Zingerman’s Babkas

Babka is a sweet loaf, both fluffy and rich, kind of like a light textured coffee cake with a dense filling swirled throughout. In the late 19th Century, babka was made with leftover challah bread dough wrapped around nuts or jam. These days, the nuts have been replaced with fillings like chocolate. Now the master bakers at Zingerman’s Bakehouse make two flavors of babka. The first is swirling with chocolate and cinnamon and studded with juicy golden sultana raisins. The second is balanced between sweet and tart, loaded with earthy dates, luscious figs and bright pomegranate molasses swirled throughout. Fruit Cakes

Full disclosure: the price on these fruitcakes may cause sticker shock. While England's national holiday cake has become a cheap industrial laughing stock, these are another species altogether. Crafted by Robert Lambert in California from rare citrus that he picks and candies himself. A slice cut thin while the cake is cool—I recommend serving it chilled—looks like a stained glass window and is a taste revelation.

Robert's classic cake, the one we've offered for many years. It's by far the best of its kind I’ve ever tried. Blood oranges, bergamots, Rangpur limes and more, many that he picks himself. Each cake is soaked in cognac and aged for a few months, then garnished with a slice of candied fruit and a bay leaf, all wrapped gently in cheese cloth. It tastes fresh, clean and lively. a spicy sweet german tradition Lebkuchen

Sandy Lee fell in love with lebkuchen, the traditional German Christmas cookie, while living in Berlin. “It was like nothing I’d ever tasted,” she recalls. “I couldn’t get all those complex flavors out of my head.” She became obsessed, learning all she could about them before returning to the states and starting her own lebkuchen bakery. The recipe dates back to Medieval times and has many steps. The dough is made from almond and hazelnut flours, whole almonds, egg whites, honey, marzipan and a bevy of spices. The dense dough rests for nearly a day before heading to the oven. The finished cookies are hand glazed and studded with almonds (classic variety) or cloaked in dark chocolate. Each tin includes three classic and two chocolate cookies. Each is about four inches across and an inch tall. They’re thick, moist, slightly spicy, sweet and very nutty. The consistency is a cross between cake and marzipan, making them the perfect after dinner treat with coffee or tea. Although traditionally intended to keep for months, I think these sweet, spicy, nutty treats will only last a few days (or hours!) at your house. The tin, though, with foxes walking through a snowy forest scene with foxes, will be a keepsake for years to come.

Hand-Picked Apricots and Wild Cherries and in Syrup It’s been a dozen holidays since I found wild Italian cherries from Piedmont. I remember bringing the first jar to Christmas at home, spooning out individual fruits to top a crisp of cracker slathered with a gooey triple crème cheese whose name I forget. I kept at it for an hour—I have a big family and everyone wanted seconds. We barely made a dent in the jar. Prepared in small batches so they do not bruise, packed with syrup in a resealable glass jar, we've been bringing in a small quantity every holiday since and their fans gobble them up. We also offer soft, tender apricots, hand harvested and rushed into a simple syrup bath within hours. The speed is important, it protects the texture and flavor of the fruit. The longer they wait around, the more their texture breaks down, the mushier they get. But that’s the only rushing allowed. The apricots take their time once they reach their bath, allowing the sugar to slowly soak into the fruit, preserving them and freezing their flavor at its peak.

northern italy's classic host gift D. Barbero Torrone Nougat from Piedmont

David Barbero’s family has been making torrone hazelnut nougat—what I call Italian brittle—for five generations, since 1883 in the town of Asti. Neither the history nor repetitiveness seems to dull his passion. When you ask him about torrone his eyes light up and he talks in fast, clipped English. “We don’t kill the torrone! Industrial makers use no egg whites and they crank out a batch in an hour. They beat the mixture fast and use lots of pressure. Ours takes seven hours. We break for lunch! All of this makes our texture crumbly, not hard and tough. Here, take a bite, you can taste.” First off, you gotta love the fact that he mentions lunch as a factor in how they make better food. More importantly, he’s spot on, especially when it comes to texture. Barbero torrone is gently crumbly, in a shattering, delicate way. Spiked with loads of famous Piedmontese hazelnuts that are roasted in house every morning, then hand selected and folded into the nougat. In their classic Northern Italian graphic-designed tin they make great gifts. Or the 8-inch long bar, enrobed in chocolate, makes a great stocking stuffer.

They craft it in the classic Victorian way, with dried currants and red and white raisins that are soaked in Cognac to intensify their flavor and give them a juicier texture. They deploy their own orange marmalade (they're a preserve maker first) as well as sugar, citrus peels, cinnamon, cloves, ginger, another touch of Cognac, and just enough flour to hold it all together. It’s traditional to steam the pudding for a couple of hours before serving, but Victorians didn’t have microwaves and they work too. Serve for dessert in thin slices drizzled with hot brandy butter—or some warmed maple syrup if that's what you have.

Puglia, the heel of Italy’s boot, is known in Italy for its rustic, rural beauty and beaches, and for being the birthplace of burrata cheese, crunchy taralli crackers (online), and the little ear-shaped pasta known as orecchiette. But I’m willing to bet that soon it’ll be known for something else: ceramics. Specifically, gorgeous, hand-crafted ceramic bottles holding oustanding olive oils. We have two extra virgin Puglian olive oils, each made on a single estate using a single olive varietal: the local powerhouse Coratina, a coveted varietal for making grassy, bold, peppery oils.

Freshly Milled Whole Grain Flours The latest new old innovation is here at Zingerman’s Bakehouse. Last fall, the team at Zingerman’s Bakehouse installed our own small stone mill. That's led to two major improvements.

First, we can work directly with local farmers to get heirloom grains straight from the source. Our rye now comes from the Breslin family in Ottawa, IL. Our soft white winter wheat comes from Ferris Organic Farms in Eaton Rapids, MI. We’ve got a half dozen more local grains, and there are more in the works all the time. We bring in the grains and grind them into flours ourselves.

Secondly, the flours we mill are truly whole grain.

Most “whole grain” flour in the US is actually processed like white flour, then has some of the bran added back in. It gives the flour a longer shelf life at the expense of nutrition and flavor. When we mill our own flour, we never separate out any part of it. And since we use the flour the same day we mill it, there’s no danger in shortening the shelf life.

We haven’t switched over to milling all of our own flour in house ourselves, yet. But month by month, we keep testing recipes for new breads and pastries, or to update classics we’ve made for years to make them even more flavorful. The result is ever bigger and better flavor, but don’t take my word for it. Try for yourself. You really can taste the difference.

I have always been a fan of our Better than San Francisco Sourdough Bread, Service Star at but for a while I was hesitant to try our Chocolate Sourdough. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Tuna in tins, especially these from the fourthgeneration family firm Ortiz, is one of the jewels in Spain's culinary crown. It's surprising to me since sardines are not a big part of the popular food scene in America. This is perhaps the classic case of tinned food seen as poor, low-quality food. Before college students ate 75 cent ramen, they ate 10 cent sardines. Forget that stereotype. The anchovies Ortiz cures for us are fished in April with traditional purse seine nets that skim silver-skinned anchovies from the surface. This old way of fishing has two effects. It keeps the sea healthier by leaving unneeded fish from the catch, and it bruises fewer fish because hauls are lighter than with drop nets. Once caught, the anchovies are cleaned, salted, stored for 6 months—a little shorter than usual, so they remain plump—then filleted and packed in olive oil to order, all by hand. These are the crème de la crème of ready-to-eat anchovies, the ones you want to eat on their own, whole. Toast, pasta, pizza, sandwiches, or salads, you name it, these are great on top of it.

Champagne Vinegar

Kimberly started making vinegars by the Orleans method back in the 70s and they haven’t changed a thing. In a nutshell, the Orleans method mixes fresh wine with older vinegars. The ‘mother’ vinegar teaches the bacteria present in the air and wine to convert the alcohol into acetic acid, turning the wine into vinegar. Kimberly sources Pinot Noir grapes to create this champagne vinegar. It’s light on the tongue, not very sharp (thanks to a lower acidity), bright and fruity. It’s great in a tomato and cucumber salad, in vinaigrettes, or to deglaze a pan.

It’s not too often you see the French taking a page from the Italians when it comes to cuisine, but they did just that in crafting this intense, complex vinegar. It’s made from the same grapes (Trebbiano) balsamic vinegar makers use in Modena, Italy. Just like the Italians, they reduce the fresh pressed juice in copper kettles, then age the concentrated juice in oak barrels formerly used to age Cognac, which gives it a French twist. Like its Italian cousin, this vinegar is smooth, complex, a little sweet with a finish that seems to linger for hours.

Unlike its cousin, it’s light on the tongue (not thick) and more versatile in the kitchen. My favorite new vinegar in years.

Balsamic Vinegars from La Vecchia Dispensa Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni, her husband Marino Tintori, and their son Simone make a range of great vinegars. Although Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. You might not notice it at first, but after many uses overly sweet balsamics get kind of dull. Not so with those from the Tintoris. You can make fresh pesto on your own. But let me tell you, even in a jar, Ligurian pesto is absolutely delicious and usually beats homemade. Basil grows easily in that region’s temperate climate. It’s harvested very young. When just two leaves have sprouted on the plant they’re picked.

That’s something very difficult to do in America unless you have your own basil farm. Yet it’s the trick to keeping it sweet and herbaceous. grass fed steaks from Carman Ranch In the last decade there’s been a renewed interest in old fashioned grass-fed beef. Not all of it is great in part because not every rancher bring their cattle to slaughter at the right time. Just like tomatoes have a season, so do grass fed cattle.

Lush summer grass makes for great tasting beef. Winter grass makes for less flavorful—and less tender—beef. At Carman Ranch in Oregon, the cattle spend their whole lives out on pasture eating grass, and they only produce beef when the grass is at its richest and the cattle are at their fattest. Fourth-generation farmer Greg Gunthorp not only cures his own bacon—he also raises all the heritage-breed Duroc pigs himself on his pasture-based northern Indiana farm. Practically all Parmigiano Reggiano is made from milk pooled together from multiple farms. But the fifth-generation cheesemakers at Valserena make a farmstead cheese. That means they not only make the cheese, they also raise the cows, and all of the milk comes from their own herd. THANKS 19TH CENTURY TURKEYS RETURN TO THE THANKSGIVING TABLE Heritage Turkeys from Paul Kelly Paul Kelly’s family has raised old breed turkeys in England for almost half a century. They now have a farm in Virginia and offer a limited number of their impeccably raised birds. We snagged some this year and I’m quite excited to tell you about them.

There are now a few farmers in American offering heritage breed turkeys which came back from near extinction just over a decade ago. You might even have some available where you live, which would be excellent news and you should order early from your local farmer to try one this year. Heritage birds are sharp contrast to the modern Thanksgiving turkey, which is a bit of a monster.

The modern broad breasted white, as it’s known, was bred to produce a lot of white breast meat as quickly as possible. As everything else got pushed aside in favor of that goal out went its disease fighting genetics, out went its ability to survive on its own, out went its flavor.

Today’s commercial turkey is raised on a daily cocktail of antibiotics, without which it would succumb to illnesses common in high-density feedlots. It’s also terribly bland. Commercial turkeys taste like salt and water, with very little turkey flavor to mention.

Not so with these turkeys. They are full-flavored birds, rich with flavor, the texture never mooshy. Part of the reason is that Paul has them prepared in what’s called “New York dressed.” It’s the old way turkeys were processed on farms. They are cleaned without water, hung to age like steak. It’s a style that, as you can

derive from the name, started in the USA but went away as American farmers switched to water processing with no aging. These might seem like small differences—a bit of water here, a bit of time hung to age there. But wait till you taste the difference. It’ll blow you away. This turkey is so tender, so flavorful, it’s so different from what we’re used to it shouldn’t even be called by the same name.

None of these flavors are extreme. This is the kind of turkey that everyone at the table is going to enjoy.

For many, it’ll be the first time they’ve tasted the real thing, and they’ll be fighting for seconds.
