When we first opened on March 15th, 1982, I had no idea what Zingerman’s would become. All I knew is I wanted to serve big, overflowing reuben sandwiches. Reubens you’d need two hands to hold and when you bit into one, Russian dressing would run down your arms. I wanted you to go through a stack of napkins during lunch.

In some ways, the Zingerman’s reuben is the bedrock upon which we’ve built our community of businesses. Zingerman’s Bakehouse (celebrating its 25th anniversary this year), ZingTrain, the Creamery, Candy Manufactory, Coffee Company, our Roadhouse, Cornman Farms, Miss Kim and this very catalog all exist because we made an amazing reuben—and people noticed. The passion that drives us to make the perfect reuben is the same passion that goads us to find the most delicious olive oil, bake the most flavorful bread, and put together an inspiring seminar.

In thirty-five years we’ve gone from a tiny corner deli to a community of businesses with seven hundred employees. There’s a million reasons how we got here, but the reuben was where it started.

THE NEW AMERICAN MEAT Ninety-nine percent of meat raised in America today comes from animals bred for a single purpose: to turn feed into meat as efficiently as possible. With that single minded focus, we bred out their ability to survive the elements (solution: cram them cheek by jowl into enormous barns) or to fight disease (solution: pump them full of antibiotics). We also bred out most of the flavor. The good news is that there are a handful of passionate farmers out there today who are breaking from the industry norms and turning back the clock on meat. They’re raising heritage breed animals that were selected for flavor, not efficiency. The tri tip is a triangular cut of beef that’s nicely marbled, intensely flavorful, and a little tricky to cook. Overdo it and it can get dry and unappealing. It’s difficult to cook a thick cut of meat period, let alone over a fire. Here’s how I’ve learned to get a good outcome, borrowing a couple tips from the pros.

Salt early and plentifully. A day or more ahead of time is great if you can. Give it plenty of time to penetrate.

Brown the cut on the grill, then put it on a hot pan in an oven.

Take the temperature with your finger (pro style, feeling when it’s done) or with a meat thermometer (Mo’s safe style, plugging the thickest part of the meat).

When we talk about pork ribs, often we’re thinking of baby back ribs. They’re next to the pork loin, and they’re correspondingly tender and mild in flavor.

Spare ribs, on the other hand, are closer to the sternum, right next to the bacon. The meat has deep flavor and an awesome layer of luscious fat. Truffles make for a mystical, magical flavor that for many is irresistable. They’re also insanely expensive. But there’s another way. Jane Morgan Smith grows truffles in North Carolina in a grove of 200 oak trees whose roots were inoculated with the spores of France’s world-famous black winter Périgord truffles. Jane mixes the truffles into salt, infusing it with their aroma. Use the salt in a dish and you have amazing black truffle flavor at a fraction of the cost. Add it right before serving.

Do so sparingly, this is strong and too much of a good thing isn’t a great thing.

The trouble with truffle oil There’s a big problem with truffle oil: there aren’t any truffles in it. One hundred percent of the truffle oil in the world is made with lab chemicals, not mushrooms. Specifically, you’re smelling a few drops of 2,4-dithiapentane added to olive oil. It’s sort of a cousin to vanillin, the fake vanilla derived from wood pulp. Both are a shadow of the real foods’ flavor with none of the original's complexity or nuance. Not so with our black truffle sea salt, however, which contains only real truffles.

I’m a fan of almost anything stuffed inside of a piquillo pepper—so when I found these cod-stuffed peppers this winter I was damn excited. Piquillos, if you haven’t met them before, are the prince of roasted peppers, grown in the Navarre valley in northern Spain, roasted and hand peeled with no water or oil ever added. If you’ve ever tried to roast and hand peel your own peppers, shredding them and leaving tons of burnt pieces attached, you’d never believe it could be done.

I didn’t, until I visited El Navarrico, our stuffed piquillo maker, and saw it before my own eyes. Amazing! Six women standing side by side peeling peppers faster than you’d peel an orange! Spanish line-caught tuna Ortiz Tunas from Spain Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Sea urchin is an acquired taste. But once acquired it haunts you. For me, there is nothing else I can eat that evokes the sea as strongly as it does. Mussels are close. Oysters are closer. But sea urchin is briny and funky in a way that, as soon as the first bite hits, I can recall what the summer wind off the ocean felt like. I first tasted Paolo Licata’s sugo di ricci—sea hedgehog sauce, the Italian word for sea urchins—in Sicily a decade ago. When we got the first shipment of a few cases this fall it was just as I’d remembered: a sweet, delicious Sicilian classic tomato sauce, spiked with shrimp and anchovies, with a deep current of urchin flavor running throughout. It’s a smooth sauce, homogenous, no chunks of fish, and I adore it on a plate of just-cooked Rustichella bucatini (online) with nothing else except a glass of cold white wine nearby. The sauce’s flavor is strong enough that a little goes a long way, which makes the expense of such a luxury easier to bear. A few spoonfuls per person is enough, so a jar can easily serve 8.

We used to bake this on special occasions and we’d get so many orders we'd run out of bacon. It’s Farm Bread dough with Nueske’s Applewood Smoked Bacon and Tellicherry black pepper. Every bite has a bit of sourdough tang and a lot of the sweet, smoky meatiness of bacon, plus a little spice. I’m sure it makes great sandwiches, but I’ve never had a loaf around long enough to try.

Traditional Jewish rye bread is still an endangered American species.

Though it’s been more than 20 years since we started baking them, you’ll still be hard pressed to find a loaf like them anywhere in the country. Believe it or not, most “rye bread” sold in America contains very little rye flour. These are different. These are breads like my grandparents ate in Eastern Europe: plenty of rye flour, a natural sour rye starter (not the usual canned shortcut) and lots of time to let the dough develop. It’s the bread I reach for to make a sandwich or to eat with cool butter and fresh oysters. A perfect pairing with corned beef.

ITALY'S SUAVE VERSION OF ICE CREAM

Gelato is to American ice cream what Gucci is to Levi’s. It takes every one of ice cream's details and elevates them. In Italy, most towns have at least a few gelaterie, tiny shops that sell nothing but gelato. They usually have at least a dozen flavors, from sexed up standards like super dark chocolate to sorbets and more. But before you pick your flavor, you’ve got to pick your gelateria. Here’s my tip: choose a shop with a long line—or, since this is Italy, a big, disorganized crowd. The locals know where to get the gelato with the most luscious texture and the biggest, boldest flavors. Because that’s the thing about gelato. When it’s really good the flavors are like nothing you can find in any other dessert.

Years ago, the gelato makers at Zingerman’s Creamery traveled to Italy to learn how to make great gelato from the undisputed experts.

We pretty much do it exactly the same way today. First, we get the best milk we can find: it comes delivered directly from Calder Dairy, one of the last farmstead dairies in Michigan that’s just southeast of Ann Arbor. Using the gelato-making equipment we brought over from Bologna, Italy, we churn the milk in small batches with super delicious ingredients like organic Demerara brown sugar, Madagascar Bourbon vanilla, Koeze peanut butter, and loads more. The result is gelato with creamy, rich texture with direct, intense flavors that’s guaranteed to knock your dad's socks off.
