A spicy sweet German tradition

Lebkuchen

Sandy Lee fell in love with lebkuchen, the traditional German Christmas cookie, while living in Berlin. She became obsessed, learning all she could about them before returning to the states and starting her own lebkuchen bakery. The recipe dates back to Medieval times and has many steps. The dough is made from almond and hazelnut flours, whole almonds, egg whites, honey, marzipan and a bevy of spices. The finished cookies are hand glazed and studded with almonds (classic variety) or cloaked in dark chocolate. Each tin includes three classic and two chocolate cookies. Each is about four inches across and an inch tall. They’re thick, moist, slightly spicy, sweet and very nutty. The consistency is a cross between cake and marzipan, making them the perfect after dinner treat with coffee or tea. The tin, though, with foxes walking through a snowy forest scene with foxes, will be a keepsake for years to come.

From the culture that brought you fruitcake comes another muchscorned holiday food tradition: Christmas pudding. But just as there’s good fruitcake and disappointing fruitcake, the same goes for pudding. This particularly good pudding comes to us from Thursday Cottage in Essex. They craft it in the classic Victorian way, with dried currants and red and white raisins that are soaked in Cognac to intensify their flavor and give them a juicier texture. They deploy their own orange marmalade (they’re a preserve maker first) as well as sugar, citrus peels, cinnamon, cloves, ginger, another touch of Cognac, and just enough flour to hold it all together. It’s traditional to steam the pudding for a couple of hours before serving, but Victorians didn’t have microwaves and they work too. Serve for dessert in thin slices drizzled with hot brandy butter—or some warmed maple syrup if that’s what you have.

Italian Sea Salt Chocolate and Hazelnut Cremini Truffles Cremini, that’s a mushroom, right? Usually yes, but not in this case. In the Piedmont region of northern Italy, a “cremino” (plural cremini) is an ultra-smooth cube of chocolate and hazelnut.

These cremini come from Torino, made by bean to bar chocolatier Guido Gobino. They’re super silky smooth, each dotted with a few toasty hazelnut crumbles. The chocolate gets just a bit of an edge from the addition of sea salt.

D. Barbero Torrone Nougat from Piedmont

Davide Barbero’s family has been making torrone hazelnut nougat—what I call Italian brittle—for five generations, since 1883 in the town of Asti. Neither the history nor repetitiveness seems to dull his passion. When you ask him about torrone his eyes light up and he talks in fast, clipped English. “We don’t kill the torrone! Industrial makers use no egg whites and they crank out a batch in an hour. They beat the mixture fast and use lots of pressure. Ours takes seven hours. We break for lunch! All of this makes our texture crumbly, not hard and tough. Here, take a bite, you can taste.” First off, you gotta love the fact that he mentions lunch as a factor in how they make better food. More importantly, he’s spot on, especially when it comes to texture. Barbero torrone is gently crumbly, in a shattering, delicate way. Spiked with loads of famous Piedmontese hazelnuts that are roasted in house every morning, then hand selected and folded into the nougat. In their classic Northern Italian graphic-designed tin they make great gifts.

Giorgio Cravero’s Parmigiano Reggiano Giorgio Cravero’s family has been aging Parmigiano Reggiano in Bra, Italy since 1855. He focuses on soft, sweet flavors, the kind of Parmesan you want to eat all on its own (though it’s excellent for grating over pasta, too). The cheese we buy comes exclusively from the San Pietro dairy, located high in the hills above Modena. Essex Manchego is one of Spain’s only farmhouse, raw milk, unwaxed Manchegos. Unwaxed refers to the rind and for the most part, cheese rinds seem to be one of those cheesemaking details that only get the attention of cheesemongers and makers. They have a tremendous effect on flavor and texture, though.

The active cultures in cheese cause it to breathe. When the rind is waxed it holds those effects in, often resulting in off-flavored, harsh tasting cheeses. Unwaxed Essex Manchego, on the other hand, has a lovely, dry crumble and never tastes bitey. It goes down smooth, with the unmistakable sweetness of sheep’s milk and a long savory finish that pairs well with almonds and plums and, of course, Spanish ham.

Potato Knish

The only difference between our noodle kugel and the version made by co-founder Ari Weinzweig’s grandmother is we make ours with much better ingredients. Nostalgia aside, even Ari admits ours tastes far better than what his bubbe made for him when he was a kid. Like a bread pudding made with pasta instead of bread, ours is made with egg noodles from Al Dente in Whitmore Lake, farm cheese from Zingerman’s Creamery, plenty of plump Red Flame raisins, and a generous dose of vanilla, it’s blended together and baked to a golden brown. Great for breakfast, lunch, dessert or really any time you just want something good to eat. Great cold, even better warmed up in the oven.

Originating in Eastern Europe, the knish came to America with the Ashkenazi Jewish immigrants who settled in cities like New York around the turn of the 20th century. We’ve been making them at Zingerman’s Deli since we opened our doors in 1982.

The inside is made of mashed Yukon Gold potatoes, onions, and herbs. The outside is a tender, flaky, handmade crust crafted from fresh farm cheese from Zingerman’s Creamery. Ready to eat, cold or hot. We like ours served hot with a side of good mustard. Heating instructions included.

Éclat Chocolate Mondiants

A mendiant is a confection the French made to celebrate the four monastic orders, the names of which I’ll leave you to Google and quiz your friends about. It’s a thin chocolate circle, creatively topped with fruits, nuts, or seeds. Chocolate maker Chris Curtin, making his version in eastern Pennsylvania, has removed the religious overtones and stuffed the flavorings inside the chocolate discs. He dubbed his creation “mondiants.” They’re thin, crisp, just over a couple inches across and a knife’s blade thick. He’s packed an assortment for us: milk chocolate with peanut butter, dark chocolate with cacao nibs, and dark chocolate with wine.

Puglian Olive Oils in Handmade Ceramic Bottles Puglia, the heel of Italy’s boot, is known in Italy for its rustic, rural beauty and beaches, and for being the birthplace of burrata cheese, crunchy taralli crackers (online), and the little ear-shaped pasta known as orecchiette. But I’m willing to bet that soon it’ll be known for something else: ceramics. Specifically, gorgeous, hand-crafted ceramic bottles holding oustanding olive oils. We have two extra virgin Puglian olive oils, each made on a single estate using a single olive varietal: the local powerhouse Coratina, a coveted varietal for making grassy, bold, peppery oils.

The first oil comes to us from the estate of Elia Pellegrino. Called TyPuglia, it comes in a limited edition tomato red ceramic bottle, hand crafted in the studio of Elia’s friend, Michele Cataldo.

The second oil comes from Frantoio Muraglia, in a bottle adorned with a swirl of vibrant, bright stripes. Either bottle makes a stunning gift, and the oils inside can stand up to beans, pasta, red meats, or fresh tomatoes smashed on crusty toast.

farmstead Confections Goat's Milk Caramels from Vermont

Big Picture Farm started in 2010 with a small herd of goats in the hills of southern Vermont. They use their fresh goat’s milk in their little creamery and confectionery. Their caramels have won a huge following of fans, including me. Caramels made with goat’s milk have a softer texture than traditional caramels, so you won’t lose a crown chewing one. Bonajuto has been making chocolate in the baroque Sicilian town of Modica since 1880. Since the beginning they’ve made unconched chocolate, which makes the texture crunchy, not smooth. Nowadays that texture has come somewhat back in fashion. Here, you can experience it as it was and always has been. pages 12–13 Springerle Cookies Made for decades by the sisters of St. Benedict Monastery of Ferdinand, Indiana. Springerle cookies originated in the Swabia region of southwestern Germany. Images and icons are pressed into the dough before baking, and then the dough is allowed to dry for up to eighteen hours. That extra time drying gives the cookie a hearty texture. They have a slight anise flavor without being overly sweet. Traditionally served for Christmas, they’re great for dipping in coffee or to please the lovers of old world flavors.
