ZINGERMAN'S DELI & THE #2 ON SALE On March 15th, 1982, Paul Saginaw and Ari Weinzweig opened the doors of Zingerman’s Delicatessen. "Our goal,” says Paul, “was to make a sandwich so big you needed two hands to hold it and when you took a bite, Russian dressing would drip down your arms.” Things have changed a lot in the last thirty-five years. Zingerman's has a funky business model—lots of businesses, all different, all owned by different people. The sandwiches still take two hands, though. The Zingerman’s Reuben (#2, for our regulars) was, is and most likely will forever be our most popular sandwich. We make about fifty thousand reubens a year for people who come stand in line at the Deli. And we ship thousands to deli lovers all over the USA—loads of them this month, when they're on sale.

Reuben Sandwich Kit

The perfect sandwich by mail. If you know someone who loves real deli fare, sending this gift will cement your status as the most clever, generous friend they have. Some assembly is required, but considering it has been known to make grown men weep in appreciation, we think it’s worth it.

ZINGERMAN’S BAKEHOUSE BREADS ON SALE Ten years after Paul and Ari opened the Deli, Frank Carollo turned the ovens on at Zingerman's Bakehouse. It was about the same time that our mail order business started booming and the two are very much related—bread is one of our most popular items to ship. While it may seem odd to ship a loaf rest assured you're in good—and plentiful— company. We send tens of thousands of loaves every year.

our mOst poPulAR foOd club–on Sale! Monthly Bacon Club

Our bacon club has been lauded by chefs, sous chefs, home chefs, pork-o-philes and bacon freaks all over America. It’s our most popular food club by far and it’s not just the novelty of bacon-by-mail that makes it so loved. The bacons are downright amazing. It’s hard to find any of these bacons in most shops, let alone all of them. They represent the pinnacle of American bacon making and, let’s be honest, this is one food that no one in the world does better than us. Sorry Europe, it’s true. Your Parmigiano-Reggiano and your Champagnes are great, but you can’t touch our bacon.

Heritage Meat Kit

Less than 1% of our country’s meat has a pedigree like this: heritage breeds, fed on pasture with room to roam, never any hormones or antibiotics. Pedigree aside, after tasting meat from many farms, I can tell you not all of the 1% of sustainably raised meat tastes great. Sometimes you pay for the animal husbandry but don’t get the flavor—or worse, you get a tough steak. Luckily, we've done the tasting work for you (I know, tough job, right?). What we have here is extremely tasty and tender. Two thick Red Wattle porterhouse pork chops, a gigantic cowboy cut ribeye from Carman Ranch and a pound of grass-fed ground beef. MONTHLY BACON CLUB

THE CUTS the butchers kEeP

Butcher’s Choice Meat Box

At the meat counter, most of us tend to go for the familiar cuts: the steaks, the chops, the tenderloins. But ask a butcher what their favorites are and it’s like you’re getting entry to a secret meat club. They go for the cuts most of us have never heard of, let alone cooked. It’s our loss—their picks tend to be the most flavorful cuts. We asked some of our rancher and butcher friends about their favorites, and we’ve pulled together a selection to make them proud. Grass-fed tri-tip steak, two grass-fed bavette steaks, heritage breed jowl bacon and a pound of grass-fed ground beef. Shipped frozen, along with a bit of information about each cut and how to prepare it. Over four pounds of fantastic meats. G-BCM butcher’s choice box was $175, NOW $125

spain's cult hit Chocolate Dipped Figs

Figs are naughty to begin with. When they're ripe they're as soft as warm flesh, they feel like bursting and, from time to time, a tiny drop of nectar drips without bidding. The folks who make these figs start there, with tender, sweeter than usual, parito figs. They're sun dried to concentrate their flavor, emptied of their contents which is then mixed with soft chocolate truffle cream and a hint of liqueur and returned to the fig. Finally they're dipped in dark chocolate and individually packaged. P-RAB-9 9 figs was $18, NOW $12 UP TO 4 or more, $9 each SHIPS FOR FLAT RATE

A rarely seen specialty from Calabria. These clementines in chocolate fit right into the Sybarites’ hedonistic tradition: spectacular Calabrian oranges, soaked in a constantly refreshed bath of simple syrup for three weeks, cut in quarters, smothered in dark chocolate. Each piece is the size of a large chocolate truffle. If you slide it in your mouth all at once, the luscious orange syrup won’t drip down your chin. Better yet, be a Sybarite. Let it drip. Pork Cracklin Peanut Butter Cups If you are what you eat, I’m probably something like 25% peanut butter cups. They’re my all-time favorite candy, and since I grew up on the classic original brand, I’ll admit I can be picky about lookalikes. Enter Black Pig Meat Company in California. They make a peanut butter cup that includes a bit of cracklin, crunchy pork rinds. I know that sounds odd, but hear me out. It adds a salty, crispy element to the peanut butter, with just a hint of smoky savory flavor, which highlights the sweet dark chocolate. fennel salami

Finocchiona Salami from Nduja Artisans In Italian, fennel is finocchio, and in southern Italy finocchiona is a traditional salami seasoned with black pepper, wine, and plenty of fennel seeds. Over here in America, Tony Fiasche and his team at Nduja Artisans in Chicago are making a traditional finocchiona with a couple of upgrades. First, he starts with heritage Berkshire pork raised on family farms in southern Minnesota where the pigs never receive antibiotics, growth promotants or hormones. Next, in addition to fennel seed, Tony adds in a bit of fennel pollen, the fairy dust of the food world (p. 47). what happens when a pig eats acorns alL day? Ibérico de Bellota Chorizo and Bacon

Ibérico pigs are a heritage breed that roam free in the oak forests in southern Spain. In the autumn they gobble up acorns (called bellotas in Spanish) as quickly as they fall from the trees. They’ll eat up to twenty pounds of acorns per pig per day. The acorn diet creates incredible fat that melts in your mouth in a way that seems completely surreal. The most famous example of the meat is the incredible dry-aged Ibérico de bellota ham, but that’s not the only way to experience it. You can seriously up your snack game with Ibérico de bellota chorizo, Spain’s mildly spicy paprika-spiked salami. Or fry up a skillet of lusciously rich Ibérico de bellota bacon and get ready to accept your award for cooking the best brunch of the century. The texture and flavor of both meats is remarkable. Tasting Ibérico de bellota meat is something we should all experience at least once in our short carnivorous lives. M-ICZ 10 oz chorizo $32 M-IBB 8 oz bacon $18 SHIPS FOR FLAT RATE

red peppered salami Boldog Salami

The Boldog pepper is a mild chile pepper from Hungary, where they dry ‘em and grind them up to make paprika to flavor everything from bread to soups to cured meats. Here in the US, Minneapolis-based master meat curers at Red Table Meat Co. found a local farmer growing Boldog peppers and used it to flavor their new Boldog salami. The salami’s texture is soft and silky, with large pockets of white fat that melt on your tongue. The pepper flavor is incredibly bright, sweet, almost juicy like a bell pepper. There’s just a whisper of heat. The clean flavor lingers pleasantly for a long, long time. M-BOL approx. 7 oz salami $24

ROOM TO ROAM There are a lot of things that contribute to determining if an animal was treated humanely. But the biggest impact comes from giving an animal enough space—and so much the better if the space is outdoors, with fresh air and sunshine and grassy pastures. It takes more land, more labor, and more time, and that means it costs more. But it also makes for better tasting meat.

SHIPS FOR FLAT RATE

HERITAGE BREED FLAVOR A Red Delicious apple tastes different than a Granny Smith. But what about Berkshire and Ibérico pork? Just like with apples, different breeds of meat have different flavors. Today practically all meat on the market is a modern breed that was developed to convert feed to meat as efficiently as possible to the detriment of everything else, like hardiness, temper, and even flavor. But a few farmers out there are still raising traditional heritage breeds. Heritage breeds take more time and more care, but they have incredible depth of flavor.

the long cure Black Pig Bacon

When you taste the bacon from Black Pig Meat Co. in California, first you notice the light sweet notes from a lengthy 21 days of curing in brown sugar, salt, and spices. Then you get the rich, savory, meaty flavors that come from the heritage breed (a mix of Red Wattle, Duroc, Chester White, Mulefoot, Mangalitsa, and Cinta Senese) pork that comes from pigs that have plenty of room to roam free and are never given antibiotics or hormones. Then there’s a light smokiness that comes from the 12 hours of applewood smoking. Finally the finish has a mild peppery kick. This is a bacon with plenty of flavor that keeps going and going. african influence

Can I tell you a secret? Promise you won’t tell my boss. Here it is... I don’t like pecans. I know, I know, at a company that’s wild for Spiced Pecans (p. 50) and gaga for Pecan Pie (p. 19), I’m really not supposed to say that. But here’s the thing. Even though I don’t like pecans, I totally love the pecan sorghum butter from Blackberry Farm in Tennessee. It’s got this deep, earthy, toasty flavor from the nuts that’s balanced with the smooth, dark sweetness of the sorghum. It would be awesome on a sandwich or even drizzled over ice cream, but honestly, I mostly just eat it by the spoonful. P-PSB 7.75 oz jar $30

Mark Overbay is a person you want to spend a cocktail party talking to (trust me, I’ve done just that). He makes artisan nut butters to order in super small batches from the best ingredients he can find. While in Zimbabwe with the Peace Corps, Mark worked with rural communities to help them be more sustainable and peanuts and sorghum were a big part of that. Now in North Carolina, Mark has united the ingredients of Africa (vanilla, peanuts, sorghum) with his own southern style to create healthy, incredibly delicious spreads. Nutty, redolent, darkly sweet. P-VPS 10 oz jar $25

Sambal has a million variations throughout countries like Indonesia, Sri Lanka and Malaysia. This version is inspired by the recipes Auria Abraham learned in her native Malaysia. Sambal is a combination of chiles and peppers, garlic, oil, and in this version, Makrut lime leaves. It’s great slathered over grilled meats and fish and you can even use it as a simmering sauce for shrimp or my favorite, chicken. P-LLS 8 oz jar $16 SHIPS FOR FLAT RATE

TWO MOUNTAIN CHEESES

SAVE $15

high mountain swiss

swisS and sheEpy

From the largest, least populated, highest elevation Canton in Switzerland. The land is so remote and treacherous that the cheesemakers built their milking parlor high up the mountain where the cows graze in the summer. Instead of bringing the cows down the mountain, they’re milked up near the summer pasture and the milk travels through an underground pipe, down the mountain, into the cheesemaking vat in the village below. The cows' summer milk is more flavorful because they’re eating wild herbs, grasses and flowers. The result is a nutty, slightly sweet, rich and just a tad herbaceous example of great mountain cheese. C-VIA 1 lb wedge $45

Traditionally, raclette is a Swiss cheese made with cow’s milk and served melty and gooey with bread. This lovely edition is made from sheep’s milk, which adds a bright complexity to the smooth, rich, slightly nutty flavor. Using the milk of Basco-Bernaise sheep from two local farmers around the town of Val de Bagnes in the Swiss Alps, cheesemakers Yan Sutterlin and Bertrand Gabioud create wheels of raclette in their dairy and age the wheels for about four months in their cheese caves. Many folks have heard of raclette, few have enjoyed a raclette this unique. C-SRC 1 lb wedge was $35, NOW $20

MEET XILLI

Xilli is the Nuhuatl word for chili, and Chef Naxcitl Gaxiola named his company Xilli to serve up sauces in homage to those traditional Mexican flavors from his kitchen in Brooklyn. His products are spicy, but also packed with an unbelievable depth of flavor.

hot hot heat

Mole Poblano

Before any European ever stepped foot in the new world, mole (Nahuatl for ‘sauce’) dominated the culinary landscape of Central America. This version, developed by chef Nacxitl Gaxiola, takes five days to make and contains more than thirty ingredients. You could use just as many adjectives to describe its flavor. Deep, complex, earthy, spicy, savory, bright, it packs more explosive energy into each teaspoon than a pound of dark matter. Excellent mixed into sauces or used to simmer chicken breast and fish. Incredible over roasted vegetables. P-MLP 6.5 oz jar $24

Chipotles Adobados

Lovers of spicy heat take notice because this sauce does more than just tantilize and tickle your tastebuds, it has the type of heat you feel everywhere. Your nose runs, your eyes water, you’re bowled over with a rush of endorphines and heat that causes you to question your convictions. And then you want another bite. Chef Nacxitl Gaxiola creates this intense sauce by slow cooking dried chiles, spices and vinegar until it’s a thick, intense, nearly spreadable supernova of flavor. It’s at once sweet, bright, tart, smoky and really, really spicy. Not for everyone. P-CPT 6.5 oz jar $24 SHIPS FOR FLAT RATE

PURIM

Purim is quick little late-winter Jewish holiday that celebrates the defeat of Haman, a Persian leader who wanted all the Jews dead because their leader, Mordechai, wouldn’t bow to him. But Esther, who married the Persian King, convinced the king to kill Haman and make Mordechai the second in command of the kingdom. Haman wore a three cornered hat, and the traditional pastry for Purim, hamentaschen, is made to look like it. Kids like the holiday because they get to play with noisemakers (groggers). They make a racket whenever Haman’s name is mentioned, which is best done while eating a delicious pastry like cream cheese filled Hamentaschen. FYI, It’s customary to send gifts of two different kinds of food to at least one person during Purim—we’ve got you covered.

unparAlLelEd pie Toasted Pecan Pie

Pecan pie is the one of Southern cooking’s best diplomats. It’s hard to find folks who won’t dig into a slice placed in front of them. That said, there are good pecan pies and there are great ones. The better versions take the time and expense to tend the details. Like real butter in the crust, each pie rolled and pressed out by hand. And great brown sugar—ours is organic and natural, from Mauritius—for the filling. And of course pecans: toasted pecans. Toasted before they’re baked because the flavor amplifies by an order of magnitude when you crisp them up a bit. And loads of them. Our bakers stuff in so many pecans that there’s barely enough room to fit them in, let alone any of the caramelly brown-sugar custard. Zingerman’s pecan pie explodes with flavor, a warm balanced flavor that’s never too sweet, but is unparalleled, unforgettable. Rustichella Pastas

Gianluigi Peduzzi’s Rustichella pasta, from Italy’s Abruzzo region, has long been a staple in my home. It’s so flavorful I go back and cook it time after time to make sure I didn’t just dream it. Hard durum semolina is extruded through bronze dies so it has a scruffy, rough surface, perfect for holding sauce. It’s dried at low temperatures for three to four days, depending on the shape, which gives it a dense, chewy texture. Rustichella takes a quick weeknight pasta dinner from ordinary to extraordinary. roadhouse bread

The house bread at our restaurant, Zingerman’s Roadhouse, and a local favorite. It’s based on an early New England recipe, made by combining rye flour and cornmeal with wheat. Anyone from an 18th century New Englander to Laura Ingalls Wilder would recognize and enjoy it today (it’s referred to in Little House on the Prairie as Rye ‘n’ Injun bread). The same goes for almost anyone I hand a slice to today. It’s got great crust and a soft, chewy center that has a slight sweetness from dark molasses, making it a hit with kids. Excellent with cream cheese and smoked salmon. B-ROA 1½ lb handmade loaf $9.50 SHIPS 2 BUSINESS DAY

paesano bread

If I had only one word to describe Paesano Bread, it’d be “utilitarian.” Yes, that’s not a very sexy depiction, but Paesano’s strongest quality is that it’s a multi-functional, pragmatic workhorse of a bread. The interior is thoroughly permeated with air-pockets. It’s those pockets that make Paesano so versatile. They allow the bread to become infused with the flavors of whatever you serve it with. It’s perfect for sopping up leftover spaghetti sauce, for dunking in soup, or as a companion to cheeses or salami. Plus, Paesano is wonderful to eat just by itself—all the better to appreciate its soft, chewy texture. B-PAE 1½ lb handmade loaf $9.50 SHIPS 2 BUSINESS DAY

french mouNtain

Hands down, this is my favorite bread and probably my favorite food period. It is my desert island food for sure. I love it for just eating, salami sandwiches, grilled cheese and breakfast toast with tons of butter and preserves. This bread is so good with a fried egg on it. The big loaf holds well on the counter all week till you can get another one. How could you not like a loaf designed to sit around and get better? I’m amazed that we sell it for less when it’s “day old” at the deli— we should charge more for it after a day! It has been the only bread in my stuffing for the last decade during Thanksgiving where it blends well to the sausage, celery and sage. cinNamon raisin

A cinnamon raisin bread with substance. A chewy, solid loaf where the flavor of the dough supports the freelancing of the Red Flame raisins and the racy scent of Indonesian cinnamon. Sweetened and moistened with a hint of clover honey. Makes sensational Sunday morning toast. B-CIN 1½ lb handmade loaf $10 SHIPS 2 BUSINESS DAY

pecan raisin

pumpernickel raisin

This bread has been like a chain reaction— someone serves it for brunch, and the next week their guests are calling us and buying it for themselves. Calling it dense is an understatement: a half pound of big, juicy Red Flame raisins and toasted pecans are baked into every loaf. The New York Times says our Pecan Raisin Bread "redefines the category." B-PEC 1¼ lb handmade loaf $16

This bread has a cult following around Ann Arbor. Our traditional pumpernickel bread (next page) stuffed with huge, juicy Red Flame raisins, finished off with a sprinkle of sesame seeds. Dark and rich, with an old fashioned molasses sweetness. B-RSN 1½ lb loaf $9.50 SHIPS 2 BUSINESS DAY

chOcolate CHerRy

A chocolate lover's fantasy come true— the best Belgian and French chocolate and dozens of dried Michigan cherries. A few minutes in the oven, the chocolate chunks begin melting, the aroma of cocoa fills the air. Spread it with just a hint of sweet butter or set a scoop of vanilla ice cream on top of a warm slice. You'll be sitting in front of the most decadent dessert you've had in years. B-CHO 1 ¼ lb handmade loaf $18

choCOlate sOurdough

It’s simple: our sourdough bread stuffed with chunks of dark Belgian chocolate. Like most of the school children I know, I like to rip off a hunk and eat it as soon as I open the bag, but it's best when you pop it in the oven for about fifteen to twenty minutes. Your entire kitchen is likely to be filled with sensuous smells— warm chocolate, good bread. This is one loaf that's very hard to keep around the house. The national bread of Belgium. It’s a buttery brioche rolled up with fresh orange zest and sugar cubes soaked in Grand Marnier®. The additions form a sweet swirl inside each slice like a cinnamon roll and their dark orange flavors seep into the surrounding dough. Some of our crew call it “coffeecake bread,” which gets to the spirit of the loaf, though its texture is much lighter. B-QUE 1½ lb handmade loaf $25 SHIPS 2 BUSINESS DAY

We used to bake this on special occasions and we’d get so many orders we'd run out of bacon. It’s Farm Bread dough with Nueske’s Applewood Smoked Bacon and Tellicherry black pepper. Every bite has a bit of sourdough tang and a lot of the sweet, smoky meatiness of bacon, plus a little spice. I’m sure it makes great sandwiches, but I’ve never had a loaf around long enough to try. B-BAC ¾ lb handmade loaf $15

My Italian friends would probably think this bread is heresy, but that’s their loss. It’s a natural for me because I love bread, parmesan and good black pepper. There’s a quarter pound of parmesan in every loaf, along with a load of cracked black peppercorns. Leaves your mouth pleasantly aroused from the heat of the pepper and salivating from the savory sweetness of the parmesan. It’s fantastic when toasted. B-PEP 1¼ lb handmade loaf $16

chile chedDar bread

I love this bread: savory, lusty, delicious and dangerously close to addictive. Softly spicy, fire-roasted New Mexico green chiles and Nor'easter Cabot cheddar blended into the Bakehouse’s tangy Farm Bread. Great on its own or as an accompaniment to dinner. It’s especially good if you give it about twenty minutes in a 325 degree oven before you break it open so it’s nice and steamy when you crack the crust. B-CHI 1¼ lb handmade loaf $15 SHIPS 2 BUSINESS DAY

When we make a sandwich with our rye, we warm it for 15 minutes at 375°F then slice it on an angle for bigger slices with crispy crust & a tender crumb.

Traditional Jewish rye bread is still an endangered American species. Twenty-four years after we started baking them in Ann Arbor, you'll still be hard pressed to find a loaf like them anywhere in the country. Believe it or not, most “rye bread” sold in America contains very little rye flour. These are different. These are breads like my grandparents ate in Eastern Europe: plenty of rye flour, a natural sour rye starter (not the usual canned shortcut) and lots of time to let the dough develop. They’re the breads I reach for to make a sandwich or to eat with cool butter and fresh oysters. A perfect pairing with corned beef.

I love our 8 Grain 3 Seed Bread.... Why? Although there are so many grains and seeds, it still seems like a sinful treat because the honey sweetens it. When I eat it, I feel like I’ve made a healthy choice. The crust is hearty, the interior is still soft and chewy especially when you pop it in the toaster. My favorite way to enjoy it is toasted and topped with a little cream cheese and some strawberry preserves. I also like to top with Koeze peanut butter. Sometimes I go wild and melt cheese on top! Fine Fishes

electric Eels from Portugal

It’s tough to get people to warm up to eels. Eels the animal, a sea snake of sorts, is not the most appetizing idea. But if you’re a fan of tinned seafood I urge you to try some. There’s a reason the Portuguse, Italians, and Spanish seafood lovers go gaga for them. The firm flesh is rich and utterly delicious. We have them two ways. The first is lightly smoked and tinned in olive oil. Milder than mackerel or sardines, they have a texture that reminds me of salmon crossed with sea bass and a smoky flavor that I think of as the bacon of the sea. Next up is in escabeche, a vinegar sauce that was used to preserve fish before canning was invented. The escabeche gives a tangy, sweet-and-sour flavor to the eel. This is tinned fish that will take you to another time and place, in a good way. There’s nothing like it out there. P-EEL 105 g tin, smoked $18 P-ESC 105 g tin, escabeche $12

Portuguese Tinned Squid I love this squid because it’s unusual. People usually think of squid as being chewy or rubbery as a result of having had cheap calamari. This is the opposite of that: it’s soft, succulent. The flavor isn’t super fishy. It’s savory but subtle, and the whole tin is really balanced and basically perfect. The three or four squids, stuffed with their own tentacles so they look like little seafood sausages, come in a ragout of oil, tomatoes, peppers and spices. Even that oil is worth saving—I like to rip off chunks of bread to dip in it, after pulling out the little squids and eating them whole, straight from the can. Or sometimes I like to toss the whole tin into a big bowl of pasta. P-SCA 110 g tin $10 4 or more $7.50 each SHIPS FOR FLAT RATE

Alder Smoked Tuna

The fishermen for Island Trollers have been line-catching albacore tuna in the northern Pacific for nearly fifty years. The tuna is smoked over red alder then cooked in its own juices. This wood smoke gives the tuna a slight sweetness and brings out the depth and rich flavors of the fish instead of masking it. This can stand up to a bit of mayo for a stellar tuna salad sandwich. toro in a tin Spanish Ventresca Tunas

Ventresca tuna is probably the richest, most sensual bit of fish you’ll ever take out of a tin. It’s made from the belly (toro in Japanese, ventresca in Spanish), which means it’s incredibly smooth, almost velvety in texture. The bonito—or albacore, as it’s commonly known in America—is silky and intense. Yellowfin tuna fish have flesh that’s fattier than bonito and the belly cut is correspondingly richer. These are tins for a special occasion—use one where the texture and taste can show off. Serve alongside a couple of steamed potatoes with olives, anchovies and roasted peppers. Or rest some on a bed of greens, simply dressed with oil and lemon or on some crostini with a bit of oil and maybe a piquillo pepper. It puts the idea of “just opening a can of tuna for lunch” into a whole new category of elegance. From the venerable Spanish firm, Ortiz, who catches all their tuna by line, not net. P-TUN 110 g tin, bonito $20 2 or more, $18 each P-YVT 110 g tin, yellowfin $15 2 or more, $13 each

counter-intuitive luxury Salt Cod in Olive Oil

It seems a little odd that the seafood-loving residents of Spain and Portugal love salt cod so much. In fact, the closer to the water they live, the more salt cod they seem to eat. These people, who have access to the best fresh seafood in the world, on any given night you’ll find them cooking slabs of preserved salted fish. It stymied me until I married into a Portuguese family and started eating more salt cod. Then I realized that salted cured fish has about as much in common with fresh fish as cured ham does with a fresh pork chop. They're two completely different things. People who raise pigs like fresh pork and they like salted cured pork like ham. Why wouldn't the same be true for people who fish? The salt curing and cooking—which, here, happens as a slow confit in olive oil—creates a cod fillet that’s almost creamy. It may seem counterintuitive but salt cod is one of the most luxurious fishes you can eat. That's the main reason Iberians spend hours—and I mean hours—soaking and cooking it. The salt cod in this jar, on the other hand, takes all of two seconds to prepare. Turn the lid, turn out the fish, feast. P-COD 200 g jar $25 SHIPS FOR FLAT RATE

Peranzana Olive Oil The olive oil with Zingerman’s label is created by Marina Colonna on her ancient estate in the Molise, a little over 100 miles due east of Rome. Made from hand picked Peranzana olives pressed the same day they’re taken from the tree, it's hugely flavorful. The latest vintage has pleasing aromas of green tomato and freshly cut grass. The flavor has notes of artichoke and black olive. It finishes with mild green-olive bitterness and a bit of a peppery tickle. O-ZIN 500 ml $29

This is a unique oil that’s got one of the most dedicated followings I’ve ever witnessed. We tracked it down years ago at the adamant insistence of Nancy Harmon Jenkins, one of the world’s most knowledgeable food folks, and it’s had a growing cadre of fans ever since. A rich, golden nectar with a distinctive herbal character no other oil can match, it sings with an unequaled pitch in its range of high and low flavor notes. bold and BeautifUl La Spineta Olive Oil

Pugliese oils get little credit on the international oil scene. The region’s reputation is that of a producer of affordable bulk oils. But hidden in the shadows of the huge industrial producers are artisans like the Pellegrino family. I visited their farm a couple of years ago, and I keep coming back to their full-flavored extra virgin olive oil again and again. There’s a nose tingling grassiness that adds a depth of flavor to food. It’s especially good in spicy pasta dishes or any place you want a really robust olive flavor. O-SPI 500 ml $25

I regularly recommend it to folks who are beginning their olive oil education. At home, I love to pour Roi on freshly baked whole fish (half an hour at 350 degrees for a fish that weighs a pound). with love frOm tunisIa Onsa’s Olive Oil

We’ve been selling oil from Majid Mahjoub—our source for couscous and harissa a few pages back and a slew of other outstanding foods from Tunisia—for a few years now. But brand new to our shelves is Onsa’s extra virgin olive oil, named for Majid’s wife Onsa. It’s made from the same, unique-to-Tunisia chetoui olives that they use in their usual oil. In a small section of Majid’s orchard, the olives are allowed to remain on the tree a bit longer before harvesting. Harvesting the olives when they’re more mature lends a softer, sweeter quality to the oil, though it’s still got a healthy, bitter, peppery kick. First time in the US and exclusive for Zingerman’s. THAT’S

A LOOK AT TWO ICONOCLASTIC JUSTIN RASHID OF AMERICAN SPOON Justin Rashid grew up in northern Michigan and moved to New York in the 70s but he never forgot his roots—or maybe I should say his fruits. “I remembered the amazing fruits being grown in northern Michigan, but they never got any attention.” In June of 1982 (the same year Zingerman’s started), Justin moved back to Petoskey, Michigan and started making preserves that celebrated the specific flavor of the varities of fruits being grown near the shore of Lake Michigan. Fruit varieties like Early Glow strawberries and Red Haven peaches thrive in the hilly, lakeside climate. Success followed, as did the pressure to get big and distribute across the country. Justin resisted. Staying small insured the type of control and care he needed to make sure each jar of his preserves was filled with as much fruit as possible, from the farms he knew, with the flavors that he knew he could capture. “I’m a capitalist,” Justin said, “but the typical model of taking value out of a product, making it cheaper and giving the customer a subpar product to maximize profits was never my style. We’ve found a way around that model through great commitment, great effort and a love for what you do. That’s a business model I can live with.”

Early Glow Strawberry Preserves

Black & Blueberry Spoon Fruit

Early Glow strawberries are smaller than your typical strawberry and apparently a bit fickle about ripening, but they have the ultimate in strawberry flavor. The aroma is amazing. The flavor lingers long. P-STR 9½ oz jar $14

Great Michigan blackberries and blueberries, sweetened with fruit juice rather than sugar. That difference makes them a little tarter than normal preserves. Good news for folks who like things a little less sweet. P-BBB 9 oz jar $14

Sour Cherry Preserves

Fruit Perfect Sour Cherries

The area surrounding American Spoon in northern Michigan is a huge producer of cherries—both sweet and sour, the kind you put in pies and jams. Made with the best of the local cherries, these are probably the best sour cherry preserves I’ve ever had. P-SCP 9½ oz jar $14

Michigan’s most famous fruit in a jar. Whole, pitted Michigan sour cherries, the size of marbles, are jarred right after the harvest, preserved in a cherry syrup which adds a sweet balance to the naturally tart fruit. Firm and juicy. P-CRR 14 oz jar $15 SHIPS FOR FLAT RATE

MY JAM

AMERICAN JAM MAKERS ROBERT LAMBERT Robert’s love for preserving started as a child on his grandmother’s farm in Wisconsin. “The food was fantastic. Fruits and vegetables always fresh from the garden or meats from relatives, and preserving those things was a big part of the experience.” Like Justin from American Spoon, Robert left the Midwest to find his way in a big city. Los Angeles called and Robert made his way as a performance artist, photographer, food stylist, caterer, and cookbook author. He returned to his grandmother’s farm every summer to help with the harvest and preserving. Eventually Robert left L.A. and settled in northern California. He was surrounded by fresh fruit and farmer’s markets and it all felt familiar, like being back in Wisconsin except with better weather. He set off creating preserves and marmalades that showcased the rare fruits of the region, working closely with farmer, picking the fruit himself whenever necessary. After nearly twenty years in the jam business, Robert’s operation remains a one-man show. His recipes are never simple, but they amplify the fruits' flavors to profound effect. There are literally no comparisons to his creations—try some for an eye-popping, mouth-tingling experience.

Rangpur Lime Syrup

Raspberry Champagne Jelly

This could be the Holy Grail of secret ingredients. The syrup pours easily—like honey—and doesn’t leave sugar crystals as it dissolves in iced or hot drinks, making it excellent for cocktails with a smoky lime kick of flavor. This one is fun and easy. P-LIM 5 oz bottle $17

Robert spends hours pressing overripe raspberries through a fine mesh screen until only the seeds remain—which he discards. Then he cooks the raspberry fruit and its juice with a bit of sugar plus champagne-scented geranium and lime juice. P-RCJ 8 oz jar $24

STUFF YOU TOTALLY DON'T NEED I'm under no illusions. Some of the foods in our catalog you totally don't need. They may be expensive, they may not be, but either way it's hard to justify them as essentials. They're not. But are they delicious? Yes—and then some. And that's the point of food sometimes, isn't it?

red truFfles from northerN italy Anchovy Stuffed Peppers

Why do I call them “truffles?” Well, no pigs root these out from the ground, but it’s an apt description—they’re almost as hard to find, similarly shaped and nearly as expensive. Roberto Santopietro and his crew at Il Mongetto take Sicilian capers and anchovies from the Adriatic and stuff them into exquisite cherry peppers from Piedmont, then pack them all in good extra-virgin olive oil from Umbria. Pop the whole thing in your mouth. Chew slowly. The layers of flavors unfold on your tongue. Sweetness at first, then mild heat, all enhanced by the suave saltiness of anchovies. Each jar is a siren. Your fingers will be coated in oil from grabbing peppers; before you know it, you’ll wish you’d bought two. P-AUP 180 g jar, about 8 peppers $30 2 or more, $25 each

fat of the gods Ibérico de Bellota Lardo

This is one of those foods where it’s not 1 + 1 = 2. It’s more like 1 + 1 = 200. Lardo is the cured fat popular in Northern Italy. Bellota refers to Ibérico de Bellota cured pork, the famed meat of heirloom Spanish hogs who eat a diet of acorns during their final autumn months. A diet of acorns has a magical effect on pig fat. It flavors and softens it. A tiny piece practically melts in your mouth. This side of lardo is two and a half pounds, so you have enough for about a gazillion tiny pieces. Buying this kind of pork is a commitment. Rally some friends. Get yourselves prepared. M-LDO whole, unsliced, about 2½ lbs $200 SHIPS FLAT RATE

When it comes to flavor, Allan Benton doesn’t do middle of the road. “People either love it or hate it,” he says about his ham. No one needs a whole cured ham but let me just say if you get one, you'll figure out plenty of uses for it. Lasts for months on the counter or in the pantry. ICONS OF ITALY

Classic Italian staples. In all my decades of traveling around the world and tasting foods (tough job, I know), the best I’ve found.

the original pesto

Roi Ligurian Basil Pesto You can make fresh pesto on your own. But let me tell you, even in a jar, Ligurian pesto is absolutely delicious and usually beats homemade. Basil grows easily in that region’s temperate climate. It’s harvested very young. When just two leaves have sprouted on the plant they’re picked. That’s something very difficult to do in America unless you have your own basil farm. Yet it’s the trick to keeping it sweet and herbaceous. Roi’s Ligurian pesto doesn’t suffer the hot anise flavors you get when basil is harvested later in its life. When we ask for pesto from Franco and Rosella at Roi, it’s made to order with their excellent olive oil (online). P-PTO 180 g jar $12 SHIPS FOR FLAT RATE

tuscan olive oil Cacchiano Olive Oil

If you like your extra virgin olive oil fruity and grassy with a slap of pepper in the finish, then Castello di Cacchiano is for you. This is the oil you should reach for when you want a full-flavored oil with an awesome kick. It’s made from a blend of Correggiolo, Moraiolo, Leccino, Pendolino and other typically Tuscan olives, hand picked from the 4,700 or so trees that dot the terraced hills around the castle at the center of the property in the Chianti Classico region. The total output per year is about 4,000 liters. That’s less than one liter per tree. This is special oil. O-CAC 500 ml bottle $38 SHIPS FOR FLAT RATE

perfEct balAnce 10 Year Aged Balsamic

The Tintori family's ten year aged balsamic is the most intensely flavored balsamic of its age I’ve ever tried. Its complexity, with rich flavors of oak, blackberry and dark fruit, is partly due to aging in very small batches. That allows more evaporation and contact with the barrel—both of which contribute to more intense flavors. Highly recommended. V-10Y 250 ml bottle $35 SHIPS FOR FLAT RATE

The Martelli family makes these pastas in the tiny Tuscan town of Lari. Only Martelli family members create the pasta. The Martellis do everything right that most commercial pasta makers do wrong. They insist on using only the hardest durum wheat flour, extrude their pasta through traditional bronze dies, which makes the pasta grip the sauce, and take their time drying the pasta. Commercial producers dry their pasta in a hot blast furnace in a matter of minutes. With Martelli, it happens in a warm room over two days. Time is the key, since the slow dry makes the texture more chewy and the flavor more intense, the taste more like bread than raw wheat. If you don’t want to take my word for it, just ask Corby Krummer, who wrote in the Atlantic: “Everyone should eat Martelli pasta at least once to know how great dried pasta should taste.” P-MAR-SPA 500 ml bag $12 P-MAR-SPN 500 ml bag $12 P-MAR-MAC 500 ml bag $12 P-MAR-PEN 500 ml bag $12 P-MAR-FUS 500 ml bag $12 2 or more of any, $10 each

SECRETS OF ITALY

You may not have never heard of them but if you’ve had good Italian food you’ve probably tasted them. The not-so-secret secret ingredients used by Italian grandmothers and chefs for authentic flavor.

Pesto Trapanese

Garum Colatura Anchovy Sauce

Although Sicilians use the term “pesto” here, the ingredients have little to do with what we know as pesto, the basil-based sauce from the Italian Riviera (left). In Trapani, a small town south of Palermo in western Sicily, pesto means superb Sicilian almonds, local tomatoes, fresh basil, garlic and olive oil—no cheese, since that's usually a no-no in Italy for fish sauces. The basil definitely takes a back seat to the almonds and tomatoes, making it very different—and very good. A unique spread that’s easy to use for everything from pasta to seafood—a staple in Trapani—to bean soups. An excellent little diversion for the home cook. P-PTR 180 g jar $13 SHIPS FOR FLAT RATE

culinaRy fAIry dUst

I’d never heard of garum colatura until I visited the Italian coast south of Naples. There I discovered it’s the liquid that drips off the chestnut barrels of traditionally cured anchovies. Drop by drop this elixir is captured, bottled and saved. Made much the same way it was 2,000 years ago, it’s used as a quick way to give great anchovy flavor to a dish without having to fillet, soak and chop the fish. Locals still use it regularly, mostly on pasta. Our accountant, Jim, likes to mix it with olive oil in a 3:1 ratio of oil:garum. He uses it as a dipping sauce for raw vegetables. Jim, it goes to say, is not your everday accountant. One bottle is enough to season over a dozen dishes of pasta or vegetables. P-COL 100 ml bottle $13 SHIPS FOR FLAT RATE

Wild Fennel Pollen

Wow. In thirty years of cooking and traveling, I’ve never tasted anything else remotely like this. It’s exhilarating—intoxicating even. Its aroma is sweet and pungent, smelling intensely of everything great about fennel and then some. Teeny tiny golden pollen are taken off wild fennel plants as they begin to bloom in the Tuscan countryside, then sent to us, where we hand pack them in our little spice tubes. It looks like fluffy sand, colored yellow by the sun. As special and rare as it is, wild fennel pollen is surprisingly easy to use—mix it with a touch of sea salt and black pepper and sprinkle it on to chicken, firm fleshed fish, potatoes or almost anything really before cooking. It's the quintessential Tuscan ingredient for anything made with pork. Like fairy dust for food, it makes it sparkle with flavor. P-FEN 45 g jar $30

Strattu Concentrated Tomato Paste It takes over nine pounds of fresh tomato sauce to fill one jar of strattu. That should give you an idea of the density of flavor located within. You’d think they make this stuff on Jupiter, but no, it comes from southern Sicily. A confit of tomatoes—a super concentrated tomato paste—strattu or estrattu is the secret Sicilian chefs use to turn sauce from typical to terrific. Melt a bit in olive oil to start your sauce. Strattu adds a depth of flavor that would otherwise take you hours of cooking and reduction to re-create on your own. A little goes a long way. Once opened, top with a bit of olive oil and it will last for months in the refrigerator. P-EST 180 g jar $10 SHIPS FOR FLAT RATE

SPANISH SURF&TURF the rap thEse fish deservE Anchovies from Ortiz

The anchovies Ortiz cures for us are fished in April with traditional purse seine nets that skim silver-skinned anchovies from the surface. This old way of fishing has two effects. It keeps the sea healthier by leaving unneeded fish from the catch, and it bruises fewer fish because hauls are lighter than with drop nets. Once caught, the anchovies are cleaned, salted, stored for 6 months—a little shorter than usual, so they remain plump— then filleted and packed in olive oil to order, all by hand. It’s been done pretty much the same way for over a hundred years. There are anchovies you buy as an ingredient. There are anchovies you buy to chop up and mix into a dish. These are the crème de la crème of ready-to-eat anchovies, the ones you want to eat on their own, whole. Toast, pasta, pizza, sandwiches, or salads, you name it, these are great on top of it. Lay them out on fresh mozzarella and roasted peppers or alongside some quick-grilled mushrooms. Or do like the Basque do at pinxos tapas bars, skewer a fish with a Piparra pepper (online). Piquillo Peppers

Spanish Piquillo pimientos are to peppers what Parmigiano-Reggiano is to cheese: the undisputed sovereign. However, buyer beware: there are many versions sold these days and almost all of them are packed with peppers roasted on gas grills, not wood fired grills. There’s a huge difference in flavor. In the same way that home barbecue tastes better when it’s done with wood, roasted piquillos improve when they get a dose of smoke. Gas-roasted peppers are fine. But wood-roasted peppers are magnificent, the beech wood smoke imparts umami richness and amplifies the flavor. Wood-fire roasted piquillo pimientos are always more expensive since wood roasting is a finicky process, but the return on flavor you get with your extra dollar is extraordinary. They also happen to be gorgeous, which makes them excellent for entertaining. Lay a rose-red piquillo on a white plate in a pool of gorgeous Alziari olive oil (p. 34), and you’ll have an hors d’oeuvre as luscious to look at as it is to eat. P-FRP 8.1 oz jar $15

underground hit White Asparagus

Americans enjoy asparagus most when it’s green and skinny. Europeans like it that way too, but they go gaga for asparagus that’s snow white and thick as a thumb. It’s tender and mild, the green-grass flavor you’re used to is absent. In its place there’s a fine floral aroma. Subtle and delicate, with a texture as soft as squash, white asparagus is often served steamed, topped with Hollandaise sauce or vinaigrette. White asparagus’s season is diabolically short and it doesn’t travel well—two conditions that have historically conspired to keep it for locals only. There is a canning tradition though. One of the best sources we’ve found for tinned white asparagus is in Spain’s Navarre valley. Each tin makes a side dish for two or three people. You can serve the asparagus warmed with a simple butter sauce or at room temperature alongside some nice cured ham. P-WHA tin of 8 spears $14 SHIPS FOR FLAT RATE

Octopus is a tricky fish to tin. I’ve probably tasted octopus from twenty different companies. Those fish suffered a range of maladies: overly gelatinous, too cat-foody, or they had what I like to call “rubber hose phenomenon.” I came to Ramón Peña’s octopus with low expectations born from experience. What I tasted was a treat, a surprise that ranks at the top of my tinned seafood feasts. Peña’s round tin holds over a dozen slices of tentacle, suckers intact. Octopus is never a melt-in-your-mouth food and these are appropriately meaty, with a satisfying ticky-tacky bite that never veers toward garden hose. They also sport a scent of sea so clear it’s disarming. A tin serves 4 as an appetizer. And since one of those 4 people probably doesn’t eat octopus that means there’s more for you. Zingerman’s Spiced Pecans

Eric’s Olive Oil Perhaps Eric’s Oil is my favorite because I visited Eric at the Les Treilles estate, far in the north of Provence where no tourists go. Or perhaps I visited Eric’s dry, rocky mountainous estate because his oil has been my favorite since the very first time I tasted it. That was almost 13 years ago. Made of a blend of seven rather unusual olives, Eric’s is a classic Provencal oil—herbal, fruity, soft as silk, with a little hint of pepper in the end, almost in tribute to Eric’s Italian grandparents. I love this oil because it is both gentle and complex. No matter how many olive oils I taste or use, I find myself returning to Eric’s as my touchstone—the olive oil that has a little bit of everything in perfect proportions. O-ERI 750 ml bottle $40

My obsession with Zingerman’s Spiced Pecans is serious... I love how one seemingly simple food can be so versatile! Toss a few over fresh greens and your salad instantly becomes more sophisticated. Pile a few on a cheese plate and your dinner guests will gobble them with delight. You can even jazz up breakfast by stirring some into your oatmeal or muffin batter. However, most often, you’ll find me snacking on them right out of the package. The balance of flavors along with the crunch makes my mouth happy and the perfect blend of sweet and savory lightly lingers on my tongue long after my last bite. The warm, buttery aroma reminds me of my days living in Manhattan when the scent of freshly-roasted nuts would fill my nose with coziness and, for a brief moment, make the city feel like my hometown in the Midwest. Zingerman's Mandelbread

Gelato is an instant party. I think it’s entirely appropriate to eat an entire container on your own with a spoon. I’ve done it, I’m not ashamed. I’ve also often sent it as a gift, because I have never met someone who doesn’t like ice cream. It’s hard to go wrong with any flavor, and now you can choose exactly the flavors you want in your own custom box (see the full flavor list online). My personal favorite flavor is dark chocolate because chocolate makes everybody happy. I sometimes feel like if a dessert isn’t made of chocolate it isn’t worth my time. But I was also thinking lately about how much I like vanilla gelato on things. It’s not just for summertime—there’s nothing better than a warm apple crisp with a scoop of vanilla gelato on top. G-6GL six 12-oz containers $115

Mandelbread is our citrus almond cookie. You might recognize them as biscotti. It is not too sweet, not overly brittle, but certainly full great flavor and crunch. The perfect partner to your morning or afternoon caffeine of choice. The key is the fresh lemon and orange zest coupled with the almonds that are blanched (so they’re skinless) and toasted (so they have more flavor), all in a toasty twice baked cookie. All that extra attention pays off in each bite. It’s at the top of my go-to list for a snack or a gift. And when you’re done gobbling them up, check the bottom of your package to see if you’re lucky enough to have a few crumbles and almonds that have broken loose. Pour those on yogurt or a bowl of fresh fruit. It’s the best! P-MND about 21 pieces, gift boxed $30

Kozlik’s Maple Mustard

Cherrywood Smoked Bacon If everyone likes something, I go the opposite way. Out of spite, I never liked the Dave Matthews Band until years after that fad had ended (it ended, right?). So when I started seeing applewood smoked bacon in every store and restaurant, I turned to cherrywood. Nueske’s cherrywood smoked bacon is less in your face than the more popular, more outgoing applewood. It’s not too salty, not too smoky. It’s more laid back, more like a smooth “hey, what’s up, I’m cherrywood.” M-CHY 12 oz, sliced $19 SHIPS FOR FLAT RATE

The first time I tasted Kozlik’s Maple Mustard was at their charming shop at the St. Lawrence Market in Toronto. If memory serves, upwards of thirty mustards were on hand to try—and while I tried many of them—it was the maple that made it into my suitcase. I love how thick and rich this mustard is, and I’ve found it to be quite versatile. While I use it most often on sandwiches and in vinaigrettes, I’ve also talked about sneaking it under the skin of a Thanksgiving turkey. This hasn’t happened yet, mind you, but I have a feeling this could be the year! P-KMM 8.5 oz jar $10 SHIPS FOR FLAT RATE

Fire Cider Vinegar

JOAN'S Accountant at Zingerman’s Mail Order

Red Haven Peach Preserves When I was a child we would drive to California to visit my grandparents each summer. While on their ranch in the Central Valley we would eat peaches from the tree in their yard. We ate them outside at the picnic table and the juices would run down our arms. Peach season is so short and they don’t travel well so I hadn’t had a really good peach for a long time. The first time I had American Spoon’s Red Haven peach preserves I was transported to those summer days of my childhood. This is a true peach flavor, not a flavorless sugary orange blob in the bottom of your yogurt cup. It’s not too sweet and has a wonderful chunky texture. So add it to your yogurt, your oatmeal or even your toast. You won’t be disappointed. P-RHR 9 oz jar $15 SHIPS FOR FLAT RATE

Open the cap, and the first whiff of this ochre-colored vinegar will ignite your senses from the soles of your feet to your medulla oblongata (whatever it is, it will be ignited.) After collecting your blown-off socks from the other side of the room, examine the bottle. While you won’t find a triple X on the label, Fire Cider Vinegar comes from a long, northeastern tradition of mixing vinegars with various fruits, vegetables, peppers, and honey to create a down-home cure-all that would be taken to freeze fevers and burn off colds. Pour a small swig into a glass and knock it back, just as they would have 200 years ago. A bassline of ginger here and a guitar lick of horseradish there, fronted by the apple cider vinegar and driven on the habanero pepper drumming its way to the dramatic conclusion: an inevitable, inescapable exclamation from your mouth and a single tear shed by your great-greatgreat-great-grandfather as he suddenly realizes how hearty his progeny will be. At home at a Texas barbeque or a Pennsylvanian picnic, pour it on some french fries or season your steak with it. Or, keep it on your shelf just in case you need to win a game of truth or dare. the lamb choice

Heritage City Hams

Dorset Leg of Lamb

Skip the pineapple here, these hams don’t need it. Juicy, smoky, thoroughly delicious, they come from hogs from a mix of heritage breeds, like Yorkshire, Hampshire, Berkshire, and Duroc. They are raised in the Midwest on small family farms, never given antibiotics or hormones and get outside with room to root and roam. The hams are cured by Smoking Goose with clove, juniper, bay leaves, and garlic, then smoked over a mix of applewood, cherrywood, and hickory for eight hours. Full of flavor, and easy to enjoy. Just heat, slice, eat and get ready for the compliments to roll in. M-CIT 4-5 lbs, boneless, serves 8-10 $85 M-CIT-L 8-10 lbs, boneless, serves 20 $150

In the US, we love our Easter hams. Now don’t get me wrong, I love a good ham, too. But around the globe, lamb is the top choice at this time of year, in no small part because it's in season. We have a limited supply of Dorset legs of lamb from Pine Hill Farms, a collection of small farms in upstate New York that raise lambs on pasture without any hormones or antibiotics. Dorsets are a heritage breed known for a flavor that’s not overly gamy. These legs are sweet and tender with delicious mineral tang but no tallowy aftertaste. They ship frozen with the bone in but the shank cut off, making them about the size of a bowling ball. Serve it with mint jelly from Ballymaloe in Ireland, which tastes like fresh garden mint. M-LEG 4-6 lbs, shank off, serves 8-10 $175

Easter Fondant Cake

Fondant frosting makes a gorgeous cake. It shapes like potter’s clay and holds color like a fresco. All those tilting, day-glo cakes you see that are so alluring—all fondant. Unfortunately, most of the cake’s engineering stops at decoration. The meat of the cake, so to speak, is bland and pointless. Our popular carrot cake—loads of carrots, toasted walnuts and more—has a handmade vanilla fondant frosting that really tastes good. It's decked out with a clumsy bunny. Quantities limited, reserve yours early. Ships frozen. Available March 13 until Easter. A-EAS 2¼ lbs, 6" diameter, serves 6-10 $125 FREE SHIPPING

4 DELICIOUS TAKES ON EASTER EGGS 1 veruca’s egG

Golden Chocolate Egg

Roald Dahl's Veruca Salt was a spoiled brat who wanted lots of things, in particular golden eggs. She could have saved everyone a lot of trouble if her dad had known about these. Then again, that would mean none for us. From the aptly named Veruca Chocolates in Chicago comes this spectacular chocolate egg filled with salted caramel, chocolate-peanut ganache and a crunchy salted pretzel center. The egg is hand dipped in edible gold luster dust making it desirable to any Veruca Salts you might have lurking in your family. P-GLD 4 oz egg, golden chocolate $16 SHIPS FOR FLAT RATE

magic hazelnut eggs

Chocolate and Hazelnut Stuffed Eggs A magic trick moonlighting as an Easter sweet. It started its life as a perfectly proper egg. Then the insides were removed, deployed for dinner, the shell rinsed. Next it was filled with two ounces of Venchi’s supremely luxurious hazelnut and chocolate gianduja, the most popular sweet of Italy’s Piedmont. The shell was decorated and remains perfectly intact. It cracks and peels just like a hard boiled egg, albeit an egg laid from a chocolate chicken. Dispense them into Easter baskets if you must, but make sure to hoard a couple for the Easter Bunny. Chocolate Moderne Eggs

4 the baconest eggs

If the Easter Bunny had these eggs in his basket, he wouldn’t hide a single one for the kids. And who’d blame him for hoarding the lot? Chocolate eggs rarely taste this good, nor look this beautiful. Our friends at Chocolat Moderne in New York City have nested three huge eggs into a handsome little box just for us for Easter. Three flavors: Pomegranate Rose, Almond & Walnut Baklava, and Hazelnut Praline. You won’t find these three flavors together anywhere else. Even the Easter Bunny wouldn’t know where to look. Bacon Chocolate Eggs

My six year old daughter asked me where bacon chocolate eggs came from. I confessed I didn’t know, but I bet it’s the most delicious animal that ever lived. In truth, these chocolate-y, bacon-y eggs come from Vosges Haut-Chocolat in Chicago. Pieces of hickory smoked bacon are folded into soft, buttery caramel then covered in dark chocolate and formed into half an egg. The salty-sweet combination is for more mature tastes (at least that’s what I told my daughter) so I'll give you full leave to snatch them all and hoard them for yourself.
