s we move into October and cold winds begin to blow, there’s nothing for it but to throw ourselves into the spirit of the season. After all, Autumn has spirit in spades and this month’s magazine reﬂects that: we’ve spoilt you rotten! So what spicy things do we have on the menu this month? For one thing, the year’s last quarter represents a high season for weddings. For those of you organising winter nuptials (or for anyone well organised and already planning ahead for next year), our spectacular bridal fashion shoot and special feature serves as the best vintage bride guide around. Not only have we sourced stuff from some of the best suppliers in the vintage market, but a great deal of them are based locally too. I have to say, it was super fun to work with vintage styles this time – we had great time with all the dresses and accessories. We are also very happy to congratulate Amy Bateman, a local ﬁtness and Zumba instructor and single mother, who has won The Chapel’s School Run Mums Competition. Amy wins a full makeover and photography session this month – we look forward to seeing her pictures! Our local spotlight for October covers the inimitable Jack The Ripper walk – for those of you looking for some historical Halloween high jinks - while our Food Review spotlights High Timber - the best steak restaurant in town with a cracking view of the City to boot. he list of celebrity chefs seems to be growing at an exponential rate. Partly as a consequence of our national obsession with all things food-related and partly in answer to our unending clamour for new personalities upon whom to turn the media spotlight, the search for the next big thing goes on and on – and the television industry keeps throwing up new stars for our delectation. As far as food is concerned, the (relatively) new kid on the block is the delightfully chirpy Gizzi Erskine. A thoroughly modern concoction of culinary talent and stylish good looks, she’s a rejuvenating breath of fresh air – the antidote to the power-hungry, blustering male chefs that dominate the market. Moreover, she not quite like any of her few female contemporaries. Forget the slightly stuffier traditions of Delia, the coquettish upper class intonations of Nigella or the more mumsy recipes of, say, Rachel Allen. Gizzi is more fashionable than her predecessors and far easier on the eye than the Two Fat Ladies ever were. In fact, she was recently crowned Britain’s Sexiest Chef in the annual Kitchen Crumpet Awards (in case you hadn’t heard). Gizzi (real name Griselda) began her career as a food columnist and stylist, gaining a much-coveted internship at BBC Good Food Magazine. She was urged by colleagues to film a pilot for Taste Sky, despite her initial protests. “I ran for the hills at the idea of being on telly at first; I was quite shy.” She illustrates the point by recalling that she was also asked to read a poem at her sister’s wedding that year and turned down the opportunity. “I don’t think I felt ready,” she continues, “I had only been out of catering school [Gizzi studied at the Leith Cookery School)] for two months.” But she couldn’t be happier with how the pilot turned out. In fact, combining cooking and presenting suddenly seemed like the perfect way to make a living, and Gizzi went on to present three series of Cook Yourself Thin. The show spawned an

accompanying cookery book and Gizzi was soon offered the post of resident chef on This Morning – plus a further book release, the kitschy and cool Kitchen Magic. Despite the ease with which she seems to have taken to her new profession, I get the sense that Gizzi feels humbled by her success. The impression she gives is of a young woman who is amazed and grateful just to have the chance to have a go. “Ultimately, I wanted to write, and putting out books is ideal – but I absolutely love the TV work. I

guess it’s more social really – I enjoy working with the crew and seeing a project develop from script to edit.” She goes on to tell me what great fun This Morning has been – she feels she has benefitted massively from being part of a team and working closely with the show’s producers, many of whom are female and her own age. Impressively, Gizzi won the role of co-presenter for Channel 4’s Cookery School alongside Michelin-starred chef Richard Corrigan. The show aims to turn ordinary cooks into great chefs,

revealing the tricks of the trade along the way, and Gizzi is tangibly effusive about her recent presenting job (the present series ended in April this year). “It was just brilliant,” she says, “exactly what I want to be doing and I learnt so much teaching the general public how to cook. Richard is a genius and truly inspiring.” I’m interested to know what a typical day is like for a chef-cumrising TV star? Of course, it varies. “Some days are set aside for promos or dress fittings, other days I’m filming or developing in the kitchen. I spend a lot of hours in the supermarket!” So she still spends a large amount of time in the kitchen? “Completely!” she says emphatically, “Cooking is what I love to do.” She goes on to share with me her own shopping secrets. Living in the Stoke Newington area, she enthuses about the local Fresh and Wild store, though for more general shopping she goes to Waitrose in Islington. Her fish is sourced online at fishforthought.com and she can’t get enough of The Ginger Pig, a traditional butcher’s shop in Victoria Park Village, Hackney. A big fan of Asian cuisine, she adds that she heads into China Town for authentic Chinese ingredients. We exchange tips on good places to eat nearby and natter away like old chums about good deals to be had in the area. (I tell her about Pizza East’s Meatball Tuesdays and she is aghast that this information has previously passed her by; we go on to bond over our love for the Shoreditch pizzeria.) “I love Afghan Kitchen on Upper Street,” she continues. “I love the Ockbasi restaurants on Stoke Newington’s High Street; I love St John’s Pantry in Clerkenwell, Morgan M’s in North London and The Eagle gastro pub.” We could be here a long time. If it wasn’t clear before, it is now: Gizzi has a passion for eating as much as for cooking. I then ask her what I should cook for a forthcoming dinner party I’m holding (filling her in on the thrice 13

I warn her that I’m still finding my way in the kitchen, but she has plenty of good advice to give me. “Ditch the starter entirely, go to a deli – make the trip to a Lebanese on Edgware Road – and invest in some smoked aubergine puree, tzatziki, some nice bread and olives.” There follows some further explanation of the virtues of good dip: “For me, food is not about being overly fancy; it’s not about pretence: it should be sociable. There’s no point doing a dinner party if you’re holed away in the kitchen for its entirety. This starter makes for good grazing.” Gizzi tells me she is going through a ‘slow-cook’ phase, so for a main she suggests I “bung something in the oven”, to allow me to prepare something beforehand. Recently, she’s turned her attention to slow-roasted shoulder of lamb (the leftovers can be curried) and steak béarnaise with the chips slowly cooked underneath in meat dripping. Lastly, pudding can be made a day in advance – she would opt for a good old-fashioned crumble. I wonder where her gastronomic inspiration comes from, and she tells me that she travelled widely in Asia

as a youngster. As such, she is most confident cooking in the Asian style and enjoys the healthy benefits of that particular cuisine. But it’s not just the years she spent globetrotting that inspire her. “I’m really into art,” she offers, “I think that comes out in my cooking.” Indeed, before she graduated from catering school, she made ends meet working as a body piercer in a tattoo parlour in Camden. Which leads to my next point, because, as is evident when you take a look at her appearances in the media, Gizzi’s sense of style has endeared her to a younger, more fashion-savvy audience. I wonder if she feels that her unique image has added to her appeal as a chef – but she seems to play it down. “All my clothes have holes in, my shoes are scuffed. My style is informed by rockabilly and music. I just love vintage clothes, I’m not trying to be fashionable. I hope people embrace it.” She can be as humble as she likes, the fact remains: not many chefs DJ on the side and have a penchant for ‘60s psycho-garage and The Libertines. Gizzi’s retro beehives and vintage fashion sense are already making her an emblem of cute ‘50s domesticity and she has been described

by some as a young Nigella – but she balks at the idea of being a domestic goddess. “Not by any means!” she exclaims. “I’m not representative of home-making at all – my boyfriend is always telling me I need to be more tidy… I can just cook!” So food, not fashion, is her first love. When I ask her if she’d rather splash the cash on a designer dress or eat at a fancy restaurant, her answer is unequivocal: “Oh, eat every time! The most I spend on a dress is £30!” It would seem that Gizzi Erskine takes her job seriously. Before we part, she talks of the fellow chefs that she admires. “Fanny Craddock was awesome – just so bananas! Heston [Blumenthal] for his brain, Richard [Corrigan] is like a walking encyclopaedia…“ She seems not to notice that she has brought something new to the table, something all her own – fun, flair and a wholly original take on the concept of Girl Power. I’ve no doubt she’ll be gracing our screens, writing books and showing us how to chow down in style for some time to come. Kitchen Magic is available from amazon.co.uk

n a characteristically grim and grey London evening complete with rainthreatening clouds and temperamental winds - a tour of the streets where England’s most notorious serial killer met and murdered his victims seems somehow appropriate. The meeting point is outside an entrance to Aldgate East tube station, opposite the Whitechapel Gallery, and at first I’m sure I’ve misread the instructions as there’s nothing characteristically Victorian or Jack the Ripper-esque to set the tone. There’s no man in a top hat and cloak to greet me; instead a man in jeans and a plain coat stands with a small sign and quickly a group of people form around him. There are plenty of tourists in the crowd along with a healthy dose of London locals, all curious to discover more about the shocking crimes. Philip Hutchinson may not be clothed in Victorian garb, but he certainly knows a thing or two about Jack. A famed Ripperologist (he assures us that this is the real term used to describe himself and his fellow Ripper enthusiasts) who has been studying Jack the Ripper for 21 years, Philip has published two books on the murders, including the recent edition of The London of Jack the Ripper: Then and Now, which was used as a reference for the acclaimed ITV drama Whitechapel. My (limited) knowledge of Jack has been somewhat mangled, it transpires, by the vagaries of spurious modern films and literature. This includes the classic top-hat wearing Jack the Ripper cliché that Philip is quick to dispel. In his own words, “a man walking around in such attire in the East End of London in 1888 - day or night would have stood out like a sore thumb.” And Jack did anything but stand out: 123 years after his heinous crimes, the real identity of the Ripper remains anonymous: the case will probably never be solved. This, however, does little to diminish our fascination with the character and his crimes, the origins of which - as I was about to discover - were a lot closer to home than I had thought. Our first stop is a rather nondescript lane close to Aldgate East station. It is here that Philip begins the story by painting a rather grim picture of life in Victorian England. For such a prolific killer, Jack was

active (at least so far as we know) for a very short period of time, between August and November 1888. Life was hard in Victorian London and there was a huge divide between the affluent West of the city and the poor, overcrowded East. Office blocks were being constructed in the city centre, causing people to move outwards - and the majority of those who couldn’t afford to head West moved East instead. A new and sudden influx of people arrived, squeezing in alongside the original East-enders and the large population of European Jews already established in the area. As overcrowding increased; homelessness, poverty, prostitution and alcoholism became rife.With the scene set and the sky darkening, Philip proceeds to quash another stereotype: that of the glamorous, busty, young victims. In fact, the Ripper’s prey (with one exception) were middleaged women of a haggard demeanour, and down-on-their luck alcoholics to boot. I won’t reveal too much about the tour lest in case I spoil it for anyone whose interest is now piqued, but suffice to say that every aspect of the history is told in rich detail, from the dates and timings of the murders to the names of those involved – victims, relatives and friends. After the introduction we are led down the well-known Brick Lane. Throughout the duration of the tour, I’m amazed at the close proximity and familiarity of the areas Jack the Ripper frequented. The hands of time have done their best to erase the memory of the crimes from their settings, but one visible reference remains: a humble plaque to victim Annie Chapman, on a street just off Brick Lane.

At such significant points as this, Philip retells the story of the murders in all their gory detail, illustrated with crime-scene photography. The gruesome nature of his killings has no doubt added to our everlasting fascination with Jack, and the most notorious murder - that of 25 year-old Mary Jane Kelly - occurred in the Spitalfields area. Today the crime scene is just a banal side-street with a grisly secret, but as we hear the story and are shown photographic evidence of the brutality, a grey rain begins to fall. It’s a sobering moment: though the area has changed completely over the century since the murder, it’s still a harrowing thought that we are stood on the same spot where the poor woman met her end. As Philip says, “I’ve been doing this for years and it still freaks me out.” We come full circle just as the clouds give way. Rain starts crashing down around us and Philip ends his tour by talking us through the fabrications, conspiracies and myths that have forever surrounded the Jack the Ripper case; from the moniker itself derived from a hoax letter, to rumours that the murderer was a member of the Royal family. The fact that there has been no conclusion provides a rather chilling sense of intrigue to the last moments of our walk. MY DAY Can you sum up your day in one short paragraph? I like to start my day with a big dose of my family. I help get the kids up and ready for school and then hopefully have breakfast together before everyone’s off in different directions. I tend to arrive in Hampstead around 10am and prepare for the forthcoming day. I am fortunate that we have such a lovely client base that makes every day a pleasure. I rarely leave the store during the day and before I know it, it’s home-time.

Hairless and Careless Helen Baron says goodbye to underarm hair forever

’m funny about some things. It’s not that I’m on a quest for perfection but that there are some things that just rub you up the wrong way. Literally, in the case of underarm hair. It’s annoying. I guess I’d feel the same about my leg hair if it grew as fast, but I get a few days’ grace in that department; there’s usually just enough time in ‘The Schedule’ to whip out the razor while I’m in the shower and give my pins a quick onceover. But underarm hair...It’s the pits. The irritating stubble that seems to gather and multiply - and no sooner have you given it the chop than it’s reappearing. I’m tired of pulling my skin in all sorts of directions just to get a clean sweep of a decent patch. And so much for those ‘special’ (i.e. more expensive) razors built to handle curvature – no matter how many times you run the blades under your arm, all you can think about (and feel) are the ones that got away. So it is with great pleasure that I rock up to Vervena’s West Hampstead salon, arms held high and ready to roll. Monique Jansen, my beauty practioner, talks me through the procedure (which requires a preliminary patch test and consultation) and boy, does she know a thing or two about modern beauty treatments. “I’ve tried most of the treatments,” she tells me. “Botox, fillers, laser hair removal, body reshaping… I had a degree in hospitality management but was spending so much at Harley Street that I decided to open my own salon.” She tells me a little about her clientele, explaining how she sympathises with their needs. “I know what it’s like,” she says, “it can be really inconvenient, if you’re particularly hairy, it makes you really selfconscious.” I sympathise too; I’m not a very hairy person and yet my underarm stubble annoys me. I suppose it’s the fact that us women are often trying to stay smooth

all the time and the evolution of women’s hair growth patterns hasn’t quite caught up with our beauty regimes. Fortunately, Vervena’s treatments can get rid of unwanted moustaches, leg hair, back hair, bikini lines… in fact, any unwanted hair you may have. And unlike other hairremoving treatments (electrolysis and waxing) you don’t have to wait for the hair to grow - thus avoiding that awful furry phase where you feel like primitive man, literally bristling to the touch. So how does it work? Using revolutionary In-Motion technology, hair is removed painlessly and quickly. Even better, it’s long-lasting and nearly every part of the body and face can be treated. The Soprano laser machine heats hair follicles gently despite its power: the cooling head means that only a warming sensation is felt during the treatment. (Monique tells me a funny story about a client who fell asleep while having a rather relaxing bikini line removal.) Beauty salons the world over must be putting in orders for these laser bad boys. Vervena are ahead of the curve though (in both senses of the word) having offered the service for some time at their Tower Bridge salon; they now bring their beautifying skills to North London - bestowing better bodies on residents of West Hampstead. Importantly, there’s no pain but also no downtime (thank god, ‘The Schedule’ does not allow for my being holed up for weeks) and the treatment promises more complete and even coverage. It can even be used on very fine hair. My first treatment is pleasant as I chat away to Monique about my beauty-writing assignments. As I waffle on she suddenly whips up my skirt and does a bikini line patch test on me, promising she’ll help with that area too! Monique is nothing if not efficient. Vervena also offers Body Reshaping and Cellulite treatment and I’m intrigued…

not having to adhere to a remorseless diet and exercise regime to keep the lumps and bumps at bay, you say? The phrase ‘non-invasive’ is music to my ears - and these treatments bear more investigation. Keep your eyes on future beauty pages... But back to the here and now, and after a mere fifteen minutes my session is done. Six sessions are usually recommended to complete the process (they are spaced out so as not to overexpose the skin to the filtered light and in order to synchronise with the body’s growth cycle) but as I’m not particularly hairy Monique say we can expext to complete after four. The authorising bodies claim that by using laser/IPL technology, it is possible to permanently remove hair by 85-90% in selected areas - which means that in a very few cases, hair does grow back. My hair, however, grows at a slower rate and is finer after just one session; I don’t need to shave every day. Which allows me to say with confidence that IPL laser treatments are a dream come true. I can see how a lot of woman would opt for it; it’s so easy to do and you must save a decent packet longterm on mountainous waxing bills. EVERLASTING SUMMER WINE Gareth Fitzgerald does ﬁne-dining canal-side

s we move firmly into Autumn, there can be few better places to enjoy the remaining temperate evenings than at The Summerhouse restaurant, situated on the Grand Union Canal in Little Venice. The Summerhouse is only a moment’s walk from The Waterway, a well-known canal side spot under the same ownership and held in fond regard by many in the local area who take advantage of an excellent selection of cocktails. So we made The Waterway our pre-dinner destination, choosing an Orange Blossom (Bombay Sapphire gin and orgeat syrup muddled with orange slices and topped with pink grapefruit juice) and a Strawberry Bliss (blissfresh strawberries crushed with goslings rum and Drambuie, finished with orange juice – the Drambuie takes the sharpness out of the strawberry) from amongst a wealth of interesting and wellselected flavours. We will be returning soon to The Waterway to sample the Rose Martini

and the Boozy Milkshakes, perhaps by the open fireplace. The serene canal setting and convivial atmosphere, coupled with a tantalising seafood menu, make The Summerhouse a very popular choice. Having opened for a busy and successful summer season last year, the restaurant has now moved from seasonal to all year round opening. It is one of the few restaurants in London with a genuine summer holiday feel, the reflection of the warm lighting from within flickering right across the canal and reminding me of a recent stay in Venice. The staff are as warm as the lighting and as considerate of their patrons as the cosy and comfortable furnishings. The decor has a nautical feel, enhanced by passing canal boats and those moored opposite. The clientele are smart but relaxed with a number having picked The Summerhouse as an ideal venue for a romantic meal, a family celebration or an intimate catch up with a friend. For a second time that evening, we were spoilt for choice when it came to cocktails.

Thought has gone into combining refreshing summer flavours in a gratifying way, as evidenced by an excellent frozen strawberry daiquiri and a special summer cocktail menu populated by berries, bellinis and mojitos. The cocktail area is personal and informal. It has the feel of a moored boat and there is one especially prized spot – a bench jutting right out over the canal – if you can secure it. For starters we enjoyed the signature ‘Best ever’ popcorn shrimp with sweet chilli sauce, and a simple tricolore. Light, fun and flavoursome they whet the appetite for a main fish course. The tomatoes in the tricolore are bursting with flavour against the creamy freshness of the mozzarella and ripe avocado. There are many appetising options for mains and twists on seafood classics but the swordfish steak (medium-rare for me) on bruschetta, with mango salsa (and a wasabi mayonnaise offering a welcome kick) will take some beating. We also tried the salmon and smoked haddock fishcake with poached egg and hollandaise on a bed of spinach.

The fishcake was melt-in-the mouth and the egg poached to perfection. There is a wide selection of sides available to suit all the mains. The sweet potato chips and the minted peas both caught our attention and did not disappoint â&#x20AC;&#x201C; the chips were actually among the tastiest we can remember. There are also good options for vegetarians such as a super healthy salad (seasonal tomato, olives, green beans, shallots, grilled halloumi and rocket) and a sunblushed tomato and mozzarella risotto cake. A full-bodied Valpolicella went well with the Swordfish, and we also liked the light and smooth Sauvignon Blanc on offer. The portions are well-sized so that you feel satisfied but able to really enjoy three courses. This was fortunate as early on in proceedings we earmarked a lemon tart with fresh raspberries and a vanilla cheesecake with berry drizzle. The lemon and raspberry were refreshing, the cheesecake extremely smooth with a rich and natural vanilla flavour. The service was impeccable and attentive without being intrusive. Like the restaurant, the staff are confident and relaxed - readily obliging us with ideas on courses and wines to complement. They also ensured the outside temperature just as my guest desired. There is outdoor heating to keep you very comfortable long after the sun has gone down. The restaurant is organised for warm al fresco dining into the winter months but they will also be expecting people to take advantage of the cosy inside, still with canal views, once the colder temperatures set in. Like a real summerhouse, the doors are thrown open in the summer and then closed up in the deep winter months. We made the most of the scenery and ambience, taking a long time over our coffee and nightcap, enjoying the opportunity to talk to our charming and knowledgeable waitress. It is an achievement to make you feel you are the only customer in a busy restaurant, never waiting and never rushed. Though the night felt a world away from the hustle and bustle, it took us only twenty minutes door-to-door from our offices in the centre of London. Recipe

Fish Pie From The Summerhouse Kitchen

1. Take 80ml of milk and mixed with 40ml water in a large pan 2. Add 250g salmon, 40g of smoked haddock and 80g of cod to the pan, at moderate heat and simmer for 5 minutes 3. Separate fish from milk mix and leave to rest. 4. Take new small pan and on a low heat mix 5ml vegetable oil and 12g of flour. 5. When liquid turns a clear brown, whisk in the milk mix and leave on a very low heat for 10 minutes (stirring occasionally). 6. In the meantime, take 35g of white onions and 35g of fennel (both diced) and fry together with a little olive oil until onions are soft. 7. Finely chop small bunches of chives, dill and chervil. 8. Place the fish in large bowl with onions and fennel and add the chopped herbs and 20g of small shrimps. Gently mix in the white sauce so consistency stays chunky. Add seasoning. 9. Place mix in a pie dish, top with mashed potato and cook in the oven on 190 degrees for 20 minutes (until the mash is golden and the mixture is bubbling). 10. Garnish with chopped parsley. 39

RAISING THE STEAKS Liam Doyle enjoys a South African experience on the north bank

ess than a minute’s walk of the Millennium Bridge, High Timber restaurant is situated in the shadow of the monolithic Tate Modern, close to Shakespeare’s Globe. Anyone glancing at the worldfamous South Bank skyline from afar might be forgiven for overlooking this South African eaterie, jostled as it is by giants; but such subtlety of aspect belies real strength of character - a theme that is to recur throughout my visit. The night begins with a tour of High Timber’s impressive wine cellar, including a glimpse of the cheese and biltong room (biltong, a quintessentially South African dried meat delicacy, is central to the restaurant’s character). The cellar boasts over 40,000 bottles of all vintages and provenances, waiting to be expertly picked, and the private table within the wine cellar is (I am told) the most popular seat in the house. As such, I’m intrigued to know which wines the in-house expert will choose to accompany my meal. I don’t have to wait long to find out. My starter of home cured bacon, black pudding, coco beans and fried quail’s egg is served alongside an FMC, or

“flippin’ magic Chenin” as our personable host would have it. Scoring 93 points in legendary wine guide Parker’s, it has a strong and warming flavour and is “not a wine for beginners”. More philistine than oenophile, I’m cautious - but I very quickly grow to love it, the wine’s potency complementing the rich flavours of both the bacon and black pudding. My companion’s courgette, rocket and mint pesto soup was very well presented and equally rich in character. Along with wine, High Timber specialises in steak, so I plumped for the 350g sirloin, medium cooked with peppercorn sauce, while my companion chose the 350g rib eye, medium rare with chilli and shallot salsa. Perfectly presented on a wooden board, the steaks were cooked exactly to our tastes, juicy and tender, with each sauce drawing out the flavour of the meat in its own distinctive and delicious way. It’s little wonder: all High Timber steaks are matured for a minimum of 28 days and cut from the bone to order. Our sides were similarly gorgeous, tomatos and mushrooms bursting with flavour and leaving a lingering, spicy taste; the onion rings crispy; the chips thickly rustic and well salted - all chips should be like this! The red chosen to accompany our mains was a Luddite Shiraz, which more than matched its predecessor for drinkability, if not quite for sense of adventure!

Dessert was accompanied by a small glass of Jordan Mellifera dessert wine - the wine of the cape honey bee - and the sweetness of the honey was both obvious and delicate. My lemon cheesecake was wonderful, causing me to bore my companion with lengthy praise of its biscuit base, while his chocolate fondant proved a rather rich and gooey indulgence and the perfect end to his meal. Ultimately, High Timber seems the result of an intense passion for food and drink (wine and steak in particular) and a deep consideration for the general dining experience. MOHAMED FARAJI We chat with local businessman Mahomed Faraji on the success of his restaurant, Maghreb - Upper Street’s only Moroccan eatery - and why Islington is the best place to be Have you always been interested in food and becoming a chef? Yes and that feeling grew when I came to England in 1970 and worked at some very high class restaurants like Minotaur in Chelsea. I admired the quality of food and service. I also worked for two years in a restaurant in my home town of Larache in the North of Morocco. How long have you been running Maghreb’s? What prompted you to open in the first place? I have been running Maghreb Restaurant since 1998. However, we were originally a French restaurant called Marsdens, which opened on 9 December 1985 - so technically I have been serving the lovely customers of Islington since 1985! The idea to open Maghreb was inspired by the local residents, who are very cosmopolitan and come from all different walks of life.

I grew up and studied in a town called Larache which is situated in the North of Morocco on the Atlantic coast, around 50 miles from Tangier with 200,000 inhabitants. I have been heavily influenced by my family and friends and the wide range of ingredients available there. Moroccan cuisine has a fantastic variety of textures and flavours and the combinations suit most palates. I’ve found that Londoners are real foodies and open to trying different cuisines. Do you use traditional ingredients and recipes? Yes I do use traditional ingredient and recipes where possible, but with a twist. We also have to take

into consideration the tastes of our guests. Tell us about the use of tajines in Morocco and how you have adapted them at Maghreb? In Morocco, the tajine is a dish that every kitchen must have and it is used to cook vegetables, meat, fish, poultry and game. We use tajines in Maghreb to finish cooking some dishes or re-heat others. To cook in a tajine takes time and no guest will wait for that! What are your most popular dishes? There are almost too many to mention, but lamb, duck, rabbit

and venison tajines are always very popular along with couscous and pastillas (traditional meat pies). What makes Maghreb different to other local eateries and what do you like about Islington - in particular, your Upper Street location? We are the only Moroccan Restaurant on Upper Street and we are very customer orientated and always improving. I absolutely love Upper Street and have been working here for more then a quarter of a century! Finally, what is your personal favourite dish? Duck, quence and apricot coucous. nternational architects and designers are using traditional materials in surprising new ways, and their approach to bathroom design is no exception. Reclaimed fittings and natural materials like wood and slate are high on the list and fit very well with an ethos of sustainability. Only a few miles from downtown Miami, a family home was conceived to be built using local resources as much as possible, and its en-suite bathroom features an old bath salvaged from the garden. In 25 acres of South African bush outside Cape Town, the concept for a couple’s holiday home was ‘barn-meetswarehouse,’ and the use of raw slate in the bathroom makes a cool retreat from the heat of an African summer. On Florida’s Emerald Coast, a contemporary house in the new community of Rosemary Beach emulates the beamed structures of a working building, but with sleek lines and plenty of richly-coloured walnut throughout the interior. These architects and designers have creatively used juxtapositions of textures; copper pipe against rough-hewn

Anthony Tulleken, a wall of slate brings a rich, multi-faceted texture to the room. The roughness of the slate is thrown into relief by the smoothness of the ceramic bath and polished plaster of the surrounding walls. 2. COPPER Recycled copper pipe has been used as a utilitarian mixer tap behind the contemporary square basin and makes an unusual and individual statement. The cream-painted mirror frame brings a touch of Baroque style.

The shower fitting is simplicity itself with its use of plumber’s merchant’s fixings. 6. WALNUT Designed by architect Carey McWhorter with interior design by Ken Ganeaux, the bathroom of this house in Rosemary Beach, Florida, is cool and contemporary. Walnut is a wood that recurs throughout the unadorned, white-painted rooms as richly-toned flooring and the bespoke cabinets.

Basements that’s what you’ll find; hundreds of them, all over London. There are so many basements being built around London that you would be forgiven for thinking we are becoming a subterranean species. Some high profile celebrities are so against them, when even more of the glitterati are having them built. So, we thought we would ask our old sparring partner, Steven McDicken from Metropolitan Basements, to justify the upheaval, the digging , the dirt and the bad press! Why do people hate basements? The only people who hate basements are the ones that don’t need them. Everybody else I know loves them. So… why do people love basements? Simple… more space! and at a fraction of the cost of moving home.

At a fraction of the cost… please explain? Well if you wanted to move home it would cost you say £800 to £1500 per square foot for that extra floor space and if you build a basement it only costs you, £400 per square foot including the VAT. In fact, what you would save on the stamp duty you have to pay when moving house, goes a long way to buying a large part of your basement! So are you saying it’s purely for money? No… more space! But, by doing so you just happen to create rather a lot of equity in your home. It ‘coincidently’ makes good financial sense. Unless you just sell it on, of course.

What about the bad press? People will always be people; they will make a mountain out of a basement, then they will turn around and build one themselves. No one wants to live next door to a basement being dug… the noise for a start, do you think they will ban them eventually? They can’t, they’re largely permitted development and you can’t see them. As for the noise, they are no less noisy than digging your garden and they are a million times quieter than someone digging up the road. Traffic noise in London is more than the sound of a basement being dug. Anyway, we work 8am to 5pm Monday to Friday, when everybody is at work.

Planning is not an issue then? There is no reason why it should be. Except listed buildings and even then it can be done. How long to build one? Depends on the size but let’s say 1220 weeks for the majority of houses in London. Who designs them? We have an architect who is rather experienced with them. He wrote a book: Architect Your Home by Hugo Tugman. There is a section in there all about basements too. You can buy it from www.anovabooks. com Don’t be put off by his picture, he is actually one of the nicest architects I’ve ever met. So what’s your parting shot to the basement critics and lovers alike? Well, not a parting shot - just a statement that the majority of people will eventually get a basement dug to gain that extra space, especially in the more affluent areas of London. Even if you are against it now, you will succumb in the months or years to come or the people that move into your house after you are gone will get one done. It’s just going to happen, like it or not, and it’s going to be widespread, just in the same way double glazing stated in the 70’s, but much less intrusive or visible because it’s underground!

If you’re not aware of the pedigree of Oxfordshire’s Le Manoir aux Quat’ Saisons before your visit, you’ll be suspecting it soon after your arrival. This world-famous hotel and restaurant has behind it over a quarter of a century of Michelin Star-adorned reputation (it’s been awarded two stars, to be precise, every year for the past 27), and from the moment you turn down leafy Church Road and into the circular driveway, you begin to realise why. The first friendly greeting comes from a porter who takes our bags, calls ahead to the hotel to inform them of our arrival and promises that we’ll be reunited with our luggage in our suite. A warm September sun accompanies our stroll down the Lavender Walk towards the beautiful 17th century manor house that is to be our lodging for the next, blissful 24 hours. The house is a medley of soft grey and mustard coloured stone, with red gabled roofs and the kind of proud, bright orange

chimneys I had thought long since lost to the English countryside. It’s a storybook setting made all the more potent by the warmth of our welcome. The hotel manager is on hand to greet us at reception and give us a short tour of the accommodation, which is divided between 32 individually designed rooms across the main house (more traditionally furnished) and a converted stable block (where a kind of ‘country contemporary’ style reigns supreme). Our room comes with a sheer array of what I’ll term ‘ambience options’ – lighting settings, indulgently upholstered places to recline, a wet-room shower. Also of note are the complimentary fruit and chocolates (Le Manoir’s own, of course): even the

lemons seem possessed of an unearthly amount of flavour. My partner and I rhapsodise relentlessly before turning our attentions to the outside. It opens onto a private terrace bedecked with flowers specially chosen to reflect the room’s theme. The terrace then leads onto a courtyard with a magnificent 200 year-old horse chestnut tree at its centre; beyond this lie the main grounds of the estate. We cross two acres of fragrant herb and vegetable gardens, wander through an apple orchard strewn with fallen fruit and pick our way around the rocky banks of a fishpond first dug by 17th century monks and now part of a tranquil Japanese tea garden, complete with dusky pink traditional tea house. In appearance and etiquette, Le Manoir is a kind of distillation of Englishness at its best: which makes it all the more notable that it was founded and is still run by a French chef, self-taught genius Raymond Blanc. Blanc decides on everything from the decor onwards – and his dedication to

THE RESTAURANT

Dinner here is like nowhere else. From cocktails and canapés in one of the two peaceful salons (where you order your food and wine with the aid of expert hosts and an in-house sommelier) through to the restaurant itself, partially housed in the elegant Orangerie, Le Manoir is exactly the triumph you’ve been led to expect. There’s even a lengthy vegetarian menu. Among the (many and various) delicacies we sampled were curry-balls with lime mayonnaise, a salad of artichoke hearts fresh from the garden, quail’s egg ravioli, dinky pasta parcels served with a cube of roasted pumpkin, toasted pumpkin seeds and some kind of mango-infused sauce, plus the greatest wild mushroom and black truffle risotto ever gobbled by a son of man. The recommended wine, a Pouilly-Fumé, was just as described, not too dry and not too acidic but fine and full-flavoured. And the desserts – a pear amandine with caramel croustillante and ginger sauce, and a ‘paquet surprise’ containing a tangy lemon parfait on a bed of soft, warm cherries – were exquisite. At Le Manoir you can trust that your special

meal is going to be just that: something tells me that Raymond Blanc and his team, architects of the good life one and all, don’t do disappointment.

rowing up, October traditionally means ghosts, ghouls and the first brisk hints of winter - but recent years have seen an altogether brighter fixture settling nicely into the City & Angel’s autumn calendar: the Islington Contemporary Art & Design Fair. As the natural world hurtles headlong from golden to grey, the good people at Islington’s Candid Galleries – nestled away behind Angel tube – are busy putting together a huge showcase of everything fun, forwardthinking and downright desirable in modern art and design. Running from October 7-30 and now in its seventh year, the fair allows established and up-andcoming artists and designers alike to promote and sell their work in one of London’s largest independent art spaces. For visitors, it’s the perfect opportunity to gather interiors ideas and buy amazing art while exploring four consecutive exhibitions, each focused on a different creative discipline. The first, running October 7-9, will be on the theme of Painting, Sculpture and Time-based Media, and will see the return of the Angel Moving Image Festival, screening work by home-grown and international film directors and video artists. Films will be shown from 2-6pm on October 7 and from 1-5pm on October 8 and 9. The second exhibition will take place October 1416, featuring Photography, Illustration, Graphics and Printmaking, while the third runs October 21-23, covering Fashion, Textiles and Jewellery. The final showcase is devoted to Design Products, Furniture, Ceramics and Glass and will take place October 28-30. Admission to the fair is free and exhibitions are open 1-7pm every Friday and 12-6pm every Saturday and Sunday. You also have experience as a relocating specialist - can you discuss what this involves? I’ve been buying, selling and refurbishing homes for myself and private clients for almost 15 years now. I lived over in New York for two years and helped private clients and banks move to the UK from all around the world. It’s such a fabulous city and whilst I was over there I sourced homes for people and helped organise their lives from setting-up bank accounts and sorting out schools for kids, right down to arranging social and cultural integration programs to ensure they settled into life in The Big Apple. What are the the main advantages of buying a property over in New York? Are there any disadvantages? The strength of the pound. Our money goes a

long way. However, managing a property from afar is always tricky until relationships are established. What’s your best piece of advice for people who want to purchase a luxury property abroad? Appoint independent lawyers who only work for you, not the developer or a mate of the estate agent. Make sure you appoint someone who is sourced and working independently for you. What are your views on the concept of the double dip recession? Will this affect the luxury property market? I don’t think this will affect the luxury property market at all. It has, however, made people really do their homework before purchasing a property. What are the top issues people in the UK must consider when exploring the world of luxury homes? Speak to your financial advisor to ascertain the amount you want to leverage your property at for optimum tax/financial gains. If you’re paying a premium, you need to demand the best finish and best appliances. Location is key for resale. Do you think buying a

luxury villa has buy-to-let potential or will the end price be too high? What are the tax implications in buying a foreign home? Do your homework and your sums and liaise with your accountant. Speak to your accountant who has expertise in the area, he/she will have a plethora of advice to offer you. Finally, what would be your best piece of advice to someone who wanted to add value to their home? Paint it cream! ANDREW FLINT FROM COLMAN COYLE, GIVES HIS EXPERT ADVICE ON ALL YOUR LEGAL PROPERTY QUESTIONS Gazanging, Gazundering and Gazumping… what is the difference? Gazanging is the latest term to enter the property industry and describes the increasing trend of sellers deciding not to sell at the last minute due to the volatile housing market or the sellers’ inability to find a suitable property to buy. This will then leave a buyer very frustrated and out of pocket to the tune of a few thousand pounds. Gazumping is when a seller deals with one party and then another interested buyer expresses an interest in buying the property at a higher price with the seller then withdrawing the contract from the first buyer and proceeding with the buyer who has made the higher offer. Again, the disappointed buyer will be left out of pocket. Gazundering occurs when the buyer of a property tries to reduce the price at the last minute in the hope that the seller will accept the reduced offer in return for an immediate exchange of contracts. Our conveyancing system is such that until contracts have been exchanged, there is no legally binding contract between the seller and the buyer and therefore, neither party generally has grounds to make a claim for their wasted costs. To protect purchasers against the practice of gazumping, sometimes lockout or exclusivity agreements are drawn up between the seller and buyer which commit the seller and buyer to each other for a certain period of time. During this time, the seller cannot entertain any other offers for the property and must act diligently in relation to the sale. If the seller fails to adhere to the terms of the agreement, the buyer may be able to enforce the terms of the agreement and recover costs. Sometimes, in order to grant the exclusivity, the seller may insist upon a preliminary deposit being paid. This would be forfeited if the buyer simply changes his or her mind. Usually, these agreements allow the buyer to withdraw from the purchase without penalty in certain circumstances e.g. a defect in the title.
