Grocer’s Daughter Chocolate Covered Honey Caramels

Along Lake Michigan, about 10 minutes south of the iconic Sleeping Bear Dunes, Grocer’s Daughter has been creating high quality chocolate confections for 20 years. Husband and wife DC and Jody Hayden and their team exclusively use sustainably grown and ethi cally traded chocolate from Ecuador. Among all their delectable sweets, these caramels made with local star thistle honey and enrobed in rich, fruity dark chocolate are my favorite. Gingerbread Caramels

There’s a lot to love about these gingerbread caramels from The Blu Kitchen. Adina St. John uses heavy cream and salted butter from local Michigan farms. She adds molasses and a not-too-spicy blend of ginger, cinnamon, nutmeg, cloves, and allspice to create a comforting and recognizable warm gingerbread flavor. And then there’s the texture. 19TH CENTURY TURKEYS RETURN TO THE THANKSGIVING TABLE

Heritage Turkeys from Judd Culver

There are now a few farmers in American offering heritage breed turkeys which came back from near extinction just over a decade ago. You might even have some available where you live, which would be excellent news and you should order early from your local farmer to try one this year. Heritage birds are in sharp contrast to the modern Thanksgiving turkey, which is a bit of a monster.

The modern broad breasted white, as it’s known, was bred to produce a lot of white breast meat as quickly as possible. As everything else got pushed aside in favor of that goal, out went its disease fighting genetics, out went its ability to survive on its own, out went its flavor. Commercial turkeys taste like salt and water, with very little turkey flavor to mention.

Not so with these heritage KellyBronze turkeys. They are full-flavored birds, rich with flavor and never mooshy in texture. They spend their lives out in pasture on Judd Culver's farm in Crozet, Virginia, in a valley at the foot of the Blue Ridge mountains. They're protected from predators by a pair of guard llamas (really!).

When it comes time to process the birds, Judd and his team use a style called “New York dressed.” It’s the old way turkeys were processed on farms. They are cleaned without water, hung to age like steak. These might seem like small differences, but the flavor will blow you away. This turkey is so tender, so flavorful, it’s so different from what we’re used to it shouldn’t even be called by the same name.

None of these flavors are extreme. This is the kind of turkey that everyone at the table is going to enjoy. For many, it’ll be the first time they’ve tasted the real thing, and they’ll be fighting for seconds.

Bonajuto Chocolates from Sicily

Bonajuto has been making chocolate in the baroque Sicilian town of Modica since 1880. Since the beginning they’ve made unconched chocolate, which makes the texture crunchy, not smooth. Nowadays that texture has come somewhat back in fashion. Here, you can experience it as it was and always has been, in two ways. First, a colorful box of eighteen individually wrapped squares of chocolate made with only cacao and cane sugar. Springerle Cookies

Made by the sisters of St. Benedict Monastery of Ferdinand, Indiana. Traditionally served for Christmas in their native Swabia region of Germany, springerle cookies have a hearty texture and taste slightly of anise without being overly sweet.

Ricciarelli Italian Almond Cookies

If you’re looking for baked good inspiration, you can’t go wrong focusing on Italy. Italian cookies master the interplay between great texture and great flavor, from crunchy amaretti (find them on the facing page) to buttery pignoli (find them at zingermans.com). Marabissi has been making traditional Italian cookies for over 70 years in Tuscany, including these classic holiday cookies from Siena. Ricciarelli (pronounced ree-chuh-reh-lee) are soft and chewy oval-shaped cookies bursting with almond flavor, and their cracked surface is dusted with powdered sugar. They practically melt in your mouth. The nutty sweetness makes them a perfect pairing for coffee or dessert wine, or just enjoy them as a sweet end to a chilly evening.

Lebkuchen Cookies

Sandy Lee fell in love with lebkuchen, the traditional German Christmas cookie, while living in Berlin. She became obsessed, learning all she could about them before returning to the states and starting her own lebkuchen bakery. The recipe dates back to Medieval times and has many steps. The dough is made from almond and hazelnut flours, whole almonds, egg whites, honey, marzipan and a bevy of spices. The finished cookies are hand glazed and studded with almonds (classic variety) or cloaked in dark chocolate. Each tin includes three classic and two chocolate cookies. Each is about four inches across and an inch tall. They’re thick, moist, slightly spicy, sweet and very nutty. The consistency is a cross between cake and marzipan, making them the perfect after dinner treat with coffee or tea. The tin, with foxes walking through a snowy forest scene, will be a keepsake for years to come.

Zingerman’s Corned Beef & Pastrami

The meats we built our deli on. Every week we sell thousands of pounds of our corned beef and pastrami, much of it piled high on Zingerman’s Jewish Rye bread (find it on page 27) and nearly as much sliced up for our customers to take home and have for dinner. Both have been made for us by Sy Ginsburg and his team since we opened our doors in 1982. The first cut corned beef is our most popular deli meat by a country mile. Zingerman’s Bakehouse first fired up their ovens in 1992 with one goal: to bake full-flavored loaves for the sandwiches served at Zingerman’s Deli. Almost overnight, customers were beating down the bakery’s doors to buy bread. That demand remains. Today we ship thousands of loaves every year to bread lovers nationwide. We make them with minimal ingredients, including many flours we mill ourselves. And we bake in a stone hearth oven, which gives the bread a crisper, more flavorful crust.

Our chocolate cherry bread starts with a naturally leavened dough made with organic flour and a heaping helping of cocoa powder. Then we fold in dozens of Michigan dried cherries and chunks of bean to bar 68% Nicaraguan chocolate from French Broad Chocolates in North Carolina. That chocolate is key—it brings together the lovely light chocolatiness, the tartness of the cherries, and the delicate, acoustic bass notes of the natural sour starter. Around Ann Arbor, Cranberry Pecan Bread is a holiday classic. Each loaf is loaded with over half a pound of dried cranberries and toasty pecans, all stuffed in a tangy, naturally leavened bread dough made from organic flour. Making a loaf takes 18 hours, giving loads of time for flavor development. Eating a loaf with a hungry group often takes less than 18 minutes. Dense, chewy and crunchy, cranberry pecan has a tart tang that’s very enjoyable. Sliced thin, it’s great on a cheese board. It’s also great to toss in the bread basket for dinner. Toasted with a smear of good butter, it’s hard to beat for breakfast. And—stay with me here—it’s an excellent shell for an adventurous chicken (or turkey!) salad sandwich.

Craquelin Bread

Craquelin is the national bread of Belgium: a sweet, rich loaf with a crunchy, sugary swirl throughout the middle. At Zingerman’s Bakehouse, we start with our brioche dough made with organic flour and enriched with plenty of eggs and real butter. Then we give the recipe a sweet, fruity twist with the addition of fresh orange zest and sugar cubes soaked in Grand Marnier® that get swirled into each loaf. Eating a slice is like having a cinnamon roll flavored with orange instead of spice, with the rich, fruity flavor seeping into the surrounding dough. Some of our crew call it “coffee cake bread,” which gets to the spirit of the loaf, though its texture is much lighter. It makes for excellent toast, or extraordinary French toast.

Most American meat comes from animals bred to turn feed into flesh as efficiently as possible. They’ve bred out their ability to survive the elements (solution: cram them cheek by jowl into enormous barns) or to fight disease (solution: pump them full of antibiotics). They also bred out most of the flavor. The good news is that there are a handful of farmers out there today who are breaking from the industry norms and turning back the clock on meat. They’re raising heritage breed animals that were selected for flavor, not efficiency. They’re raising them outdoors, on pasture, where they have plenty of room to roam and they eat what they’ve always eaten rather than laboratory-developed rations. All that extra time, care, and effort can pay off with amazing flavor.

Ortiz Tuna from the Bay of Biscay

Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermar kets. In Spain it’s at the complete opposite of the culinary spectrum. Tuna in tins, especially these from the fourth-generation family firm Ortiz, is one of the jewels in Spain's culinary crown. Ortiz's fish are all line caught—not netted—hand filleted at sea and quickly tinned by hand in good olive oil. The olive oil is key. It adds flavor and makes the texture silky over time, unlike water, which tends to leach flavors from the fish. We offer a few different options from Ortiz. First up is Bonito (AKA Albacore) loin, our best seller, with full flavor, silky texture, and lingering sweetness. Next is the Yellowfin loin, which has a fuller, richer flavor. Cabot Clothbound Cheddar from Vermont

Cheddar was originally wrapped in cloth, not dipped in wax. Cheddars aged in cloth have a complexity and length of flavor that’s unmatched by wax. The wheels we get are made by Cabot Farms in Vermont, and then aged at Jasper Hill Cellars. The Jasper Hill team specially selects wheels just for us with a beefy, brothy flavor. Aged at least 9 months, it’s a sturdy cheese with a complex, lingering finish you can’t shake.

There are probably more versions of pimento cheese spread in the South than there are grandmothers. Giorgio Cravero’s Parmigiano Reggiano from Italy

Giorgio Cravero’s family has been aging Parmigiano Reggiano in Bra, Italy since 1855. He focuses on soft, sweet flavors, the kind of Parmesan you want to eat all on its own (though it’s excellent for grating over pasta, too). The cheese we buy comes exclusively from the San Pietro dairy, located high in the hills above Modena. The diverse herbs and grasses at that high altitude makes for especially flavorful milk, which in turn makes for especially flavorful cheese.

Pleasant Ridge Reserve Cheese from Wisconsin

Pleasant Ridge Reserve is made from the milk of a single herd of cows that graze on the rolling Wisconsin hillsides. After aging for a year, the cheese is like a European mountain cheese: fruity in an apple-y sort of way—rich, deep and sweet. Production is very small— about 6,000 wheels a year. We work closely with maker Andy Hatch, tasting together to select specific days of cheese to pick the most flavorful of the bunch.

Essex Manchego from Spain

Essex Manchego is a farmstead cheese: it’s made on a farm using only the milk of their own herd of sheep, deep in the heart of La Mancha. It has a lovely, dry crumble and never tastes bitey. There’s a huge difference between olive oils. Some, like those sold at most grocery stores, are fine for cooking. But when you seek an oil for its flavor it’s a different story. We focus on estate olive oils with great flavor, the kind you’ll notice when you dress a salad, finish a fish, or pour on grilled bread.

Peranzana Olive Oil from southern Italy

Zingerman’s extra virgin olive oil is made by Marina Colonna on her ancient estate in Italy’s Molise region, a little over 100 miles due east of Rome. Made from hand picked Peranzana olives pressed the same day they’re taken from the tree, this extra virgin olive oil is hugely flavorful. A decade ago, after I visited Marina Colonna’s farm, we selected from the dozen or so olive varietals she grows and presses separately and chose this one for a bottling she’d do just for us. Every year we’ve tasted again. Every year we’ve chosen the same varietal. Peranzana makes a lovable, delicious, authentic oil. You can use it in your kitchen to marinade, to dress, to douse, and to liven up just about any dish. It shines on beans, raw vegetables and just-grilled meats.

Roi Olive Oil from northern Italy

Roi extra virgin olive oil has been made in the mountain town of Badalucco in Liguria, Italy, by the Boeri family since 1900. The Boeris use an old stone mill to make the oil, the way all oils were made a century ago but practically none are today. Valgiano Olive Oil from Tuscany

Valgiano is grown and pressed north of Lucca on the far west of Tuscany, about twenty miles inland from the Tyrrhenian sea. Lucca’s oils have long been prized. In The Food of Italy (published in 1971 but still a great book for traditional Italian foodways), Waverly Root writes, “The greatest gastronomic glory of Lucca is its olive oil, the finest in Italy.” The latest harvest is mellow and buttery at the start before it turns to a citrusy bitterness with grassy green notes. In the fall, the team at Uplands Cheese in Dodgeville, Wisconsin use the rich, buttery milk from their own small herd of pastured Holsteins, Brown Swiss and Jersey cows to make Rush Creek Reserve. Each palm-sized wheel is wrapped in spruce bark, which helps the soft cheese hold its shape and gives it a woody, roasty, toasty note. The interior is luscious, what cheesemaker Andy refers to as “savory custard” for its consistency and punch of flavor. Let the cheese come up to room temperature and then carefully cut off the top ‘lid’ of the cheese. Sugarplums from Portugal

Straight from the rhymes of The Night Before Christmas, Greengage plums are harvested in Portugal in late summer then submerged in sugar syrup, where they rest for six weeks, slowly absorbing sweetness. Finally, they’re laid in the sun to dry. The long, complex process makes a candied plum. Slightly sweet, green and fuzzy on the outside like a peach. They have a pit, so watch out. Remarkably, the texture is firm, like a fruit you’ve just picked. A venerable British Christmas tradition.

Roasted Figs from Italy

Franco Rao’s figs are an eagerly awaited seasonal crop. Prized dotato figs are picked by hand when they are fully ripe, beginning to dry and concentrate. They’re caramelized over twenty-four hours in a low-temperature oven, a step almost no one takes because it adds extra time and expense. The impact on the flavor, however, is immense. These figs have a roasted, caramel-sweet flavor that’s irresistible. Hand packed in a ball the size of an apple, wrapped in fig leaves and twine. It’s a traditional way to store them in southern Italy, rustic and attractive. They are great with yogurt, with cheese, with ice cream. As a gift for someone with an eye for rustic foods with real flavor, you won’t find much better. Very limited quantities.

Honey Figs from Portugal

Pingo de mel figs—”honey drop”–are so named because they drip sugar when they’re ripe. Preserved in sugar by the same nuns who make our Sugarplums (facing page). Hold one up to the light. First, notice it’s improbably heavy. Next, look how it glows from within. The texture is like a candied chestnut but not as chalky. The flavor opens up after you taste, the dominant note of caramelized honey goes on and on, lingering long after you swallow. I’ve never had anything like this.

Dried fruits and nuts are a classic Portuguese combination, an end-of-dinner staple you’ll enjoy in homes from the Algarve to the Douro. This classic is created with extreme care by a woman-led, woman-run company headed by the indominatable Dona Florentina, 94 years young and still kicking fig. Her farm brushes the banks of the Tejo river in central Portugal. There they grow walnuts and the figs — the prized honey drop “pingo de mel” variety, harvested late in summer when it’s so absurdly decadent a dew drop of honey sweet nectar drips from its eye. The Favella Ranch is near Sibari in Southern Italy, which, if you’re up on ancient Greek history, you might recognize as the place where the Sybarites lived and ate famously well. These clementines in chocolate fit right into the Sybarites’ hedonistic tradition: spectacular Calabrian oranges, soaked in a constantly refreshed bath of simple syrup for three weeks, cut in quarters, smothered in dark chocolate. While England’s national holiday cake has become a cheap industrial laughing stock, these are another species altogether. Crafted by Robert Lambert from rare citrus that he candies himself, a slice cut thin while the cake is cool looks like a stained glass window and is a taste revelation.

Robert’s classic cake, the one we’ve offered for many years. It’s by far the best of its kind I’ve ever tried. Blood oranges, bergamots, Rangpur limes and more, many that he picks himself. British Christmas Pudding

From the culture that brought you fruitcake comes another much-scorned holiday food tradition: Christmas pudding. But just as there’s good fruitcake and disappointing fruitcake, the same goes for pudding. This particularly good pudding comes to us from Thursday Cottage in Essex. They craft it in the classic Victorian way, with dried currants and red and white raisins that are soaked in Cognac to intensify their flavor and give them a juicier texture. They deploy their own orange marmalade (they’re a preserve maker first) as well as sugar, citrus peels, cinnamon, cloves, ginger, another touch of Cognac, and just enough flour to hold it all together. It’s traditional to steam the pudding for a couple of hours before serving, but Victorians didn’t have microwaves and they work too. Serve for dessert in thin slices drizzled with hot brandy butter—or some warmed maple syrup if that’s what you have.

Italian Sea Salt Chocolate and Hazelnut Cremini Truffles

Cremini, that’s a mushroom, right? Usually yes, but not in this case. In the Piedmont region of northern Italy, a “cremino” (plural cremini) is an ultra-smooth cube of chocolate and hazelnut. These cremini come from Torino, made by bean to bar chocolatier Guido Gobino. They’re super silky smooth, each dotted with a few toasty hazelnut crumbles. The chocolate gets just a bit of an edge from the addition of sea salt.

Marzipan, the firm, chewy confection made from almonds and sugar with a floral almond flavor, can be colored and shaped to resemble just about anything. Chocolate Covered Walnuts

From the Périgord region of southwestern France, where walnut orchards blanket the landscape and the locals make walnut everything, from cakes to wine to salami. Here, the walnuts are toasted, then caramelized, then enveloped in a coat of dark chocolate as thick as the walnut itself, then dusted with cocoa powder. The effect is more than just an accretion of flavor, it’s like an explosion. They’re rich, nutty, so chocolatey, a little crunchy and yet they melt in your mouth. Twelve perfect nuts per box makes enough to share. Or not.

D. Barbero Torrone Nougat from Piedmont

Davide Barbero’s family has been making torrone hazelnut nougat—what I call Italian brittle—for five generations, since 1883 in the town of Asti. Neither the history nor repetitiveness seems to dull his passion. When you ask him about torrone his eyes light up and he talks in fast, clipped English. “We don’t kill the torrone! Industrial makers use no egg whites and they crank out a batch in an hour. They beat the mixture fast and use lots of pressure. Ours takes seven hours. We break for lunch! All of this makes our texture crumbly, not hard and tough. Here, take a bite, you can taste.” First off, you gotta love the fact that he mentions lunch as a factor in how they make better food. More importantly, he’s spot on, especially when it comes to texture. Barbero torrone is gently crumbly, in a shattering, delicate way. Spiked with loads of famous Piedmontese hazelnuts that are roasted in house every morning, then hand selected and folded into the nougat. In their classic Northern Italian graphic-designed tin they make great gifts. Or the 8-inch long bar, enrobed in chocolate, makes a great stocking stuffer.
