SHAKARAP

Shakarap is a simple salad, consisting of thinly sliced tomatoes and onions. Itis especially popular in Uzbekistan and Kyrgyzstan. Usually the salad is served in individual small dishes as a side dish accompanying meat and rice. Most of the salads are made with locally-grown produce.

Instructions:

1. Thinly slice the tomatoes. 2. Add onions, chopped into thin rings. 3. Add salt, ground pepper and sprinkle with herbs for taste. 4. Gently mix all the ingredients and serve with pilaf.

ACCHIK-CHUCHUK

Instructions:

1. Thinly slice tomatoes and cucumbers. 2. Add onions, chopped into thin rings. 3. Combine with finely chopped peppers and herbs. 4. Add salt and ground pepper for taste. 5. Gently mix all ingredients and serve with pilaf.
