Antep pistachios from southeastern Turkey are a standout in the nut world, celebrated for their concentrated flavor. The prized pistachios make up almost three quarters of this pistachio butter. It’s a natural pastel green color, creamy and spreadable, and unbelievably packed with pistachio flavor. Sugar gives a little extra cushion of sweetness to the pistachios, but it’s not too sweet at all. It makes even the most mundane breakfasts and snacks feel like a special occasion.

In Rieti, the town smack dab in the middle of Italy, Antonio della Corte and Anna Marie Conti make some stupendous spreads with a secret ingredient: extra virgin olive oil from Anna Marie’s farm. The olive oil gives these spreads a silky texture without interfering with the sweet, nutty flavors. We offer two types: one made with Sicilian pistachios, and one made with hazelnuts and chocolate. Either is superb spooned onto ice cream, cheesecake, crepes, graham crackers, or toast.

When we first opened this fun foxy bag, I did a double take—I could have sworn I smelled a hint of maple syrup. Surprisingly, there’s no added flavoring or sweetener here, just exceptional pecans. The team at Zorro Pecans source primarily from their own pecan groves in southwest Georgia, carefully selecting the finest from each fall harvest. The pecans are toasted in peanut oil for a neutral finish, then lightly salted to enhance their natural sweetness and crunch.

Pignolis are traditional cookies from Sicily. They’re jam-packed with nuts: almonds, hazelnuts, and pine nuts. We barely sweeten them with cane sugar and honey and the only thing holding that collection of ingredients together is egg whites—there’s not even any wheat flour mixed in, making for an explosion of toasty, nutty flavor.

Seed Oils: the Bland & the Better
Are they the worst thing ever? Probably not.
In the last few years, seed oils have made headlines for being unhealthy. Is it true? Like most things in life, the story is more complicated. Most seed oils are made using chemicals. There are chemicals to dissolve the oil from the solid parts of the seed. Then there are chemicals to remove other trace components of the oil. The chemicals used aren’t all that appetizing. They include substances like hexane (an explosive byproduct of crude oil refining) and bentonite (the stuff that makes kitty litter absorbent). The chemicals are removed by the end of the process, so you’re not eating hexane beyond possibly a bare trace amount. But the process also removes good parts of the seeds, like antioxidants. And it removes the flavor, too—that’s why supermarket corn oil doesn’t taste like corn on the cob. The result is a bland, pale oil that can be a useful ingredient but doesn’t always have a whole lot of nutrition. It’s not evil, but it’s not brilliant, either.
This process isn’t unique to seed oils. It’s true for many industrially produced fats, including olive oil that’s not graded as “extra virgin” and beef tallow. There is a better way. Some seed oils—including all the ones on this page—are produced mechanically. You crush the seeds, then press out the oil; no chemicals involved. (Historically, this is how extra virgin olive oil was made, too. These days, most olive presses have been replaced by centrifuges, but it’s still a fully mechanical—not chemical—process.) In addition to the fat, mechanically pressed oils contain many other good parts of the seed, like color, aroma, flavor, and healthy nutrients. This method is less common than chemical extraction because it costs more. But for small scale producers interested in flavor, mechanical is the way to go.
Green peanuts are raw, just harvested, not yet dried. Unlike bulk peanut oils for cooking, this oil is cold pressed in small batches by Clay Oliver on his farm about 150 miles south of Atlanta. It has a vibrant freshness, almost like green beans, with a subtle nutty richness. Drizzle it over fish, over roast squash, on sauteed greens or mushrooms.

When I first tasted Helen and Leo’s Dan Dan sauce it blew me away. It made my lips numb, too…in a good way. It’s made from toasted sesame paste, olive oil, chilis, and spices you’ll find in the Sichuan province of China. Traditionally you’d toss this spicy sauce with noodles and some vegetables for an easy meal, but in this era of “chili crisp that” and “crunchy hot sauce this” there’s no shortage of uses. In the morning: eggs. For lunch: mix with mayo for kickin’ sandwich spread. Dinner: dip your dumplings.

Don’t call this a cracker, but it’s not bread either. It’s a traditional Norwegian baked good loaded with whole grains and seeds. Comparing Bacons
How different can one bacon taste from another? While they’ll all share a porky richness and some amount of salty bite, bacons can run the gamut from sweet to savory, and from mild to smoky. Here are a few of the factors that play into those differences:
Pork type
In the US, the food we call “bacon” is made from pork belly. American belly bacon is rich and fatty—especially when it’s made from heritage-breed pigs, which tend to have more fat than the lean “other white meat” pigs most commonly raised in America. In the British Isles, they make their bacon from pork loin, a much leaner cut which makes for a much leaner, chewier bacon.
Cure type & duration
“Curing” is the process of preserving meat with salt, so that it will keep at room temperature for long periods of time. Most bacons are cured one of two ways: with a wet cure, or a dry cure. Wet cures cover the pork with a salty brine. Dry curing covers the pork with dry salt. Dry curing typically creates a saltier, more intense flavor. While most curing happens in just a few hours these days, curing for longer—sometimes as long as a month, in the case of Benton’s Bacon—makes for a more intense flavor, too.
Smoke type & duration
Different types of wood create smoke with different flavors. Wood from fruit trees, like applewood or cherry wood, tends to be sweeter. Hickory tends to be more savory. Smoking for longer can imbue the bacon with a more intensely smoky flavor.
Extra ingredients
Often during curing additional ingredients may be added to the salt. The most common additions include sweeteners like sugar, or spices like pepper. Any extra ingredients can add new dimensions to the flavor of the bacon.
Zingerman's Bacon Matrix
The meat curing maestros at Smoking Goose in Indianapolis double down on hickory for this superbly savory bacon. They start by curing the pork belly under shagbark hickory syrup. After curing, the bacon is smoked over whole hickory logs. The thick-cut slices are a little sticky from the syrup, with a rich, salty flavor. They’re perfect for BLTs and burgers, or cut them into chunky lardons for pastas and stews.

The most intense bacon we carry. Allan Benton starts with heritage Berkshire pork and dry cures it with salt and brown sugar for a full month, then smokes it over hickory for 48 hours. It’s powerful, and polarizing—people tend to either totally love it or think it’s way too much.

Organic Food What is it? Why does it matter?
“Organic” is a legally regulated term. That’s a good starting point to get a sense of what we’re talking about. Whenever a law is set there’s give and take. Some good ideas are included in the law, some aren’t. Organic’s rules limit the use of synthetic pesticides and fertilizers and prohibit genetically modified organisms (GMOs). There are also guidelines—which aren’t quite rules—intended to support soil health, responsible water management, and biodiversity. That’s dumbing it down a bit, but you get the gist: you won’t get a lot of chemicals in your organic food, but it can still be made in a “factory farm” kind of setting. In fact, many organic farms are large, because to get the right to put organic on your label you need to be certified and the inspections, documentation and rigamarole to do so on are expensive. It can be too costly for some small farms to afford certification, so they don’t pursue it.
But is organic food better?
Organic farming can be great for the soil and environment, but it doesn’t necessarily mean more nutritious or more delicious. You can make tasty food that’s organic, and you can make bland food that’s organic. The same goes for food without the organic label. And — this may come as
Organic, But Not Certified
At Zingerman’s Bakehouse, the number one ingredient we use is all organic all purpose (AP) flour. Many products, like our Farm bread (find it on the facing page), are made entirely from organic ingredients. But just having all organic ingredients isn’t enough to be able to label the bread as “organic.” There’s paperwork, inspections, and requirements, like all organic ingredients need their own storage, separate from others. So far we’ve chosen not to spend the extra money for the certification, so we can’t call our organic bread organic. But it is.
by Alex Hall-Ruiz
a surprise — labeling something organic doesn’t mean that zero chemicals were used since some are allowed under the regulation!
Organic? Not organic? What’s a shopper to do?
At Zingerman’s, we look for flavor first and then ask the food marker to back it up with their facts about how they farm, how they raise their animals, how they harvest and process their food. You can’t do that at a grocery store of course, which is why organic is a nice shortcut to shopping. When your choice is between an organic banana or a conventional banana at the supermarket, the organic one is probably better for the planet.
It’s a different story when you have the opportunity to buy directly from a maker, like at a farmer’s market. Ask them about any practices that matter to you. What fertilizers or pesticides they use? How they raise their animals? What matters to them? The best farmers will be proud of what they do and want to tell you about it. Most farmers are intimately familiar with their land and practices, and many have good stories to tell and have been just waiting for you to ask.
Beyond Organic
O-Med is a fourth-generation olive farm in southern Spain. While a portion of their production is certified organic, much of it is not, despite following similar methods. But their approach goes beyond organic in many ways. They build bird nesting areas, create habitats for insects and pollinators, and plant diverse flora to maintain ecological balance. None of these steps are required by the organic certification. As owner Juande explained to me, their goal is to support a self-sustaining system where natural predators and biodiversity help protect the crops.
Zingerman’s farm bread
Imagine sitting around a French farmhouse table waiting for dinner. This would be the bread the family would serve. Like French pain au levain, it's made with all organic ingredients: organic white flour, organic whole wheat flour, water, salt and a sour starter. Its crust is crisp, its flavor subtle and never tiring. The three pound round is my favorite. Cut into quarters and freeze what you don’t eat.

o-med arBeQuina oliVe oil
Outside of Granada in Andalusia, fourth-generation family-owned O-Med pro duces exceptional extra virgin olive oils. Current owners and siblings Paula and Juan de Dios (called Juande) are detail-oriented and sustainability-focused in their management. Though this oil is not certified organic, it benefits from practices including hand-pruning the olive trees each spring, repurposing olive pomace as compost, and using snowmelt from the nearby Sierra Nevada moun tains in their irrigation. During harvest, olives are picked in the morning and oil is ready for bottling by noon. The Arbequina is fresh and fruity with hints of green apple and no trace of bitterness. It’s so versatile and aromatic that I reach for the bottle almost like it’s salt because it wakes up every dish, sweet and savory. My new favorite breakfast is one I learned from Paula and Juande— thick toast drizzled with olive oil and honey, which is how they’ve introduced their own kids to olive oil.

Koikuchi the classic style of Japanese soy sauce used for dipping sushi and gyoza dumplings. It’s also great in stir fries, marinades, and sauces. This version comes from Yugeta, a fourth-generation Japanese company. The sauce is aged for about a year in traditional cedar barrels called kioke. Generations ago, that’s how all soy sauce was made in Japan. Today, it’s very rare: only fifteen Japanese soy sauce makers still use kioke. The barrels are often in use for decades or centuries, much like the barrels that age traditional balsamic vinegar. Over the years, the barrels age batch after batch of soy sauce. They’re used not to give a woodsy flavor to the sauce, but to help provide a consistent flavor to each new batch of sauce. After aging for a year in the kioke, Yugeta’s soy sauce has a subtle wine-y, fruity sweetness that helps balance the salty intensity. Certified organic.

Hot Condiments
Shatta is a staple Middle Eastern chile paste typically made with red chiles, lemon juice, and olive oil. This version uses vibrant green chiles and hand-picked, dried thyme leaves. It’s chunky, bright, and herbaceous, with a bold heat that kicks in fast. The spice is intense but so flavorful that each bite leaves you eager for more. Spoon it over hummus, pair with grilled meats or falafel, or loosen with olive oil for a versatile, flavor-packed sauce for sandwiches or roasted veggies.

Colleen Clancy made her first batch of hot sauce for friends back in the 1970s. The recipe hasn’t changed since. It’s still made in small batches by hand. It’s an aromatic combination of cider vinegar, fresh garlic, Michigan honey and an array of spices. Its texture borders on spreadable. Drizzle it on potatoes, soups, meats, eggs... you get the idea.

Sambal is a spicy sauce found in cuisines across southeast Asia. This Malaysian version combines chiles and peppers, garlic, oil, and Makrut lime leaves to create a sauce with the consistency of a relatively smooth salsa and a flavor similar to a green Thai curry, but more acidic. It’s bright, fresh, has just a bit of heat that builds slowly from all the chiles. Try it on eggs, in fried rice or noodle dishes, slathered over grilled meats or fish, or as a simmering sauce for shrimp or chicken.

Reuben Sandwich Kits
Zingerman’s Reuben has been our top-selling sandwich since our doors opened on the corner of Detroit Street and Kingsley in 1982. It’s a soul-filling combination of corned beef, Swiss, homemade Russian dressing and sauerkraut that, when properly prepared at home, is a show-stopping meal. If you know someone who loves real deli fare, sending this gift will cement your status as the most clever, generous friend anyone could have. Some assembly is required, but considering it has been known to make adults weep in appreciation, we think it’s worth it.
You tell us! At Zingerman’s you can pick when you want your food to arrive. Our default is generally to ship right away to arrive within a few days, but you can adjust that however you need. Want it there ASAP? We can expedite it! Want to buy it now but ship it later? We can do that too! We can place an order today and schedule it to ship a day later, a week later, a month later—you name the date. We’ll reserve your food, then ship it to arrive when you’d like.

s eed s alsa
While many of our featured “new” finds are brand-new to us, some foods have been staples in our kitchens for years. This pumpkin seed salsa is practically my house salsa at this point, and once you taste it you’ll know why. Crafted in small batches with tomatoes, red bell peppers, pumpkin seeds, cilantro, chiles, and spices, it’s fresh, earthy, nutty, and just the right amount of spicy. The heat is moderate—you’ll feel it, but it won’t light your mouth on fire. The ground pumpkin seeds make for a thicker texture so each spoonful clings perfectly to whatever you’re piling it on. I reach for it especially for eggs, nachos, and pork tacos.

Pecans toasted with butter, lots of freshly ground black pepper, allspice, ground ginger, cloves and more. The nuts cluster together in little caramelly-spicy handfuls, making it way too easy to eat too many. I recommend two: a bag for eating and a gift tin for easy sharing with a crowd.
