In my 44 years on this planet, Queen Elizabeth II was one of the few constants. Of course, there's my family, but then there was also the Queen. In no way would I call myself a royalist, but there was always something rather comforting about seeing HM The Queen going about her state duties.

The football club I am now the chairman of also had an encounter with Her Majesty. Alan Woodiwiss, the man who founded my club 70 years ago, was the recipient of a well-deserved MBE for services to the grassroots sporting community, and the picture of him receiving his medal always takes centre stage at every event we hold. Apparently, he told us, The Queen had great insight into grassroots football. That is what makes this month monumental for so many. With the coronation of King Charles III upon us, it's the dawn of a new era that we probably never wanted to accept was coming. The whole of the county looks like it will be coming together over the bank holiday weekend, and inside we have a sneak peek at what to expect across the area, including local spots with a royal connection and the big Windsor Castle concert. Elsewhere, Ben Fogle goes wild, we visit Uri Geller's home and there's a wedding special too. May looks like a busy month.

WALK ON THE WILD SIDE

Award-winning broadcaster, writer, adventurer and Buckinghamshire local Ben Fogle on balancing 21st century home life with a career spent o -grid

It has been 23 years since awardwinning broadcaster, writer and adventurer, Ben Fogle, first hit our TV screens on the groundbreaking BBC documentary Castaway , for which he was marooned on the Scottish island of Taransay for a year with 35 others and tasked with building a community. Little did he know at the time, but the experience was one that would kick-start a career that has seen him tackle some of mankind’s greatest physical challenges, and travel to over 200 countries, much of the time using the skills he learned living ‘o -grid’.

“I spent last week in Columbia with a woman who has been brought up by monkeys, I was in Antarctica for a month before that and I’m o to Norway next week and Sri Lanka after that… in fact

I spend nearly half my year making TV shows ‘o grid’,” the 49-year-old tells me.

The intrepid explorer, who has tackled some of mankind’s greatest physical challenges including scaling Mount Everest, rowing the Atlantic and racing to the North Pole, is currently touring his latest show Ben Fogle –Wild , in which he regales stories of hope, possibility and positivity that he has learned from his extraordinary encounters around the world.

The show, which stops at Aylesbury’s Waterside Theatre and The Anvil, Basingstoke, this month, promises to take audiences on a journey to relive some of these inspiring and uplifting tales from environments as diverse as the wilderness of northern Sweden, the jungles of Honduras, the hostility of Chernobyl and the mountains of Nepal.

“Adventures, expeditions and journeys have helped shape and mould me. They have strengthened me emotionally, physically and mentally and armed me with the skills for life,” says Ben, whose passion for the wild is such that he was appointed the United Nations Patron Of The Wilderness in 2017. “My last tour, Tales From The Wilderness , was about those big expeditions like Everest and Antarctica, whereas this one is about inspiring people to unplug from the commercial world and engage with the wilderness more.”

Although probably best known from hit TV shows such as Animal Park and Countryfile , Ben’s career has taken him to some of the most extreme locations in the world, where he has filmed documentaries about everything from Prince William in Africa and disease in

Ethiopia to Captain Scott in Antarctica and crocodiles in Botswana. His most recent escapades have been documented in Channel 5’s Lost Worlds with Ben Fogle , in which viewers see him travel all over the globe on a mission to tell some of the untold stories from human history.

“I’m a very curious person,” says Ben, whose mother is the actress Julia Foster and father, veterinarian and writer Bruce Fogle. “Growing up with a vet as a father meant I’d sit in on his surgeries when I came home from school (we lived above the clinic) and watch as he treated the animals and my mother was an actress, so there was lots of time spent on film sets. I think when you spend time in lots of di erent environments, you can’t help but be curious. My parents tried to instil that in me and my brother and sisters, and I try to instil that same curiosity in my children.”

When Ben isn’t travelling the globe, he lives in the Buckinghamshire village of Fawley with his wife, Marina, who he met in 2004 while walking his dog

in Hyde Park, their two children Ludo and Iona, and black Labrador, Storm. While Ben is keen to share his love of the wilderness with his family and they spend time together travelling o -grid to places like the small islands o Nova Scotia, he says it needs to be in balance with learning and being street savvy about modern society. “I don’t want to force it on my children,” says the Sunday Times Bestseller, who

has written over 15 books about his travels, including The Crossing, Race To The Pole and The Accidental Adventurer

“I want to give them a good balance of everything so when they are older, they can make their own decisions in life.” He does, however, plan to take them to visit the place where his journey began. “They sometimes say you should never go back, but my time on Taransay was so profound,” he says. “I’ve already been back with my wife, on our honeymoon, and to film Scotland’s Sacred Islands , but I would like to take the kids one day so they can see it for themselves.”

And what about his own bucket list? “I don’t have a bucket list as such, but there are plenty of things I’d like to do. I’d like to climb more mountains, I’d like to do more sailing. I think that curiosity and love of life carries on,” he says. “I love touring and meeting the people who have watched my shows over the years and championed me, but what I really love about life and my career is that I never know what’s going to happen from one day to the next.”

Q What inspired you to launch The Expert Agency, and when was this?

A I set The Expert Agency up just before the pandemic. My previous company Lunn Farrow Media was a very successful celebrity PR agency looking after household celebrity names. It was a very commercial business focussed on tabloid and magazine culture. After a decade of running the agency I got to the point where I felt I had done everything I set out to do and I was no longer feeling fulfilled or inspired by the work I was doing. It was then that I decided to use all my experience and follow my gut instinct to set up a PR and Media Management agency that was solely dedicated to experts and The Expert Agency was created.

Q From day one, what did you want to o er?

A I wanted to o er top level experts a bespoke and unique service to help accelerate them in the mainstream media, whilst protecting their integrity, their credentials and introducing them and their work to a much larger forum. I felt that a lot of celebrities I had worked with were launching ranges, products and businesses and I saw time and time again that they did not have the expert credentials yet they had the following. I kept gravitating towards top tier experts and was fascinated with their level of expertise and their vision. I felt and still feel that top level experts are the backbone of our news agenda and are the real celebrities of modern day culture. I work with trusted and renowned experts that are committed to educating consumers, lobbying for change and providing consumers

with factual, evidence-based news which is so important during an era where there are a lot of self-proclaimed experts out there and fake news in circulation.

Q There seems to be many o shoots now to the business, such as podcasts. How would you say you have evolved?

A My goal has always been to deliver renowned experts to consumers in a digestible way. Often many experts within the medical field may not have done commercial press or mainstream media, so it’s been great building up their commercial digital footprint so they can reach more people. The ‘Expert Minutes Podcast’ is a great 20 minute insight into speaking to amazing experts at the top of their field and finding out how they got there, what drives them and their advice to people who are interested in going into their chosen arena. We’ve had guests including Ross Kemp, Paul McKenna, DJ Fat Tony and author Claire Pooley. The podcast has also been signed up by Podcast Radio, which has been really exciting and helped the episodes reach more people worldwide.

Q How does running The Expert Agency fit in with your home life?

A It’s a juggle! I’m a mum to a toddler that doesn’t sleep a lot and is always on the go. Since having my daughter I have streamlined the business and learnt a great mantra from my client, Antonia Harman, which I’ve adopted. When it comes to work it is either a ‘Hell Yeah’ or a ‘Hell No’. My focus now is signing clients and projects that are ‘Hell Yeahs’ – if I’m spending time away from my daughter it has to be something that I am very driven by and for people I love working with. I’m incredibly fortunate to have a brilliant roster that I am deeply committed to and the next 12 months will see each client accelerated to new heights from the strategy work we have been developing for them both within digital media as well as literary launches too.

Q Whereabouts do you live in Berkshire and how long have you been there for?

A I live in a racing village just outside Newbury and moved here in the pandemic. My husband and I were in London before and we made the decision to move during the first lockdown. I grew up in this area and my mum, stepdad and grandma are all local so it’s been nice to come back home after working in London for so many years.

Q What do you love most about the area?

A I love being out of the madness of London and living a quieter life in the countryside. I still travel to London for work commitments, but there is no better feeling than driving back over the downs and seeing the incredible panoramic view of nature. I love the fact my husband and I can do so many lovely things with our

daughter here and her earliest memories will be outdoors. I take her to Forest School twice a week and we just wouldn’t have had these amazing opportunities available to us if we had stayed in London.

Q Where are your favourite spots in the area?

A I absolutely love The Pot Kiln – I think the food, service and atmosphere is great and somewhere I go to a lot as it’s only down the road from us. A friend recently introduced me to the Thames Lido and I love it. The food is great and it’s lovely to go for a swim, sauna and steam while you’re there too. Bucklebury Farm is brilliant and I take my daughter every week – the sta are so friendly and the animals are looked after really well. Also their deer safari is great fun for children and adults too. The long walk at Windsor Castle is fun and great to combine being a tourist with walking the dogs as well.

The Coronation Service

The Coronation of The King and The Queen Consort will take place at Westminster Abbey on Saturday 6 May. The Service will be conducted by the Archbishop of Canterbury and will reflect the Monarch’s role today and look towards the future, while being rooted in long standing traditions and pageantry. Their Majesties will arrive at Westminster Abbey in procession from Buckingham Palace, known as ‘The King’s Procession’. After the Service, Their Majesties will return to Buckingham Palace in a larger ceremonial procession, known as ‘The Coronation Procession’. Their Majesties will be joined in this procession by other members of the Royal Family. At Buckingham Palace, The King and The Queen Consort, accompanied by members of the Royal Family, will appear on the balcony to conclude the day’s ceremonial events.

On Sunday 7 May, a special Coronation Concert will be staged and broadcast live at Windsor Castle by the BBC and BBC Studios, with several thousand pairs of tickets made available via public ballot. Exact details were still to be announced at the time of print, but musical royalty in the form of Queen, Rod Stewart and Diana Ross have all been named on what is sure to be a star-studded line-up.

The Coronation Big Lunch, at which neighbours and communities are invited to share food and fun together, will take place across the country, also on Sunday 7 May.

The Big Help Out

On Monday 8 May 2023, members of the public will be invited to take part in The Big Help Out, which will encourage people to try volunteering for themselves and join the work being undertaken to support their local areas. It will be the perfect way to bring such a memorable weekend to an end.

As well as Windsor Castle playing a central role, there will be a host of events held across Berkshire and Buckinghamshire across the bank holiday weekend, with some venues boasting royal connections that they will be celebrating too.

The Relais Henley

On his travels between London and Oxford, King Charles I stayed in the 14th century old coaching inn that now forms The Relais Henley. His royal crest remains engraved, beautifully preserved within the room he stayed in, aptly named the King Charles I suite. During this year of royal celebrations, guests can book a dedicated two-night package which includes an overnight stay – complete with breakfast – in the King Charles I Suite and enjoy a royalinspired Champagne Afternoon Tea with a decadent menu including Welsh cakes, plumb cake, and coronation chicken sandwiches. A Coronation Gin Martini will also be available, a tipple believed to be a firm favourite of the King. With Windsor such a focus for proceedings, we just had to ask one of the best pubs in the area for their own coronation recipe inspiration. The Bailiwick Free House opened under the leadership of Steven Ellis, previously of The Oxford Blue in Old Windsor, with his wife Ami as Head Pastry Chef. Nestled on the gates of The Windsor Great Park, The Bailiwick is a gastronomic destination for locals and visitors to enjoy the very best produce that this naturally plentiful area has to o er. Steven’s training under the tutelage of Clare Smyth MBE at Restaurant Gordon Ramsay has enabled him to o er a sophisticated twist on familiar dishes – and look right for one special coronation concoction.

Venison Wellington

Cook time: 35 minutes

Prep time: 2 hours 50 minutes

Serves: 5

INGREDIENTS

• 1kg Venison loin (200g per person)

• 500g button mushrooms

• 2 x eggs

• 150g flour

• 400g whole milk

• 1 x tbsp of chopped parsley

• 1 x tbsp of chopped chives

• 1 x packet Parma ham

• 1 x pack of pre rolled pu pastry

• 2 x tbsp of English mustard

• Sea salt for seasoning

METHOD

1 Season and seal the loin in a hot pan then transfer to a plate and chill in the fridge. 2 Once cooled down, brush the sealed loin with the English mustard and transfer back to the fridge.

3 Prepare the pancakes by placing the flour in a bowl and gradually adding the eggs and milk until you get a smooth batter consistency. 4 Season with a pinch of salt and mix in the herbs.

5 Heat a large frying pan and add a little oil, ensure you swirl it around the pan, so it evenly coats the base. Place a ladle of the pancake mix into the pan and ensure it evenly covers the base. Cook for one minute and then flip over and cook for a further minute. Transfer to a wire rack to cool (you will need three pancakes in total). 6 Blitz the mushrooms in a food processor until finely chopped. Transfer to a dry pan and cook until all the water has evaporated from the mushrooms. Season with salt and transfer into a bowl and cool down in the fridge. 7 Lay out the pancakes on to some clingfilm, followed by the Parma ham. 8 Spread the cooled mushroom mix over the Parma ham and place the venison loin on top. 9 Wrap the wellington up tightly in the cling film and tie o both ends, let it rest in the fridge for 30 minutes to take shape. 10 After the 30 minutes is up, lay out the pu pastry and brush with some egg wash made with one beaten egg. 11 Remove the wellington from the clingfilm and place on the pu pastry. 12 Wrap up tightly again in the cling film and tie o both ends. 13 Leave in the fridge for two hours to rest once again. 14 To cook, preheat your oven to 200° and place a large baking tray inside to get hot. Remove the wellington from the fridge and unwrap. Brush the wellington with the remaining egg wash and place on a piece of baking parchment on top of the tray. Cook for 20-25 minutes until the pastry is golden brown and the internal core temperature is 50°. Once cooked take out and rest on a wire rack for ten minutes then serve.

High Wycombe’s annual ‘Mayor Weighing-in’ ceremony returns to the High Street on Saturday 20 May as the centrepiece of a Heritage Festival

The tradition of Mayor Weighing in High Wycombe, also known as ‘Mayor Making’, dates back to the 17th Century and plays an important role in the town’s unique history, with High Wycombe being the only town to still continue the practice.

The custom was first recorded in 1678 when the town’s mayor – Robert Clayton – decreed to publicly weigh himself on a set of over-sized weighing scales to dispel malicious rumours that he had ‘grown fat’ at the expense of the townspeople. Whilst the scales were more commonly used to weigh goods for sale at High Wycombe’s bustling market, his actions proved he’d not gained any weight during his term in o ce and were heralded as a symbolic gesture of accountability to the citizens.

From that day onwards, the practice became an annual event and evolved into a ceremony marking the start of the mayor’s term in o ce. The mayor-elect would be weighed on the town’s weighing scales, and the weight would be o cially recorded in the mayoral records. The tradition continues in the town still, including a ceremonial mayoral procession through the town’s streets, with the mayor, donned in his elaborate robes of o ce, accompanied by his Honorary Burgesses and Freemen, as well as the Town Clerk and Council O cials.

Spectators wait eagerly for the allimportant results, loudly announced by the Town Crier. If the words ‘and some more’ are heard, the council member being weighed is jeered, as it is proposed that they have gained weight and thus been misusing Council monies for their own ‘gluttony’. If the words ‘and no more’ are shouted out, they are rewarded with boisterous cheers. Whilst the tradition is now purely ceremonial, the mayor (and other dignitaries) continue to be weighed on an antique set of giant seated scales in front of the historic Guildhall building, and the event remains an important part of the town’s history and culture, and it is a reminder of High Wycombe’s long and rich heritage.

Q Congratulations on your success at the Michelin Guide Awards. How did it feel to win the Young Chef Award?

A Honestly, it still hasn’t sunk in! I am so unbelievably proud and honoured to be recognised by such a prestigious guide. I genuinely cannot believe that out of all of the incredibly talented young chefs across Great Britain and Ireland they picked me. I’m on cloud nine!

Q How satisfying too was maintaining the Michelin star for The Coach?

A I’m so proud of the team for retaining the Michelin star. Obviously, there is an element of pressure, the Michelin star is a mark of quality and consistency and this was my first full year in the Head Chef position at The Coach, it was a nerve racking experience. But everyone has worked extremely hard and I’m over the moon that we managed to retain the star for another year.

Q Let’s take a step back – when did you first develop an interest in cooking?

A I’ve always had an interest in cooking. I was really lucky to grow up in a big family who always had home cooked meals on the table. My dad is a chef and my mum is a great cook. We always had meals around the table when I was younger, it was something both my parents felt strongly about. I have distinct memories of cooking in the kitchen with all of my family, especially with my granny and my sister. When we were younger, we would lock ourselves in the kitchen and think of ourselves as real life chefs whipping up a three-course meal for my mum and dad’s anniversary!

Q How influential was your dad when it came to your eventual career choice?

A My dad has always had a massive influence on my career choice. I said from a young age I wanted to be a chef and although he always supported me, he also tried to talk me out of it. I worked with him as a kitchen porter and eventually wormed my way into the kitchen making sandwiches and plating desserts. I loved it! When it came to doing a week’s work experience at school, I asked if I could work with him, but do the hot side of the kitchen – he said yes thinking it would put me o for life, but instead it sparked something in me. He is still to this day one of the most passionate chefs

I know, which is not something you can teach. I fell in love with how much he loved it, and now I’ll never look back.

Q You first came to Marlow and The Hand & Flowers back in 2015. How important has Tom Kerridge been to the chef you have become?

A I can, without a doubt, say that Tom Kerridge has been the most important person when it comes down to the chef that I have become today. From the moment I stepped over the threshold at The Hand & Flowers, he saw something in me that even I didn’t know existed. He has relentlessly provided me with opportunities to grow and develop, not only as a chef, but as a manager too. He is such a humble and

down to earth person, you know he will always be honest with you.

Chef Tom has always believed in me and each one of his sta and in return is rewarded with the loyalty he so richly deserves. There are so many members of the team across the board that have worked with him for over 10 years, I am merely following in the footsteps of chefs like Nick Beardshaw and Tom De Keyser who, like me, started at The Hand & Flowers and have progressed and worked their way up the ladder.

Q How would you say you have evolved as chef?

A I have definitely become more confident in my cooking. Moving in between the businesses has allowed

me to grow and develop, working with di erent people, in di erent kitchens and learning new skills in each one.

I evolved the most from leaving and returning to The Coach. The Bull and Bear in Manchester was such a massive part of my life and the career move in which I felt I grew up the most. It was the first time I ran the kitchen, was in charge of teaching the brigade as well as creating menus. Chef Warren (Executive Chef for the TK Group) was a huge influence on me gaining my first Head Chef role up there and was always super supportive, taking the time to teach me parts of the business I have never been responsible for before. I became more creative and developed a management style that works for me, the team and allows the standard and produce to shine. I’m not sure you ever stop evolving as a chef, but working for Chef Tom has 100% provided me with the room to grow and to continue to do so going forwards.

Q What enticed you back to Marlow to become Head Chef at The Coach?

A I remember the conversation I had with Chef Tom about it so clearly. It’s not one I will ever forget. When you are o ered Head Chef of The Coach, a beautiful, cool, amazing pub, serving amazing food – you would be an idiot to turn it down. It was the opportunity of a lifetime and a real landmark in my career. I will be forever grateful to him for that. Marlow is my home away from home, and my little team at The Coach have become family.

Q Do you have a couple of dishes that you are really loving right now?

A One of the newest dishes on the menu, and one that I am very proud of, is “The Coach Baked Potato Tonnato with Rose Veal Tartare”. This is a

dish I was discussing with Chef Warren back in Manchester and it finally made it to the menu at The Coach. Rotisserie baked potato, with tuna mayonnaise and a spicy veal tartare. It’s very me and was something I worked very closely with Chef Warren on until we thought it was ready to reach Chef Tom. Luckily, he loved it and told us to get it on the menu right away! I would say it has become a firm favourite and will grace the menu for a long time.

Another dish that is really special is the Mussels Mariniere, a Hand & Flowers classic, brought back to life at The Coach. It was on the original opening menu when Nick Beardshaw first started at The Coach in 2014. It was the first dish I had at The Coach that literally took my breath away. Big, juicy mussels cooked in white wine (de-shelled) with carrot, shallot and celeriac, finished with a rich butter sauce, lemon juice and tru e oil. Into a pot with a warm stout foam and served with a little treacle bread that resembles a loaf of Hovis. We were lucky enough to head down to Cornwall and visit Flying Fish (our fish supplier) and go to the farm where they are grown. Amazing trip and a real eye opener!

Q Can you sum up what we can expect from the food when visiting The Coach?

A The menu is super simple, full of really tasty, really accessible dishes. There are a lot of familiar favourites that are elevated so there really is something to suit everyone.

The restaurant is super chilled, not daunting like some Michelin starred restaurants can be perceived to be, so you can sit back and relax and enjoy some proper tasty food.

Q Why do you like having an open kitchen so guests can see you and your team at work?

A I have always quite enjoyed the interaction with guests and I think it’s important for the young chefs too. Being able to have conversations with guests and seeing their reactions when they are eating the food that you have lovingly cooked is incredible. We are really lucky to have a lot of regulars at The Coach that a lot of the team are on a first name basis with, they have become friends! Being in an open kitchen also makes you more mindful of the way you work and how you work. It’s a bit like a theatre production –someone is always watching you!

INGREDIENTS

• 1 cup brown lentils

• 1 teaspoon whole coriander seeds

• 4 green cardamom pods

• Vegetable oil, for cooking

• 2 teaspoons cumin seeds

• 5cm cassia bark

• 4 whole cloves

• 1 dried Kashmiri chilli (optional)

• ½ a star anise

• 1 large brown onion, finely diced

• 20g ginger, grated

• 20g garlic, grated

• 1–2 teaspoons minced green finger chillies, or to taste

• 2 teaspoons sea salt, or to taste

• ½ teaspoon garam masala

• 40g butter

• 1 tablespoon tomato purée

• 375ml water

• 150ml passata

• 3 x 400g tins of black beans, drained

• A pinch of Kasuri methi

• 1 tablespoon Greek yoghurt

• 2 tablespoons double cream

• Fresh coriander, to garnish (optional)

METHOD

1 First cook the brown lentils –you’ll need a large lidded saucepan. Read the packet instructions; don’t overcook them into a mush. You need three to four times the volume of water to lentils, so 3–4 cups of water. Bring to a rapid boil, then reduce to a simmer. Skim o any scum, and don’t allow the pan to go dry. Remove from the heat, and set aside.

2 Toast the coriander seeds in a dry frying pan and transfer to a pestle and mortar. Lightly grind and set aside. Add cardamom seeds to the mortar, with a pinch of salt to act as an abrasive, and grind to a powder.

3 Now make the tarka, the foundation of every curry. In a large sauté pan or similar, activate your whole spices – cumin seeds, cassia bark, cloves, dried chilli and star anise – in 3 or 4 tablespoons of oil on a medium to high heat. When the aromas waft up, tip in the onions, crushed coriander and cardamom, and reduce the heat. Give these at least 10 minutes or so to allow the onions to soften and become translucent.

4 Add the ginger, garlic and chillies, cook for a couple of minutes, then add salt and garam masala. Toast for 30 seconds, then drop in half of the butter. Once melted, add the tomato purée and give everything a good mix. You want a few minutes to

cook the purée out. Add some water, about 125ml, to help it on its way.

5 Pour in the passata and bring to the boil, then simmer for a few minutes. When you see the oil separating on the surface, it’s time to taste and make your adjustments.

6 Stir the cooked lentils and beans through the tarka. You’ll need extra water too, about 250ml. Ensure everything is mixed well, then bring to the boil and immediately reduce to a simmer. Taste again – you’ll probably need more salt. Add the methi, the rest of the butter, yoghurt and cream, holiding some cream back for a decorative swirl before serving. Allow to simmer for a little longer – say another 10 minutes or so.

7 Pair with whichever bread takes your fancy, or with rice. I serve it with black cardamom rice, charred aloo gobi, yoghurt and a crunchy slaw.

Baingan Bhurtha –Smoked Aubergine

Serves 4-6 (as a starter)

INGREDIENTS

• 3 large black aubergines

• Vegetable oil, for roasting and cooking

• Sea salt

• 1 teaspoon cumin seeds, plus extra for roasting

• 1 star anise

• 1 large brown onion, finely sliced

• 2 green chillies, split in half

• 7g ginger, grated

• 7g garlic, grated

• 0.5. teaspoon ground turmeric

• 1 teaspoon garam masala

• 1 teaspoon salt, plus extra for roasting

• 150ml passata

• 1 teaspoon tomato puree

Garnish

• Labneh (or thick Greek yoghurt)

• Curry oil

• Finely diced red onion

• Dill fronds

• Pomegranate seeds

• Pomegranate molasses

METHOD

1 Set your oven to 200°C fan.

2 Start by prepping the aubergines. Use the largest aubergine for presentation – put that to one side. Fire up the two largest rings on your gas hob, on maximum. Place the other 2 aubergines directly on the flames.

3 Back to the presentation aubergine: cut this in half from top to bottom. Dice one half into chunky 2.5cm pieces. Lightly score the other half around the entire perimeter, about 0.5cm from the edge, then score the middle in a criss-cross; don’t pierce the outer skin.

4 Keep an eye on the flaming aubergines. Use tongs to turn them and ensure each side is charred.

5 Place the diced aubergine in a large mixing bowl, toss with a couple of tablespoons of vegetable oil, and season with sea salt and a sprinkle of cumin seeds. Gently massage the scored aubergine half all over with a scant amount of oil. Place it cut side up on a lined baking sheet and season with a little sea salt. Place the diced aubergine alongside it.

6 Your charred aubergines will be ready by now too. Lift these on to a separate lined baking sheet. Roast all the aubergines for 20 minutes, or until they are very soft when squeezed. The aubergine half and dice

may need an extra 5 minutes. Remove from the oven and allow to cool.

7 Meanwhile make the masala. Heat 3 or 4 tablespoons of vegetable oil in a medium to large saucepan on a medium to high heat. Add the whole spices– cumin and star anise – and when they start to release their aromas, tip in the onions and chillies and reduce the heat. Cook the onions low and slow for 15–20 minutes, to lightly caramelize them. Add the ginger and garlic and let them cook out for a couple of minutes.

8 The aubergines should be ready to scoop out by now. First the presentation half: using a spoon, gently scoop out the flesh, being careful not to break the skin, and set aside. Next cut the charred aubergines in half from top to bottom, and gently spoon that flesh out too, discarding the charred exterior. Roughly dice the flesh, then place in a bowl and set aside.

9 Once the onions have caramelized, add the ground spices: turmeric and garam masala, and the salt. Toast these for 30 seconds, then add the passata and tomato puree. Increase the heat and bring to the boil, then reduce the heat and simmer for 7–8 minutes.

10 Stir in the aubergine flesh (this is often referred to as caviar) and the diced pieces. Mix thoroughly and simmer for 5–10 minutes or so.

11 Smother your serving plate with a thin layer of labneh or Greek yoghurt. Place the empty presentation aubergine half on top and load it up with the hot bhurtha. Garnish with finely diced red onion, dill fronds and pomegranate seeds. Drizzle with curry oil and pomegranate molasses, and tuck in with toasted charcoal sourdough, naan or crispy seeded lavash flatbread.

Green Chicken Tikka

with black rice salad

Serves 4 (with leftover tikka for wraps)

INGREDIENTS

Green/hariyali marinade

• 30g fresh coriander leaves

• 15g fresh mint leaves

• 50g young leaf spinach

• 10g ginger, grated

• 10g garlic, grated

• 1–2 teaspoons minced finger chillies

• Juice of 1 lime

• Vegetable oil – a few generous glugs

• 250g Greek yoghurt

• 1½ teaspoons sea salt, or to taste

• 1½ teaspoons garam masala

• 1 teaspoon ground cumin

• 1 level teaspoon ground turmeric

• 6–7 skinless and boneless

chicken thighs

Rice salad

• 1 large red pepper

• 1 red onion

• 2–3 charred baby leeks (optional)

• Vegetable oil, for cooking

• Sea salt

• A sprinkle of cumin seeds

• 1 sweetcorn cob

• 250g cooked black rice

Dressing

• 3 tablespoons vegetable oil

• Juice and zest of 1 lime

• 1 small clove of garlic, grated

• 1 teaspoon ground cumin

• ½ teaspoon ground coriander

• A pinch or 2 of sea salt

• ½ teaspoon light brown sugar

• ½ teaspoon Kashmiri chilli powder

• ½ teaspoon chilli flakes

• 1 teaspoon chopped fresh coriander

• ½ teaspoon pomegranate molasses

Garnish

• Fresh coriander and mint leaves

• Red chillies

• 65g pomegranate seeds

• Finely sliced spring onions

• Charred lime wedges

METHOD

1 Start with the hariyali marinade. Blitz the coriander, mint, spinach, ginger, garlic, chillies and lime juice in a blender along with a few generous glugs of vegetable oil –enough to make a thick paste.

2 Put the yoghurt into a large mixing bowl and stir in the green paste, then mix in the salt, garam masala, ground cumin and turmeric thoroughly.

3 Cut your chicken into bite-sized pieces, place in the marinade, cover and leave to marinate in the fridge, overnight ideally or for at least 2–3 hours. Preheat the oven to 200°C fan. Cut the pepper and red onion into 2cm chunks, coat sparsely with oil, season with sea salt and a sprinkle of cumin seeds and roast until slightly charred at the edges – about 20-25 minutes.

4 Place the sweetcorn under a very hot grill, and grill until cooked and golden all over with a hint of a char. Hold the corn upright, and slice o the kernels. Discard the core and set aside.

5 Whisk all the dressing ingredients together in a small bowl and set aside.

6 When you are ready to bring the dish together, cook the chicken under a grill on the highest setting to recreate that fierce tandoori heat; you want a little char without burning.

7 Toss the rice and vegetables (including the charred leeks, if using) with the dressing in a large bowl.

8 Serve your sizzling green chicken tikka on top of the rice salad, adorned with the various garnishes. Divine!

Q Tell us about your business…

A Valse Collection is a high end, high street and vintage pre-loved fashion company. We pride ourselves in selling items which are of a high quality and in pristine condition that have been worn a handful of times, or brand new with labels on, but at better prices.

Q How did you start in the industry?

A Well, my mum is the queen of shopping! With her impeccable taste and classic style, Valse Collection was born. We started o with just 10 pieces, listing them on eBay and they sold within hours. In 2019 my mum and dad decided to move house, which meant selling our family home of 15 years. When we began packing, mum asked me to give her a hand sorting through her extensive “wardrobes” as she knows my love for fashion. During this time we came across some incredible pieces that no longer fitted so we decided to list them on eBay. Within a few hours we were almost sold out and this got me hooked. As I kept listing items

and sales kept flying out the door, my eBay platform grew and, as a result, so did my clientele. I now had my mum’s friends asking if I could sell their clothing for them as well.

By October 2021 after taking on a lot more clothing from numerous people, my partner and I decided to look into starting our own business and moving away from eBay. My partner was lucky enough to know people who specialise in building retail websites so we utilised this connection and got involved with Nigel Grant and Luke Teasdale from Lucky Seven Caps. In May 2022 we launched our very own Valse Collection website and from then we have been growing and developing our brand and business.

Q Where did the name come from?

A My full time job is a professional showjumper. I have had a passion for riding since childhood, and it has now expanded to a career with a big team of horses from all ages which we produce up to international level. Our family business

Oakingham Stud was established in 2011 and is passionate about breeding show jumping horses that can compete on the world circuit. A horse that was very special to me over the years was called Valse De Boguin. The direct translation for Valse in French is “Waltz” and with my business being all about high end, pre-loved timeless pieces, it seemed perfect.

Q What makes you di erent to other ‘pre-loved’ selling sites?

A What makes us di erent is that we really pride ourselves in ensuring the condition of the clothes we o er are of an extremely high standard. We photograph all the clothes with our professional photographer Jade Knight, we research the value of the clothes and we upload to our site and social media pages. More than anything we do this with love. I take so much pride in what I do and strive to give customers great value and a great experience when buying from or selling with Valse Collection.

Q Tell us about the service you provide…

A Send your item, we will review the quality and agree a price based on the brand and market value. We will photograph, detail and promote on our website. After the item is sold our fee is 25%, which is significantly lower than most other companies doing what we’re doing.

Q Why is sustainability important to you?

A The sustainability of what we do is core to our company values. Since we started selling clothes and started our business, I now look for a lot more preloved clothes rather than buying new as there is so much value to be had and it’s also so much better for the environment.

Q What is the most unique piece you have sold?

A A piece that has a special place in my heart was a beautiful Black Label Ralph Lauren Silk Coat. This was the very first item we sold. My most unique piece is a Runway Balmain Mini Sequin Dress that arrived in early December last year. I had said to my fiancé, if it is not sold by Christmas I am buying it myself… we sold it within a week of it coming in!

Q What's next for you?

A We have been looking for some time now to do a pop up store and we think we have found a place in Marlow to potentially take on for May and June. It's all very exciting at the minute but until contracts are signed I cannot reveal the exact location. Whenever we say lace some brides panic. I don’t actually think we have lace, but soft applique details have all the texture and are a huge

It is here and we love her. Day time minis from our new label Nouvelle Amsalle with little overcoats are so cute, edgy and inexpensive. These are brilliant choices for Registry O ce weddings ahead of the big wedding celebrations abroad and very wearable after the wedding so it’s a win, win. Talking of minis, we also have an amazing party mini dress, so when it’s time to ditch the formalities and hit the dancefloor these are a great option.

These are here to stay and you don’t have to tell us that twice, ripping up the rulebook and working brilliantly on bridalwear in colour palettes of gold, nudes and pale ivory. It is exciting when you and your partner decide to marry or enter a civil partnership. But it is important to think carefully about the legal implications.

B P Collins’ family team explains that although regarded as unromantic by some, in certain circumstances thought should be given to a pre-nuptial agreement. Pre-nuptial agreements set out your intentions as to what should happen if your marriage or civil partnership breaks down. You will want your relationship to last forever, but the way to regard such agreements is that it can be a buttress to your relationship. This is because you will already have had discussions before your wedding or civil partnership about matters that couples often find di cult.

Agreements deal with financial arrangements and can set out what should happen, for instance, to property owned before, or acquired, during the marriage; gifted or

inherited property and what, if any, maintenance or capital provision should be made by one party to the other. If there is a business, the agreement can also deal with that.

Marrying in later life?

Pre-nuptial agreements can be particularly important for a couple who have been divorced or widowed before or for someone who might expect to inherit money during the course of the marriage or civil partnership. Or you may have children from a previous relationship for whom you wish to safeguard assets, particularly those which may have been built up during a relationship with their other parent.

Whilst the agreement cannot prevent your spouse or civil partner from making a claim to the court in the event of your relationship breaking down, the court will take the agreement into account, provided certain requirements are met and it does not leave one party in real need.

However, if a court doesn’t uphold the provisions in their entirety, the existence of a pre-nup should have a limiting e ect on what the court awards. As such, it is vital that you and your partner understand what you are doing, are not entering into the agreement under undue influence or duress and both of you provide a full and frank disclosure of each other’s capital and income resources.

What to consider

You and your partner should take independent legal advice from a specialist family lawyer in advance of signing an agreement. It is better to start talking about it as soon as you become engaged and if not at that time, then ideally at least six months before the big day. Agreements which are signed too close to the date of the wedding are more likely to be open to challenge unless they have been discussed some time in advance.

However, if your hair is coarse and naturally curly then a softer curl would be perfect as this will hold for longer, and would work in harmony with your hair type. For fine hair it is possible to add hair pieces, creating instant volume and length, and is also better for holding curls than naturally fine weaker hair types.

Remember planning is key, so speak to your stylist to discuss all your hair ideas prior to choosing your wedding outfit, especially head wear.

Q How did you come to launch Lab Tonica?

A Prior to launching Lab Tonica I worked in the advertising industry. There was one particular day when I was working late on a pitch and drinking my fifth cup of chamomile tea, when I became struck by how old fashioned and dated most herbal tea packs look. In that moment it became clear to me that there was a gap in the market for a modern herbal brand aimed at a younger, more style conscious audience. With my second baby on the way, it felt like the perfect time to embark on a new direction. A I wanted Lab Tonica to have the kudos and feel of a boutique perfume brand, but with a more joyful colour palette and down

Stephen Green and I set up HollandGreen in 2010 having worked in national architectural practices. We wanted to deliver a fresh approach to home design and believed there was a better way to give the early stages of a project the time and focus needed to uncover a design vision unique to each client. Investing this time at the beginning of the design process – learning how our clients live, interact, and how they move through their spaces – helps establish what’s really important to them. The start of a project is always exciting for our clients – and a great privilege for us as designers.

Over the duration of a project that can take many months, our priority is to make the experience fulfilling and rewarding. Our collaborative approach ensures we build a close bond with our clients, which continues long after their project is complete. We have made some great friends over the years.

We are known for renovating period and listed properties as well as creating unique, contemporary new builds. Rather than one particular style, we produce a bespoke response to our clients’ individual needs within the characteristics of each property and its location.

Our portfolio includes properties where we have rejuvenated and reinvented period houses through sympathetic renovations integrated with modern interventions and we have extensive experience of working with Historic England, and within conservation areas and Areas of Outstanding Natural Beauty (AONBs). Alongside this, we are specialists in landmark and award-winning contemporary new build homes, and we have a deep knowledge of the planning process. For us, it’s about a unique solution to our clients’ aims and creating an elegant and timeless design, whatever the style of property.

What we are finding now is that clients are asking for unique interior design or landscape design, and our flexible studio structure means we are able to work on these projects alongside the larger multidisciplinary commissions.

From beginning as an architectural studio, we have evolved into a multi-disciplinary residential practice combining architecture, interior design, landscape design and project management. This breadth of expertise, exclusively in the home design environment, makes us unique in what we do.

Our design approach is driven by a shared passion to create a unique journey for each client. We consider the house and garden as one from the very beginning of every project, this is why we are known for our design collaboration between the architecture, interior design and landscape design in-house teams. It’s a holistic process from the very start – from our first discussions with our client to discover the kernel of a concept which then goes on to inform everything, from the aesthetic, to how all the spaces will work, flow and feel. Nothing is lost in translation – it’s a coherent design journey.

Good design is enduring, and the core foundations of this haven’t changed. Bringing more light into a home, achieving a modern family-focused kitchen living space, respecting the history and character of the existing building and creating a natural indooroutdoor flow – these are all still really important.

Ethical design and creating homes that can be enjoyed for future generations has always been really important to us, and now it is the bedrock of everything we’re doing moving forwards. What has changed is perhaps whereas 10 years ago sustainability wasn’t high on our client’s radar, now they are asking about it as one of their main focuses. We are working to meet the RIBA 2030 Sustainable Outcomes initiative delivering projects that vastly reduces energy consumption and are ‘zero carbon’. We also support the UK charity Woodland Heritage, o setting the carbon used in our projects by planting trees in British woodlands.

Our main studio is based on the Oxfordshire/ Buckinghamshire border, and we are very familiar with Berkshire, having completed numerous projects

there over the years. Three stand out: Water’s Edge, a contemporary replacement house overlooking the Thames, marrying an elegant aesthetic with sustainable design technologies throughout; The Hide, an awardwinning replacement new home, the distinctive design blends industrial-style Crittal-style glazing with Corten steel accents; and Longridge House, a garden design and renovation including a multi-functional space with a luxury hot tub hidden beneath a sliding deck, outdoor kitchen, lawn and woodland area.

We are working on a sustainably-designed contemporary new build inspired by the local area and crafted to blend with the landscape, which will be environmentally designed through thermal e ciency and integrated sustainable technologies. And we are working on the transformation of a country estate in the Cotswolds, which is going to be a fantastic collaboration between the architectural, the interior design, and the landscape design. We’re also soon to complete a luxury garage housing our clients’ car collection – this has been a holistic project, which has also included the design of the walled garden, outdoor kitchen and entertaining areas and all of the planting.

It’s an exciting time as sustainable design technologies begin to play a fundamental role across the design journey. These, together with our fantastic team of architects, interior designers and landscape designers and their creative innovation, means we will be delivering some incredible homes in the next few years.

Inside the Berkshire home by the Thames owned by Uri Geller

Sonning Court is a graceful and impressive English country mansion on the bend of the River Thames, and is owned by the illusionist Uri Geller.

Sonning Court is set in the beautiful village of Sonning On Thames in Berkshire, with easy access to London and Heathrow.

Constructed to magnificent standards some 50 years ago, Sonning Court’s architect was influenced by the Greek period, erecting four impressive sculptural Ionic stone columns adorning the facade of the residence.

Entering the property, on the ground floor you will find a reception hall, two drawing rooms leading to a magnificent large glass atrium, panorama room, dining room, study, two guest lavatories, conservatory/summer dining room, and kitchen leading to a separate maid’s quarter.

There is a lower floor, which is accessed by a modern stainless steel glass solid oak staircase, and leads to the

entertainment hall comprising of bar, cinema theatre and professional gym.

In total, there are nine bedrooms (two are large masters) and eight en-suite bathrooms. The first bedroom and bathroom (which acts as a separate nanny residence with its own entrance) is on the ground floor, with a further eight bedrooms and bathrooms to be found on the first floor by way of the attractive sweeping bordered staircase.

There is a separate cellar with wine vault/ panic room and safe, and Sonning Court has full gas-fired warm-air central heating, air purifier and a central air conditioning system.

There are extensive grounds surrounding Sonning Court estate with approximately 110 metres of the towpath of the River Thames belonging to Sonning Court, comprising approximately 1,500 square metres of mooring, which can accommodate up to 12 boats.

Immediately to the rear of the property, the Japanese water gardens gently fall away in a series of three interlinked ponds created by huge Scottish natural boulder rocks planted with all manner of

exquisite mature plants and trees, which includes a six-foot natural waterfall.

A traditional red Japanese bridge leads across the lower pond reflecting gracefully in the mirrored surface of the water in which Koi fish silently glide. It’s a place of peaceful contemplation and meditation.

Furthermore, on the estate’s grounds there is further accommodation and ample storage facilities. Beside the four car garage, the grounds contain a professional floodlit tennis court and a Helipad.

Q Is it rare to market such a property?

A It’s incredibly rare. Sonning Court is a substantial residence on the river, with potentially three annexes set in four acres in a very private location in one of the most popular villages on the Thames. Properties such as this are at a premium and seldom come to the market.

Q What is the history behind the actual building?

A The home was originally built in 1970. It was bought by our client in 1986 and in that time he has renovated and expanded – making it more balanced and symmetrical to the eye.

Q How would you describe the architecture and style of the property?

A The house is built in a grand style, resembling the White House in Washington DC. The architect was influenced by the Greek period, incorporating Palladian influences. Highlights internally include a magnificent large glass atrium and a panorama room with unmatched views of the River Thames.

Q What is the first thing that catches your eye when entering the property?

A As you make your way down the driveway the tall, white pillars and facade is very impressive. But one of the really special things about Sonning Court is its seclusion and privacy – most people who drive through the village would have no idea the house was here. The fact that you have to drive through two gates to enter and being really set back, it feels like you are entering your own world when you arrive. Once you enter through the front door you are immediately treated to the stunning views of the river and the Chiltern Hills.

Q What kind of entertaining spaces are there?

A There are extensive reception rooms on the ground floor suitable for largescale entertaining, while on the lower floor you also have a bar, state of the art cinema room and professional gym.

Q Is there anything unusual that takes you by surprise?

A The 180° outlook to the river and the Chiltern Hills beyond takes your breath away. You are constantly treated to far-reaching views from all parts of the house – it really is a piece of living art that changes throughout the year. The house is built on elevated ground so –unlike some of its surrounds – it has never flooded since our client has lived there.

Q How would you describe the style of the bedrooms?

A The bedrooms are all modern in style and enjoy en-suite bathrooms – most with extensive views of the river. The first bedroom and bathroom is on the ground floor, while the other eight are on the first floor.

Q Do you have a favourite element of the property?

A The outstanding views and grounds which complement a splendid house.

Q What access does it have to the Thames?

A Access to the River Thames is through electrified gates at the bottom of the garden. Approximately 110 metres of the towpath belongs to Sonning Court, which can accommodate up to 12 boats, practically unheard of in this prime location.

Q What other external facilities are there?

GRASS IS GREENER

HUGHENDEN, NEAR HIGH WYCOMBE

Hughenden is famous for being the family home of Victorian Prime Minister, Benjamin Disraeli, who lived here from 1848 to 1881. The formal gardens at Hughenden were designed by his wife, Mary Anne Disraeli, in an 18th century Italianate style. It was a highly fashionable choice for Victorian country estates. Today, the gardens have been recreated to be true to her vision with geometric formal beds, statuary and urns and striking planting.

The formal gardens give way to the pleasure grounds where Mary Anne and her friends would take a turn in the fresh air. There’s also a small orchard with picnic benches that flutters with blossom in the spring. The walled garden is perfectly formed on a gentle slope to allow the warmth to rise up the slope and there’s a ‘frost gate’ in the bottom corner to allow the cold air to escape. This microclimate allows morello cherry, apricot and figs to thrive on the south-facing slopes.

STOWE, NEAR BUCKINGHAM

Stowe has been a tourist attraction for more than 300 years for the scale and beauty of its garden. It’s not a garden as you might expect, with small, neat flowerbeds. It’s a vast landscape which has been precisely sculpted to create picture-perfect views with winding paths, serene lakes and elegant statuary and monuments. There’s hidden meaning to the garden; knowledge and ideas preserved in the temples and statues. Or visitors can simply wander amongst the grassy meadows, trees and lakes and revel in the beauty of nature.

PAINSHILL, COBHAM

Painshill, in Cobham, Surrey, is a masterpiece of garden design. Created in the 18th century by Charles Hamilton, as a living painting, it invites you to walk around a work of art and discover dramatically placed follies and calming waters. Designed

to delight you at every turn, it o ers up a stunning view around every corner. The garden is considered one of the foremost and finest examples of the English Landscape Movement and romantic features include the Ruined Abbey, a vineyard, a Hermitage and the Temple of Bacchus. The rose garden features a mix of old roses and peonies, reflecting Lady Ili e’s original planting design. A focal point of the pleasure grounds is the thatched Umbrello, a quiet place to enjoy the view.

GREYS COURT

Greys Court is charming and romantic with a pretty manor house and medieval outbuildings. The walled garden is a journey of discovery, with a series of garden ‘rooms’ linked by gates, doors and flower tunnels. It has bright bulbs and orchards of apple and cherry blossom in spring and a 200+ year old wisteria winding around a pergola which flowers in May. Sweetsmelling hybrid tea roses emerge in summer.

CLIVEDEN, NEAR MAIDENHEAD

Set high above the Thames with far-reaching views, Cliveden’s impressive gardens and majestic woodlands are both grand and picturesque. There is a series of formal gardens to explore, including the Long

Garden complete with bird topiary, wide borders and striking planted beds. The Rose Garden is designed to flower from early to late summer, with a wave of colour from light lemon to rich dark claret.

The parterre is rightly famous at Cliveden with its symmetrical geometric beds and farreaching views of the river in the distance.

CHENIES MANOR HOUSE

Chenies Manor is a Tudor house with five acres of gardens, including a water garden, a physic garden, kitchen garden, topiary displays and extensive herbaceous borders. There are two mazes to explore here too, including one that was designed as part of a newspaper competition in the early 1990s.

In spring, Chenies House welcomes visitors to admire their tulip displays, while in summer the show gardens are bursting with dahlias, salvias and many more annuals.

THE LYDE GARDEN

Something a little more secret, sunken and perhaps sacred is the Lyde Garden, not far from Aylesbury. The garden here was

extensively developed from the 1950s by the late Lord Carrington, once Foreign Secretary in the government of Margaret Thatcher.

The gardens are next to the 12th century Holy Trinity Church in the village of Bledlow opposite its manor house. There is a kitchen garden, a water garden, parterres and sculptures in this green hidden gem.

ROOKWOOD HOUSE

Rupert and Charlotte Digby have developed the gardens at Rookwood House over 30 years to deliver a terraced garden that supports a wide range of unusual plants through wet and dry, sunny and shady, exposed and shielded areas. The garden has themed areas ranging from ponds and cascades, a stunning woven willow walk and Charlotte's passion, thejungle garden with exotics for you to explore.

SAVILL GARDENS WINDSOR

Named as “England finest ornamental woodland”, Savill Gardens is a wonderful and beautifully kept place in Berkshire (which is actually part of Windsor Great Park) that has something spectacular for everyone.

Following a showstopping year in 2022, the Houseplant Studios area is returning to the RHS Chelsea Flower Show this May

Malvern Garden Buildings have supplied the garden studios for the plateau in Ranelagh Gardens at RHS Chelsea Flower Show for almost a decade. Last year, they became home to six houseplant specialists, who showed visitors to RHS Chelsea how they too could bring the splendour of growing to interior spaces. Malvern Garden Buildings’ Planet Studio, designed by James Whiting of @Plantsbythere, won Gold and the accolade of Best Houseplant Studio.

With the trend for houseplants showing no signs of slowing down, this year five new houseplant enthusiasts will use the garden studios to showcase their designs and give visitors the inspiration to create plant-filled rooms of their own.

Beards & Daisies, founded by Jo Lambell, will create Plant School. The design will showcase Planting the Future, inspired by the work of two of the greatest environmental campaigners of our timeDavid Attenborough and Greta Thunberg. Jo’s garden will be a nostalgic nod to 80s and 90s primary schools, whilst taking a look at how schools might operate in the future.

Also on show will be Geb & Green with their laundry room family home design: Steam. Clean. Plant. Repeat. Their garden will raise awareness of how the UK houseplant industry can be more environmentally friendly than it is at present.

Will Clayton, of Geb & Green, says: “Many people simply don’t know that houseplants are contributing to climate change by using peat as a growing medium. The studio provided by Malvern Garden Buildings is the ideal space for us to demonstrate to visitors how to grow their houseplants sustainably.”

London-based Botanical Boys, along with Leeds-based GrowTropicals and Lincolnshire-based Tropical Plants UK will also be exhibiting their designs.

Andrew Peck, Managing Director at Malvern Garden Buildings, is excited to see how the buildings will be utilised by the designers this year. “The Houseplant Studios area was an amazing spectacle last year and we’re looking forward to seeing the wonderful spaces that the designers will create this year.

“By providing our practical and usable buildings for the area, the houseplant designers can demonstrate to visitors that they too can bring their homes to life, quite literally, with plants. We hope that visitors are inspired to create their own place to relax, entertain, work or simply get closer to nature.”

How to refresh your home and garden for spring thanks to the latest launches from BoConcept

Bright, birdsong-filled mornings; sun-dappled afternoons; and evenings that stretch out beautifully – spring is a wonderful time of year. It’s only natural, then, that we should want to celebrate it and capture some of the season with a new look around the home.

With more than 70 years of experience designing and producing furniture, BoConcept have plenty of tips and tricks when it comes to home design once spring arrives.

THE LIVING ROOM

The living room often sets the tone for your whole home, so if you want to invite spring in, there’s no better place to do it. Giving pride of place to spring flowers like dahlias and hydrangeas, in a stylish vase, will definitely bring the outdoors inside.

If you introduce some brilliantly white furniture, not only will you make the most of the spring light, but those flowers will provide a stunning splash of colour by contrast. And

carefully chosen statement furniture can do the same. For instance, you might pair a whitewashed bookcase with a soft green or slate blue armchair. What could be better than sitting back with a book on a spring evening? Whatever additions you make to the living room, white and blue are refreshing colours for the spring. They bring to mind the sea and all things nautical, instinctively relaxing us.

THE BEDROOM

The sun floods in through your window early in the morning – and, as it sets, the sun leaves a show-stopping blend of hues in the evening. Spring certainly shows bedrooms in their best light.

To match nature’s mood outside, you need to make changes inside. It’s time for light colours and materials. Think linen cushions and rounded, carefree forms that verge on the bohemian – nothing too sharp. Of course, rattan furniture is a classic spring look, while lighter, distressed woods also conjure images of spring getaways. Aside from aesthetics, however, there are practical issues to consider. First and foremost is comfort. Higher temperatures mean that you’ll want lighter, more breathable fabrics and throws on your bed, which extends to the sheets underneath.

From puppy therapy to forest bathing, wellbeing comes in all shapes and forms

Whilst positive mental health and wellbeing practices have always been a hugely important area for schools, there is no doubt

that a global pandemic, coupled with the increased use and influence of social media by students, has increased the focus in this area. The national picture statistically shows a marked increase in poor mental health and a decline in wellbeing and so, at our school, we are taking a very proactive approach to the support we provide as opposed to simply reacting to problems when they occur.

CHAMPIONING SELF-CARE

This education in self-care comes in lots of di erent forms, from informal chats with house sta in the boarding houses, right through to our Learning for Life weekly taught lessons. For students who need a little more support, we have resident school counsellors who work with students to o er the additional care required.

A new initiative for Downe House this last year was the introduction of a Wellbeing Committee, made up of students from across the whole school, with the aim of giving them the opportunity to help develop the mental health and wellbeing programme we o er. The committee is

led by 10 sixth form students who have undergone training to become Wellbeing Ambassadors. The training itself covered basic mental health first aid, explored some key signposting for additional resources and practical examples of the di erent ways students can support each other.

Students in the younger years are undergoing a pared down version of this training to become Wellbeing Champions, and together the Ambassadors and Champions perform the dual role of contributing to the committee while also being someone in the community who is championing good wellbeing and supporting their peers. As the committee develops, the students hope to be able to roll out initiatives to help their peers to become even more aware of the necessity to look after the wellbeing of themselves and each other.

WELLBEING COMES IN MANY SHAPES AND FORMS

The launch of our Finding Balance programme has also provided a whole range of introductory and practical ways of looking after personal wellbeing. As part of this, various activities are o ered to allow students a taste of things they might then embed in their own lives to help them develop positive wellbeing strategies. Sound baths, puppy therapy, forest bathing and acrobatic yoga have all been activities on o er and these help to highlight to the students that wellbeing comes in many di erent forms and understanding what brings you calm, joy and relaxation is crucial.

Of course, it is natural for schools to focus on the importance of wellbeing of their students, but my favourite phrase

is ‘you can’t pour from an empty cup’. Our programme of sta wellbeing support is designed to ensure that they too are self-aware and able to access additional support when needed.

TRAINING THE MIND

There are lots of really positive steps happening in schools today around mental wellbeing, but regular, up-to-date training is really important to keep things moving in the right direction for both students and sta . As part of our sta CPD programme we regularly include topics around wellbeing and mental health, either bringing in external experts or sharing good practice from within our experienced team. These sessions may focus on sta wellbeing, such as the importance of saying no sometimes, or on student wellbeing topics such as understanding LGBTQ+ terminology. Synergy between school and home is important too. Parents are often seeking support in this area just as much as sta and pupils, and at Downe House we have also created an excellent Parenting and Educating in Partnership programme of talks for our parents to help equip them with the skills they need to be able to talk to their children e ectively, about what can be di cult topics. We have been able to welcome some incredible external experts for talks on an array of topics from how to deal with the di cult teenage years to internet safety tips. We also utilise the expertise of our sta

and this year our programme included a talk from our Library Manager on the importance and wide-ranging benefits of reading as well as a talk from myself about how our Learning for Life programme supports the students with their mental health and wellbeing.

Mental health education is constantly evolving so schools like mine are always looking towards the future. Our student Wellbeing Committee is brimming with new ideas for this academic year and as a school we are also looking at our pastoral monitoring systems to ensure we are utilising them e ectively, particularly around early detection and intervention. We use the A ective Social Tracking system to monitor pastoral progress, which has just rolled out a new online interface, and this gives us an opportunity to relaunch it to sta and see how we can utilise the data it produces even more e ectively to support the students.

In 2021, Long Close School in Slough celebrated its 80th anniversary and, now, they have a new Headteacher. Absolutely meets DavidLaird to find out more

Q How excited are you about taking over as Head of Long Close School and what attracted you to the role?

A Very excited. Before interviewing for the position, I visited the school to get a feel for how things were. Immediately, I saw raw potential in the school. The school is an incredibly friendly place to be, and parents and sta spoke highly of this to me. However, it was the students who best conveyed to me their ambitious nature. Long Close School has a student community who are hungry to maximise every opportunity that they have open to them. There is nothing more engaging or inspiring as a Headteacher than having the opportunity to

facilitate such a culture. I am looking forward to leading a school committed to o ering exceptional opportunities for its students.

Q Do you have a particular teaching philosophy?

A As educators, I believe we should always ensure a baseline of academic rigour. The ability to read, write and be fully numerate will always be part of that baseline of good education. However, education is so much more than this. It is now an accepted reality that many of the jobs that exist today, did not exist when we were at school. Furthermore, the skills required to fulfil the roles

were not necessarily being taught in the classroom of the past. Fast forward to 20 years in the future and we need to ask ourselves, what’s next? How do we ensure that our classrooms of today match up to the future in which our children will inhabit? This question has a direct impact on how we approach pedagogical development. I believe the most successful schools are continuously restless. There is a paradox at their core: they are very secure in their systems of academic rigour, yet simultaneously seek to change, improve and innovate. Teaching core skills that allow students to become risk takers, communicators, open-minded and inquirers are just some of the ways that we make them more adaptable and resilient to future change. I want a restless environment to be the cornerstone of culture that exists at Long Close School.

Q During Early Years, how do you look to instil a love for learning?

A The EYFS framework provides a wonderful template to sow the seeds

for creating a love of learning. However, it would be a disservice to Early Years’ teachers to merely say that in these age groups, children learn through play. It’s so much more nuanced than this, and that’s why having a teaching team of dedicated professionals makes Long Close School a leader in Early Years development. Facilitated by experts, students lead their learning and explore themes that nurture an excitement to learn about literacy, numeracy, the world around them and personal, social, and emotional development. Some of the most cutting-edge pedagogical development can be found in our Early Years setting – and this is thanks to the wonderful people who run this department.

Q What curriculum do pupils follow as they progress through the age groups at Long Close School?

A The school follows the best elements of Early Years and Foundation Stage Framework for students aged 2-5 and the English National Curriculum for students aged 5-16. Long Close School also has an excellent record of supporting students who wish to sit the 11+ in Year 6. Our students achieve outstanding GCSE results in Secondary School, with pass rates and those achieving grades between 7-9 well above the national average.

Q How important is the cocurricular to you and what would we find at Long Close School?

A The Enrichment programme at Long Close is exciting and is an essential ingredient to developing the whole person.As such, there are plenty of ways for pupils to try something new, extend their enthusiasm and

develop lifelong interests.There is truly something for everyone. Pupils chose enrichment activities from an exciting menu of varied, challenging pursuits and experiences.From Year 1 upwards, these activities are integrated into the school day,reflecting the importance we place on ensuring pupils enjoy stimulating and life-changing experiences throughout their time at school.

At Long Close, what we o er beyond the core school day is intrinsic to our commitment in developing character in our young people. We o er a myriad of opportunities for the pupils to try new things, step out of their comfort zones, meet new

Q What is the first thing you will do when you start your new role?

A I always say that schools are about people. So, top of my agenda will be getting to know the community. I’ve already managed to meet many of the parents at a recent ‘Meet the new Head’ event in March. However, I genuinely can’t wait to sit down with sta , parents and students to learn more about them… their hopes, aspirations and ambitions for the future. Cancelling OUT

Helping students to fi nd the right information to form their own opinions

Cancel culture is on the rise. Defined by Merriam-Webster as ‘engaging in a mass cancelling as a way of expressing disapproval and exerting social pressure’, it refers to when a person or business is called out publicly – often on Twitter or other social media platforms – about something they have said or done that exhibits racism, sexism, or misogyny. Yes, it’s important to call out injustices, but we must ensure that young people are equipped to express themselves in a reasoned, respectful and empathetic way, based on fact – rather than on what they have seen on social media or what their best friends say.

For many children, cancel culture has contributed to increased feelings of hesitation and nervousness in expressing opinions for fear of being ‘cancelled’. It can also promote group thinking when individuals are not confident enough to stand up against louder voices. Recognising mistakes are part of life, and recognising them and addressing them is all part of learning. The cancel culture does not allow that freedom – there is no room for apologising, demonstrating remorse and making amends, it is very restrictive. So how can we help our students develop open, unbiased opinion based on information and evidence? The solution lies with providing a safe and accepting school culture, providing opportunity and guidance for students to develop tolerance and empathy, along with critical thinking and listening skills.

Building a culture where di erent viewpoints can be heard

First we must ensure that school is a psychologically safe place, with a supportive school culture where individual voices are encouraged and di erent viewpoints can be heard and expressed – in a confident and ‘empathic’ manner. We provide ample opportunities for our students to research and develop thoughtful opinions rather than relying on the quick fix of something trending on social media.

Whole school debates provide the perfect platform for young people to understand other student’s perspectives about the same topic and the reasoning behind their views. Critical thinking and appreciating the viewpoints of others is crucial – recognising

there is strength in diversity, whether that be race, gender, or politics – on a day to day basis.

One relatively recent topic we debated was the removal of the bronze statue of Edward Colston, the Bristol-born merchant and trans-Atlantic slave trader, which was pushed into Bristol Harbour during the George Floyd protests related to the Black Lives Matter movement.

Each year, we hold our own Question Time – staged in a formal environment with visiting politicians, who o er feedback to a student-panel taking questions from students in the audience.

We also focus strongly on presentation skills giving pupils regular opportunities to deliver group presentations in lessons, present in year group and whole school assemblies, and give readings in Chapel.

Pupil voice is important at Heathfield. We have a Student Council, and pupils and sta run committees for inclusion and diversity, where opinions and ideas can be raised and discussed.

Our students also work with The Kindness Bank, an organisation that promotes the United Nations’ Sustainable Development Goals, by educating young people about

social and environmental challenges, and encouraging them to take action on issues such as the climate crisis. Through its education programme, the organisation aims to ‘Inspire a Currency of Kindness’ and help develop responsible citizens, leaders and ‘Influencers for Good’.

Why are tolerance and empathy important?

Tolerance is the willingness to tolerate the existence of opinions or behaviour that one dislikes or disagrees with. It is not passive, it demands an active choice to reach out when there is disagreement, on the basis of mutual understanding and respect. Tolerant people show their strength by being open to di erent opinions and perspectives, a trait that is important in personal development.

Empathy is quite a complex concept – to ‘walk in someone else’s shoes’ and have the ability to understand and share the feelings of another. It’s really important that every opportunity is taken to model and teach both these attitudes, throughout everyday school life and also the planned curriculum. When people take an interest in what others think, feel and experience, they are recognised as caring, trustworthy and approachable – excellent skills and attitudes for life.

In Years 7 to 13, Heathfield’s positive psychology curriculum is used to teach and help students develop the skills of

empathy, gratitude and self-awareness, alongside emotional intelligence. Building a school culture where individual voices and di erent viewpoints can be heard and expressed – in a confident and ‘empathic’ way – is vital. With the rise of cancel culture, our students need to learn and understand how to promote mutual tolerance and respect, whilst maintaining freedom of expression in their own interactions.

Society is evolving and young people have an important role to play in communicating their experiences. Education should help young people use their voice confidently and intelligently, forming their own opinions and learning how to argue in an empathic way, enabling them to make positive changes to their world.

Nurturing interests at Berryfields Day Nursery in Aylesbury

At the recently opened Berryfields Day Nursery in Aylesbury, devoted practitioners are on a mission to give children the best possible start in life.

Located on Nimrod Street in the northeast of the town, days are filled with exciting activities, planned around the personal interests of children and designed in line with Early Years Foundation Stage principles to ensure they are prepared with the knowledge and skills needed for their next steps.

Good listeners

With two full school terms now under their belts, the St George’s School Windsor Castle Peer Listening Team has already proven to be a hugely valuable addition to the school’s alreadyextensive wellbeing offering. Launched in September 2022 in response to a growing body of evidence in support of the benefits of peer mentoring, the programme has seen student volunteers from Year 8 trained in skills such as active listening, in order to provide an additional avenue of support for any student in need. Hugely rewarding for both the Peer Listeners and the students they have helped, the programme has also reinforced the friendly feel of the school, helping to develop relationships between students in different year groups. It has also continued to build upon the school’s existing momentum in ensuring mental health and wellbeing remain right at the heart of the school.

LVS Ascot, an award-winning independent day and boarding school, welcomed 48 teams from across the country to their 26-acre site for the Independent Schools Association (ISA) Boys Football Festival on 21 March. The school’s Astro pitches staged the matches, and 16 teams in each age group (U11, U13 and U15) competed.

“Mexican wave of colour” expected after cold snaps delay blooms, as National Trust launches

The National Trust has launched its annual blossom campaign, which aims to bring the beauty of blossom to more people and to celebrate the start of spring. Despite poor weather recently, keen garden enthusiasts in Berkshire and Buckinghamshire can now look forward to spring properly blooming.

Crispin Scott, Nature Conservation Advisor for London and the South East, says: “Spring frosts can damage and even kill blossom, which means a loss of nectar, flowers and, later, fruits for wildlife including butterflies, moths, and bats that feed on early emerging insects. This is vital food at this time for a wide number of species that have survived winter. And as our weather becomes more unpredictable due to climate change, finding dinner is going to be increasingly challenging for wildlife.

“Here in the South East, the recent cold weather wasn’t as severe as in other parts of the country, and it looks like blossom in our gardens and countryside has escaped pretty much unscathed so far. The cold snap probably put blossom on hold for a week or so, but I’ve already started to see beautiful arches of blackthorn blossom, which is a boon for early spring insects. We’re hoping that a burst of warm weather in April will lead to a spectacular display of blossom in our gardens and countryside, which will be great news for our visitors and our wildlife too.”

Sophie Thomas, from Stowe, adds: “Here at Stowe, blossom has just started breaking with our almonds in the courtyard and our cherry plum across the site.

The apple blossom is still holding tight, looking forward to the warmer weather. I’m looking forward to being able to enhance our seasonality in the garden by planting some more fruit trees this year to provide nectar sources for wildlife.

“The cold weather probably ended our snowdrop display slightly early, but our blossom display hopefully won’t be too a ected. It’s a great sign of new beginnings and provides a great boost to pollinating insects after the winter. We have seen pollinators in the garden already, so the cold weather doesn’t seem to have a ected them too much. We’re really looking forward to showing visitors our brand new Blossom Map with the best route to see the blossom highlights.”
