When the weather starts to turn cooler, there is nothing better than a warm kitchen, smelling of fresh baked cookies. This recipe is one of my most rquested...happy baking to all!

Cinnamon Roll Cookies (makes about 3 dozen)

3 cups all purpose flour ½ tsp. baking soda ¼ tsp. baking powder ½ cup butter ½ cup light brown sugar 1 tsp. vanilla extract 2 tsp. cinnamon 1 large egg ½ cup light corn syrup

Filling: Mix together ¼ cup softened butter, ½ cup brown sugar, 3 tsp. cinnamon, ½ tsp. vanilla extract

In a large bowl beat together softened butter, sugar and egg until fluffy. Add baking soda, baking powder and vanilla. Mix in corn syrup. Add sifted flour 1 cup at a time until well blended.

Divide dough into 2 and wrap in plastic wrap and chill for 1 hour. Allow chilled dough to soften for 10 minutes at room temperature, then roll onto floured wax paper into a rectangle approximately 6”x15”. Spread half of the filling on each piece and use wax paper to roll into tight pinwheels. Chill dough again for at least 1 hour before cutting. Place cut slices about ½” thick and place on cookie sheet. Bake in a preheated 350 degree oven for 10 to11 minutes. When cool drizzle with a confectioners sugar glaze.
