Coffee cakes have been our best-selling gift since we started mailing food in the early 1990s. Having tried a truckload of coffee cakes in the past two decades I can say quite honestly that I haven’t tasted one I like better. This is a Zingerman’s classic and perennially our most popular gift: rich, moist Sour Cream Coffee Cake made with organic flour, loaded with Indonesian cinnamon and toasted walnuts, baked in a traditional bundt pan. Full disclosure: the price on these fruitcakes may cause sticker shock. While England's national holiday cake has become a cheap industrial laughing stock, these are another species altogether. Crafted by Robert Lambert in California from rare citrus that he picks and candies himself. A slice cut thin while the cake is cool—I recommend serving it chilled—looks like a stained glass window and is a taste revelation.

Puglian Olive Oils in Ceramic Bottles Puglia, the heel of Italy’s boot, is known in Italy for its rustic, rural beauty and beaches, and for being the birthplace of burrata cheese, crunchy taralli crackers (online), and the little ear-shaped pasta known as orecchiette. But I’m willing to bet that soon it’ll be known for something else: ceramics.

Specifically, gorgeous, hand-crafted ceramic bottles holding oustanding olive oils. We have two extra virgin Puglian olive oils, each made on a single estate using a single olive varietal: the local powerhouse Coratina, a coveted varietal for making grassy, bold, peppery oils.

The first oil comes to us from the estate of Elia Pellegrino. Called TyPuglia, it comes in a limited edition tomato red ceramic bottle, hand crafted in the studio of Elia’s friend, Michele Cataldo.

Italian Balsamic Showstopper You don’t have to be a balsamic sommelier to taste the difference between these amazing vinegars. As balsamics age, they go from being bright and tart to taking on a sweeter, more raisin-y flavor and a thicker, more syrupy texture. The young balsamics are better for vinaigrettes; the older ones are killer drizzled on cheese or berries.

In Italy, finocchiona salamis are a staple. They’re known and named for their signature ingedient: fennel seeds (finocchio in Italian, pronounced “fee-nohkee-oh”). Rispens Sheep Gouda Jacob Rispens shepherds 300 Lacaune sheep, which is precisely 73 more individuals than live in Morra, the town he calls home. The sheep’s fat-rich milk is made into compact wheels of gouda. Most gouda is made from cow’s milk, a bit is made from goat, and almost none from sheep, so not only is this a delicious find, it’s a rare one. It’s got sweet, soft aromas of buttermilk and dry hay. A flavor that, I swear, is just like salted caramel. Shave some over your next batch of roasted vegetables. Grate a snowdrift of it on some pasta. And of course, it’s a treat eaten on its own, at room temperature, alongside a crisp apple and a handful of nuts.

Master cheesemaker Michael Spycher has been making Gruyère in the tiny Swiss village of Sumiswald for nearly two decades. He makes his cheeses with milk from a dozen local farmers, each with small herds of 8-20 cows that are known by name and spend their days grazing on the Alpine grasses and flowers. Each day Michael makes 5 or 6 huge, 70-pound wheels of Gruyère. The wheels age for half a year, until the cheese has an ivory color dotted with occasional flavor crystals.

Italian Valserena Parmigiano Reggiano Practically all Parmigiano Reggiano is made from milk pooled together from multiple farms. But the fifth-generation cheesemakers at Valserena make a farmstead cheese. That means they not only make the cheese, they also raise the cows, and all of the milk comes from their own herd.

Where most parm is made from the milk of Freisian cows, at Valserena they raise brown Bruna Sola cows. They produce less milk than Freisians, but it has more butterfat—and more flavor. Maussane is made using the old-fashioned Provençal fruité noir, or “black fruity” method.

Instead of picking olives green and pressing immediately, Maussane is picked late, when the olives have ripened to near-black, and they are left to ferment a few days. While many oils were pressed this way in the past, early picking and pressing is the norm today.

This makes Maussane stand out. It has virtually none of the grassy bitterness that you may find in other oils. Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni and her husband Marino Tintori make a range of outstanding balsamics under the name La Vecchia Dispensa. Our most popular bread. Spreading out like the cap of a wild mushroom, its thin, snow white crust surrounds a soft, savory crumb filled with lots of holes (we work hard to put the holes in). This is the traditional bread of Puglia—the heel of Italy’s boot—and the best one to eat alongside a pasta dinner. Recommended for ripping and dipping in olive oil.

Its crust is crisp, its flavor subtle and never tiring. The three pound round is my favorite. Cut into quarters and freeze what you don’t eat.

“Miche” is French for loaf and typically refers to the large size and round shape in the style of traditional French country bread. Bigger loaves have bigger flavor, a moister crumb and longer staying power.

My Italian friends would probably think this bread is heresy, but that’s their loss. It’s a natural for me because I love bread, parmesan and good black pepper.

19TH CENTURY TURKEYS RETURN TO THE THANKSGIVING TABLE Heritage Turkeys from Paul Kelly Paul Kelly’s family has raised old breed turkeys in England for almost half a century.

They now have a farm in Virginia and offer a limited number of their impeccably raised birds. We snagged some this year and I’m quite excited to tell you about them.

There are now a few farmers in American offering heritage breed turkeys which came back from near extinction just over a decade ago. You might even have some available where you live, which would be excellent news and you should order early from your local farmer to try one this year. Heritage birds are in sharp contrast to the modern Thanksgiving turkey, which is a bit of a monster.

The modern broad breasted white, as it’s known, was bred to produce a lot of white breast meat as quickly as possible. As everything else got pushed aside in favor of that goal out went its disease fighting genetics, out went its ability to survive on its own, out went its flavor. Today’s commercial turkey is raised on a daily cocktail of antibiotics, without which it would succumb to illnesses common in high-density feedlots. It’s also terribly bland. Commercial turkeys taste like salt and water, with very little turkey flavor to mention.

Not so with these turkeys. They are full-flavored birds, rich with flavor and never mooshy in texture. Part of the reason is that Paul has them prepared in what’s called “New York dressed.” It’s the old way turkeys were processed on farms.

They are cleaned without water, hung to age like steak. It’s a style that, as you can derive from the name, started in the USA but went away as American farmers switched to water processing with no aging. These might seem like small differences—a bit of water here, a bit of time hung to age there. But wait till you taste the difference. It’ll blow you away. This turkey is so tender, so flavorful, it’s so different from what we’re used to it shouldn’t even be called by the same name.

None of these flavors are extreme. This is the kind of turkey that everyone at the table is going to enjoy. For many, it’ll be the first time they’ve tasted the real thing, and they’ll be fighting for seconds.

You might have any number of great reasons to buy one of these turkeys for your feast this year. They’re sustainably raised. They support old breeds with diverse genetics.

They keep alive a traditional way to dress the bird. But when you come back for one next year, it will be for one simple reason—they taste so good. Limited quantities.
