Are there some kinds of cheeses that are meant only as an ingredient and some that should only be eaten? How do we know which is which?
How about wine? Are there wines you only cook with and others you only drink? For me, the answer is yes and yes. The wines I cook with are the ones that are left over. They’re huddled in the back of my refrigerator, a dreg or two left in each. They haven’t turned to vinegar, but they’ve been open too long and they’ve oxidized too much to taste great.
That wasn’t quite the answer you were looking for, though, was it? You expected an answer to the question: do I buy wine just for cooking? I’d say no. If a wine is not good enough to drink on its own, I don’t want to use it as an ingredient. That rule also applies to cheese. I don’t buy poor cheese for a dish and save the “good stuff” for eating on its own. I use the same cheeses in cooking as on the cheese board. But, like with wine, I often have bits and crusts of cheese left over in the fridge. They may be a little too dry.

They may be rinds only. The dry ones get grated over a bit of pasta or roasted vegetables. Rinds get added to soup or pasta water.
Are there wines I buy only to drink, cheeses only to eat? Yes on the wines—the really good ones, the ones that cost a precious penny— they are drinkers only. If a wine’s price is dear I will work very hard to empty it all into my glass and not relegate it to the sauté pan, where I don’t notice flavor as much. And how about cheese—are some “eating only”? Here, to me, cheese is a little more flexible than wine. I’m almost always willing to add some cheese to a dish regardless of its price. Better cheeses, more complex cheeses—even with cooking you can taste the differences. Make a macaroni and mountain cheese dish with our Comté from Fort St. Antoine and Piave (find them on pages 8–9) and it will blow you away. Try a grilled cheese with our Downeast Cheddar (page 10) and it will be a revelation.

When you get to the end of a hunk of Parmigiano Reggiano cheese, don’t throw out the rind. Put it in a plastic bag and keep it in the freezer. Next time you’re making a slowcooked pasta or rice dish, or a stew, add the “parm bone” to it. Like adding bones to bubbling broth it’ll disperse its flavor into the dish, melting slowly away. You can do this with any cheese whose rind isn’t waxed or coated.
Unwaxed Essex Manchego has a lovely, dry crumble and never tastes bitey. It goes down smooth, with the unmistakable fruity sweetness of sheep’s milk and a long savory finish.

Mountain cheeses often have two qualities in common: big wheels and big flavors. These are no cute little rounds you can lift with one hand. They are often the size of wagon wheels. Three feet across or more, they take two people to crack open. Big wheels can age longer before drying out which means a cellar full could feed a village during winter snows, a practical historical reason behind their size. More aging also means less moisture and that means deeper flavor. Mountain pastures are renowned for their biodiversity. The high altitude herb and flower aromas find their way into the cow’s milk. Those flavors are amplified by extra aging.




Named for the nearby kilometer marker along the Camino de Santiago, KM39 is aged for 18 months. It is often compared to Parmesan, but that barely scratches the surface. It’s intensely complex: bright tropical pineapple, rich brown butter and caramel, and a nutty walnut finish, with delightful crunchy crystals.

Cheddar is the single most popular cheese in the world. Once it was a single type of cheese, made on farms in one place (Somerset, England): cheese aged wrapped in cheese cloth, its curd cut in a way that became known as “cheddaring.” One such cheese still exists, from Jamie Montgomery's farm in Somerset. Gouda is irresistible. The style of the “make” (the word cheese people give to the process of creating solid cheese from liquid milk) creates butterscotch caramel flavors that nearly everyone adores.
If you are doing a good job aging gouda you retain its sweetness and never let it drift into acrid bitterness—something that afflicts many goudas I taste in the states, especially those aged for too long, but never an issue with these expertly-aged wheels.

Lomo is the Spanish word for loin. These ones come from Spain’s famed acorn-fed pata negra pigs. The acorn diet has a magical effect on the meat’s texture. Most chili crisps—a spicy, crunchy condiment from east Asia—start with a base of neutral vegetable oil, which doesn’t impart much flavor. This is a unique oil that’s got one of the most dedicated followings I’ve ever witnessed. Maussane is made using the old-fashioned Provençal fruité noir, or “black fruity” method. Instead of picking olives green and pressing immediately, Maussane is picked late, when the olives have ripened to near-black, and they are left to ferment a few days. While many oils were pressed this way in the past, early picking and pressing is the norm today. This makes Maussane stand out. It has virtually none of the grassy bitterness that you may find in other oils. A rich, golden, buttery nectar with a distinctive herbal character no other oil can match, it sings on fish, on salads, even on popcorn. In small batches she blends more than twenty different ingredients, starting with a malt amber lager from Lakefront Brewery in Milwaukee. Mamoul (pronounced MAH-mool, and also spelled ma’amoul) are Middle Eastern shortbread cookies stuffed with a nutty or fruity filling. They’re traditionally served as a sweet treat to celebrate a range of festive occasions including Purim, Easter, and Eid al-Fitr. Personally, I also like to have one (or maybe a few) to celebrate getting through a long afternoon.
These mamoul cookies come to us locally from family-owned Shatila Bakery in nearby Dearborn, Michigan, just west of Detroit. The team at Shatila have been making these traditional pastries for over 40 years, ever since Riad Shatila set up shop in 1979 with the recipes he brought from his native Lebanon. These days his wife and daughters are at the helm of the bakery, which is quite the destination should you find yourself near Deaborn. The filling for these cookies is made with a mixture of fresh dates with a smidge of orange blossom. Speaking of the dates, they use a variety called Aseel. Aseel dates are notably soft, which gives a particularly smooth consistency to the filling. The filling is stuffed inside a cookie dough made with plenty of butter and semolina flour, shaped into a ball. Then the top is stamped with a pattern, making the cookies as pretty as they are taste. Shatila makes so many mamouls that they use a machine to stamp the pattern, but if you want to try making your own mamouls at home you can find wooden mamoul spoons carved with patterns for stamping on Etsy. The bottom is coated in chopped pistachios, which gives a crunchy texture. Put it all together and you get a not-too-sweet combination of soft dough, fragrant pistachios and caramelly dates. Each cookie is big enough to last two or three bites. The cookies come individually wrapped, making them perfect to share for the holidays (or to secrete away for when you need a small, sweet pick-me-up).

Before Jamie LeBoeuf returned to Michigan to start J. Patrice chocolate studio, she honed her chocolatier skills while traveling and living in the Middle East. Eid al-fitr (translated as “the festival of breaking the fast”) celebrates the end of Ramadan, the Islamic holy month where dawn to dusk fasting is practiced. A magic trick moonlighting as an Easter sweet. It started its life as a perfectly proper egg. Then the insides were removed, the shell rinsed.
