In this issue, we’ll point you in the right direction for frosty fun, from cross-country skiing to openair ice skating. And for, ahem, purely research purposes, we also visited Vermont’s Northeast Kingdom to alternate dips in the icy mountain stream and the Scandinavian-style wood-fired hot tubs at WilloBurke Nordic Spa. Back in Burlington, you’ll get a warm welcome at the city’s many shops and seasonal markets. To that end, we compiled a roundup of Vermont-made products perfect for gift giving — or perhaps keeping for yourself as souvenirs. Your call! ccording to the last two United Nations World Happiness Reports, the people of Finland are the happiest in the world. There are undoubtedly myriad social, environmental, economic and political reasons Fins have topped that list for two years running: high-paying jobs, jawdropping natural splendor, fish pies, etc. But if Vermont’s WilloBurke Boutique Inn + Nordic Spa is any indication, there may be a simpler explanation for Fin euphoria: Their spas are amazing. Alivia Bertolini opened her eight-suite inn in the heart of East Burke Village, about an hour and 45 minutes from Burlington, in 2015. In September 2018, the Kirby native and former lawyer added

Like WilloBurke, it’s a ScandinavianWilloBurke Boutique Inn style spa + Nordic Spa focused on hydrotherapy through a series of saunas, cold baths and hot tubs. Both spas feature rustic architecture and serene riverside settings. spa encourages a communal social experience in which guests steam, soak and frolic together, WilloBurke offers more secluded environs. Set back in the woods along the Passumpsic River, each of the four clusters of cabanas, cold baths, and wood-fired saunas and hot tubs affords welcome privacy. “You really feel like you have the whole place to yourself,” says Bertolini. For an optimal experience, she prescribes a specific course of action. “The spa is meant to be an evening activity,” Bertolini advises. “And you should eat first, because afterwards you won’t want to do anything but go to bed.” So, following late-afternoon massages, she suggests fueling up for the spa at the nearby Burke Publick House, a lively bar and restaurant within walking distance of the inn. Pro tip: Try the Romeo chicken wings, slathered in a lip-smacking, nostrilstinging hybrid of mustard and Buffalo sauce. When you return to the inn, an employee will lead you to your cabana. As you cross a footbridge spanning the river, you’ll catch a whiff of woodsmoke in the air. The alluring scent will become stronger as you follow a lit path through the snow and into the 10 BTVMAGAZINE.COM

Pour vivre une expérience optimale, elle propose une marche à suivre bien précise. « Le spa est une activité du soir, préconise-t-elle. Et il faut avoir mangé avant, parce que la seule chose qu’on a envie de faire après, c’est d’aller dormir. » Donc, après un bon massage de fin d’après-midi, Alivia suggère d’aller faire le plein d’énergie au Burke Publick House, un restobar dynamique situé à distance de marche de l’auberge. Conseil de pro : essayez les savoureuses ailes de poulet Romeo, badigeonnées d’un mélange de moutarde et de sauce Buffalo aux arômes légèrement piquants. À votre retour à l’auberge, un membre du personnel vous escortera jusqu’à votre cabine. Quand vous traverserez la passerelle qui enjambe la rivière, une douce odeur de feu de bois chatouillera vos narines. Les effluves seront de plus en plus forts à mesure que vous avancerez le long du sentier éclairé, en vous enfonçant dans les bois enneigés au détour du Valhalla Nordic Pub, un bar extérieur inauguré au printemps. Vous vous changerez dans la cabine, située à côté d’un sauna cylindrique en cèdre importé d’Europe et chauffé au bois jusqu’à une température de 150 à 160 degrés. Suivent le bain chaud de style tonneau, lui aussi chauffé au bois à une température plus douce de 103 degrés, puis le bain froid. C’est l’ABC du hygge : l’art de vivre à la norvégienne. De façon générale, Alivia conseille le circuit traditionnel : vous suez un bon coup dans le

Next to the sauna is the wood-fired barrel-style hot tub — heated to a more relaxed 103 degrees — and next to that, the cold bath. It is all impossibly cozy, inviting and — to use a Norwegian synonym — hygge. Typically, Bertolini advises a traditional circuit: Work up a sweat in the sauna, cool off in the cold bath, then relax in the hot tub. She recommends that guests try to complete the triad three times in a two-hour session, after which point she says they’ll experience a kind of euphoria akin to a runner’s high. Bold visitors can also brave two other options for the chilly middle segment: taking a dip in the icy brook or rolling around in the snow. The precise science behind hydrotherapy is hazy, much like the steam rising from a hot tub on a frigid night in the Northeast Kingdom. For every study that verifies one supposed benefit, another contradicts it. Bertolini, who first experienced Nordic spas while visiting friends in Finland — and devised the idea for her own Nordic spa over drinks in a sauna there — subscribes to many of the most commonly cited advantages: stimulating the circulatory system, relaxing fatigued muscles and cleansing body toxins. “It’s the use of water to make you feel good,” she explains. “It’s the heat from the sauna that releases toxins; it’s the water from the hot tub that relaxes your muscles. And it all just gives you that euphoric feeling.” Scientifically valid or not, there’s no debate that the experience can be therapeutic. And you really don’t want to argue with Vikings, who have employed hydrotherapy for centuries — as have countless other cultures the world over. Indeed, if heaven is a place, it might well resemble a lasting impression from WilloBurke: lounging carefree in a wood-fired hot tub on a winter’s night under tall pines, glass of wine in hand, next to someone you love.

Alivia, qui a fait pour la première fois l’expérience d’un spa nordique lors d’un séjour chez des amis en Finlande et a eu l’idée de son propre établissement en sirotant des cocktails dans un sauna làbas, souscrit à la plupart des bienfaits les plus souvent évoqués : stimulation du système circulatoire, relaxation des muscles fatigués et élimination des toxines de l’organisme. « On se sent bien au contact de l’eau, explique-t-elle. La chaleur du sauna libère les toxines, et l’eau du bain chaud détend les muscles. Cela procure une sorte d’ivresse. » Qu’elles soient démontrées par la science ou non, les vertus euphorisantes du spa ne font aucun doute. À quoi bon contredire les Vikings, qui ont eu recours à l’hydrothérapie pendant des siècles, tout comme une foule d’autres cultures partout dans le monde? Quand on s’allonge paresseusement dans un bain chaud par une froide nuit d’hiver sous les pins majestueux, un verre de vin à la main, en compagnie de l’être cher, on a beau être au WilloBurke, aussi bien dire qu’on est au paradis.

ew Year’s Eve traditions run deep. For many, the holiday wouldn’t be complete without a countdown, a glass (or three) of Champagne and a smooch at the stroke of midnight. Last year, the Queen City launched a new custom: Highlight, a citywide celebration featuring artsy and family-friendly entertainment. For 35 years, Vermonters counted on First Night Burlington to produce New Year’s Eve revelry in the city’s downtown district. After the performing arts festival’s board of directors announced in April 2018 that the event would cease, two local entities stepped up to fill the slot: Burlington City Arts, a city-supported organization serving the area’s cultural and artistic needs; and Signal Kitchen, a local creative agency and production company. “Our mission was to honor First Night’s 35 years, but to reimagine it,” Signal Kitchen cofounder Alex Lalli said when launching last year’s inaugural Highlight festival. While Highlight maintains First Night Burlington’s focus on the arts, several fresh facets give the fest a shine all its own. For example, a $10 ticket allows adults access to any and all Highlight events, which take place between noon and midnight on December 31. For kids, the price is just $5. When’s the last time you enjoyed a day and night out on the town for less than the cost of a locally sourced lunch?

es traditions du Nouvel An sont sacrées. Pour bien des gens, les Fêtes ne seraient pas complètes sans un compte à rebours, un verre (ou trois) de Champagne et un baiser sur le coup de minuit. L’année dernière, une nouvelle coutume est née à Burlington : Highlight, une célébration qui se tient dans toute la ville sous le signe de l’art et du divertissement familial. Pendant 35 ans, les Vermontois ont compté sur First Night Burlington pour organiser les festivités de la veille du jour de l’An au centre-ville. Mais après que le conseil d’administration de ce festival des arts de la scène a annoncé en avril 2018 que l’événement ne reviendrait pas, deux entités locales se sont manifestées pour combler le manque : Burlington City Arts, un organisme soutenu par la ville qui répond aux besoins culturels et artistiques du secteur, et Signal Kitchen, une agence de création locale et société de production. « Notre mission était d’honorer les 35 ans de First Night, tout en réimaginant l’événement », a dit Alex Lalli, cofondateur de Signal Kitchen, au lancement de la première édition du festival Highlight, l’année dernière. Another unique aspect: In addition to curating their own events, Highlight organizers crowdsource many of their programming ideas. Using a statewide proposal campaign called the Bright Idea Project, community members can submit suggestions for everything from art installations to live performances. One winning proposal for the inaugural event was the Illuminated Waterfront, an immersive display of art and technology at the ECHO Leahy Center for Lake Champlain. It returns this year (now to the Main Street Landing Performing Arts Center under the moniker Illuminated Eve), along with newly selected ideas, such as a Latinx cultural festival at Burlington City Hall Auditorium spearheaded by local musician Maiz Vargas Sandoval. Another community-sourced show is a concert by Vermont native and Trey Anastasio Band trumpeter Jennifer Hartswick and friends at the Skinny Pancake, to benefit Lake Champlain preservation. Not confined to Burlington’s downtown corridor, Highlight offers entertainment in venues all over the city. “A big-picture goal of Highlight is to really be as strongly programmed everywhere as we can be,” Lalli told BTV. Cross-Country Skiing While many winter skiers chase mountain thrills beyond Burlington, cross-country athletes can slide to their heart’s content within city limits. After a big storm, you’ll see them gleefully gliding down Church Street or making first tracks on the bike path. To escape the hustle and bustle of downtown, head for the Intervale, a 360-acre span of farmland and recreational space stretching along the Winooski River to the Ethan Allen Homestead. Find three miles of peaceful groomed trails when weather permits — and special Wintervale events throughout the season offering free ski and snowshoe rentals, kids’ activities, food and drink, and a toasty bonfire.

This year, the Flynn Center for the Performing Arts welcomes its first-ever community artist-inresidence: violinist and composer Daniel Bernard Roumain. Over 10 months, he’ll visit Burlington for five weeklong residencies designed to “present a view of a world made richer through diversity,” according to the Flynn. The Haitian American composer, artist and activist began in October with 24-Hour Protest Song, a groundbreaking, full-day community performance on the steps of Burlington City Hall. He continues through the winter with an intimate solo performance and a collaboration with Vermont contemporary chamber group TURNmusic.

ou have to be a seriously decent skier to enjoy skiing the lift line. That’s the run directly under a ski lift, providing an audience to admire your skill or witness your wipeouts. The stakes are high, but Matt Grant doesn’t mind. One of his favorite runs is the Madonna lift line at Smugglers’ Notch Resort, a double black diamond touted by the resort as some of the most difficult terrain in the East. “No matter where you’re at in your ski ability, that will still get your heart pounding a little bit,” Grant said. “You’re on display, right under the lift, too ... It adds a whole other dimension to it.” Grant, 39, may sound like a tried-and-true local, but he’s originally from New Jersey. (“I don’t know if you want to print that!” he quipped.) He moved to the Burlington area to attend grad school for teaching. “Then I realized that I’d be neglecting my skiing if I did that,” Grant said. “So I put it off for a couple years and stuck with bartending. A Church Street staple since the 1980s, Leunig’s offers the cozy feel of a European café at lunch and dinner. New arrivals to Burlington can snap a selfie with a cardboard cutout of Leunig’s co-owner Bob Conlon at the Burlington International Airport, post it on Facebook and show the post at the restaurant for a free dessert. This winter, Grant is looking forward to getting his 2-year-old son up on skis for the first time. BTV got his recommendations for hitting the slopes and more. What’s your ideal winter day in Burlington or the surrounding area? I really enjoy Smugglers’ Notch Resort. That is my happy place. I’ve 30 BTVMAGAZINE.COM

fallen in love with the people and the terrain, for sure. World-class woods there. I have skied a number of places in the world. The skiing in the back bowls and the woods at Smuggs — there’s really nothing like it that I’ve ever experienced … Every morning, I put my boots on to ACDC: “It’s a Long Way to the Top (If You Wanna Rock ’n’ Roll).” I actually have a pass this year to Stowe Mountain Resort, too. It’s my first time ever doing that. But I still have my Smuggs pass, and that’s where I’ll spend most of my time. For folks close by, especially for families, Bolton Valley Resort is a really great mountain that gets overlooked. Their uphill policy and backcountry policy are really propelling the backcountry community. I imagine, as my son gets a little older, we might be spending some time there, just because it’s closer. What are your favorite stops along the way to Smuggs? Oh, I don’t know if I want to reveal! The Cupboard Deli [in Jeffersonville], right as you’re turning off of Route 15 to Route 108. Their baked goods are out of this world. The s’mores cookies and the peanut butter cup cookies — I can’t get enough. I try to bring one home for my wife, and she usually gets half of one by the time I get home. I’ve been on the hunt for the perfect breakfast sandwich, and I think Henry Street Deli [in Burlington] does a great job. I actually had one this morning. It’s usually Henry Street on the way, and then on the way home I’ll stop at the Cupboard. Outside of Leunig’s, who are some of your favorite bartenders in town? Nadia Womble, at Waterworks, is a champion. She’s got talent. She’s very good at what she does. I don’t even think it’s necessarily the drinks. It certainly is an important part of what you’re putting out. But I usually go somewhere for the personality of the bartender. You want a buddy to talk to, somebody to interact with.

Quand j’en rapporte un à la maison pour ma femme, elle a de la chance s’il en reste la moitié à mon arrivée! J’ai longtemps cherché le parfait sandwich-déjeuner, et je pense avoir trouvé le bon candidat chez Henry Street Deli [à Burlington]. J’en ai d’ailleurs savouré un ce matin. Habituellement, je passe par Henry Street à l’aller et chez Cupboard au retour. En dehors de Leunig, quels sont vos barmans préférés en ville? Nadia Womble, chez Waterworks, est formidable. Elle a beaucoup de talent. Elle fait vraiment des merveilles. Et je ne parle pas nécessairement des boissons, même si le résultat est tout de même très important. La personnalité du barman compte pour beaucoup. On aime que la personne soit sympathique, qu’on puisse bavarder avec elle.

When you get a chance to eat out, where are you headed? I do wind up coming into work [at Leunig’s] a lot. I enjoy sitting around, seeing things from the other side of the bar. If we have a special occasion — which is pretty much the only reason we go out these days — we’ll wind up at EB Strong’s or Trattoria Delia. Those two places have “special occasions” written all over them for us. The bartenders at EB, too — that’s a good crew … Everybody behind the bar is always very gracious and treats us very well.

Quand vous sortez pour manger, où allez-vous généralement? Je me retrouve souvent à manger sur mon lieu de travail [au Leunig]. J’aime bien m’asseoir et voir les choses de l’autre côté du bar. S’il y a une occasion spéciale – et c’est à peu près la seule raison de me faire sortir ces temps-ci –, nous allons à EB Strong ou à la Trattoria Delia. Pour souligner un événement, il n’y a vraiment rien de mieux. Les barmans du EB sont vraiment bons aussi. Tout le monde derrière le bar est toujours super gentil et nous traite merveilleusement.

Any tips for surviving the cold? Layer accordingly — always important. Kinco gloves, that’s the only thing I ski with. They’re, like, the $17 gloves from the hardware store. Warm as anything else I’ve ever worn.
