Tracycakes Bakery Cafe on Montrose

Avenue, as well as a location on 96 Avenue in Fort Langley. A cafe in White Rock is scheduled to open soon. But Prins’ legacy will live on as Dueck said she and her staff will continue to bake Old Towne Bakery breads and other items at that location after Tracycakes moves in. Tracycakes Bakery Cafe is a restaurant and bakery that began in 2006, specializing in more than 40 varieties of signature cupcakes and a selection of homemade foods.

Fishy Business

Massey, by Chef Jeff 62 restaurant Summer is almost here! Once the sun hits, I can’t help but start thinking about fresh fish and seafood. Fish and shellfish are some of my favourite things to prepare and feature at restaurant 62. I know that the chefs on TV always say “Get to know your fishmonger for the best in quality and freshness...” but I don’t recall the last time I saw a real fishmonger here in the Fraser Valley. Here are some of suggestions that hopefully will help you find and enjoy the best that the season has to offer. Choose locally caught fish and shellfish. Pacific Halibut, Albacore Tuna, Ling Cod, Sole and Rockfish along with Dungeness crab, mussels, clams, scallops and oysters are caught or harvested on our coast. These are all great choices because of the very short distances that they have to travel to market.

Look for products that are Oceanwise or Seawise Certified. These items are harvested or farmed in sustainable, responsible ways which cause little or no environmental damage and have few, if any, by-catch problems (think tuna and dolphins). When buying frozen seafood, choose items that are FAS or “Frozen at Sea”. This process ensures that the items are frozen very quickly in large commercial units and often are dipped in water and flash frozen a few times to build a hard shell to essentially protect the filets from damage while being handled. Quick freezing ensures little cellular damage to fish and produces a moist filet when cooking. When shopping locally, find shellfish that are kept alive in clean running water. Ask attendants

questions, don’t be shy. Find out when they received the shellfish, maybe find out when their next shipment is. If you can plan ahead, ask them to special order products in for you. If you find a store that has live fish, there is a very good chance that they can also bring in other products that you may not see on the shelves. If you order larger quantities and whole fish, they most likely will be able to give you a price break as well, or even wholesale pricing. A great way to make this happen is to use the buddy system! Order large volumes and share with other interested parties. Hopefully this helps. Enjoy the freshness this summer and be thankful that we are so lucky to have so many great fresh products in our backyard.

The Envision Financial Run for Water Mini Run Providing Fun and Experiential Learning to over 9,000 Students this Spring by Michelle Watrin Official race clock. Decorative event flags. Prizes. The mascot Drip. Participation ribbons. Music. Cow bells. A reason for staff and students to get out of the classroom and run, jog or walk together. Tie these items all together and you have a very festive Envision Financial Run for Water Mini Run. These popular events are occurring this spring at over 25 schools with over 9000 students participating. Many schools participate as a practice session for those students running the 5K or 10K in the official race on May 26, school liaison Betty Baerg explains. “On another level, these school-based

runs provide students an opportunity to exert personal effort while thinking of the young girls in Southern Ethiopia who are working so hard every day to bring water to their families. Many students have also taken the challenge to carry heavy water jugs while covering the set distance. This has proven to be a powerful learning experience for them, as they struggle to carry the weight a relatively short distance.” Joann Nield, fifth grade teacher at Dave Kandal, has been in charge of her elementary running club for years. Every May she brings many of the

students to the Envision Financial Run for Water to run the 5 kilometre fun run. This is the first year her school has hosted its own mini run. “We will be doing this every year from now on,” she shares with a smile while ringing a cow bell to students running by. Kindergarten to fifth grade students at her school ran a 1 kilometre loop encircling the campus for 30 minutes at their mini run. “It is just so much fun for the kids and such a good lesson for them.” “It has become the fabric in many schools in Abbotsford,” Colleen and Gordie Howe Vice Principal Jasbir

Singh explains. “When schools plan their year in the Fall, teachers say the month of May is the Run for Water month. It is a great communitybuilding activity for the entire school to get involved in. Handy shortcuts to make meal time easier The benefits of home cooking are well known. Cooking at home allows you to control the ingredients you use, which often makes for a more nutritious meal. But what if you have a demanding schedule with little time for gourmet cooking? Thankfully, a busy schedule does not mean you have to forgo cooking at home. Instead, simply employ a few shortcuts to help prepare delicious meals quickly and easily. Embrace convenience items One of the misconceptions about home cooking is that everything has to be made from scratch to qualify as real cooking. This couldn’t be further from the truth. Although picking up a frozen pizza and tossing it in the oven may stretch the definition of cooking, that doesn’t mean you cannot rely on a few convenience items to take some of the work out of meal preparation. For example, if you want to prepare a quiche, you may be off-put by the work involved in preparing a base crust. Using a pre-made pie shell or refrigerated pie dough can cut a lot

of time off of your quiche creation but still yield a tasty finished product. A marriage of fresh and convenience ingredients can make it easier to prepare more home-cooked meals. Plan ahead Nothing can waste more time than running through meal ideas in your head at the last minute or discovering you have to run to the store because you’re missing a key ingredient. Instead of playing the “what are we going to have for dinner” game every night, which often leads to ordering takeout, spend some time planning your weekly menu. This way you can do the bulk of your shopping in one trip and know exactly what to defrost or have available for that day. There are a number of Web sites and even magazines that offer suggested meal scheduling ideas if you need a little inspiration. Double-up recipes Create larger meals that can be wrapped up and served again later in the week. Some foods like roasted chicken or pot roast can be turned into completely new
