How to prepare chicken curry soup by MOYOSOLUWA OLORUNSOLA

Ingredients 1/2 pound of boneless skinless chicken breast (cut into 1/2-inch cubes) 3 teaspoons of canola oil (divided) 3/4 cup of chopped onion 1/2 cup of chopped carrot 1/2 cup of chopped celery 1/2 cup chopped green pepper 1 cup of chopped peeled apple 2 tablespoons of all-purpose flour 1/4 teaspoon of salt 2 cans (14-1/2 ounces each) of reducedsodium chicken broth 1/4 cup of tomato paste 2 to 3 teaspoons of curry powder 1 teaspoon of ground ginger 1/4 to 1/2 teaspoon of crushed red pepper flakes 2 tablespoons of minced fresh parsley

Recipe Coat a sauce pan with cooking spray and cook chicken in 1 teaspoon of oil for about five minutes. Remove the chicken when it is no longer pink and put aside. Fry carrot, onion, celery and green pepper in the remaining oil for about four minutes. Add your apples and cook for two more minutes. Add your flour and salt and sprinkle over the vegetable mixture and cook for one more minute. Stir in your broth and tomato paste gradually and boil. Stir and cook until the mixture is thickened. Add your curry, ginger and pepper flakes and pour your chicken into the broth. Reduce the heat and simmer the meal uncovered for about 8 minutes. Take the saucepan off heat when the vegetables are tender. Sprinkle with parsley and your chicken curry soup is ready.

Munira Suleiman-Nalaraba (Zinariyan Saminaka), is a politician and entrepreneur, she is also the second child and first girl from a family of 15 children. She was born to the family of Hon. Suleiman Tanimu and Zainab Hassan, a lawyer. She shared The Foundation also has an end-of-year ongoing project, Hope Drive, where the team helps set some inmates free in various prisons, who were jailed for their inability to meet up with their bail conditions, paid medical bills for patients with no means, visiting orphanages with food items, cloths, toiletries, providing basic survival

attended Essence International School, Kaduna, Federal Government Girls’ College (FGGC), Minjibru and Abubakar Gumi College respectively. I later proceeded to Bayero University, Kano, for my diploma programme, and the University of Abuja for a B.Sc in Sociology. I also obtained a certificate in Women in Leadership from Harvard University. Career background I started at a very young age, having been raised by a strong man (my father). He made me believe that I too could stand strong and achieve my goals in life. This ideology propelled me into starting my first business while I was still in school at the age of 19. And, Alhamdulillah, after all the failures in the different businesses I tried, today I am a proud owner of three successful and growing businesses. What was growing up like? Growing up wasn’t funny, though I was in a very comfortable home. Growing up without my mother in the house really affected my life negatively. However, that’s one of the challenges that made me stronger and what I am today. Life lessons over the years What have I not learnt? I feel like I have seen it all, but life keeps throwing its challenges each day. So I will say I keep learning each day. What were your aspirations while growing up? To be very honest, I have always wanted to be an independent woman who doesn’t like taking ‘no’ for an answer. My greatest aspiration while growing up was to be a politician, which I am today, Alhamdulillah. What fond childhood memories do you miss? I miss the fact that I didn’t have to worry about paying bills. I miss the fact that I didn’t have to worry about anything because I knew my dad would take care of everything. Tell us about your passion for humanitarianism. Also, your initiative is five years, how has it fared so far? Humanitarian services are part of my religion, and giving back is a way of showing gratitude to the almighty God. It is not something I started just because I wanted to set up a non-governmental organisation. My desire and passion in life have always been helping people and touching lives. So, taking it to a professional level gave birth to my

organisation, Green Heart Impact Foundation (GHIF), which turned 5 last year. And, Alhamdulillah, we have recorded so many success stories. Currently, we have 75 girls in different schools, and we empowered their 75 mothers across seven northern states in Nigeria. At the moment, my Foundation has been running a free computer training school at my hometown, Saminaka Local Government in Kaduna State, and over 500 students have graduated.

I am proud of non-governmental organisations in Nigeria, especially those that are really involved in changing lives and making impact. A lot of founders are doing great. ones, to join other foundations and become members instead of registering new ones. This is because I believe that together, it can be stronger, better, and will last long. They should also know that foundations are started with the intention of changing lives and making impact in the society, not the other way round. This is God’s path and it should be taken seriously and with pure intentions. What have been your challenges in career and life generally? Challenges are part of life, and in every life’s success, one has to come across so many hurdles before reaching acro one’s goals. My political career is the one toughest I have ever experienced, tou coming from the northern part of com Nigeria, being young, divorced, and Nig being the first and only woman to bein contest in my constituency, Lere East, con Saminaka, Kaduna State. What is your most cherished gift and who was it from? The gift of my beautiful daughter, Aisha Amal, from Allah (SWT). How did you meet your husband? I met my husband, Hon. Abubakar Hassab Nalaraba, for the first time on my Foundation’s first annual Gala Night, though we followed each other on the social media and he had always been supportive. He came with the chairman of the Foundation’s Board of Directors, who happened to be his boss at work. But that was not how it started. We still maintained that relationship until a year and a half later when he sent me a message, saying he wanted us to see and discuss something important. That was how I met him for the second time and he proposed right there and then. Three weeks later, we got married. It was ordained by Allah (SWT). What is your most cherished attribute of his? He is a man of integrity. He is a man of his words, honest and super supportive. Tell us about your joys motherhood Motherhood is life. I’m two months pregnant and I feel I may have a fever. I complained to a pharmacist who gave me quinine tablets. Is it safe in pregnancy? Can it lead to a miscarriage? -Saratu Quinine is safe in pregnancy. But there are other alternatives. Artemether combination is safe and if not so severe malaria, this is preferable. Most antimalaria are safe in pregnancy. It’s not the drugs that cause the miscarriage rather the persistent fever leads to miscarriage.

SUPPLEMENTS FOR CONTROLLING HYPERTENSION?

I am sixty-five-years old and was diagnosed with a high blood pressure. I was given two drugs, vasoprin and the second, a supplement that will help control the blood pressure.
