Crunchy Peanut Spread This spread comes from Rieti, Italy, in the very center of the country, where Antonio della Corte and Anna Marie Conti blend nuts, olive oil, and other luscious ingredients to create sweet nut spreads you’ll want to use everywhere (check out their Pistacchiosa cream at zingermans. com). The olive oil gives the spread a nice sheen and incredibly smooth texture, but the only flavor that comes through in this knock-out spread is the peanuts. Wherever you think a bit of crunch, a bit of peanut, and a lovely level of sweetness would be nice, then that’s where you’ll wanna use this spread.

Plant based, gluten-free, wholesome... these terms are usually thrown around in health food stores, not usually in artisan food markets, but there’s no rule that says you can’t be both. NOSH Butters started near Akron, Ohio a couple years back and they’ve quickly mastered the art of grinding great nuts with flavorful ingredients to create delicious spreads. This blend of almonds and hazelnuts is spiked with cacao nibs for some extra crunch, and cinnamon and cane sugar for the subtlest bit of sweetness. Country Miche

roadhouse bread

“Miche” is French for loaf and typically refers to the large size and round shape in the style of traditional French country bread. Ours is made from a mix of Michigan wheat, rye flour, whole buckwheat, and spelt flour, all whole grain and freshly milled on our stone mill at Zingerman’s Bakehouse before being mixed into a dough and naturally leavened by its own unique starter. Deep and complex flavor.

ryes Traditional Jewish rye bread is still an endangered American species. Twenty-four years after we started baking them in Ann Arbor, you'll still be hard pressed to find a loaf like them anywhere in the country. Believe it or not, most “rye bread” sold in America contains very little rye flour. These are different. These are breads like my grandparents ate in Eastern Europe: plenty of rye flour, a natural sour rye starter (not the usual canned shortcut) and lots of time to let the dough develop. They’re the breads I reach for to make a sandwich or to eat with cool butter and fresh oysters. A perfect pairing with corned beef.

Craquelin The national bread of Belgium. It’s a buttery brioche rolled up with fresh orange zest and sugar cubes soaked in Grand Marnier®. One of the amazing things about olive oil is that tastes like where it’s from. The French word for this is terroir and it’s the unique flavor that the soil, climate, and environment impart to food. The specific terroir for this oil is the Mendoza province of Argentina. The Laur estate was one of the first to cultivate olives in the region, beginning in the early 1900s. They planted the Arauco olive which they brought over from Spain and that’s the only olive used in this oil. It’s big, bold, spicy, luscious with a very smooth mouthfeel to accompany a kick of pepper in the finish. You won’t find an oil exactly like it anywhere else in the world.

Roi extra virgin olive oil has been made in the mountain town of Badalucco in Liguria, Italy, by the Boeri family since 1900. Of all the vinegars you can find at the grocery store, rice vinegar isn’t usually celebrated for having much flavor. Sharp, harsh, sure. But flavorful? Not so much. Enter American Vinegar Works and this wonderfully complex rice vinegar that’s smooth on the tongue with flavor you notice in a good way. Cider vinegar was once a standard ingredient in kitchens across the continent. These days, a good, North American made one is surprisingly hard to find. This one, from third-generation apple growing Pierre Gingras in the Monteregie region of Quebec, fits the bill. Gingras starts by crushing only whole, hand picked organic apples (no windfalls are used nor are scraps or scrapings from previous pressings) from his own orchard. The juice is allowed to convert to vinegar slowly and naturally and then spends two years in French oak barrels, where it mellows and matures. Unfiltered and unpasteurized, it delivers true apple flavor. Perfect for salads, slaws, pickles and preserved vegetables.

It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum.

Tuna in tins, especially these from the fourth-generation family firm Ortiz, is one of the jewels in Spain's culinary crown. Ortiz's fish are all line caught— not netted—hand filleted at sea and quickly tinned by hand in good olive oil. The olive oil is key. It adds flavor and makes the texture silky over time, unlike water, which tends to leach flavors from the fish. Tuna is our top-selling tinned seafood, but sardines aren’t too far behind. It’s surprising to me since sardines are not a big part of the popular food scene in America. This is perhaps the classic case of tinned food seen as poor, low-quality food. Before college students ate 75 cent ramen, they ate 10 cent sardines. Forget that stereotype.

Here, four or five tender, perfect sardines, come nested in a tin of olive oil, and their flavor is extraordinary—the prize of Portugal, revered there as a kind of national seafood treasure.

Sea urchin is an acquired taste. But once acquired it haunts you. For me, there is nothing else I can eat that evokes the sea as strongly as it does. Mussels are close. Oysters are closer. But sea urchin is briny and funky in a way that, as soon as the first bite hits, I can recall what the summer wind off the ocean felt like. I first tasted Paolo Licata’s sugo di ricci—sea hedgehog sauce, the Italian word for sea urchins—in Sicily a decade ago.

When we got the first shipment of a few cases it was just as I’d remembered: a sweet, delicious Sicilian classic tomato sauce, spiked with shrimp and anchovies, with a deep current of urchin flavor running throughout. It’s a smooth sauce, homogenous, no chunks of fish, and I adore it on a plate of just-cooked Rustichella bucatini (online) with nothing else except a glass of cold white wine nearby. The sauce’s flavor is strong enough that a little goes a long way, which makes the expense of such a luxury easier to bear. A few spoonfuls per person is enough, so a jar can easily serve 8.

Broadbent Breakfast Sausage Ronnie and Beth Drennan make this sausage from a recipe from Grandma Anna Broadbent, who started selling it from the family barn in 1909. Just like Anna did, they mix a batch of fresh pork, sage and red pepper and stuff it into cloth bags that are cured by air drying for a week or so. Then it’s smoked over green hickory for 24 hours. Decades later, inspired by grandma’s recipes, Cyrilla and her sister began roasting and spicing cashews. When cold it’s an entirely different cheese with considerably less charm. Enjoy it with a bit of buttered bread and a crisp ale.
