Funky Monk Cheese I love the Funky Monk because it’s got all the things I look for in a good cheese. At his family farm in western Belgium, cheesemaker Johan Deweer starts with the milk from his own herd of cows. He uses a centuries-old recipe first developed

by Trappist monks—and Catholic monks and cheese just sounds fun, right? Trappist-style cheeses have washed rinds, meaning that during the cheesemaking a brine is rubbed on the outside of the cheese. Washed rind cheeses can be super pungent, but this one has been given a modern twist to be a little lighter, not so funky (even though that’s the name!). It’s got soft, creamy flavors but with a brothy, caramelized onion bass note below.

With a fudgy texture, this classic is a winner.

Bubbe's Sweet Treats in our New Cartooned Gift Box I love designing and illustrating packaging, it’s one of my favorite creative endeavors, so I had a lot of fun creating our newest cartooned gift box, which we started using for our gifts in October 2021. Imagine you’re making a broth from scratch. When you start, it’s thinner and lighter in flavor. As it simmers, the liquid gets progressively thicker and the flavors get more and more intense.

The same thing happens as balsamics age, only it takes years instead of hours. In general, a younger balsamic will have a consistency similar to wine and a bright, acidic flavor. As balsamics age for years at ambient temperatures in wooden barrels, each summer’s heat evaporates a bit of the liquid, giving the vinegar a thicker, more syrupy consistency and a sweeter, more complex flavor. Try a sip from a couple of different bottles and you’ll taste the difference right away. One age isn’t “better” than another—instead, different ages of balsamics are ideal for different uses in the kitchen.

Tradizionali Balsamics from Acetaia del Cristo

Balsamic vinegar has been made in attics all around Modena, Italy, for centuries. Balsamic barrels were (and still are!) made to celebrate the birth of a daughter, and later used as her dowry. Such a precious resource was eaten only rarely, and then only on the richest of foods: sizzling roast meats or sumptuous stuffed pastas. Today, though, practically all balsamic on the shelf bears only a fleeting resemblance to these treasured family heirlooms.

Our balsamics from Acetaia del Cristo in San Prospero, just north of Modena, Italy, are the traditional product, aged for decades, judged in a blind tasting to make sure they meet the local standards of excellence. Only a tiny amount is released each year, so our quantities are very limited. These are special occasion balsamics, offered with a rarely seen discount.

Tested by a panel of judges, the qualifiers in Modena are graded gold and white. Then they return to the wood for another five, ten, twenty, or a hundred years or more. During the aging process, the vinegar is shifted from one type of wood to the next. Cherry, chestnut, oak and mulberry all leave their imprint on the flavor of the vinegar. The result is an almost unbelievable concentration of sweet-sour flavor in a dense, intense, brown-black vinegar that hints of berries, grapes, vanilla.

My Italian friends would probably think this bread is heresy, but that’s their loss. It’s a natural for me because I love bread, parmesan and good black pepper.

Giorgio Cravero’s Parmigiano Reggiano Giorgio Cravero’s family has been aging Parmigiano Reggiano in Bra, Italy since 1855. He focuses on soft, sweet flavors, the kind of Parmesan you want to eat all on its own (though it’s excellent for grating over pasta, too). The cheese we buy comes exclusively from the San Pietro dairy, located high in the hills above Modena. The diverse herbs and grasses at that high altitude makes for especially flavorful milk, which in turn makes for especially flavorful cheese—a quality noted by this Parmesan’s rare designation as a Prodotto di Montagna.

Essex Manchego is one of Spain’s only farmhouse, raw milk, unwaxed Manchegos. Unwaxed refers to the rind and for the most part, cheese rinds seem to be one of those cheesemaking details that only get the attention of cheesemongers and makers. They have a tremendous effect on flavor and texture, though.

The active cultures in cheese cause it to breathe. When the rind is waxed it holds those effects in, often resulting in off-flavored, harsh tasting cheeses. Unwaxed Essex Manchego, on the other hand, has a lovely, dry crumble and never tastes bitey. It goes down smooth, with the unmistakable sweetness of sheep’s milk and a long savory finish that pairs well with almonds and plums and, of course, Spanish ham.

Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Tuna in tins, especially these from the fourth-generation family firm Ortiz, is one of the jewels in Spain's culinary crown. Ortiz's fish are all line caught—not netted—hand filleted at sea and quickly tinned by hand in good olive oil. The olive oil is key. It adds flavor and makes the texture silky over time, unlike water, which tends to leach flavors from the fish. Michigan may be known as the cherry capital of the world, but this man from the Mitten picks whitefish spread as Michigan’s greatest culinary legacy. Like eating lobster in Maine, Michiganders enjoy whitefish in all its splendor when we head “up north” for vacation along the third coast. Like other regional foods, everyone has their favorite. This smooth, creamy version from the tiny fishing village of Leland (aka Fishtown) is mine. We worked with the maker, Lori LaClair, to come up with a recipe we all think highlights the flavor of the fish and the art of the smoke. Made with fresh caught fillets of whitefish straight out of Lake Michigan, this spread is the perfect accompaniment with crackers, some fresh (or dried) cherries, and a crisp glass of cool wine.

Tinned Smoked Alaskan King Salmon There’s a big difference between the smoked salmon of Alaska and the Scottish-style Atlantic smoked salmon you find on a bagel with cream cheese. The Atlantic smoked salmon is thinly sliced with a supple texture and light in flavor. Alaskan smoked salmon is heartier, firmer in texture and richer with the flavor of fish.

Both styles are great and have their specific uses. When it comes to pasta dishes or salads, I’ve been loving this tinned smoked salmon from Wildfish Cannery in Klawock, Alaska. They source only sustainably-caught wild king salmon for this tin. It’s smoked over hardwood, but that doesn’t overpower the sweetness of the salmon. A tin in the pantry means meal security when creativity is low.

“Omsom yuzu misoyaki sauce” is a lot of new words for many of us, but let me put you at ease: just think of this as an amped up teriyaki. Even the bright, colorful packaging feels like a party. I’m not saying regular teriyaki in a bottle is boring. It’s usually salty and sweet from soy sauce, sake, ginger and sugar. But these fun-filled packets turn the flavor up to 11 with the addition of tart yuzu (a knobbly citrus more commonly used in East Asia) and two kinds of savory miso (a salty, earthy Japanese seasoning made from fermented soybeans). Made by the Pham Sisters who co-founded their company Omsom to showcase “loud and proud” Asian flavors. Try it with eggplant, salmon, or chicken, and don’t resist the urge to dance with joy at every bite.
