Welcome

It has been a year since I became the director of HMSM, and I am extremely proud to be a part of this exceptional educational program with a strong reputation. Our reputation is not only a result of our dedicated staff, well-designed curriculum, and talented students but is also greatly influenced by you, our extensive alumni network. I have had the pleasure of meeting many of you, either in person or online, and I am truly inspired by the stories of your time at HMSM and the impact it has had on your careers.

Our graduates have a wide range of job opportunities, both within the country and abroad. To ensure our alumni remain relevant in the industry, we are continuously in the process of updating the curriculum of our bachelor program. Our lecturers are collaborating with alumni and industry experts to refine the course modules. These changes, based on brainstorming sessions and sessions with advisory boards, allow us to expand and enhance the HMSM curriculum and minor programs. In an article featuring alumna and lecturer Maud Meijers [F 2013], you can learn more about changes to the Foodservice minor.

But we are not only updating the content of our educational program; we are also rethinking how we deliver it to our students. Education innovator Patrick Simons and Professor Dr. Gaby Odekerken (our new IHAB member) provide insights into the future of education.

Over the past decade, the number of students at our institute has doubled. We actively seek students with talent, ambition and a global mindset. We believe that a diverse student community, with various perspectives, is the ideal environment to inspire new ideas and foster the development of innovative hospitality businesses. This need for an international

classroom is underscored by alumnus Olivier Slaats [F 2019], as mentioned in his column.

Working within this educational hub, the theme of ‘Lifelong Learning’ is a central aspect of almost everything we do. This encompasses imparting soft skills to our students, adopting new teaching methods, preparing for the future of the hospitality by for example integrating AI into the hotel business. In this Fundament, we aim to involve you in our ongoing development. However, our most significant learning opportunity comes from your experiences and your willingness to share them with us, our students, and your peers.

We are happy to announce that we have two new board members in our IHAB; Professor Dr. Gaby Odekerken, Associate Dean Internationalisation and Impact at Maastricht University School for Business and Economics and founder of the ­Maastricht Center for Robots and Dries Bögels, CCO at the Sligro Food Group. With Gaby we hope to enrich our curriculum with her knowledge of innovation in education and Dries will make the connection between education and foodservice.

Revitalized HMSM values Our alumni serve as the best ambassadors for our institute, and our current students will become the next generation of ambassadors. Our values serve as the guiding principles that shape them. In the past year, our staff and students have revitalized the HMSM values established in the past, ensuring they remain relevant within the HMSM community.

An integral part of these new values is the translation into actionable behaviors, as reflected in the Code of Conduct, which both employees and students can use to hold each other accountable for today, tomorrow, and in the future.

The first, successful fundraising evening of the Foundation HMSM and the Maastricht Conservatory Foundation took place in May. Many alumni bought a ticket to enjoy good food and music, whilst supporting the foundation and reminiscing good memories. New dinner dates will be announced on the alumni platform.

The Badge of Merit The Badge of Merit (Knoop van Verdienste) is awarded to those who have made exceptional efforts on behalf of HMSM. Last year, the following people were awarded the badge: Hans Steenbergen, Milan Arandelovic and Roger Meuwissen for their participation in the IHAB board. Thank you for your exceptional endeavors for our institute.

Nicoline Wisse Smit [F 1994] received the Badge of Merit for 20 years of unwavering dedication as part of the editorial board of Fundament, participation in the development of our alumni policy and the Foundation HMSM. Nicoline sadly passed away last November. She will hold a special place in our hearts forever.

Follow your

Na de bachelor Hotel Management ben je nog lang niet uitgeleerd. Sterker nog, er zijn alumni die een radicale carrièreswitch ­maken en zich op een heel nieuw vakgebied storten. Alumni N ­ icolette Smale [F 1995] en Roy Wenting [F 2004] vertellen over verder groeien in waar hun hart om vroeg.

O

ndanks de move van ­accountmanager bij onder andere Heineken naar zwemlesspecialist twijfelt Nicolette of er bij haar wel spra­ ke is van een carrièreswitch: ‘Bij ­hotello’s draait het om gastvrijheid en dienstverlening, goed luisteren en oprechte focus op het welzijn van de ander – het maakt niet uit of je dat in de horeca, het toeris­ me of de zwembadbranche doet.’

Sinds 2018 adviseert Nicolette alle partijen in de wereld van zwemles: zwembaden, zweminstructeurs, de kinderen die zwemles krijgen en vooral: hun ouders.

Zwemfanaat Nicolette was altijd al dol op zwemmen. Toen ze in een drukke levensfase kwam met drie jonge kinderen en een man die altijd onderweg was, besloot ze te gaan doen wat ze echt leuk vond: kinderen leren zwemmen.

‘Lease-auto, laptop en mobiel ruilde ik in voor een habbekrats salaris. Zwemles is een dienstver­ lening waar ouders voor betalen

– terwijl ze hun kostbaarste bezit uit handen geven. Ik vind dat we ouders als gasten moeten behandelen. Ons verdiepen in hun wensen en daar ons gedrag op afstemmen.

Ik loop dan bijvoorbeeld met hen mee naar de douche en wil weten of ze nog een vraag hebben. Die betrokkenheid wordt enorm gewaardeerd.’

Niche Vijf jaar later en de nodige bijscholing en certificaten verder is Nicolettes bedrijf een unicum in zwemlesland. Ze geeft organisatie­ advies, traint en begeleidt zwem­ instructeurs en hun leiding­­gevenden in hun gedrag en houding én is freelance beschik­ baar als zwem­onderwijzer en teamleider. ‘Ik vind het belangrijk dat deelnemers in mijn training en begeleiding zich veilig voelen, fouten durven maken en in

Gastvrij gedrag en optimale ­communicatie is essentieel.’

Spannend ‘Ondernemen is soms best span­ nend. Ik wil natuurlijk iedereen van dienst zijn en ben van nature een blij ei, én ik wil ook graag geld verdienen. Mijn valkuil is dat ik mezelf voorbijloop. Mijn kracht is maatwerk leveren en dat kost veel tijd. Mensen aannemen wil ik niet, dus mijn toekomstwens is leren meer te doen in minder tijd.’

heart Van binnen naar buiten

Roy’s slogan: Inner Evolution, Outer Purpose. ‘Werk je aan je binnen­ kant, dan verandert de buiten­ wereld mee’, legt Roy uit, ‘Omdat je blik verandert, zie je nieuwe kansen.’ Dat proces heeft Roy zelf ook doorlopen. Na een enthousiaste start als Vita Futura-trainee bij Starwood Hotels in Brussel, voelde hij na een jaar dat hij tegen een zware overspannenheid aanhikte.

‘Veel, heel veel werken, voortdu­ rend nieuwe afdelingen, volledig Franstalig en teruggeworpen op mezelf, met de druk om mezelf te bewijzen…dit móest echt anders.’

In de boekhandel tegenover het hotel vond hij een boek over yoga, en later nog één over zelfmeester­ schap. Roy: ‘Die heb ik van A tot Z verslonden en toen wist ik: ik ga reizen, mezelf hierin verder ontwikkelen.’ Na het traineeship bij Starwood koos Roy voor een master Bedrijfskunde aan de Rotterdamse Erasmus Universiteit, afgewisseld met lange reizen naar onder andere Thailand en India.

‘Na mijn eerste anderhalf uur yogales liepen de tranen over mijn wangen. Nooit gedacht dat ademhaling en beweging zoveel met me zouden doen.’ Roy’s pad was definitief omgebogen naar een wereld met meer ruimte voor bewustzijn en persoonlijk welzijn.

Al snel werd ik door bedrijven gevraagd om workshops en trainingen te geven.’ In 2016

vond Roy het tijd zijn baan als Business Developer op te zeggen.

‘Toen liep ik tegen een aantal belemmerende overtuigingen aan.

Van mensen om me heen die het zonde vonden van mijn studies.

Van mezelf – wie ben ik om over zelfontwikkeling te gaan delen?

Met alle kennis en vaardigheden die ik inmiddels verzameld had, vond ik toch de durf om dóór te pakken en te starten als zelfstan­ dig ondernemer.’ Sindsdien traint, spreekt, motiveert, inspireert en schrijft hij. ‘Weet je hoeveel voldoening het geeft om sprankels in de ogen van je deelnemers te zien verschijnen?’

‘Bevlogen medewerkers, hospita­ lity, het leven, alles begint met goede zelfzorg.

‘Alles begint met goede zelfzorg’

It runs in the family Dit jaar konden we maar liefst vier (!) leden van eenzelfde gezin uitnodigen voor deze rubriek. Vier gezinsleden Poels, het héle gezin, vier keer hotelschool Maastricht dat op zich is al een unicum. En dan ook nog eens vier sterke individuen met levendige hotello-vibes. Een energiek gesprek op het bordes van het Teaching Hotel.

H

oe krijg je vier personen met drukke agenda’s bij elkaar voor een interview in Maastricht? Die opdracht bleek verbazingwekkend eenvoudig. Zoek uit wanneer het Preuvenemint is in de stad en plan de afspraak in de vroege middag. En dan tref je elkaar op een mooie zomerse zaterdagmid­ dag op het bordes van het kasteel. Alles eromheen in diepe rust, kasteel en onder­ wijsgebouwen zijn nog volledig in vakantie­ modus. De sfeer is er een van dankbaarheid.

Moeder Josette: ‘Kijk ons nou zitten hier, zo’n mooie omgeving, uitzicht op het park.

Wat een voorrecht dat we hier hebben

mogen studeren. In dezelfde omgeving waar Maarten en ik verliefd werden op elkaar en op deze stad, waar we lol maakten, hard werkten en waar onze kinderen nu dezelfde grandeur mogen beleven!’

hebben? ‘Nee, denk het niet’. En meteen erachteraan: ‘Maar er was nooit druk, hoor. Ze hebben altijd elke keuze van ons gesteund.’

Zo deed Madelief een serieuze poging zich aan het hotelschoolvirus te onttrekken. In 2022 startte ze de studie International Business in Utrecht. ‘Wat me daar opviel was dat iedereen erg op zichzelf was gericht, weinig onderlinge connectie, matige lessen, heel anders dan hier.

Hoewel ik bij een eerdere aanmelding was afgewezen, heb ik nu wel het gevoel dat ik helemaal goed zit hier.’

En ook Christianne riep in eerste instantie dat ze echt niet naar de hotelschool wilde: ‘Eigenwijs hè…ik wilde gewoon mijn eigen weg inslaan.’ Totdat ze toch een keer ging rondsnuffelen op een open dag. ‘Ik zat in de vensterbank van de roze kamer van het Teaching Hotel, zag alle studenten over het terrein drentelen, ademde de sfeer, voelde de energie en was verkocht. Mam zei later dat ze bijna letterlijk het kwartje bij mij zag vallen.

En, ja, en toen moest ik toegeven dat ik toch eigenlijk wel graag wilde.’ Gelukkig maar, Christianne voelt zich als een vis in het water.

Het moet ergens vandaan komen, die gezamenlijke passie voor gastvrijheid.

Maarten denkt dat bij hem het zaadje is geplant in zijn jeugd: ‘Het was bij ons thuis een zoete inval. Altijd mensen over de vloer.

En hoe leuk vond ik het dan om te organise­ ren en te hosten.’ En waar zaadjes geplant zijn, daar groeit wat: ‘Later, met onze eigen dochters, was de dagelijkse avondmaaltijd heilig, dan was er ruimte voor praten, overleg en lachen. En natuurlijk voor lekker eten.’

Josette vult aan: ‘Er vloeien zo enorm veel contacten voort uit onze hotelschooltijd.

Waar we ook komen, we ontmoeten altijd weer hotello’s! Zowel om zaken mee te doen of gewoon, om onder het genot van een goed glas wijn herinneringen op te halen. Je voelt je heel erg verbonden met elkaar, één grote familie. Alle kinders inclusief. Die krijgen dat ouderlijk enthousiasme en de rijkdom aan verbinding vanzelf mee.’

De grootste uitdaging van de hotelschooltijd vonden Josette en Maarten destijds het vinden van een balans tussen plezier en studie: ‘Het continue besef een van de vijf geselecteerden te zijn, versterkt de motivatie om er echt iets van te maken. Maar de magneetfunctie van de bar was hoog en de studie pittig. We moesten

opletten niet meegesleurd te worden in teveel buitenschoolse activiteiten. Samen met jaargenoten die stress het hoofd bieden, was tegelijkertijd erg leerzaam.’ Wat zij zien in het DNA van de hotello’s: veerkracht, doelgericht­ heid, improvisatietalent en pragmatiek. Of zoals Josette het uitdrukt: ‘Echte hotello’s eten geen honing, die kauwen op bijen’. Anders gezegd: niet roepen, maar doen – je komt het vanzelf wel tegen, het komt wel goed. Haar bedrijf Key-Factor is sponsor van de Jaarclub van Christianne: ‘We komen twee keer per jaar bij elkaar en dan houd ik ook altijd een speech. Over hoe belangrijk het is om te dóen, aan te pakken, te verbinden.’

twee zussen met elkaar, dan is Christianne, naar eigen zeggen, voortdurend op zoek naar nieuwe ervaringen, supergeorganiseerd en meer in het moment. Madelief daaren­ tegen houdt van stabiliteit en connectiviteit en is wat chaotischer. Zij is de introverte van het viertal, vindt ze zelf. Christianne: ‘Madelief is ontzettend zorgzaam.’ Madelief tegen Christianne: ‘Maar dat ben jij ook!’

“Wat je ook doet, doe het met passie,” adviseert Josette: ‘De wereld trekt aan alle kanten aan je. Blijf trouw aan jezelf, geloof in jezelf, geniet. Dat levert een fundament op waarmee je alles kunt worden wat je wil.’

Pieken Het eigen gezins-DNA wordt omschreven als saamhorig, eigenwijs, open, levendig en intens. ‘Als gezin pieken wij voortdurend’, lacht Maarten. Waar hij en Christianne beide een voorliefde hebben voor omgang met mensen, lijken Josette en Madelief meer ondernemingsgericht. Vergelijken we de

De familie Poels De vonk tussen vader Maarten Poels en moeder Josette Liberg [beide F 1994] sloeg over tijdens het tweede jaar.

Afgelopen 10 september 2023 waren ze 25 jaar getrouwd.

Maarten is CEO van nxt90days (worldwide performance improvement in 90 days): ‘Dienstverlening is de rode draad. Ik heb veel geleerd van de jaren in het buitenland.’ Bijnaam: Maarten The Fixer, omdat hij ‘de vaardigheid heeft om dingen op te lossen en om enthousiasme en bevlogenheid over te brengen op anderen’.

Josette is CEO Key-Factor (innovatieve office support) en CEO YellowRock (rocksolid customer support): ‘Dit Had ik nooit kunnen bereiken zonder hotelschool. Het draait allemaal om dienstbaarheid, de klant centraal stellen.’ Josette’s heimelijke wens: een gastcollege geven aan de jongere generatie over ondernemerschap en het onderscheidende belang in deze steeds digitaler wordende wereld van oprechte gastvrijheid in dienstverlening.

Christianne (23) is vierdejaars. Managementstage-droom: HR-positie binnen de hotellerie in Spanje.

Madelief (19) is eerstejaars. Toekomstdroom: een eigen restaurant of hotel in Nederland.

Zo, en nu snel naar het Preuvenemint. De gangmaatjes, jaargenoten en (ex-)collega’s én het mooie Maastricht wachten al. ‘Genieten van elkaar, samen eten en drinken, daar worden wij zo blij van.’ Genoeg stands om aan te doen. Die van Amphitryon bijvoor­ beeld waar wijngeleding Caves d’Amphitryon – waar Christianne vice-voorziter van is – ieder jaar weer de wijnbar bemant. Op weg van het bordes naar onze auto’s op de parkeerplaats passeren we de Student Residence. ‘Echt te gek’, vindt Madelief, ‘een eigen badkamer, een gezamenlijke huiska­ mer. Ik verheug me er enorm op om mezelf hier te ontwikkelen, om te ontdekken wat ik precies wil en wat op ondernemersgebied allemaal mogelijk is.’ Josette en Maarten weten uit eigen ervaring: ‘Hier vind je zoveel lesmaterialen buiten de lessen om. Campus, studentenleven, allemaal goed voor je persoonlijke ontwikkeling. School en studentenvereniging trekken in Maastricht samen op. Samen staan ze ijzersterk.’

AMPHITRYON

Dear alumni & Amphitryans

I

n the ever-changing world of hospitality and Hotel Management, your journey does not end with the completion of an undergraduate degree.

Indeed, that is only the beginning of your life. It is the moment when you have discovered a preference for your own leadership style, ambitions, and goals. Over the past few years, you have been able to develop strongly in many areas.

Just like us. Since the 9th of September 2023 Board Bader made its inception, and with eight motivated members, we are ready for this board year full of challenges and personal development. We are eager to learn!

Last year, Board Melaard II was able to have a wonderful year, which fortunately was no longer affected by Covid-19 restrictions. It was a year in which SV Amphitryon was once again able to organize

Board Bader Events 2024 successful events. This year, we will focus on restoring the “Amphitryon feeling” we knew before the Covid-19 period. We want to make bar nights even more attractive, and in addition, Sunday bar nights have been revived. We are also planning a wonderful event this year, namely the Club Bars 35th anniversary, which will take place on March 14th - 16th.

In addition, the New Club Bar Project has been taken up again, and I sincerely hope that progress is being made. The current Club Bar will be repaired and refurbished for the time being.

Finding purpose and helping others to do the same

When it comes to career advancement after HMSM, the ‘immediate post-fundament MBA’ is not necessarily the go-to solution anymore, the pursuit of purpose a more sustainable ­motivator and the Gen-Z ‘problem’ an opportunity for change. Or, as Harco Leertouwer [F 1998], Managing Director Europe at the global sustainability executive search and advisory firm Acre, likes to put it: ‘proven methods from the past do not predict the future’.

Change of perspective ‘In my early years, nobody would dare to challenge a company culture that required two or three weeknights of overtime. Heck, even more often than not, you’d even pitch in a few hours on a Saturday. But today asking newcomers to consider an additional 30 minutes a day must be done delicately. Our business comes with a commercial mindset so still attracts ‘go-getters’ and sustainability is at the core of what we do but also - with a lot of right things in place when it comes to

After 20 years in Germany, Harco now lives in Amsterdam with his wife and two children. Next to his current position at Acre, he is also active as a leader for the Climate Reality Project where he trains, coaches and supports NGO’s, sustainability projects and environmental campaigns.

ALUMNI CAREER (IHG) for an international manage­ ment development program, which included an MBA as part of fast track to become a GM. ‘It was the way to go if you wanted to get ahead and a master’s (degree) back then, simply meant a 50% pay rise.

So yes, like everyone back in those days, I put in the extra time.

Equally, the cliché was also true.

During the MBA, I realised I became educated for different aspects of business. Upon comple­ tion (taking him to France, Austria, UK and Greece -red.) I transitioned to the corporate head office in Germany, which had little to do with managing a hotel and providing the perfect guest experience. Instead, I became responsible for strategic budgeting, forecasting and feasibility studies for about 50 hotels, but I could have also taken on a similar position in any other kind of industry’.

Gen-Z values - notice friction in our teams when recent graduates enter the workforce. It’s a shift in work mentality we, as employers, have to acknowledge, but at the same time spikes my curiosity: will we still see this as an issue in ten years’ time or do we look back on it as something that changed the way we work for the better?’

And exactly that’s what happened, when Harco set foot in a recruiter’s office some years later: ‘I think I applied for some kind of manage­ ment consulting role, but pretty soon got convinced that professio­ nal recruitment was equally as interesting. The advisory role towards clients, a commercial playground, the people aspect and plenty of opportunity for manage­ ment and leadership in an international environment. It simply started with a recruiter that asked the right questions - what is in fact what still excites me about this industry today; by doing so you can really make a change in people’s careers and the businesses you bring their talent to’.

And in some areas, they are far more ahead than we were at the time. I grew up in a green-voting family, where conscious living was at the core of my upbringing. Still, I got caught up in pursuing promotions like many of my generation. It took me some major life events, before I got out of that focus and found perspective on purpose again. I joined Al Gore’s Climate Reality Project in 2018, but still operated in the ‘macho culture’ that dangled new watches and cars as incentives I didn’t truly care about. So, I left and started my own agency specialising in ESG* *ESG: Environmental, Social & ­Governance, a catch-all term that can be applied to the entire framework of sustainable and ethical decision-­ making within a company.

Begin with the end in mind ‘The key to retention simply can’t be found in remuneration alone.

Instead you should focus to accommodate what really moti­ vates employees, and understan­ ding how long people are planning to stay. Then their goal is to bring along, or develop, the hard and soft skills which are needed to achieve the desired output. But, within their chosen timeframe, this also includes future goals. I want to emphasise that for this approach to work, time and effort must be invested in the development of older team leads and senior management. Leadership must also believe in the possibility that such a workplace can exist.

Because they always looked back into the past and as a result becoming a retrospective conversa­ tion. Now, the conversation still exists, but we’ve flipped it around.

We call it ‘the Alliance’, forging a pact, where connection between both parties is the goal. So we look ahead; ‘where do you want to be in ‘x’ years time?’ When someone indicates their ultimate goal is to become a landscape designer, we can figure out how much savings they need for that. And then both have a time-­ estimate to work with. If all goes well they will head off to that adventure in say, five years time, but there is even more value in knowing that when we follow through on our side, we keep that person on board for those years as well’.

Output matters more ‘I operate in an industry where we move people from A to B, which is in essence about flexibility in itself. So perhaps change to us comes a little easier. While many places with a ‘start early, finish late culture’ still exist, I firmly believe the traditional approach where we used to put so much value on hours is coming to its end. Still, it is ‘my generation’ that occupies the managerial positions.

They have been there, so they work with what they know: the places where everyone stays until 9 p.m. where it becomes a habit, which then evaluates into a silent requirement. Somewhere we forgot that output is what really matters, and is just as measurable these days. That is what I now choose to value’.

To prove his point, Harco picks up on data sets of female employees, just returned from maternity leave and now on a 4-day workweek. For many, their results (such as

volume and revenue -red.) remained comparable to their output as full-timers. ‘One, there is the motivation that comes from the trust and confidence we provide, while enabling a work-life balance that allows those employees to stay in the game at both places. And two, the lesson of becoming parents that they take back to the workplace: that of having developed a strong sense of urgency. You can’t learn that from books or master degrees’.

Wisdom from multiple directions On what makes a good candidate, international experience is another ‘life lesson’ that Harco is a strong advocate for: ‘To immerse yourself in different cultures, and employers for that fact, allows you to gather comparison material. I speak with quite a few HMSM students in their final year during their graduation projects which I examinate for, and when asked for career advice, this is what I tell them. Unless of course you are aiming for a very explicit position where you need specific know­ ledge or technical skills then go for that master by all means. But on-the-job training and develop­ ment is in such a better place than twenty years ago. Find an employer where you feel a culture fit, and

At Acre for example, our people are free to take on a certain amount of hours of pro-bono work for advisory committees, or board positions in the non-profit sector.

This brings experience and development that we simply cannot provide, but still finds its way back to our offices. Another win-win for both’.

Werken in een andere industrie kan hij zich niet voorstellen: over ontwikkeling in zijn eigen vakgebied raakt hij nooit uitgepraat.

Wat betekent ‘lifelong learning’ voor jou?

‘Nou, laat ik maar meteen van wal steken: het is momenteel een modeterm. Je kan bijna nergens meer over de vloer komen of je wordt gevraagd wat jij daar als bedrijf mee doet. Vijf jaar geleden hadden we het over ‘development’ en dat was eigenlijk niet veel anders. Het gaat nog steeds over hetzelfde; zorgen dat je medewer­ kers hun vak en takenpakket blijven beheersen wanneer dingen veranderen, zodat ze hun werk goed kunnen uitvoeren. Als je kijkt hoe wij in de wedstrijd staan, dat Postillion de beste wil zijn op het gebied van vergaderen en congres­ sen: dat is de kern van ons bestaan.

Met woorden als ‘de beste te zijn’, ‘voorop te willen lopen’, en ‘dingen net anders willen doen’ is

die verantwoordelijkheid bij ons heel sterk aanwezig. Natuurlijk gaat het verder dan technische vaardigheden, vakinhoudelijke kennis en gastcontact, ook zelfontwikkeling hoort hierbij.’

Hoe verloopt de innovatie van jullie, laten we het nu dan noemen, ontwikkelings­ aanbod?

‘De beste zet die wij de afgelopen jaren hebben gedaan, naast de vakinhoudelijke training die we zijn gaan organiseren per niveau, is om samenwerkingen aan te gaan met de platformeconomie. Zo kun je veel beter inspelen op individu­ ele wensen, dan dat je ‘oldskool’ een heel hotel in een zaaltje stopt voor een communicatie­training, terwijl de helft van de medewer­ kers daar geen behoefte aan heeft.

‘We hebben de verantwoordelijk­heid om onze kennis te delen’

Zelf hebben we het NXT Chief en NXT Leader programma ontwikkeld. De eerste is voor high potentials, die mij misschien ooit komen te vervangen, het NXT Leader programma is voor de hotel directeuren en de support ­managers. De inhoud voor beide programma’s is totaal anders en specifiek opgezet vanuit skills en vaardigheden voor hun uiteinde­ lijke ‘droompositie’. Dat is zowel op inhoud en als motivatie veel effectiever.’

‘Ook kunnen medewerkers aanspraak maken op een persoon­ lijk ontwikkelbudget om vrij te besteden aan iets wat jou helpt.

Ervaar je stress en wil je daarom op een cursus kantklossen dan is dat prima, zolang je het goed weet te motiveren. Maar je kunt er ook een sportschool abonnement van afsluiten bijvoorbeeld, zodat je fysiek sterker en fitter bij ons binnenstapt.’

Platformeconomie?

‘Ja, dat is een goede. Kijk, je kan alles wel in eigen beheer houden, maar zaken als mentale gezond­ heid, zelfvertrouwen en stress­

reductie is generiek in onze haastige maatschappij. Hotelmana­ gers zijn geen psychologen dus dat wil ik niet van hen vragen. Wij bieden iedere medewerker een account van online platform ‘Open Up’. Dat kost 30 euro per jaar per medewerker en zo faciliteren wij de beschikbaarheid tot workshops, meditatie en training via persoon­ lijke check-ups. Ook hun familie en vrienden kunnen hier gebruik van maken. Vervolgens krijg je advies welk middel je dan vooruit­ helpt. Je kunt er zelfs een afspraak met een psycholoog aanvragen, en je bent gegarandeerd van een eerste gesprek binnen 24 uur.

Waar ik een sterke mening over heb is dat je deze zaken kunt aanbieden, maar het geen verplich­ ting moet maken – niet iedereen heeft hier behoefte aan, dus ga niet pushen als de baan goed en stressvrij uitgevoerd wordt. Anders creëer je juist stress door zo’n cursus op te leggen.’

Wat doe jij zelf om bij te blijven?

Algemeen Directeur werd, zat ik ineens minder lang op één locatie. Ik heb geen kantoor, behalve mijn tas met laptop en werk vanuit verschillende hotels. Maar ja, als ik dan zie dat een mes verkeerd ligt, ga ik daar toch corrige­ ren. Alleen kon dat niet meer met geduld over de periode van een week, dus dat ging dan wel eens in een opvlieging. Je mist dan dat sluitdrankje aan het einde van de avond om het goed te maken, en samen tot de conclusie te komen dat interventie eigenlijk wél beter werkt. Ik heb me toen een aantal dagen laten volgen met een camera, en dat samen met een coach geanalyseerd om mijn communicatie te verbeteren. Zo kies ik ieder jaar een nieuw thema, waar ik dan vier keer per jaar over samenkom. Zo blijft leiderschap gaan over de inhoud, zonder vast te lopen op de vorm.

Ook leer ik veel van samen­ werkingen met alle hotelscholen in Nederland. De bijdrage aan de studieschuld bijvoorbeeld komt uit het project waar we vroegen ‘bedenk nu eens de arbeidsvoor­ waarde van de toekomst’. Door

gastcolleges te geven, krijg ik ook ideeën. Studenten zitten in een andere omgeving en kijken anders naar onze uitdagingen, of komen met iets wat ze van stage mee­ nemen als best-practice. Daar denk ik over na in de autorit naar huis.’

Waar je bekend om staat, is dat je de media niet schuwt.

Doe je dit bewust?

‘Soms wel, maar meestal niet en word ik gebeld. Misschien denkt men, ‘daar is hij weer, met zijn volgende nieuwe idee.’ Ik vind dat wanneer je dingen doet, of experimenteert met zaken waar de rest van de branche wat van kan leren, je ook een verantwoordelijk­ heid hebt om je kennis te delen.

Dat doe ik misschien wat meer dan anderen; maar als concullega’s daardoor geïnspireerd raken, en iets overnemen, dan maken we de industrie en haar imago beter. Als het andere hoteliers alleen al aanzet tot nadenken over een bepaald onderwerp, ben ik al een gelukkig mens. Hotellerie gaat over gastvrijheid en dat mag je op verschillende manieren uitdragen.

Zelf lees ik ook veel van wat andere vakgenoten schrijven – ook ik weet niet alles: verandering lukt alleen als je het samen doet.’

Hotel Management Track

In dit profiel worden studenten gevormd tot ‘game changers’ voor de internationale horeca. De studenten specialiseren zich verder in revenue/ real estate management. In de minor Creating Customer Delight ontwikkelen studenten innovatieve gastvrijheidsconcepten voor 2030.

Daarna voeren ze, in opdracht van een bedrijf uit de industrie, een strategisch adviesproject en sluiten ze af met een managementstage in een internationaal hotel of op een HQ. van/voor morgen Vlak na de zomervakantie kon je tien collega’s van de opleiding Hotel Management vier dagen lang aantreffen in een klaslokaal. Geconcentreerd maakten ze fantasievolle bouwsels met Lego®. Het klinkt misschien frivool, maar na deze training mochten ze zichzelf gecertificeerd Lego® Serious Play® facilitator noemen. Aan het eind van de vier dagen hadden ze een model geconstrueerd dat de cultuur en structuur van de opleiding in al zijn complexiteit heel aardig symboliseerde.

n daarmee waren ze door het bouw­ proces en de daarbij horende dialoog gekomen tot een verdiept inzicht in het onderwijsproces binnen de hotelschool.

Maar veel belangrijker, ze zaten vol ideeën over hoe ze Lego® konden gaan inzetten als educatief instrument bij verschillende onderdelen van het curriculum. Het is een voorbeeld van hoe er binnen de school steeds over verbetering van het onderwijsproces wordt nagedacht. En dat mag ook wel, want de tijden zijn VUCA: Volatile, Uncertain, Complex en Ambiguous. Studenten van nu zullen in hun toekomstige carrière grote veerkracht en creativiteit moeten tonen om de nieuwe uitdagingen aan te kunnen. Het onderwijs zal zich met steeds grotere snelheid moeten vernieuwen.

beetje creativiteit komt dan een geprint dessert op het bord, dat veel weg heeft van een Reversed Apple Pie Cookie Crumble. Maar natuurlijk, aldus Patrick, is daar de bevlogenheid van de mensen in het onderwijs de essentiële drijvende kracht. Om nu relevant te zijn voor morgen, moet je nieuwsgierig zijn en het belang van innovatie inzien.

Meer onzekerheid in de klas Desgevraagd zegt Professor Dr. Gaby Odekerken, Associate Dean Internationalisation and Impact bij Maastricht University School for Business and Economics, oprichter van het Maastricht Center for Robots en sinds kort ook lid van de Internati­ onal Hospitality Advisory Board (IHAB) van Hotelschool Maastricht, dat innovatie in het onderwijs nu zeker onontbeerlijk is. En in eerste instantie mag innovatie zich van haar richten op visie in het onderwijs. Zo pleit ze voor meer onzekerheid in de klas. Meer onzekerheid?

Ja, Gaby doelt op het trainen van studenten om te vertrouwen op eigen afwegingen. Dus niet een uitgebreide lijst met criteria waar het product van de student uiteindelijk aan moet voldoen, maar het aanbieden van een project dat vol­ doende ambigue is om de student uit te dagen om er zelf over na te denken welk resultaat moet worden nagestreefd. En dat stuit, zeker in de afgelopen jaren, vaak in het begin op weerstand bij de student. Het lijkt erop dat de studenten van nu op zoek zijn naar zekerheden en proberen frustratie te mijden. De leer-opdracht is ‘vaag’, is dan de klacht. Maar op het moment dat de student zelf de verantwoording oppakt, blijkt dat de eigen motivatie en betrokkenheid en daarmee het leerproces en het studieresultaat sterk worden gestimuleerd.

Hoewel een goede basiskennis natuurlijk onontbeerlijk is, gaat het uiteindelijk bij het onderwijs steeds minder om het overdragen van inzichten in de huidige manier van doen, maar om de ontwikkeling van kritisch en analytisch vermogen. Gaby geeft een voorbeeld: de Global Innovation Challenge, een initiatief van IBS-Net, waar studenten van 11 Business Schools wereldwijd twee weken samenwerken om uitdagingen uit het bedrijfsleven aan te pakken.

De teams worden samengesteld uit master

Kopje koffie Als je naar innovatie vraagt aan Patrick Simons, Onderwijs Innovator bij Hotel Management School Maastricht, dan start hij bij het belang van een kop koffie met collega’s. Hij ziet zijn rol vooral in het verder helpen en ondersteunen van zijn collega’s bij de zaken op het terrein van onderwijsinnovatie waar ze in de dagelijkse praktijk tegenaan lopen. Zo zijn de snelle digitale ontwikkelingen soms moeilijk bij te benen. Door even rust te pakken en wat dieper op de proble­ matiek in te gaan komt hij bij processen, het gebruik van software, en inzet van materialen waar verbeteringen mogelijk zijn.

En tussen de bedrijven door probeert hij zijn collega’s en de studenten te gidsen op de weg van ‘digital naive’ naar ‘digital native’. Hij benadrukt daarbij dat de docent niet moet worden onder­ schat op digitaal vlak, en soms de student ook niet moet worden overschat. Hij biedt hulp bij het gebruik van de digitale leeromgeving ‘Moodle’, maar bijvoorbeeld ook bij de aanschaf en implementatie van 3D foodprinters. Met een

studenten van verschillende instituten, er wordt in een pressure-cooker gewerkt aan een casus en er zijn gastpresentaties die voor inspiratie zorgen.

Bruggen bouwen Het is namelijk noodzakelijk, volgens Gaby, om steeds weer te zoeken naar de link tussen theorie en praktijk. Onderwijs hoort niet in een ivoren toren, maar moet zoeken naar waar de maatschappij op zit te wachten. Aansluiting zoeken bij stakeholders kan projecten opleveren die co-creatie met deze stakeholders mogelijk maken. Zo kunnen ze de brug vormen tussen onderwijs en het maatschappelijk veld. Daarbij zijn teamwerk en presentatievaardigheden belangrijke kwaliteiten om te ontwikkelen.

De noodzaak om vooral te werken aan kritisch vermogen komt ook door de snelle ontwikke­ lingen in het werkveld. Duidelijk voorbeeld is de snelle opmars van Generative AI in het afgelopen jaar. Was de reactie in het onderwijs nog in de eerste maanden na de introductie van ChatGPT: ‘Hoe zorgen we dat we fraude met deze software kunnen herkennen en voorkomen?’, volgens Patrick is de trend nu al naar: ’Wat kunnen we ermee in het onderwijs?’. Een brainstormsessie met ChatGPT als ideeëngenerator blijkt in workshops met studenten in de minor New Business goede resultaten op te leveren.

En ook andere opkomende technologieën worden steeds meer gemeengoed. Patrick noemde de 3D-foodprinter, maar zowel Gaby als Patrick geven als voorbeeld het augmented reality (AR)-programma ‘Virtual Speech’, waarbij een presentatie of sollicitatie-gesprek door een student wordt geoefend met een VR-bril.

Feedback over de prestatie wordt door de software gegenereerd. En in oktober presenteerde een groep internationaal samenwerkende hotelopleidingen tijdens de EuroCHRIE Conferen­ tie in Wenen goede resultaten en bruikbare inzichten die voortkwamen uit een onderzoek naar AR-VR mogelijkheden binnen het Europese Theta-Project. Voorbeeld is een applicatie waarbij de student in VR reageert op een lastige gast aan de receptiebalie.

Al deze nieuwe onderwijsvormen en -technie­ ken bieden ook kans om het onderwijs steeds meer gepersonaliseerd aan te bieden. Zo geeft Gaby het voorbeeld van nieuwe robot-technolo­ gie, waarbij een zogeheten ‘sociale robot’ de plek kan innemen van een student die niet live in een meeting met een projectgroep kan

‘Studenten die na vier jaar studie aan de slag gaan, merken dat het werkterrein al niet meer hetzelfde is als tijdens hun eerste studiejaar’ deelnemen. De robot wordt op afstand aangestuurd door de student, spreekt, kijkt naar de medestuden­ ten, en beweegt zoals de afstand-student, en maakt de online deelname veel interactiever. Het zorgt er ook voor dat onderwijs hiermee inclusiever kan worden en daarmee inspeelt op het toegenomen belang van de SDG’s (Sustainable Development Goals) van de UN.

Pilot Terug naar Lego® Serious Play®. In een pilot bij het Management Consultancy Project in het afstudeerjaar van HMSM doen zes teams aan een workshop mee waarin ze hun mid-term advies bouwen in een lego-model, dat daarna in een lego-landschap wordt geplaatst, waarin stakeholders worden opgenomen en effecten worden gevisualiseerd. Dit past in de opzet van de pilot om zwaarder in te zetten op het advies­ proces. Daarvoor hebben de teams ook al in een inten­ sieve week, samen met het bedrijf The Next Lab, een Design Sprint bij Brightlands Smart Services Campus doorlopen.

Na een ochtend met Lego® bouwen en ­discussiëren, hebben de teams een beter inzicht gekregen in de sterke en minder sterke kanten van hun advies. Ze hebben nog voldoende tijd om hun advies aan te scherpen, met de ambitie om de hospitality-wereld van morgen er een stukje beter uit te laten zien.

What did you do after ­graduation?

After my studies at HMSM, I joined the management trainee program at Rosewood Hotel Group. But a year later I decided to do a Master to focus more on strategic development, and to apply further topics that I learned doing my Bachelor’s Degree. I followed the Master in Global Hospita­ lity Business program at EHL (Lausanne, Switzerland), which was a unique experience as it provides a global overview of the hospitality industry. The first semester takes place at EHL, the second semester at the School of Hotel and Tourism Management at the Hong Kong Polytechnic University and the last semester at the Conrad N. Hilton College at the University of Houston.

How did you end up in your current job?

A good friend of mine shared a job opportu­ nity with me for an Assistant Director Food & Beverage position in Vietnam just for fun. When I looked at the details of the hotel and what kind of position was available, I immediately felt that it was a unique opportunity. So I decided to apply and after a couple weeks got accepted for the position.

After several months of completing all visa require­ ments, I made my move from working at Van der Valk Eindhoven to joining IHG at the Intercon­tinental Danang Sun Peninsula Resort. Quite a shift I can tell you, from Eindhoven to Danang!

What is the most important skill you’ve gained at HMSM? The most important skill that I’ve gained is how to work together with people from different cultures and create one vision that everyone believes in. To take the next step in hospitality, you

must be able to understand different perspectives and think ahead in getting positive results whatever it may be. The hotel school puts extreme high focus on group assignments, which means that a team-player attitude together with an open-minded approach towards new aspects is crucial.

Why did you choose for a career in the hospitality industry?

I chose for a career in the hospitality industry because this business offers you the opportunity to go to so many different places around the world. I love to travel, see interesting new things and love to meet people from different cultures. Very important also, I love excellent food and drinks which attracted me to my current job!

What is your best memory of your study at HMSM? One of the best moments was the day when everyone came back to Maastricht after the first internship. Everyone shared their experiences abroad, and we had many gatherings together to celebrate our achieve­ ments. Very joyful time and it felt wonderful to be back in Maastricht!

How is your connection to your peer alumni?

I am still in touch a lot with the group of peers from my stream. I joined the international stream during the program, which was a wonderful group of people from so many different countries. We’re still in touch, which shows how strong the HMSM program is in creating friendships for life!

Igniting the spark for a better

­future in food

Almost 30% of HMSM students decide for a Master study after receiving their Funda. One of those alumni is Maud Meijers [F 2014], who’s specific curiosity towards food technology led her to Wageningen University and Research (WUR), and a good seven years later, brought her back to Maastricht.

hile simultaneously finishing her 6-year long PhD project on plant-protein transition at WUR, she has been changing the HMSM curriculum since 2021 as lec­ turer and researcher in Food Science, Technology and Business. Also having been appointed as coordina­ tor of the Foodservice Track at the beginning of this year, Maud is set to help students discover ‘how food really works’ - and thereby hopes to increase the (global) impact that the alumni of this track can make in the foodservice industry.

Desire to investigate Maud: ‘My passion for gastronomy and the world of food & beverage

started like it did for many hotello’s: I grew up in a food and flavor loving family. So yes, after I finished my VWO I had the credentials to go straight to university, but I choose HMSM instead, as I felt it was the right place for me to discover where that passion could take me. Back in my days as a student the ‘food curriculum’ was very different.

There was module 4, with basic product-knowledge, the cooking classes, and the minor Foodservice had just started. But I discovered that I had questions that went beyond trend awareness and learning how to make a good ­mayonnaise or ceviche. I wanted to understand why ingredients

reacted with each other, what happened when you applied a certain cooking-technique and why. This desire to know more, to really understand the science behind food and cooking, and the apprehension that with this knowledge I could influence people’s lives and the ways in which we produce our food: this is when I knew I had to take my education further.’

The right path to knowledge Taking the next step already started while still at HMSM, with choosing a different path from the minors which were offered internally. Still, her education at the hotel manage­ ment school did not go astray, because as Maud states, it was ‘a sort-of hotello mindset that got me there’: she simply called up a study advisor at WUR and invited herself over for coffee. An approach she would like to advice to anyone who is considering specialization during, or after HMSM - ‘as it really helps to discover if additional education fits both your personality and aligns with your ambitions. Attending a research university, and especially

industry works. But I never would have thought that I would become a teacher. I was thinking about heading into the direction of research and development for one of the big players in the industry.

Which is the area that many food technologists end up in. But if I look at how much motivation I have now, both for the final leg of my PhD, and for educating the next generation so they can apply, and bring the more practical side of that knowledge onto our plates by leading change - this to me, is really exiting.’

Ready for the future

becoming a PhD candidate, is not necessarily the right path for everybody. The type of education and the amount of time and effort invested on research projects is generally quite different from a university of applied sciences.’

Combining both worlds For Maud however, that beforemen­ tioned coffee was what would become the start of a ten-year (and still ongoing) ‘food tech and science affair’ in Wageningen. After an intense twenty-week program, she finished her minor in Food Technology, extended her studies in Maastricht with a Pre-master at the WUR, followed by an internship at trend-watching agency Shoot my Food. ‘My pre-master and the internship developed an even stronger interest in how the food

Once graduated at HMSM, Maud returned to Wageningen to obtain her MSc in Food Technology, where she chose to specialize in Ingredient Functionality - ‘the research field that up until this day spikes my interest most’ – and was presented with the opportunity to start working for WUR, to help develop a new (online) Master program. An experience she now uses gratefully within the Foodservice Track at HMSM: ‘The aim is to deliver a program that brings alumni an advantage when entering the foodservice industry, especially when it comes to innovation on a larger scale’, she explains. ‘Not only the technical aspect, but also the other challenges, like consumer behavior, food waste, environmen­ tal impact of production methods, transportation, packaging and processing – all can really make a difference to make food healthier, more available and sustainable’.

To establish this, not only is the curriculum undergoing changes, but the Future of Food research centre also makes use of a new kind of classroom,

Foodservice Track The Foodservice Track is training a new generation of young food professionals who understand all aspects of the foodservice chain. This track consists of two minors, a research project, and a management work placement position in the world of food and drinks. The track has two perspectives: original producers and the food industry. the Food Experience Lab, which Maud is really thrilled about: ‘It’s an immersive space, where students and researchers can experiment and alter sensory aspects such as light, sound, color, temperature and smell, and can also project images and video’s on the walls and tables. This really challenges them to apply both the theoretical and technical know­ ledge, but also inspires to under­ stand that perception of food can be influenced by changes in the direct environment.’

Choose the right battles On how one combines a PhD with a fulltime position at HMSM Maud explains what she also likes to instill in students during coaching sessions: ‘You have to make choices on what you want to excel in and seize the opportunities that excite you, as passion is still the biggest

motivator to get ahead. I believe there are incredible opportunities for the hospitality managers, marketeers and product managers of the future. That is, if they understand how they can make an impact. By the F&B offering in hotels, trough how we stock our supermarkets, or taking on a leadership position around food: it really encourages me when I can help them to be better educated, and know which channels they can tap into’. But, it’s equally impor­ tant to build up a bit of resilience

and balance things out. I spend 40 hours a week at my job, one day at finishing my PhD and another on the social activities or long walks (whilst also maintaining a relationship – red.). A life which students perceive as ‘incredibly busy’. So I then tell them, like how we change the environment in the Food Experience Lab, to never underestimate a good holiday - as standing on top of a mountain always helps me to put things into perspective and decide what path is worth taking next.’

Veertig jaar na zijn afstuderen vond Bas Hoogland [F 1983] het hoog tijd voor een reünie. Zestig jaargenoten en dus ook mede-campusbewoners heeft hij kunnen ­opsporen. Op het moment van schrijven moet de reünie op de campus van de hotelschool nog plaatsvinden. Bas kijkt ernaar uit: ‘Heel fijn, nog één keer allemaal bij elkaar.’

Bas Hoogland Na de hotelschool begint Bas als sales vertegenwoordiger en later Director Marketing & Sales bij Bilderberg Hotels. Vanaf 1996 tot 2015 Commer­cieel Directeur bij Landal GreenParks. Bas is getrouwd met Jeannette Eijsma [F 1983], samen hebben ze zonen Jip en Hidde en kleinzoon Morris. Sinds 2014 wonen Bas en Jeannette in het Zuid-­Limburgse Vijlen waar zij twee karakteristieke vakwerk­ vakantiehuizen verhuren: www.deheerlijkheidvijlen.nl.

Hoe kijk je terug op je ­campusjaren?

‘De leukste tijd van mijn leven. Zoveel herinneringen aan hilarische events: het cabaret, de sportweekenden tegen Den Haag, de zondag-diners voor alle campusbewoners en hun ouders, waarbij we regelmatig grappen uithaalden zoals ‘per ongeluk’ met een enorme stapel borden struike­ len. Maar het allerbelangrijkste wat we leerden op de campus is het functioneren in een groep, rekening houden met elkaar. Door de voorselectie lagen levensinstel­ lingen en interesses al op één lijn – je hoefde niet zo vaak te swipen. Iedereen had een werkers­ mentaliteit, er werd flink gejobd en verdiend, en twee dagen later was het geld ook weer op.’

Wat heeft de hotelschool ­ je gebracht?

‘Mijn echtgenote Jeannette. En een stevige basis voor heerlijke en uitdagende banen. In 2007 werd ik Hotello of the Year vanwege de prestaties van het nieuwe merk Landal en in 2010 was Landal het meest klantvriendelijke bedrijf van Neder­ land. Zo zie je maar: als je je gasten centraal stelt, komt de rest vanzelf.’

Ben je een ‘life long learner’?

‘Wel en niet. Niet wat betreft verdere studies. Wel wat betreft direct toepasbare trainingen en coaching sessies, heel leerzaam. En zéker wat betreft ‘learning by doing’.

Wat ik ook geleerd heb, is dat het roer omgooien een optie is - mijn motto is sowieso ‘be different’, oftewel: bedenk eens wat anders. Mijn gezondheid heeft me in 2015 doen besluiten mijn topsport-baan vaarwel te zeggen en voor een lager levenstempo te kiezen.

We zijn verhuisd naar een prachtige plek in Zuid-Limburg en hebben het erg naar onze zin met de verhuur van onze twee vakantiewoningen. Ook ben ik inmiddels een veelgevraagd spreker over klantvriendelijkheid en ­hostmanship. Geweldig leuk om te doen.’

Een teaching hotel

op én voor

Zanzibar Gedeelde liefde voor Zanzibar Eliane en Arjen zijn ruim 35 samen, een liefde die begon tijdens hun studie aan de hotelschool. Eliane bleef werken in de hotellerie, Arjen was als mede-oprichter 20 jaar lang een drijvende kracht achter het succes van Rituals. In 2018 ­bezoeken zij, met hun inmiddels 4 kinderen, Arjen’s zus in Tanzania en zo ook Zanzibar. Ze raken onder de indruk van de rijke Swahili-­ cultuur, het paradijselijke eiland, maar ook van de basale omstandig­ heden waarin de Zanzibari leven.

In het vissersdorp Jambiani aan de zuidoostkust van Zanzibar bouwen Eliane Schouten - van den Berg [F 1991] en Arjen Schouten [F 1991] samen met een team van experts, aan een bijzonder resort. Ecoresort Ma’a Salama moet een blauwdruk worden voor duurzaam, verantwoord toerisme op Zanzibar.

Lisenka Beetstra [F 2002] is één van die experts, met haar jarenlange ervaring op het eiland en hart voor de lokale gemeenschap, creëren ze samen een resort dat zowel luxe als leerzaam is, en ook nog eens duurzaam.

Met hun kennis en ervaring willen ze kansarme jongeren op Zanzibar een betere toekomst bieden in het groeiende toerisme op het idyllische eiland.

Wanneer ze kort daarna opnieuw naar Zanzibar afreizen, lopen ze in het Emerson on Hurumzi hotel in Stone Town hotelmanager Lisenka Beetstra [F 2002] tegen het lijf.

Onderling delen ze al snel hun bezorgdheid over het Jambiani Tourism Training Institute (JTTI), een kleinschalige hotelschool op Zanzibar dat al 15 jaar gratis onderwijs biedt aan de lokale jongeren. De school verkeert op dat moment in zwaar weer, omdat het af hankelijk is van donaties.

Arjen en Eliane zien een kans: via hun stichting ShareAndWonder, dat educatieve projecten in Oost-Afrika ondersteunt, besluiten ze de school financieel te ondersteunen.

INTERVIEW

Er is een structurele oplossing nodig voor het behoud van de school. Ze besluiten een radicale stap te zetten: het kopen van een stuk grond naast de school. Hier willen ze een ambitieuze droom waarmaken - een luxe eco-resort met geïntegreerde hotelschool dat financieel zelfvoor­ zienend zal zijn: Ma’a Salama Boutique Resort & Training Institute.

Met haar lokale kennis en netwerk is Lisenka de ideale schakel en lokale adviseur voor het project. Na haar studie aan de Hotelschool in Maastricht studeerde ze verder, met een focus op onderwijs en training.

Via een ontwikkelingsorganisatie kwam Lisenka op Zanzibar terecht, waar ze aan de slag ging bij het toerisme college van de overheid, om ondernemerschap en duurzaam toerisme in het onderwijs te stimuleren.

Ma’a Salama Medio 2025 zal de huidige school overgaan naar de nieuwe facilitei­ ten van Ma’a Salama, met een volledige nieuwe school en zeven luxe villa’s in een hersteld palmbos met uitzicht op de Indische Oceaan.

Het wordt bijna volledig self-sup­ porting qua energie en watervoor­ ziening. Gasten genieten in een oase van rust terwijl lokale studenten hen bedienen. Het resort

biedt concrete werkervaring: de opleiding is hun springplank naar een baan in de groeiende toerisme op het eiland. Met betere facilitei­ ten, niet alleen met een school, maar ook met een teaching resort dat vergelijkbaar is met het Teaching Hotel in Maastricht.

‘Training-on-the-job bieden en de studenten praktische hospitality skills leren, dat is onze ambitie’, aldus Arjen. Studenten lopen mee op alle afdelingen, van de keuken tot housekeeping, om een compleet beeld van de hotellerie te krijgen.

Volgens Lisenka zit de kracht van het project in het bieden van praktijkgerichte training. ’Het gaat erom dat we studenten de juiste werkhouding en motivatie meegeven. Door middel van rollenspellen en oefeningen in ons teaching hotel leren we studenten de kneepjes van het vak.’ Het huidige onderwijsteam, een general manager en drie professo­ ren, zal meeverhuizen naar Ma’a Salama. Zij hebben jarenlange ervaring met het opleiden van lokale studenten. Er is ook vraag naar ondersteunend personeel: personeel dat in staat is om niet alleen hoogstaande service te leveren aan gasten, maar ook studenten kan begeleiden en coachen in de praktijk.

Met de lokale cultuur ‘Door middel van het creëren van een teaching resort kunnen we studenten in een gecontroleerde omgeving trainen, voordat ze extern op stage gaan’, zegt Arjen.

Eliane en Arjen realiseren zich maar al te goed dat de kracht achter hun project begint met het begrijpen van de lokale cultuur. ’Door te luisteren en te observeren, zien we hoe de dingen daar gaan, waardoor we een veel beter beeld krijgen van de cultuur’, zegt Eliane.

Dat is waar Lisenka een grote rol speelt: met haar jarenlange ervaring op het eiland en haar uitgebreide kennis van de lokale cultuur, helpt ze Ma’a Salama een blauwdruk te worden. Een voor­ beeld voor duurzaam toerisme, door opleiden en samenwerken met de gemeenschap om zo de lokale economie te bevorderen. ’Een voorbeeld geven, maar met het idee dat het op bredere schaal wordt overgenomen’, aldus Lisenka.

Werken aan een toekomst ‘Ik zie voor me dat het resort over een aantal jaar een prachtige groene oase is geworden waar een gestage stroom studenten jaarlijks komt en gaat,’ zegt Eliane. ’Hopelijk hebben we het programma op een mooie manier kunnen uitbreiden, zodat nog meer facetten van het toerisme op Zanzibar ervan kunnen profite­ ren.’ De naam Ma’a Salama, een combinatie van Swahili en Arabi­ sche elementen, weerspiegelt de rijke culturele diversiteit op het eiland. De naam betekent ‘ga in vrede’ en symboliseert de missie van de drie alumni: een plek creëren waar gasten tot rust komen, geïnspireerd worden én een plek waar lokale studenten aan een veelbelovende toekomst werken.

Artificial Intelligence (AI) has become an inextricable part of the hospitality industry. Our research centre Data-driven Hospitality led by professor Martijn Zoet finds new applications of AI every day to enhancing customer experiences, streamlining operations, and improving overall efficiency. Besides the technical part, what does a manager in the hospitality industry need to know and more importantly do and understand about AI.

Let data be your guide Data is the lifeblood of AI to learn, make predictions, and perform various tasks. In hospitality we have a lot of (guest) data available. AI is the application that will filter, analyze and structure the data. It revolutionizes the hospitality industry by improving operational efficiency, the ability to make data-driven decisions and redefining guest experiences from general contact to more specialized and personalized contact.

Some companies and managers have cold feet but by using application-driven execution of repetitive and simple tasks, hotel staff is enabled to focus on more meaningful, guest-centric tasks.

New skills For managers using AI it is important to have a critical eye on the results and assess the validity and practica­ lity of the model’s predictions. Always keep in mind to use AI results as a tool to make informed decisions rather than relying solely on the output without scrutiny. Main advice from Martijn Zoet is to just start using AI in your business. ‘Begin with simple applica­ tions, buy a license for CoPilot (see What 2 use in AI?) or the paid version of ChatGTP. But be aware of the quality of your own data and the risk of incomplete or incorrect data.’

Besides being critical on the result, it is important to ask the right question. Martijn Zoet: ‘Even a small change in your question, can lead to a different answer. Practice asking the right question and ask questions with other wordings to analyze the result.’

You won’t be replaced by AI, but by someone who knows how to apply it.’ excepts growing solution for more easy food waste reduction. ‘A new application makes pictures of your waste and identifies the weight and costs. It does not only give more insight on waste and the reduction opportunities but helps you change the process.’

Hilton used this application during Ramadan in Arabic countries and the recently published results show a 61% reduction.

Another, more unexpected, area Martijn sees develop­ ment of AI is in housekeeping. ‘In some hotels it is an asset if guest only experience the result of house­ keeping but do not actually see it. With sensors you can scan the presents of the guest in the room but with more data of the guest behavior you can also predict how long the guest will be out of the room or in the hallway.’

Leo Fransen [F 1979] is, besides senior ­lecturer at HMSM, part of the research centre Data-driven Hospitality, where he applies research outcomes into the daily practice of the industry. Professor Martijn Zoet holds the chair Data-driven Hospitality.

Future As technology continues to advance, AI applications will likely expand, to hyper personalization of guest offers and experiences and increase efficiency in (hotel) operations even further. Martijn Zoet also

Hospitality abroad

Nicolette van der Lee - Cornelese [F 2008] and Sander van der Lee [F 2008] met at school. Living and working abroad was a mutual dream. For them, the Netherlands was a country you could always return to. Now they have been together for 17 years, and 14 of those years they are living abroad.

How did you two end up in Dubai?

Nicolette says, ‘We embarked on an adventure with no specific goal in mind. Through HRC we both got jobs in Washington. Me at Hilton and Sander at Sheraton. On a J1 visa for one year. We had a great life. But there were also irregular working hours. Sander adds, ‘In America, it became clear to me that working in operations wasn’t my thing. I had already done a finance job at Accor HQ Schiphol and numbers attracted me more.’

After a year, they weren’t done with working abroad. Sander wanted to work in revenue management, which was relati­

vely unknown at the time.

Through his network, he got an opportunity in London. Nicolette got a job at Hilton. One of the factors in their choice for London was that the Olympics were going to take place in London. But it was expensive, their apartment tiny and taking the tube to work every day like a sardine in a can wasn’t great. They were ready for a new adventure.

Sander: ‘We had friends who lived in Dubai. There were plenty of opportunities. I was working at the Hilton Revenue Management Consolidated Center, and they were going to open the same in Dubai for the Middle East and Africa.

Nicolette found a job at a hospita­ lity procurement company.’

What is your life in Dubai?

They have been living in Dubai for 9 years. They are parents of daughter Luna (3,5). Living in a spacious apartment within walking distance of the beach.

With a great group of friends from all over the world. Sander has a great career at Hilton and Nicolette has switched to a job as Legal Secretary, at a large American law firm. They can both apply their multiple talents at work.

Cultural difference between the Emirates and the Netherlands?

‘The authentic Arab culture is here, but you don’t usually encounter it. In meetings with

owners you do, they are some­ times hierarchical in their manners. But at Hilton we simply have an international work culture,’ says Sander. Nicolette adds: ‘As a woman, you are treated with respect. I’ve never felt inferior.

It’s also very safe. The Emiratis try to maintain their Islamic values, but at the same time allow Western cultures. In fact, they try to embrace Western values like equality and sustainability and then be frontrunners in it. There are hundreds of cultures living here. But whether you believe in Allah or God, everyone respects each other. In Luna’s class, all holidays are celebrated.’

What Dutch values are still in your baggage?

Nicolette immediately exclaims, ‘For you I know, Sander: your directness!’ During a yearly

performance review, a manager once said to Sander, ‘Maybe you should keep some things to yourself.’ Sander’s response: ‘Well, you should hear the things I already keep to myself !’

Sander adds, ‘also, tolerance. Not excluding anyone. Being open to everything.’ Although in recent years in the Netherlands this has decreased somewhat. Both agree on the Dutch penchant for equality: ‘In Dubai, nannies call their employers ‘Sir and Madam’.

We immediately put a stop to that with our own nanny.

Submissiveness is not our thing.’

What we can learn from the Emirati ­culture?

Sander: ‘Courtesy and respect for all cultures. The Dutch can be rather quick to judge and think in stereotypes. Here this is less, or people keep their judgments to themselves.’ Nicolette: ‘I like the element of the community and charity they have here. Dubai organizes for example actions like free meals for Iftar during Ramadan. And in November ‘30 x 30’ is organised, Dubai Fitness Challenge. A series of free sports events that everyone can

What does lifelong learning mean to you?

Sander: ‘I learned the most on the job. Learning for me is more about challenging how things are done.

By changing and improving things you learn. Some trainings you forget after a week. But by doing different things each time, going into different hotels, you learn having different perspectives.’

Nicolette: ‘Living abroad enriches your professional, but also your personal development. Getting to know new cultures. Constructing your life again and again, making new friends. In my relatively new job as legal secretary, I’m still learning a lot. What I learned at the hotel school I can still apply.

Both in my work and in my private life. We are grateful we are putting our dreams into reality and our study at the Hotelschool Maastricht contributed to that.’

What are your future plans?

Sander: ‘Purely from my own point of view, I am not ready to leave’ Nicolette: ‘I sometimes envy my friends in the Netherlands who work part-time. In Dubai, working full-time is the norm. Once we said that we would go back to the Netherlands when we would have children, but that didn’t happen.

Although my mother-in-law keeps reminding me! I would love for Luna to be able to cycle to school later. We still have a big group of friends back home and our parents are getting older, which also draws me towards the Netherlands.’

FOUNDATION HMSM

Diversity

as a spark

The Foundation HMSM, an initiative originated from our community, wants to give prospective students from outside the EU access to our international bachelor programme by offering scholarships. Currently, the tuition fees for these students are almost three times as high for a European or Dutch student. With the donations of alumni and staff the foundation is already supporting two students to continue their studies.

ne of the members of the advisory board of the foundation is Margitte Verkruijsse Reiner [F 1998]. She feels strongly connected to the mission of the foundation. ‘My motivation for supporting the Foundation HMSM is to provide young talents with the right ambition the chance to access the valuable education I received and to empower the hospitality industry with the talent it needs. To build international relationships you need to be culturally sensitive and have empathy which takes practice and an open mind. During my studies, I practiced that during my internship abroad.

With the foundation we can enhance the international classroom at the HMSM and amplify diversity. I get inspired by working together with people from different backgrounds and nationalities. To me, new perspectives drive creativity. By taking down barriers for students from outside the EU, we can offer more diversity.’

Just Graduated

‘I

always wanted a study and career in the hospitality industry. I love hotels and everything around them, and I love people.

Once I learnt this was something I could study, there was never any doubt in my mind. I had the opportunity to be in Hilton’s Elevator Management Program and I am still learning every day.

I had always wanted to work my way up to hotel general manager, definitely abroad! Covid changed my plans quite a bit. I ended up signing a contract as pre-opening projects coordinator at my management internship’s company in the Netherlands. In parallel to that, I applied to the elevator program of Hilton, more as a job application exercise than by thinking I would get in. They invited me and I went through the selection process. It took months and two days in an assessment center, but even the process itself taught me a lot.

After graduation, it was a bummer realizing that in the workplace, it might take years to reach higher level positions, and that it might have nothing to do with your capacities. It is all about being at the right time and in the right place and take the right type of experience. Luckily, the elevator program gave me a good kick in the right direction. Through the elevator program, I was lucky learning from great mentors and pioneers of our industry. I have learnt I am great at multi-tasking and learned to be quick on my feet. Those 18 months spent into the program were life-changing, professionally.

During my studies in Maastricht, I really developed my problem-solving skills. As a leader, I am trusted will all sorts of decisions, and need to solve all types

of issues and problems. A good critical approach to all of them is crucial. The HMSM gave me the right tool to approach all the tasks I am presented with.

In three years, I want to be a commercial director.

I have been lucky enough to experience all departments of a hotel. I excel the best in commercial.

This is the route I want to take, and this is where my interest lies. I know work as groups, meetings & events sales manager at Hilton in Tallinn Estonia. For me, there is nothing better than to feel the business coming in.

For the future, I need to develop more of a helicopter view. To be a commercial leader, I would need to implement a strategy best for the entire hotel. Hilton offers a lot of courses and programs. I plan on signing up to those when the time comes.

Having a great mentor is crucial.

Someone willing to teach and pass on their knowledge and expertise.

Martin Hendricks [F 2008] was CEO at my management internship company. He made an impression on me by head-bursting ideas from morning to evening. I learnt a lot from him. He was an amazing manager and he showed me hospitality can be creative too.’
