The meats we built our deli on. Every week we sell thousands of pounds of our corned beef and pastrami, much of it piled high on Zingerman’s Jewish Rye bread (find it on page 8) and nearly as much sliced up for our customers to take home and have for dinner. Both have been made for us by Sy Ginsburg and his team since we opened our doors in 1982.

The first cut corned beef is our most popular deli meat by a country mile. Pastrami, the spicy cousin to corned beef made from the fatty navel cut of beef and cured with a load of spices like black pepper and clove, is a cult favorite.

Handmade Potato Knish

It doesn’t get more classic then the knish: a Jewish pastry stuffed with savory filling wrapped in flaky, buttery dough. Originating in Eastern Europe, the knish came to America with the Ashkenazi Jewish immigrants who settled in cities like New York around the turn of the 20th century. We’ve been making them at Zingerman’s Deli since we opened our doors in 1982. The inside is made of mashed Yukon Gold potatoes, onions, and herbs. The outside is a tender, flaky, handmade crust crafted from fresh farm cheese from Zingerman’s Creamery. Ready to eat, cold or hot. We like ours served hot with a side of good mustard. About Rugelach

At the end of the 19th century, many Jews fleeing the pogroms of Russia and eastern Europe arrived to the lower East side of Manhattan. When Jews made rugelach cookies in the old country, they would have been pareve—that is, prepared with no dairy or meat—so that they could be served as dessert on the Sabbath or on holidays. But in New York in the early decades of the 20th century, they had new ingredients to play with, like cream cheese.

The first recipe for rugelach made with a cream cheese dough was published in the 1950 cookbook The Perfect HostWithin a couple of decades, it became the standard. In American rugelach, cream cheese dough was—and still is— king. There’s a reason that cream cheese dough has stuck around, including here at Zingerman’s Bakehouse. Our recipe for rugelach dough is pretty simple: one third butter, one

third cream cheese, and one third pastry flour. The cream cheese and butter come together to make an incredibly crisp, flaky pastry that crackles as you bite into it and then melts in your mouth. About as soon as it does, you’re sure to find yourself reaching for another.

That cream cheese dough is wrapped around a filling. Back in the old country, it might have had nuts, dried fruits, poppyseed paste, or jams. While the pastry has changed significantly, in some ways the filling has stayed the same. Our classic rugelach, made with half toasted walnuts and half dried currants, is a combination that great-great-great bubbe back in Austria would recognize immediately. Likewise, apricot and raspberry, filled with really flavorful jams, probably wouldn’t have been too unfamiliar. Chocolate is a more modern take—one that tasted like a crisp, bite-sized pain au chocolat.

Our most popular bread. Spreading out like the cap of a wild mushroom, its thin, snow white crust surrounds a soft, savory crumb filled with lots of holes (we work hard to put the holes in). This is the traditional bread of Puglia—the heel of Italy’s boot—and the best one to eat alongside a pasta dinner. Recommended for ripping and dipping in olive oil.

This is rye like my grandparents ate in Eastern Europe, made with plenty of freshly milled rye flour (believe it or not, most “rye bread” sold in America contains very little rye flour), a natural sour rye starter (not the usual canned shortcuts) and lots of time to let the dough develop. The base bread for our reuben and many other sandwiches.

I love this bread: savory, lusty, delicious and dangerously close to addictive. Softly spicy, fire-roasted New Mexico green chiles and Nor'easter Cabot cheddar blended into the Bakehouse’s tangy Farm Bread. Great on its own or as an accompaniment to dinner. It’s especially good if you give it about fifteen minutes in a 325-degree oven before you break it open so it’s nice and steamy when you crack the crust.

My Italian friends would probably think this bread is heresy, but that’s their loss. It’s a natural for me because I love bread, parmesan and good black pepper. There’s a heaping helping of Parmigiano Reggiano in every loaf, along with a load of cracked black peppercorns. Leaves your mouth pleasantly aroused from the heat of the pepper and salivating from the savory sweetness of the parmesan. It’s fantastic when heated.

The Álvarez de Toledo family has been growing olives and pressing oil on their farm in western Spain since 1624. With 400 years of practice, they’ve learned a thing or two about making exceptional extra virgin olive oil. Made from a blend of hoji blanca, picual, arbequina, and morisca olives, the oil has a lively, fresh flavor that reminds me of green tomates and artichokes. It’s got a bit of a peppery kick in the finish, just enough to make things interesting. Excellent in vinai grettes, dipping bread, drizzling on pasta, or just about any other use you can dream up.

Giorgio Cravero’s Parmigiano Reggiano

Giorgio Cravero’s family has been aging Parmigiano Reggiano in Bra, Italy since 1855. He focuses on soft, sweet flavors, the kind of Parmesan you want to eat all on its own (though it’s excellent for grating over pasta, too). The cheese we buy comes exclusively from the San Pietro dairy, located high in the hills above Modena. The diverse herbs and grasses at that high altitude makes for especially flavorful milk, which in turn makes for especially flavorful cheese—a quality noted by this Parmesan’s rare designation as a Prodotto di Montagna.

Friedrich Morgenroth is the eighth generation to make Kleinhettestedt mustard, so named for the 700-year-old village where the mill is located. It’s made in relatively small batches with giant millstones in a slow, cool process. The beer mustard is mixed with black beer and has a slight heat. The horseradish is more coarsely ground and, despite the name, has just a whisper of heat. Each comes packed in a hefty gorgeous stone crock that you’ll never want to throw away.

MACROOM OATMEAL FROM WALTON'S MILL

Eating this for the first time, you realize just how good oatmeal can be. It has deep, rich, toasty flavor and a substantial texture unlike any other oatmeal I’ve ever tried. The Walton family has been milling oats in Ireland since the 1700s. They still use old stone wheels, which I think leave the oats better tasting than steel-cut.

Suehiro Double Brewed Shoyu Japanese Soy Sauce

This shoyu—the Japanese word for “soy sauce”—comes from Suehiro, a firm that’s been making soy sauce since 1879 in Tatsuno, Japan. They start with Japanese soy beans and wheat, plus water and sea salt. Once they’ve made those ingredients into soy sauce, to make a “double brewed” shoyu, they start as if to make a new, second batch with more wheat and soy beans, but this time they replace the water and salt with the first batch of soy sauce. The result is remark ably smooth and soft compared to the harsh salt-bombs of most soy sauces. It’s equally great blended into sauces or used for dipping or sprinkling.

Broadbent Breakfast Sausage

Ronny and Beth Drennan make this sausage from a recipe from Grandma Anna Broadbent, who started selling it from the family barn in 1909. Just like Anna did, they mix a batch of fresh pork, sage and red pepper and stuff it into cloth bags that are cured by air drying for a week or so. Then it’s smoked over green hickory for 24 hours. Ronny eats his sausage for breakfast with eggs and biscuits. Try it in omelettes. It also makes some serious sausage gravy.

Majid Mahjoub’s family has been growing wheat, olives, fruit, and vegetables on their farm in Tebourba, Tunisia since 1896. Their attention to detail is meticulous. Take this couscous. Using the semolina wheat and extra virgin olive oil they grow on their own farm, they hand roll each little ball of couscous by hand and then dry it in the sun, the way it’s been done for millennia. It takes about ten days to make a batch of this couscous, but it only takes ten minutes to cook. I always have a jar or two on hand in my pantry for nights when I want a really flavorful, really quick, really easy meal. Serve plain, with tomato sauce, with grilled vegetables, with fish, or cooled in a salad.

Bloody Butcher is an heirloom breed of corn first recorded in the mid-19th century. The name comes from the color of the kernels, which are a striking, deep crimson color. Ortiz Tuna from the Bay of Biscay Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a lowend commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Tuna in tins, especially these from the fourth-generation family firm Ortiz, is one of the jewels in Spain's culinary crown. Peranzana Olive Oil from Marina Colonna in Molise, Italy

Olive oil varietals have a long way to go before they’re recognized like wine grape varietals. Everyone has heard of Chardonnay, Merlot, Pinot Noir. Even rare grapes like Viognier roll off most wine drinkers’ tongues. But try to name an olive varietial. Kalamata. Manzanilla. And? Stumped! Oil makers think about varietals, though. A lot. They have thousands to choose from with charming names like Halkidiki and Bidni. They need to pick the ones that grow best on their land, that resist the pests and blight and whatever weather their particular corner of earth throws at them. They need olives that pollinate well, that ripen well, that release enough oil and that, most importantly, taste good.

If you’re making oil in the southeast of Italy and looking for an olive that does all of this, you can’t do much better than Peranzana. It grows well in the scorch-then-snow climate and ripens before frost reveals itself. It releases enough oil when

pressed to make a business case for planting it. Its flavor is bold enough to stand up on its own, it doesn’t need blending with a “fixer” varietal that gives it a kick. It’s not too bold, though, so eating it does not provoke a hot, peppery, green-grass battle with every food it touches.

A decade and a half ago, after I visited Marina Colonna’s farm, we selected from the dozen or so varietals she grows and presses separately and chose this one for a bottling she’d do just for us. Every year we’ve tasted again. Every year we’ve chosen the same varietal. Peranzana makes a lovable, delicious, authentic oil. You can use it in your kitchen to marinade, to dress, to douse, and to liven up just about any dish. I’d avoid cooking with it since that drives off some of the great aroma that you’re paying for, but any use after the dish is cooked is fair game. It shines on beans, raw vegetables and just-grilled meats.

Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni, her husband Marino Tintori, and their son Simone make a range of great vinegars. Although Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. You might not notice it at first, but after many uses overly sweet balsamics get kind of dull. Not so with those from the Tintoris. Txakoli White Wine Vinegar

Txakoli (pronounced tchuh-KOH-lee) wine is one of my favorites. It’s enjoyed young, has a bright, fresh flavor with small hints of apricot and a dry finish. It’s hard to find outside of Spain’s Basque region, probably because they drink most of it. It’s rarely made into vinegar, so this bottle is about as common as an albino rhinoceros. The flavor of the vinegar is light, lovely, lingering. It’s not sweet, and there’s an airiness to it that makes it refreshing. It’s very nice on simple salads of most any sort. Exceptional with seafood. Use it to deglaze a pan after you sauté fish in it.

Benton’s Hickory Smoked Bacon

The most intense bacon we carry. Allan Benton starts with heritage Berkshire pork, rubs it with brown sugar and salt, then dry cures it for a full month. Dry curing is an uncommon practice in bacon making, since it takes longer, adds costs and decreases yield. But it creates deep, solid, memorable flavor. Finally, he smokes it over hickory for 48 hours. Flavor wise it's an intense confluence of smoke, salt and sweet—all at once. We used to bake this on special occasions and we’d get so many orders we'd run out of bacon. It’s Farm Bread dough with Nueske’s Applewood Smoked Bacon and black pepper. Every bite has a bit of sourdough tang and a lot of the sweet, smoky meatiness of bacon, plus a little spice. I’m sure it makes great sandwiches, but I’ve never had a loaf around long enough to try.
